If holiday gatherings have started to feel more overwhelming than celebratory, it’s time to go back to the basics with seasonal desserts that are easy yet elegant. Wow your crowd this year with a mouthwatering Hummingbird Cake or Coconut Cake that call to mind holidays past without requiring hours spent in the kitchen (like grandma used to do). Or for a classic take on an old favorite, these Christmas Cinnamon Cookies can even let the kiddos get involved – just make the dough then have your little helpers use their favorite cookie cutters to make festive shapes before the oven does the rest of the work. My great-aunt Ina had no children of her own, so we always included her at holiday gatherings where we played endless rounds of Boggle and Scrabble and did lots of eating. She’d win the games, then happily drift into the kitchen to make her Swedish meatballs, a recipe passed on to her from her immigrant parents more than a century ago. Now that she is no longer with us, we find ourselves reminiscing about her when we pull out her recipe for our Christmas Eve smorgasbord. As we do, I root around in the fridge for eggs, beef and pork, then Mom gathers spices from the cupboard. Without a word being spoken, we both have similar thoughts remembering Aunt Ina and others who gathered around the warm kitchen in Christmases past. Heirloom recipes and special traditions make the holiday season bright for families everywhere. “And they help us slow down,” says Blake, an energetic 4th-grade teacher and father of four active kids under 11. “Traditions aren’t fast-moving. They call us to put our super-busy lifestyles aside and come together to do something that matters. When we prepare Grandma Signa’s Julgrod (a Norwegian rice pudding), it gives me a warm, fuzzy feeling. I’m passing along something from my heritage while connecting with the most important people in my life. It’s real, and that’s what counts,” he explained. Find a pause during your family life to celebrate your unique traditions this month. And if you are in need of a new one, I am sharing great-aunt Ina’s Swedish meatball recipe with you. We serve ours with lingonberry sauce on the side, but you might prefer topping them with your favorite gravy or even a spicy barbecue sauce! Let’s get rolling ... Makes 48 meatballs -- 1 pound lean ground beef -- 1 pound ground pork -- 1 egg, slightly beaten -- 1/2 cup milk -- 1 cup breadcrumbs or cracker crumbs -- 1 large onion, grated -- 1 clove garlic, finely chopped -- 1 tablespoon parsley, finely chopped -- 1 teaspoon ground allspice -- 1 1/2 teaspoons salt -- Pinch of pepper Here’s the fun: In a large bowl, let your child mix ingredients thoroughly for several minutes. Shape into firm 1-inch balls. Aunt Ina dipped her fingers in a bowl of cold water to make it easy. Arrange on two rimmed cookie sheets. Bake at 350 F for about 30 minutes until lightly browned, rotating sheets halfway through. Alternate Method: Place in an ovenproof frying pan with melted butter. An adult should fry them on medium heat, turning occasionally for 10 minutes until lightly browned. GET EASIER ACCESS TO MILITARY INSTALLATIONS The Departments of Veterans Affairs and Defense have made some changes that will make it easier for veterans and their caregivers to get into various installations. Whether it’s for medical appointments, shopping or any other reason, the changes will allow both veteran and caregiver to be electronically verified. Ideally you’ll have a VA health card (the VHIC). If not, you can enroll for access by using a REAL ID driver’s license or an identification card if you don’t drive. Beginning November 2024, those without a VHIC (or an eligible caregiver) won’t be required to present a service connected disability letter, Form H623A (the VA Health Eligibility Center form) or a caregiver patronage letter to enroll for access.

Specifically the steps are as follows:

I can relate to this person. I only have one cat, and I thought, for a while, that I could get away without vaccinating her. Fortunately, a friend convinced me otherwise. It turns out that it doesn’t take much to protect my baby when she depends on me to take care of her. I’ve never gone without just to pay for “Racquel’s” vaccinations, and in turn, she is a healthy cat who brings so much companionship to my life. Vaccinating indoor pets can seem like a pricey extravagance, but it pales in comparison to the cost of treating the diseases that they can contract if they’re not vaccinated. However, these clinics often don’t advertise extensively due to costs, so you may need to search a bit. Contact your city or county government to see if any clinics are being held nearby, or stop in to major pet supply retailers like Petco, which often sponsor shot clinics. If not, their workers often know about pet health clinics nearby. These clinics offer required vaccinations and licenses, and sometimes have microchipping and a basic health exam available at a low fixed price per pet. HOLLYWOOD -- In 2001, Oscar winner Renée Zellweger gave us “Bridget Jones’s Diary,” which grossed $334.2 million against a $25-million cost. Four years later, “Bridget Jones: The Edge of Reason” came and grossed $265.1 million against a $50-million cost. In 2016, she made “Bridget Jones’s Baby,” which grossed $212 million against a $35-million cost, and now we’ll get “Bridget Jones: Mad About the Boy,” with Emma Thompson, Chiwetel Ejiofor, Isla Fisher, Gemma Jones and

Jim Broadbent, just in time for Valentine’s Day. *** Social media’s been buzzing about “Blue Bloods,” with fans inferring that it’ll be renewed for season 15. Official blurbs claim that Tom Selleck is certain CBS will come to their senses and renew it. But even as a producer and an Emmy winner for “Magnum, P.I.,” he couldn’t get the hit series past eight seasons. When “Blue Bloods” began in 2010, the actors’ contracts had automatic salary bumps yearly. By season 13, actors had to take pay cuts to reduce the high cost of producing the show or face cancellation. Selleck, of course, was the highest-paid at $200,000 an episode, while Donnie Wahlberg earned $60,000 in the beginning but was bumped up to $150,000. Will Estes earned $100,000, and when you’re in all 288 episodes as they were, it becomes a big payday! Add in the escalated costs of shooting in NYC, and CBS had to cancel the show! Had it remained a top-10 show (it’s currently placed 37), it might have swayed CBS Entertainment president Amy Reisenbach, who

The humble breakfast casserole is your secret weapon for starting the day right. Picture this: It’s Christmas morning, the house is buzzing with excitement, and breakfast is already taken care of -- no stress, no mess. Or maybe it’s an ordinary Tuesday, and you’re out the door with a hot, hearty breakfast in your belly instead of a granola bar in hand. The beauty of a breakfast casserole is in its flexibility: prep one now, freeze it, and you’ll be ready to conquer the day anytime. Make a few ahead of time, and you’ll thank yourself every time life gets busy or when you simply want a leisurely breakfast without the effort. Whether feeding a crowd or just your family, this casserole has you covered. Easy Breakfast Casserole Yield: 8 servings | Prep Time:15 mins | Cook Time: 50-90 mins 10 large eggs 2 cups whole milk or half and half 1/2 teaspoon kosher salt 1/4 teaspoon black pepper About 6 slices (8 ounces) day-old bread, sliced into cubes 2 cups grated cheese, any variety (I used sharp cheddar) 1 tablespoon butter or olive oil 1/2 cup onion, diced 1/4 cup bell pepper, diced 8 ounces mushrooms, sliced 1/2 cup green onions, sliced 1 to 2 cups ham, cubed If you wish to bake this immediately: Preheat the oven to 350 F. Grease or spray a 9-by-13-inch casserole dish. In a large bowl, whisk together the eggs, milk, salt, and pepper; set aside. Arrange the bread to cover the

bottom of the dish and sprinkle cheese evenly over the top. Heat a skillet over medium-high heat and add butter or oil. Sauté the onion, bell pepper and mushrooms until softened. Stir in the green onion and ham, then spread the mixture evenly over the bread. Pour the egg mixture on top, making sure it soaks into the bread. Let it sit for 5 minutes, then bake for 50 to 60 minutes, until the top is golden and the center springs back when touched. Let cool for 10 minutes before serving. To Refrigerate: Assemble the casserole as instructed, cover tightly, and refrigerate overnight or up to one day. Bake according to the instructions above when ready to serve. To Freeze: Prepare the casserole in your baking dish. Wrap tightly with plastic wrap, followed by aluminum foil, and freeze for up to 2--3 months. If using raw protein (meat, poultry, or seafood), cook it thoroughly before assembling the casserole. To Bake from Frozen: For best results, thaw the casserole overnight in the refrigerator, then bake as directed. Alternatively, bake straight from frozen: remove plastic wrap, cover with foil, and bake at 350 F for 60 minutes. Remove the foil and bake an additional 30 minutes, checking that the internal temperature reaches 165 F. Recipe Variations: • Swap the ham for cooked breakfast sausage, crumbled bacon or even diced turkey for a different protein twist. • Add variety with veggies like chopped spinach, kale or diced zucchini for a nutrient boost. Swap the bell pepper for roasted red peppers or sun-dried tomatoes for a bolder flavor. • Prefer a spicier kick? Use pepper jack cheese and stir in a small can of diced green chiles. • For a meatless option, leave out the protein and load up on your favorite vegetables--mushrooms, broccoli, or asparagus are all great choices.
