Cook time: 20 minutes

Servings: 4

1 bag Success Jasmine Rice

4 bags chamomile tea, divided

4 tablespoons butter, divided 4 tablespoons lemon juice, divided

2 tablespoons fresh chives, finely chopped, divided

1 1/2 teaspoons salt, divided

1 teaspoon pepper, divided

4 skin-on salmon filets (5 ounces each)

1 bunch asparagus, woody ends trimmed

Preheat broiler. Prepare rice according to package directions, adding three tea bags to simmering water with rice to infuse with tea flavor.

Transfer rice to large bowl. Tear remaining tea bag; mix half with 2 tablespoons butter and melt in microwave to infuse butter.

Mix infused butter, 2 tablespoons lemon juice, 1 tablespoon chives, 1/2 teaspoon salt and 1/4 teaspoon pepper; fold into rice and set aside.

Arrange salmon and asparagus on foil-lined baking sheet. Drizzle remaining butter over salmon and asparagus. Season with remaining salt and pepper. Broil 9-11 minutes, or until salmon begins to flake and

asparagus is tender.

Serve salmon and asparagus with rice. Drizzle salmon with remaining lemon juice and garnish with remaining chives.

CRUNCHY THAI

PEANUT AND QUINOA SALAD

Prep time: 10 minutes

Cook time: 10 minutes

Servings: 4

1 bag Success Tri-Color Quinoa

1 1/2 cups shredded cabbage mix

1/2 cup cilantro, roughly chopped

2 tablespoons fresh mint, roughly chopped

1/2 cup English cucumber, thinly sliced

1/2 cup carrots, shredded

1/2 cup red bell peppers, thinly sliced

1 tablespoon soy sauce

1 teaspoon fish sauce

1 teaspoon sesame oil

1 teaspoon honey

1 teaspoon white vinegar

1/4 cup peanuts, roughly chopped

Prepare quinoa according to package directions. Cool.

Mix cooled quinoa with cabbage, cilantro, mint, cucumber, carrots and bell peppers.

In small bowl, whisk soy sauce, fish sauce, sesame oil, honey and vinegar.

Add dressing to quinoa and toss to combine. Top with peanuts.

When my Irish-born friend Margaret moved to the United States more than 10 years ago, she couldn’t help but notice our always-on-the-go, hectic, and harried lifestyle. She was determined to show Americans that it is possible to pause and enjoy friendship like the Irish tend to do. So, she not only makes a daily event of tea time for herself, but she also shares the tradition with her children and friends.

With St. Patrick’s Day coming up on March 17, make a family resolution to slow down and enjoy simple moments together like tea time. As Margaret observes, “By the time everyone sips some tea, slathers scones with jam and butter, and pours more tea, can you imagine the wonderful one-on-one discussions a person can have with their children, family and friends?”

Here are some ideas to get started: Kids can help by setting up the “tea tray,” a necessary component for tea time. You’ll need a sugar bowl, a pitcher for milk, and a small plate with sliced lemons. Cover the coffee table or dining room table with a white lace cloth. (She collects hers at tag sales.) Then place cups, saucers, spoons and napkins around the table. Each person can be given a dessert plate and a butter knife to cut scones or cake into pieces, or for spreading butter and cream.

When it’s time to sit down, let the children be responsible for passing the milk, sugar, cake or scones.

How to brew a proper pot of tea: Boil a kettle of water. Pour 1 inch of hot water into a china or silver teapot. Swirl to warm, then pour it out.

Into the pot, measure 1 teaspoon of tea per person and 1 extra teaspoon for the pot. Add rapidly boiling water to the pot and steep for 5 minutes. Strain tea into teacups.

Dispose of used tea leaves in a compost pile or scatter them around your growing roses.

Serve with whole milk if you wish. It gives the tea a nice color and rounds out the flavor. Children tend to prefer it this way.

A: Christopher Rich, who starred on the WB sitcom “Reba” from 2001-2007, recently guest-starred on McEntire’s new NBC sitcom “Happy’s Place.” Rich suffered a stroke in 2018 and was thrilled to reunite with his former co-stars in an episode where he plays a tattoo artist who was also dealing with the residual effects of a stroke. HOLES IN THE FIDUCIARY PROGRAM

The Department of Veterans Affairs’ Fiduciary Program is set up to help veterans take care of their finances and benefits if they can’t handle it themselves because they’re sick, injured or elderly. There is a lot of money at stake: $2.7 billion in a recent year. Each of the hundred thousand veterans who fall in the category of needing assistance are assigned a fiduciary, someone who protects the veterans and their finances.

The VA’s Pension and Fiduciary Service, which manages the fiduciaries, is tasked with ensuring the proper handling of veterans’ affairs through in-person examinations, fiduciary accountings and investigations into misuse. All goes well with this arrangement ... until it doesn’t.

A recent VA Office of Inspector General report details what they found when they investigated the Fiduciary Program.

Over 300 veterans and their financial affairs were not being monitored or supervised by the Fiduciary Program for three years and in some cases longer. The hole in the system was because the program had no way to identify veterans who were in need of fiduciary services or because their records did not move from one system to the other, the Veterans Benefits Management System--Fiduciary (VBMS-Fid), after need was determined.

Which left a whole lot of money out there without oversight: in excess of $24 million.

A fiduciary is required to submit written reports about how the veteran’s money is being spent, and those reports are reviewed by program staff. In the event there’s a question, the fiduciary must clear it up. Failure to do that constitutes misuse, and an investigation is supposed to follow.

If you are a veteran who has a fiduciary managing your benefits and if you suspect that person is not acting in your best interests, let the VA know. And these weren’t just little fender benders, although there was one of those that happened in a store parking lot. • On March 17, 1905, future president Franklin Delano Roosevelt married Eleanor Roosevelt, his fifth cousin once removed, in New York. Former President Theodore Roosevelt gave away the bride.

• On March 18, 1911, composer Irving Berlin obtained the copyright for “Alexander’s Ragtime Band,” a multimillionselling hit that helped turn American popular music into a major international phenomenon.

• On March 19, 1957, Elvis Presley arranged to purchase the Colonial mansion on the outskirts of Memphis called Graceland for $102,500, with a cash deposit of $1,000. It is still preserved exactly as Elvis left it when he died in 1977 and is one of America’s most popular tourist attractions -- the second-mostvisited house in the nation after the White House.

• On March 20, 1345, according to scholars at the University of Paris, the Black Death, aka the Plague, was created from “a triple conjunction of Saturn, Jupiter and Mars in the 40th degree of Aquarius,” though it was actually carried by fleas that typically traveled on rats. It cut a swath across Europe, the Middle East and Asia during the 14th century, leaving an estimated 25 million dead in its wake, and popped up periodically until the 1700s, but never again reached epidemic proportions.

Instead of waiting for a warm day (which isn’t going to happen soon) to melt the ice and snow on my walk and driveway, I hire someone to clear it, and I just pay the cost, even though it’s not a welcome expense.

And while I hate to think of myself as a coward, more and more there are things I just don’t want to risk. I check the weather news for the temperature before I venture out by car. If it’s too cold (or will be by the time I get home), the roads could be slick. Black ice is hard to see but once your vehicle is on it, there’s no steering. Too cold and I just stay home. During a recent storm we had yet another power outage. I keep thermometers in the fridge to keep track of how warm the temperature gets. For iffy items, I just don’t take the chance that they might have gone bad. While several sources say to be sure the foods have stayed below 40 degrees in the fridge, the CDC puts a specific time limit on it: four hours in a refrigerator without power. After that time, throw it out.

• On March 21, 1980, President Jimmy Carter announced that the U.S. would boycott the Olympic Games scheduled to take place in Moscow that summer, after the Soviet Union failed to comply with his Feb. 20, 1980, deadline to withdraw its troops from Afghanistan. Four years later, in retaliation, the Soviet Union boycotted the 1984 Olympic Games held in Los Angeles.

• On March 22, 1983, the Pentagon awarded a production contract worth more than $1 billion to AM General Corp. for the development of 55,000 high mobility multipurpose wheeled vehicles. Nicknamed the Humvee and designed to transport troops and cargo, the vehicles were used by the American military during the 1989 invasion of Panama and the Persian Gulf War in the early 1990s.

HOLLYWOOD -- Hugh Jackman is currently shooting the film “The Death of Robin Hood” in Northern Ireland, opposite Jodie Comer and Bill Skarsgård. The film will be a dark reimagining of the Robin Hood legend. However, the biggest drama surrounding Jackman is why his 27-year marriage to Debra Lee Furness ended abruptly in 2023. Supposedly, it was because of a romance with his “Music Man” co-star Sutton Foster (who was married to screenwriter Ted Griffin for 10 years).

In January, Jackman and Foster confirmed their relationship, but insiders say that they’re just good friends. Their supposed relationship was a cover-up to take the heat off his longtime secret relationship during the heat of the split.

Jackman’s biographical-musical film “Song Sung Blue” wrapped in Jersey, and while he’s playing Robin Hood in Ireland, Foster has completed her Los Angeles run of “Once Upon a Mattress” and is doing some theater work on Broadway. ***

Miles Teller will play a deadly renegade poacher to Oscar winner Casey Affleck’s (“Manchester by the Sea”) fish and game officer in the manhunt thriller “Wild Game.”

Teller’s also playing John Branca, Michael Jackson’s entertainment lawyer and the executive of Jackson’s estate, in the biopic “Michael.” Jaafar Jackson, Michael’s 28-year-old nephew, plays his uncle. Colman Domingo stars as Joe Jackson, while Nia Long plays Katherine Jackson.

February 10 was “Hart to Hart” star Robert Wagner’s 95th birthday. In 1959, when I was 13 years old, I stowed away on a small boat rented by Elizabeth Taylor and Eddie Fisher. As they circled around Manhattan, they discovered me hiding. They were more amused than mad, but they said since I was a stowaway, I had to work as their cabin boy to earn my passage. It was then that I discovered Robert and Natalie Wood were also aboard.

Waiting on them was a ball, even though Liz and Eddie never recognized me when I saw them for years out and about. But I became good friends with “RJ,” as his friends called him, and Natalie. When I arrived in Hollywood and needed to prove myself as a photographer, Robert allowed me to shoot him on the set of his TV series “It Takes a Thief” (19681970), which helped established me in Hollywood. Being a cabin boy was good training for a second job I luckily never needed!

1/2 cup marinated mixed olives

1/4 cup roasted red peppers

1 clove garlic, minced

1/2 cup Italian dressing, or oil and vinegar

1 (9 inch-10 inch) round loaf of Italian or French bread

1 1/2 pounds mixed Italian deli cold cuts, like salami, bologna, soppressata, ham

1/2 pound sliced provolone cheese

In a small food processor, mince the olives, peppers, giardiniera, Italian herbs, garlic and Italian dressing.

Slice the bread in half horizontally and gently press inside to make room for the filling.

Generously spread the olive mixture on both sides of the bread. Artistically layer the cold cuts and provolone inside the bread. Place the top back on the sandwich and press down.
