EGG RAVIOLI WITH SAGE AND ALMONDS

Servings: 4
8 cups water
1/2 cup fat-free ricotta cheese
1 tablespoon grated Parmesan cheese
1 1/2 teaspoons fresh, chopped thyme
1/2 teaspoon grated orange zest
1/4 teaspoon black pepper
8 gyoza wrappers, shumai wrappers or wonton wrappers
4 large egg yolks, unbroken
1 large egg white, lightly beaten
2 teaspoons olive oil
1/4 cup sliced almonds, chopped
1 tablespoon chopped, fresh sage
1 tablespoon finely chopped red bell pepper (optional)
Fill large pot with water. Bring water to gentle boil over medium-high heat.
In medium bowl, stir ricotta cheese, Parmesan cheese, thyme, orange zest and pepper.
Place four wrappers flour sides down on cutting board. Spoon 1 1/2 tablespoons cheese mixture onto center of each wrapper. Using back of spoon, press down on cheese mixture to create well about 1 1/2 inches across (width of large egg yolk), leaving at least 1/2 inch space around edges of wrapper. Without breaking it, carefully place one egg yolk in center of each well.
Using pastry brush, brush edges of wrappers with egg white. Place one top wrapper with flour side up on each bottom wrapper. Using thumbs and forefingers, firmly press edges together to tightly seal each ravioli. Set aside.
Using slotted spoon or spatula, carefully drop each ravioli into boiling water. Cook 2 1/2-3 minutes, or until wrappers are al dente (cooked not too soft but not overdone). Using slotted spoon, gently remove raviolis from pot, draining well. Transfer to plates. Drizzle with oil. Sprinkle with almonds, sage and bell pepper, if desired.
Tips: Gyoza wrappers (or shumai wrappers) are preferred because they’re thinner than wonton wraps. Look for gyoza wrappers in the dairy aisle, deli department or freezer section.
Use these guidelines to determine how you want eggs cooked: At 2 1/2 minutes, eggs are yellow and slightly thickened but not set around edges, similar to sunny-side up. At 3 minutes, eggs are deeper orange and slightly set around edges, similar to over-easy.
In medium saucepan, prepare bulgur according to package directions, omitting salt and substituting 1 1/3
cups broth for water. Fluff with fork.
In food processor or blender, process basil, walnuts, garlic, salt, cayenne and remaining broth until smooth. Stir basil mixture, bell pepper and green onions into bulgur.
In large skillet, bring water and vinegar to boil over high heat. Reduce heat and simmer. Break one egg into cup then carefully slip egg into simmering water. Repeat with remaining eggs, placing in water so they don’t touch. Simmer 3-5 minutes, or until whites are completely set and yolks are beginning to set but aren’t hard. Using slotted spoon, drain eggs well and place on bulgur mixture. Serve with lemon wedges.
Note: White vinegar helps firm egg whites quickly, preventing them from spreading too much.
SOUTHWESTERN QUINOA AND EGG BREAKFAST

1/4 cup uncooked quinoa, rinsed and drained
2 medium tomatoes (about 2 cups), chopped
1 cup no-salt-added frozen corn, thawed
1/2 medium avocado, pitted and diced
1/4 cup chopped green onions
1/2 cup chopped fresh cilantro (optional) nonstick cooking spray
4 large eggs
1/8 teaspoon salt
1/4 teaspoon pepper
red hot pepper sauce, to taste (optional)
Cook quinoa according to package directions. Remove from heat. Spoon quinoa into four bowls. Top each with even amounts of tomatoes, corn, avocado, green onions and cilantro, if desired.
Lightly spray large skillet with nonstick cooking spray and set over medium-high heat. Crack eggs into skillet. Sprinkle with salt and pepper. Cook, uncovered, 3-4 minutes, or until egg whites are set but yolks are still runny. Using spatula, carefully transfer one egg, sunny side up, into each bowl. Sprinkle with hot sauce, to taste, if desired.
Made with colorful slices of sweet red pepper in shapes that resemble snowflakes, the whimsy adds fun to the start of the day. The curvy rings frame an egg as it fries into deliciousness for about 5 minutes. Top with a dusting of Parmesan or feta cheese and serve with toast or an English muffin and fruit juice.

SNOWFLAKES SUNNY-SIDE UP
Makes 6
• 2 large firm red bell peppers with contours
• Butter
• 6 medium eggs
• Salt and pepper
• Grated Parmesan cheese or crumbled feta
Slice peppers into six 1/3-inch-thick rounds, keeping the cut edges smooth and even. Remove seeds and core pieces.
Melt some butter on a flat skillet. Cook the pepper slices on medium heat on one side for about 1 minute, then flip.
Carefully crack an egg into the center of each ring. Immediately press down on the ring with a spatula if egg white seeps through. Cook for about 5 minutes, or until yolks are firm. (Place a lid on the pan for the last minute, if you wish.)
Serve with salt, pepper and cheese sprinkled on top.
Extra Idea: For a springtime twist, set a strip of cooked bacon upright under the pepper on the plate. Your winter snowflake instantly transforms into a blooming flower with a stem.

NEW BENEFITS GUIDE FOR 2025
The Department of Veterans Affairs has released a new publication that you’ll want to see. The “2025 VA Federal Benefits Guide for Veterans, Dependents, Survivors, and Caregivers” is now available. Go online to va.gov and search for “pamphlet 80-25-1” for a link to the handbook.
This 120-page handbook is full of info you may need, if not now then later. Whether it’s education benefits, life insurance, home loans or mental health resources and more, it’s there.
Just seeing it all in one publication is an eye-opener. We really do have a lot of benefits. The guide is well done; somebody was thinking about it when they included all the eligibility requirements for each benefit, including the periods of service.
Right in the front is a list of help phone numbers, ranging from Camp Lejeune Family Member Program, to National Cemetery Scheduling Office, to 72-Hour Emergency Care Notification Line and many more.
This is followed by pages of department websites, complete with click links right in the online document.
Save the link as a bookmark on your computer so you can find it again. Getting a printed copy, however, might be a bit difficult. A recent VA news release says that “a limited number” of copies might be available at your closest VA facility. (See www.va.gov/find-locations for the ones near you.) Which means that by the time you read this, they’ll be gone. I would hope that veteran service organizations will print out a few copies of the handbook to have for members to use.
If you don’t have a computer to access the handbook and your local VA facility doesn’t have copies, you can call the VA with your questions at 800-827-1000 from 8 a.m. to 9 p.m. EST, Monday through Friday. They’ll get you to the right department.

Calculating the price of eggs
Here we go again. Because of the avian influenza, many hens have had to be culled, leaving fewer to produce eggs. Supply and demand being what it is, the price of eggs has jumped up again because there are fewer eggs.
A recent trip to the store was a shocker. In the space of less than 10 days, a dozen eggs at my local store had shot up over $2 ... to a whopping $6.95 for large eggs. This wasn’t even extra large or jumbo. I almost walked away without buying eggs. Instead, I pulled out my calculator and did the math. At that price, each egg cost 58 cents. A two-egg omelet would, therefore, cost $1.16 for the eggs, and would provide 12 grams of protein. And it was then I realized something: For all the complaining I’ve done about the price of eggs, maybe the price really isn’t so bad when it’s calculated that way.
To be considered: There is tuna with a high protein level, but we’re told not to eat it every day because of the mercury in many types. There’s rice, but we shouldn’t have that every day either because of the arsenic in it. (And how many of us adhere to the 1/4-cup serving size?) Beef is a protein powerhouse, but where are we going to get a serving of beef for $1.16? Not at my store.
In my hunt for “cheap protein,” I discovered cottage cheese. One 1/2-cup serving gets us 14 grams of protein and costs 72 cents. Two tablespoons of peanut butter gets us 7 grams of protein.
Then there are beans, lentils and oatmeal, and a snack of cheese with a few grapes and crackers. So, instead of looking at the cost of an item (and cringing), maybe we need to look instead at the cost of a serving. (c) 2025 King Features Synd., Inc.

• On Feb. 17, 1998, the United States defeated Canada by 3-1 to take home the gold medal in the first women’s hockey tournament held at the Winter Olympics, in Nagano, Japan.

HOLLYWOOD -- In 1969, I met a handsome 24-year-old actor who was making $200 a week in 20th Century Fox’s contract program. I arranged to photograph a date layout for Photoplay Magazine of him and Elizabeth Baur, co-star of the Raymond Burr series “Ironside” (1967-1975). He was depressed because Fox had ended the contract program, and he was out of a job.
After viewing the photos we shot, I had a vision
(the only one I’ve ever had) and predicted that he’d be back at Fox within six months at 20 times his contract pay. Six months to the day, he called to say, “When I met the immortal Mae West, who was casting her ‘boys’ for ‘Myra Breckinridge,’ she hired me on the spot ... at 20 times my contract pay.” And thus, Tom Selleck was on his way!
January 29 was Tom’s 80th birthday, and his meteoric rise came from playing Jed Andrews in “The Young & The Restless” (1974-1975), his Emmy-winning role in “Magnum, P.I.” (1980-1988), and as Frank Reagan in “Blue Bloods.” These roles have made him one of the most popular stars of the past four decades.
Lest we forget along the way he created “Jesse Stone,” the police chief of Paradise who spawned eight CBS made-for-TV films (2005-2012) and the most recent “Jesse Stone” film in 2015 for the Hallmark Channel.
Now that “Blue Bloods” is over, Tom has plans for a 10th “Jesse Stone” epic. It’s no secret that
Selleck wasn’t happy with CBS’s decision to end “Blue Bloods” after 14 seasons. The network claimed that the actors’ salaries had escalated each year and that location filming in New York City was incredibly high (although “Law & Order” isn’t complaining after 24 seasons of escalating salaries and location-shooting in New York).
However, doing more “Jesse Stone” films will be tricky. It will have to pick up 10 years later, which could be exciting with skilled writing. Then there’s the question of who would air it ... CBS or the Hallmark Channel? We’ll have to wait and see; after all, nothing is written in stone!

After playing Roxie Hart on Broadway in “Chicago” in 2022, her agents were desperate to find a vehicle for her comeback. But when her agent canned the script for “The Last Showgirl,” it was screenwriter Kate Gersten’s determination to have Anderson in the role that made it happen.

We just finished another Super Bowl weekend, and if you know me, you know I’m all about the game every year for two reasons: the commercials and the food! I don’t care who makes the most baskets! (Please know I’m kidding ... mostly.) Any excuse to host a party, right? And what’s a game day party without a big, cheesy platter of nachos?
This year I skipped the basic chips-and-cheese routine and leveled up with Pulled Pork Nachos -- the ultimate crowdpleaser. Sweet, savory and spicy, these nachos hit all the right notes. Imagine layers of saucy pulled pork, black beans, jalapenos, BBQ sauce, melty cheese and dollops of sour cream piled high on crunchy tortilla chips. It’s a touchdown of flavor!
I love making a great big batch of pulled pork -- it’s the gift that keeps on giving. One roast can fuel a bunch of meals: pulled pork sandwiches, tacos, burritos, pork verde stew, or served simply with rice and veggies. And, of course, these nachos.
To make these nachos fabulous without overspending, add more black beans, pinto beans or refried beans to bulk up the dish and stretch your protein. Add any leftover roast veggies, cooked chicken or hamburger to the platter.
EASY PULLED PORK
Yield: 6-8 servings
Total Time: Varies by method
4-5 pounds pork shoulder, cut into 4 pieces
1 teaspoon salt
1/2 teaspoon black pepper
1 onion, chopped
1 cup BBQ sauce
1 cup chicken broth
Ways to Cook: Instant Pot: Season pork with salt and pepper. Set Instant Pot to Saute, brown pork on all sides. Add onion and cook briefly. Pour in broth and BBQ sauce; stir. Seal lid; cook on high pressure for 60 minutes. Natural release for 10 minutes; shred pork.
Oven: Preheat to 325 F. Season, then brown the pork in an oven-safe pot. Add onion, broth and BBQ sauce. Cover;

Slow Cooker: Season pork; place in slow cooker. Add onion, garlic, broth and BBQ sauce. Cook on low for 8 hours or high for 4-5 hours. Shred pork; combine with sauce.
PULLED PORK NACHOS
Yield: 4-6 servings
Total Time: 15 minutes
1 large (15 to 20 ounce) bag of tortilla chips (store brand is fine)
3 cups shredded, pulled pork
1/2 cup BBQ sauce (homemade or store-bought)
2 cups shredded cheddar cheese (or a cheese blend)
1 (15 ounce) can black beans, drained and rinsed
1/2 red onion, thinly sliced
1/2 cup red bell pepper, chopped
1/4 cup pickled jalapenos (or more, to taste)
1/4 cup sour cream or ranch dressing (optional drizzle)
Fresh cilantro, green onions, sliced tomatoes and limes wedges (optional garnish)
Preheat oven to 375 F. Spread tortilla chips evenly on a large sheet pan.
Toss the shredded pork with BBQ sauce until evenly coated. Distribute over the chips. Sprinkle the shredded cheese generously over the meat and chips. Distribute the black beans over the cheese. Scatter sliced red onions and pickled jalapenos over the whole thing.
Place in the oven for 8-10 minutes or until the cheese is melted and bubbly, and everything is toasted up nicely.
Remove from the oven and drizzle with sour cream and/ or ranch dressing (optional). Sprinkle with fresh cilantro and/or other toppings as desired.
