ITALIAN CRUSTED SALMON WITH CREAMY TRUFFLE CAESAR SALAD
Prep time: 10 minutes
Cook time: 20 minutes
Servings: 2
1 clove garlic, minced
1 teaspoon lemon juice
2 teaspoons chopped, fresh rosemary
1/2 teaspoon honey
1/4 teaspoon salt
3 tablespoons panko breadcrumbs
3 tablespoons finely chopped walnuts
1 teaspoon olive oil
2 salmon fillets nonstick cooking spray
1 bag (9.3 ounces) Fresh Express Twisted Caesar Creamy Truffle Caesar Chopped Kit Salad
2 lemon wedges (optional)
Heat oven to 425 F. Line sheet pan with parchment paper.
In small bowl, combine garlic, lemon juice, rosemary, honey and salt. In another small bowl, combine breadcrumbs, walnuts and olive oil.
Place salmon on prepared sheet pan. Spread mustard mixture over fish; sprinkle with panko mixture, pressing to adhere. Lightly coat with nonstick cooking spray.

In large bowl, toss zucchini and olive oil to coat. Season with salt and pepper, to taste.
Place zucchini on grill pan; grill 4-5 minutes until just tender. Top zucchini with cheese and cook until cheese melts, 1-2 minutes.
Remove from grill and place on plate or large platter. Top cheesy grilled zucchini with salad blend; corn; black beans; tomato; green and red onions; jalapeno, if desired; avocado; cilantro; and sour cream.

HOMEMADE GELATIN IN CITRUS BOWLS
Citrus Bowls: First, prepare the scooped-out citrus halves. Choose two or more of the following depending on size: oranges, lemons, limes or grapefruit.
Cut fruit in half evenly lengthwise or around the circumference. Insert a paring knife just between the white pith and the fruit in each half, then remove the fruit pulp to form bowls. (Use removed fruit for salads or snacking as desired.)
For stability, set empty citrus bowls perfectly upright into small bowls or in sections of a muffin tin. If citrus bowls are wobbly, carefully trim a bit off of the base, being careful not to pierce all the way through. Set them aside while you prepare the gelatin.
Homemade Fruit Juice Gelatin:
Makes 4-6 servings
2 cups pure, 100% fruit juice
1-2 tablespoons honey
2 (1/4-ounce size) envelopes unflavored gelatin (such as the Knox brand)
In a medium-sized saucepan, heat 1 1/2 cups of juice. Bring to a boil and remove from heat.
While juice is heating up, stir remaining 1/2 cup of juice into two envelopes of unflavored gelatin in a medium bowl with a spout and let stand for 1 minute. Add the hot fruit juice and stir until the gelatin is completely dissolved. Then stir in honey.
Cool slightly and pour into the preprepared citrus bowls. Refrigerate until firm.
When set, serve with a spoon and eat the gelatin right out of the citrus bowl. Or slice into wedges with a sharp knife.
Alternate Idea: Use 1 (3-ounce) box of gelatin such as the Jell-O brand as an alternative to homemade gelatin. Use the Jigglers recipe on the side of the box for firmer gelatin. ***

INSURANCE PREMIUM DISCOUNT
If you have life insurance through the Department of Veterans Affairs, you’ll be pleased about what’s coming in 2025: a discount in your premiums. Whether you are insured with Veterans’ Group Life Insurance (VGLI), Servicemembers’ Group Life Insurance (SGLI) or Family Servicemembers’ Group Life Insurance (FSGLI), your premiums will be discounted in varying amounts. For veterans covered under VGLI, your costs will go down somewhere between 2% and 17%, with most averaging around 11%, depending on your age. Spouses who receive coverage via FSGLI will see discounts between 11% and 22%, depending on age.
Active duty and those covered under SGLI will see a cost reduction of one cent per every $1,000 of coverage, bringing the cost of maximum coverage ($500,000) down to $25 per month.
And no, you don’t have to ask for it. These discounts will be automatic. There are others types of insurance through the VA as well. See www. va.gov/life-insurance for information on eligibility, and the other forms of insurance that are available, such as mortgage life insurance (if you have a service-connected disability and a specially-adapted home), whole life insurance (if you have a service-connected disability), group life insurance (after you’re out of the service) and Traumatic Injury Protection (if that ever becomes necessary after an injury). If you’re already covered and want to check your policy, pay the premium, see the details of your insurance or change beneficiaries, you can do that online. However, accessing your policy online depends on the type of policy it is. Heavy metals in our dark chocolate
It appears that our beloved dark chocolate candy bars can contain dangerous amounts of lead and cadmium -- the dark chocolate we intentionally chose for its health benefits like lower blood pressure and antioxidants that protect cells from damage.
Consumer Reports did research to test the levels of lead and cadmium in dark chocolate candy bars. Of the 28 different dark chocolate bars they tested, all of them had lead and cadmium. Specifically, their tests were to look for mercury, lead, cadmium and arsenic, all heavy metals. The result: 23 of the dark chocolate candy bars had enough heavy metal in them that eating just one ounce of the candy would be harmful. For those of us who’ve believed that a little daily dark chocolate would benefit our health, it turns out all that heavy metal could lead to immune system suppression, kidney damage and more. Still, there were the five
remaining bars that had levels low enough to be safer. Not completely safe, but safer. They later did tests on an additional 48 chocolate products in several categories: chocolate chips, cocoa powder, brownie mixes, cake mixes and hot chocolate mixes. Of the 48 products, 16 of them had concerning amounts of heavy metals. However, they did find safer options for each item. How do we get the benefits of dark chocolate without putting our health at risk from the heavy metals? Don’t eat it every day, they say. Pick something with lower levels of the lead and cadmium.

HOLLYWOOD -- Austin Butler’s just completed the black comedy “Eddington” with Pedro Pascal and Emma Stone. He is now shooting the crime thriller “Caught Stealing” with Zoë Kravitz, Regina King, Matt Smith, Liev Schreiber and Bad Bunny.
Kravitz (Catwoman in “The Batman,” opposite Robert Pattinson) recently directed “Blink Twice,” with her ex-paramour Channing Tatum, plus Christian Slater, Simon Rex, Kyle MacLachlan and Geena Davis. It opened in
late August 2024 and grossed a modest $46.4 million against its $20 million cost. “The Batman 2,” again with Pattinson, is now slated for 2027. “The Batman” (2022) cost $200 million and grossed $773 million.
Director Luca Guadagnino (whose “Queer” movie starring Daniel Craig has only grossed $3.2 million against 48 million euros) recently cast Butler as Patrick Bateman in his remake of “American Psycho” (the original starred Christian Bale in 2000). Guadagnino says that it’s not a remake but a new adaptation. Is Butler ready for such a demanding role? ***
Tom Holland’s “Spider-Man: No Way Home” (2021) cost $200 million and grossed $1.952 billion. Obviously, Holland’s chemistry with his off-screen paramour, Zendaya, transferred very well to the big screen. Add Benedict Cumberbatch, Jon Favreau, Jamie Foxx, Willem Dafoe, Marisa Tomei, Andrew Garfield and Tobey Maguire to the mix, and we had an acting fest! But what will the on-screen chemistry be when Spider-Man meets Elvis as Holland and Austin Butler square off in “American Speed” for Amazon MGM Studios?
The top-grossing film in Italy that even beat “Wicked” and “Gladiator II” at the box office was “The Boy With Pink Pants.” It tells the story of 15-year-old Andrea Spezzacatena (played by Samuele Carrino), who committed suicide after enduring bullying at school and online. The film explores the real story behind Italy’s first publicized case of online bullying that led to the suicide of a minor. Apparently, teens and families turned out in hordes to see the film, and the repeated business of teens, who’ve seen it four or five times, have driven up the grosses. (Much like our teens in the United States who see comic book epics multiple times.)

Equally depressing is the upcoming film from Barry Levinson with David Mamet’s screenplay about John F. Kennedy’s assassination. It stars Oscar winners Jared Leto, Al Pacino, Jessica Chastain and Brendan Fraser, as well as Oscar nominee Bryan Cranston. The only way they can make this different from the slew of JFK conspiracy films we’ve had before is to make it a musical!

Happy New Year! If you’re anything like me, you might feel like you need a full-body cleanse just to shake off all the pumpkin spice and peppermint bark still lingering in your system.
After all the holiday indulgence, it’s the perfect time to hit the reset button with lighter, healthier meals. And what better way to start than with citrus? Lucky for us, it’s citrus season! It’s peak season for these tangy, vibrant fruits. They’re at their juiciest and most affordable, making them ideal for a budgetfriendly detox.
One of my favorite ways to enjoy citrus is in a refreshing winter citrus salad. It’s a simple but satisfying combination of greens, citrus segments and a sweet and tangy vinaigrette that ties it all together. The dressing is a mix of orange juice, honey, a hint of mustard, apple cider vinegar and olive oil. It’s so delicious, so easy to make ahead and keep in the fridge.
To prepare, I cut up a variety of colorful citrus the night before -- blood oranges, grapefruits, mandarins, cara cara oranges or whatever’s on sale -- and store them in the fridge. When it’s time to eat, I toss the citrus with greens, fresh mint or parsley, nuts like almonds or pistachios, and a sprinkle of pomegranate seeds. Sometimes I add grilled chicken or fish for a protein boost, but it’s just as delightful on its own or as a side dish.
How to Supreme Fruit for Citrus Salad
For an elegant flair, slice 1/2 inch from the top and bottom of each citrus fruit, then stand them upright on a cutting board. Use a sharp paring knife to carefully slice away the peel and pith, following the curve of the fruit. Cut along each membrane to gently release the citrus sections, known as supremes, for a beautifully refined touch. Squeeze the juice from the leftover citrus membranes into a measuring cup or small bowl to make the vinaigrette, recipe below.

4 tablespoons orange or mixed citrus juice
1 lime, juiced and zested
2 tablespoons apple cider vinegar
2 tablespoons honey
1 teaspoon Dijon mustard
1 small clove garlic, minced or pressed
1/4 teaspoon kosher salt
1/4 teaspoon black pepper
1/2 cup extra virgin olive oil
For the Salad:
6 to 8 cups lightly packed mixed greens
2-3 navel oranges (or blood oranges or cara cara oranges), sliced into supremes
1 grapefruit, sliced into supremes
1/2 small red onion, thinly sliced
A handful of fresh mint or parsley, torn
4 tablespoons pistachios (optional)
1/2 cup pomegranate arils (optional)
Grilled chicken or fish (optional)
Make the dressing: In a small bowl or jar, whisk together the orange juice, lime juice, vinegar, honey, Dijon mustard and minced garlic. Season with salt and pepper. While whisking, slowly drizzle in the olive oil. Give it a taste and adjust the seasoning with more salt, pepper or a touch more honey if needed. Yield: approximately 1 1/3 cups.
Assemble the salad: Toss the mixed greens with some of the dressing, then spread them on a platter. Top artistically with citrus, red onion and fresh herbs. Sprinkle with pomegranate arils and pistachios for added crunch.
To serve: Drizzle the dressing over the salad and serve immediately.
