reshen up your holiday eats this year at Till Farm-Inspired Open Kitchen and Mercantile in the Briargate area of Colorado Springs. The stunning 17,000 square foot farm-to-table open kitchen and market features artisan-crafted meals and light bites that are regionally and sustainably sourced. Upon entering the open kitchen, guests are greeted by a beautiful wood fire pizza oven. Even the sourdough for the delectable selection of sourdough pizzas is made using wild yeast that was born and bred here in Colorado Springs. Because the hand-crafted sourdough ferments for three to five days, it makes the bread easier to digest; even for many who are gluten-sensitive. Till uses an open kitchen concept so guests can see everything in operation

as their food is prepared. “The chef’s counter is my favorite place to seat guests. We are not trying to hide anything. We don’t have to worry about people seeing us opening packages of frozen and premade food and throwing it in the microwave, because we do not do that,” says Mike Ortelle, Director of Retail Operations. “You see us putting raw meat on the grill to cook a burger to your taste, and cutting fresh veggies and fruit on a wood block for your salad and carefully placing fresh fish into your sushi.” All the fish used on-site is flown in fresh every day from Santa Barbara, CA. The restaurant pays a premium for the fresh-caught salmon, crab and more to be flown in, but guests celebrate the top-notch quality. The kitchen works directly with many local and regional farms and

purveyors for its meat and produce, including Corner Post Meats, Arkansas Valley Organic Growers, Milberger Farms, Black Forest Aquaponics and One Town Farm. Till buys the whole chicken from the farm and breaks it down right in the shop, consciously using every part for different menu items. The same sustainable concept goes for the beef and pork, “We don’t purchase filet mignon or rib eye every day because it’s not sustainable,” says Ortelle.

“If you have a herd of cattle you can’t just use one part every time. We want to be conscious of using the whole animal.” The restaurant serves a Colorado cut of the day, which may be a hangar steak, ribeye, filet mignon or flat iron, depending on availability. Some everyday menu favorites include pecan smoked beef short ribs, house made bread with whipped honey butter, and pancetta, pecorino, crema, egg and black pepper sourdough pizza. Guests also have the option to sit at the exquisite bar and enjoy a nice beverage from a local distiller, or even lounge on the heated patio with fireplace that overlooks Pikes Peak and the Front Range. The bartenders use Axe and the Oak bourbon and whiskey and other locally-sourced spirits to craft thoughtful, homemade drinks. There is also a wide selection of local beers as well as an extensive and enticing wine list. On Saturdays and Sundays starting at 10 a.m, Till Kitchen serves a fantastic brunch. Offerings include mimosas, quiche of the day, hash of the day, eggs, biscuits and gravy, gluten-free cast iron pancakes and even lesser-known items like chilaquiles, a traditional Mexican breakfast food. The mercantile end of the space focuses on cakes, French macarons, gelato, croissants and breads that are made fresh by hand daily. Also in this area of the building is The Roost at Till, which boasts a fast casual dining and community-oriented atmosphere using the same local-centric and region-centric approach. The Roost features grab-and-go pastries, steel cut oats, breakfast sandwiches, paninis, fresh squeezed juice and coffee from the local Switchback Coffee Roasters, among many other items. “This city deserves a place where people can go enjoy the freshest food,” says Ortelle. “Everything we make in our market and kitchen is all touched by human hands, and that has a purpose and a passion behind it. 2. A CARBON STEEL PAN

Blend the gravy using either an immersion blender in the saucepan or transfer to a blender and pulse for 20 to 30 seconds. If using a blender, return the gravy back to the saucepan once blended. Brussels sprouts and cranberries are a colorful, warm dish. Roast trimmed Brussels sprouts in the oven on 400°F for 20 — 30 minutes. Toss with dried cranberries and balsamic vinegar. You can then combine this delightful mix with a hearty cooked grain, such as quinoa or barley or serve along-side one of the many alternative roasts now in almost every grocery store in Colorado Springs: Celebration Roast by Field Roast, Holiday Roast by Gardein or the original Tofurky Roast.

Last but not least, let’s not forget the sweets! Serve a simple fruit platter for something uber-healthy or swap out vegan butter in your favorite baked goods. And for a special challenge, take a family favorite dessert and health it up a notch. Like I did for my own family:
UNCLE WAYNE’S COOKIES Recipe by JL Fields
1 cup vegan butter 1 tablespoon vanilla extract 2 cups all-purpose flour, sifted 1/3 cup powder sugar, sifted and packed 1 cup chopped (very fine) pecans Extra sifted powdered sugar

Heat oven to 350F. Cream the butter. Add vanilla and continue mixing. Slowly add flour, and then powdered sugar, and mix well. Mix in the pecans. Bake for 15 minutes (sea level; at 6,000 feet I had to bake them for 22 minutes) While warm, roll each cookie in powdered sugar and then let cool in a baking rack. These cookies are great right out of the oven; they also freeze extremely well.

Harding Nursery, Inc. has everything needed to adorn a home with fresh, native greenery this holiday season. The nursery has been a special part of the Colorado Springs community since 1957. The main nursery on Powers Boulevard has more than twelve acres of stock and many greenhouses, which is a joy to explore during the holidays with family or friends. East of Colorado Springs, they have more than 160 additional acres of growing fields and additional greenhouses. Owner and manager Kristen Burnside shares her holiday tips for bringing locally-grown plants into the home to help deck the halls.
FOR THE STAIRWAY
The nursery has an abundance of Douglas fir and white fir garland made on-site from Colorado-grown fir trees. The fresh garland can be wrapped along the stairway and decorated with lights, bows or ribbon. Another option, for those looking for something a bit more unique, is to place decorated sprigs evenly-spaced and vertically along the staircase. At either side of the base of the
stairs place a decorated, potted Christmas tree. A wide variety of both live and artificial potted trees are available at the nursery. Live trees should be brought into the home ten days prior to Christmas and watered with ice cubes.
FOR THE FIREPLACE
Again, around the fireplace it is festive to decorate with fir garland and even berry garland with big bows. The shop at the nursery sells a variety of stockings and wonderful stocking stuffers as well. For an aromatic touch, it’s a smart idea to place pine cones with a cinnamon scent on the mantle, so that as the fire heats it up, the aroma is released into the air.

Real vs. Fake CHRISTMAS TREE DEBATE Everyone has a preference, but is one better than the other?

illions of households throughout the country will complete their festive dÊcor with the iconic Christmas tree, dazzled with ornaments and a shining star on top. For some, getting a real Christmas tree is what the holiday is all about. But for 80 percent of Americans, fake trees are the clear choice, according to the American Christmas Tree Association (ACTA). This number can be shocking, considering the traditional nature of real trees, but many just don’t want to deal with the upkeep during an already busy time. But which is better? This depends entirely on who you are asking.
FROM AN ENVIRONMENTAL PERSPECTIVE
People often feel that by reusing an artificial tree year after year, with many families using the same tree for a decade, that they are making an environmentally sound choice. The truth is, artificial trees are typically made from non-renewable polyvinyl chloride (PVC), a petroleum derived plastic that is known to be hazardous to the earth. Additionally, around 85 percent of fake trees are
transported all the way from China, where environmental standards are not as stringent. As of late, there have been more eco-friendly trees hitting the market, so look out for brands that are made from injection-molded polyethylene (PE) and ensure the packaging states the tree is 100 percent PVC-free. Whether PVC or PE, however, artificial trees cannot be recycled, are not biodegradable and will ultimately make their way into a landfill.But what about cutting down trees? Christmas trees are farmed, not taken from a forest. Farms typically adhere to sustainable practices, and are situated on land that is unsuitable for other crops. Seedlings are planted directly after a tree is removed; typically two-three seedlings for every tree cut down. On top of that, these tree farms emit oxygen and absorb carbon dioxide, all while stabilizing the soil and providing shelter for wildlife. Perhaps most significant is how recyclable they are. After the holiday,
trees are collected and fully recycled into mulch and wood chips.

PVC is not only toxic to the environment, but to human health. PVC is considered the most toxic plastic out there. The chemical used to make PVC is called Vinyl chloride, and a simple internet search can reveal that this is a known carcinogen. Typically, lead and other additives are used in the making of fake Christmas trees as well. Studies shows that these additives can cause damage to the liver and kidney, as well as the reproductive and neurological systems. As you put the tree out year after year and the materials degrade, dangerous particulates may be released into the air. In addition, with the absence of the natural Christmas tree scent, many families will use sprays and candles, which are often made with more artificial ingredients. Real trees do not pose these threats, as they are 100 percent natural.
FROM AN AESTHETIC PERSPECTIVE
This is where it gets a bit murky as far as which is best. Some would argue that the authenticity and true pine scent that fills the entire home makes a real tree more beautiful and special for all the senses. Those people may not be so bothered, then, by the pine needles that fall to the floor every single day and the water spills on the carpet from watering it. Others find the perfectly symmetrical, full and vibrantly green artificial trees to be more visually appealing and virtually hassle-free.

Many families see artificial trees as a great holiday investment. According to a survey conducted by Nielsen on behalf of the ACTA, consumers will, on average, pay around 80 dollars for an artificial Christmas tree. The poll on nearly 20,000 households also found that a real tree puts consumers back approximately $45 annually. It’s clear that, from a financial standpoint, artificial trees make more sense. They don’t require watering or yearly transport. Over a ten-year span — the average length of time consumers expect to keep a fake tree — only $80 will be spent. Meanwhile, those who go out to buy a real tree will drop about $450 over a ten-year span. However, the precious memories made when looking for that perfect Christmas tree with loved ones and hauling it home together can make every last dime worth it.

T
he word carol comes from the French word carole, meaning circle dance or song of praise and joy. In 1223, Saint Francis of Assisi started putting on musical plays in which the majority of the songs were written in the language of the common people. Because of his efforts, the singing of Christmas carols began to spread throughout Europe. Most of these carols were lighthearted stories or scripture-based songs sung cheerfully in churches, homes and streets. The Colorado Dickens Carolers have been singing together for many years. All performers in the group are professional musicians and have experience singing for TV station parties and the Philharmonic Christmas party. Throughout the holiday season the group can be found at The Broadmoor hotel, Cheyenne Mountain Resort, many private parties and at popular shopping destinations for people hustling to pick up those last gift items.
Their specialties range from traditional sing-along carols to a capella swing arrangements of cherished Christmas tunes. here is an ongoing chain reaction of kind-heartedness in Colorado Springs that lifts spirits yearround and during the holidays. Let’s follow the chain starting with Care and Share, who has been serving Colorado Springs since 1972. The food bank provides millions of pounds of food to nonprofit agencies throughout Southern Colorado. “We are not in a position as a country or a state where there isn’t food available, it’s just a matter of having the resources and facility to bring in that food and distribute it to those who need it,” says Shannon Brice, Marketing and Communications Director for Care and Share. The food bank works in conjunction with Feeding America, who has created relationships with Tyson, Kroger, Del Monte and many others. “When a food manufacturer makes a mis-

take in labeling that prevents them from selling a product at the grocery store, that food is still perfectly consumable,” says Brice. What Care and Share does is take in these food products — which would have otherwise ended up in a landfill — properly labels and distributes them to food pantries and other nonprofits in and around Colorado Springs. “We are one of the food pantries that gets commodities and food directly from Care and Share,” says Lorri Orwig, Chief Development Officer from Silver Key Senior Services, Inc. About 1,200 people a month come and receive food items from their pantry, in addition to personal hygiene items and pet food. “If a senior is having trouble paying for their own food, chances are they’re having a hard time buying pet food as well,” says Orwig. “In many cases their pet may be the only companion they have.” Silver Key is a local nonprofit that, since 1971, has been helping to reduce isolation and loneliness for seniors in the community. The organization provides seniors with transportation, groceries, case management services, financial assistance, and daily hot and homemade meals via Meals on Wheels or at their restaurant-style dining room where individuals gather to socialize and enjoy a freshly made lunch. “The food is delicious,” says Anita, who sits at a table with her friends as they delight in the chili, baked potato and salad. Monday will be BLT and tomato bisque soup. Lena, who is also at the table, says, “You can come and get help if you need assistance or commodities. They even entered me into a foundation and paid for my dental work when I needed it.” Sometimes clients may hit a bump in the road, and Silver Key provides them with financial assistance that enables them to re-stabilize. At the next table over sits Viola, Alvin, Gordon and Duane, who join hands and bow their heads in a prayer before beginning their meal. Viola and Alvin are married, and visit Silver Key’s dining room about three times a week. “I love that I don’t have to cook, and the food is great,” says Viola. Seniors get a chance to come together, be served a nutritious lunch and share their talents with one another. Gordon, an artist since age eight, shows photos of his art work, and takes out his harmonica to play a tune for the table. Both Silver Key Senior Services and Care and Share are recipient agencies of The Gazette-El Pomar Foundation Empty Stocking Fund (ESF). During the past 32 years, ESF has raised more than $17 million to help meet the growing demand for services in the Pikes Peak region. Each year, 100 percent of the funds directly benefit 20 local health and human services agencies on the front lines of helping people in need and assisting others in achieving self-sufficiency. “The money we receive from ESF goes directly to support our operating expenses,” says Orwig. “The beautiful thing is those dollars are unrestricted, so we can use the funds from ESF to fill in the gaps in our expenses.” ESF provides nonprofit agencies with the support needed to continue to make a difference in the community at large. W
hen she brought her son and his five children into her home last summer, grandmother knew she was doing the right thing. She was reuniting her son’s oldest child, who is 14 and had lived with her for the past seven years, with the rest of the family and removing the entire bunch from a life where illegal drug use was rampant. Shortly after, when she discovered her son’s habits had not changed, she removed him from her home and held fast to his six children. Grandmother, who is single, works full time, is already caring for one teenage grandchild, and has 15 year old twins of her own, was now caretaker for five additional children. These grandchildren range in age from three to six years old, including a set of five year old twins. All of their education and experiences to this point had come from television. Their speech, vocabulary and behavior were well behind what is appropriate for their ages. Their diets were terrible, and their teeth were awful. Grandmother received information from the Colorado Child Care Assistance Program and began searching for a place to care for her five youngest grandchildren. No one was able to accommodate them in one location. She was picturing her already busy schedule, with her grandchildren’s doctor and dentist appointments, saddled with driving all over town picking up her grandchildren at the beginning and end of each workday. Then, someone mentioned Early Connections Learning Centers. Early Connections was able to accommodate all five children and at one location. She had never worked with a child care center be-

fore and was nervous and unsure of what to expect. She was pleasantly surprised when, at the first meeting with the children’s teachers, they asked questions like, “What goals do you have for the children? What are your biggest challenges?” She was relieved to find support and care for her grandchildren from people who were genuinely concerned about their health and success.
The five preschoolers have been enrolled with Early Connections since February. She says there have been so many improvements; she couldn’t possibly list them all. Their behavior has improved, they’ve learned and adapted to routines like meal times, brushing their teeth and naptimes. They are learning the differences between making good and bad choices. The children come home talking
about everything they learned that day and are excited to share their stories. Grandmother was surprised one day to find the youngest, a three-year old, singing her ABCs and tying her shoe, “Like it was something she had always done.” Grandmother says it is the communication and caring of the staff that truly makes the difference in their lives. Early Connections “looks at them as individuals and recognizes their individual strengths,” she says. Since enrolling these five grandchildren at Early Connections and experiencing their incredible growth and results, she convinced another son to enroll two other grandchildren as well. She is confident that her grandchildren are all receiving healthy meals, high quality educational instruction and behavioral guidance, making friends and having fun. This story is not a singular occurrence. Early Connections cares for 350 children each day around Colorado Springs in six locations. Not every family has this type of story. Many families enroll their children with Early Connections to receive the high quality early care and education provided. Early Connections Learning Centers is accredited by the National Association for the Education of Young Children; a status achieved by a very small percentage of early education organizations in America. n partnership with Positive Exposure, a non-profit organization founded by award winning fashion photographer Rick Guidotti, The Resource Exchange (TRE) is presenting an extraordinary photo exhibition at Chapel Hills Mall. In September, Guidotti conducted a two-day photo shoot in Colorado Springs of over thirty-five local individuals with intellectual and developmental disabilities, which are featured in “Positive Exposure: The Spirit of Difference” exhibit. This unique exhibit, created to increase awareness and acceptance, and to display the talents and abilities of people of all ages and differences is open to the public through December 31. Guidotti worked in NYC, Milan and Paris for a variety of high profile clients including Yves St Laurent, Revlon, L’Oreal, Elle, Harpers Bazaar and GQ. He took photographs of what were considered the world’s most beautiful people. One day, a chance encounter on a Manhattan street changed everything. He saw a stunning girl — a girl with pale skin and white hair, a girl with albinism. Guidotti then began a process of discovery about albinism, people with genetic differences and about himself. The portrayals that he saw of people with developmental differences were sad and dehumanizing. In medical textbooks children with differences were seen as a disease, a diagnosis first — not as people. So he turned his world upside down — he stopped working in the fashion industry and created a not-for-profit organization named Positive Exposure. “In fashion I was always frustrated because I was told who I had to
photograph. I was always told who was beautiful.” It became clear to him that it was essential for people to understand and see the beauty in our shared humanity. But how do you lead people down a different path? How do you get people to see those with differences not as victims, but kids and people first and foremost? The pity has to disappear. The fear has to disappear. Behavior has to change. These kids need to be seen as their parents see them, as their friends see them; as valuable and positive parts of society, as beautiful. The photos give people the permission to see beauty and interpret beauty in their own right. Not to see beauty that is dictated by industry’s ideas of what is acceptable. THIS HOLIDAY SEASON CARE AND SHARE FOOD BANK FOR SOUTHERN COLORADO
Volunteers are needed to help Care and Share Food Bank prepare for the busy holiday season! Help us sort food and box it up for distribution to our more than 300 partner agencies throughout Southern Colorado. We can accommodate small and large groups, families and individuals. ECUMENICAL SOCIAL MINISTRIES
Ecumenical Social Ministries (ESM) has one of the most active food pantries in Colorado Springs. Pantry volunteers are needed year-round! We plan to provide families with Christmas Food Baskets on December 21, 2016 and will need volunteers to assist with packing and distributing these nutritious meals for the holidays.
