TRIVELLI’S HOAGIES 2819 N. Nevada Ave., 471-7733, trivellis.net The Callicrate beef is thinly sliced and simmered to melt-in-your-mouth tenderness. Piled high on a soft hoagie roll and topped with American cheese and fried onions — this is a five-napkin meal. At the new location you can enjoy the well-seasoned beef sandwich seated at a booth. $5.89 (6 inch), $11.78 (12 inch).

Chili Relleno

VALLEJO’S RESTAURANT 111 S. Corona St., 635-0980, facebook.com/vallejosrestaurant A chili relleno is my test for any Mexican food restaurant. And my gold standard for comparison is served only on Fridays at Vallejo’s. The unique recipe has been made by the Vallejo family since 1962. Lydia Vallejo Martinez, who rules the kitchen and keeps the recipes authentic, shops for the best Anaheim chilies to stuff with cheese and batter up for frying. The two pockets of gooey dairy are made to order, smothered in green chili and served with rice, beans and either corn or flour tortilla. I plan my visits for noon because the Friday special usually runs out before dinner service. $10.

Tejon St., 203-6700, couturesbistro.com Wahid and Stacy Hafsaoui, who expanded their Paris Crepe eatery to share kitchen space with the new bistro, bring a bolder expression of their Mediterranean-styled cuisine in the sophisticated bigger sister restaurant. The huge, fall-off-the-bone lamb shank featured in the tajine is bathed in a sauce of exotic North African spices with roasted vegetables sharing space on the plate. Whole olives deliver salty balance to the flavorful entree. $24.

COQUETTE’S BISTRO AND BAKERY 321 N. Tejon St., 685-2420, coquettesbistroandbakery.com Raise your hand if you remember the Monte Cristo sandwich served at the legendary J. Maurice Finn’s back in the day. These sandwiches — grease bombs, really — were a favorite treat in the mid-’70s at the now-defunct restaurant, which was in what is now MacKenzie’s Chop House. You’ll find a pretty close approximation of the fried sandwich with layers of ham and Swiss cheese at Coquette’s. The chef builds the sandwich using a signature gluten-free hoagie as the base. The whole thing is dipped in pancake batter before it gets a bubbly bath in the fryer. The crispy fried mound is dusted with powdered sugar and is served with a dish of strawberry jam for dipping. Truffled French fries with that? Sure. Why not? $10.

Nevada Ave., 598-2969, overeasycolorado.com Several things set this corn tortilla-based egg dish apart from other huevos rancheros, starting with the red chili. It’s a deep bricky red sauce that is as good as any New Mexicostyle enchilada sauce. The green chili sauce is delicious, too. The cotija cheese adds just the right tangy zing to the meal. Black beans and avocado complete the dish as tasty sides for soaking up the oozing over easy fried eggs. You won’t soon forget the extra crispy hash browns to drag through the final bites of sauce. $8.99
