Red Monster Soup

Ingredients
Onion, chopped Olive oil Carrots, chopped Tomatoes, chopped Bay leaves Thyme Parsley Sugar Chicken or vegetable broth, canned, reduced sodium Yogurt, plain, low-fat Pepper, black

Instructions:
1. In a large stockpot, saute onion in olive oil over medium heat, until clear (about 5 minutes). 2. Add broth, carrots, tomatoes, bay leaves, thyme and parsley. 3. Allow to simmer for 25 minutes. 4. Allow soup to cool. 5. Stir in sugar, pepper and yogurt
