Basic Ingredients, Great Food BUTTERMILK-BRINED FRIED CHICKEN Servings: Makes 6 servings. Prep: 30 minutes Total: 2 hours 42 minutes
Ingredients: ·3 cups buttermilk ·1/3 cup coarse salt ·2 tablespoons sugar ·2-1/2 to 3 pounds meaty chicken pieces (breast halves, thighs, and drumsticks) ·2 cups all-purpose flour ·1/4 teaspoon salt ·1/4 teaspoon ground black pepper ·3/4 cup buttermilk ·Cooking oil
Directions: 1. For brine, in a resealable plastic bag set in a bowl combine the 3 cups buttermilk, the coarse salt, and sugar. Cut chicken breasts in half crosswise. Add all chicken pieces to the brine; seal bag. Chill for 2 to 4 hours; remove chicken from brine. Drain chicken; pat dry with paper towels. Discard brine. 2. In a large bowl combine flour, the 1/4 teaspoon salt, and pepper. Place the 3/4 cup buttermilk in a shallow dish. Coat chicken with flour mixture. Dip in the buttermilk; coat again with flour mixture. 3. Meanwhile, in a deep, heavy Dutch oven or kettle or a deep-fat fryer, heat 1-1/2 inches oil to 350 degrees F. Using tongs, carefully add a few pieces of chicken to Dutch oven. (Oil temperature will drop; maintain temperature at 325 degrees F.) Fry chicken for 12 to 15 minutes or until chicken is no longer pink (170 degrees F for breasts; 180 degrees F for thighs and drumsticks), and coating is golden, turning once. Drain on paper towels. step by step 1 Heat oil in a large nonstick skillet or Dutch oven over medium-high heat. Add sesame seeds, garlic and ginger; cook, stirring, until fragrant, about 30 seconds. Add spinach and cook, stirring, until just wilted, about 2 minutes. Remove from heat; stir in vinegar and soy sauce. Serve immediately.
Tips: 1 Ingredient Note: The sturdier texture of mature spinach stands up better to sauteeing than baby spinach and it's a more economical choice. We prefer to serve baby spinach raw

PLENTY FANCY Finding a good recipe is a little like discovering a hidden treasure - when the right ingredients come together in a delicious breakfast, lunch, or dinner recipe, you want to hold on to the magic. Cooking, after all, is a skill most of us use every day, and the value of a quick and easy recipe that tastes good can't be overstated. HOW TO COOK MUSHROOMS what you'll need: ·5 tablespoons extra-virgin olive oil ·1 pound white or cremini mushrooms, washed well, trimmed, and cut into quarters (or sixths, if large) · Kosher salt ·5 - 6 medium medium cloves garlic, minced (1-1/2 tablespoons) ·1 tablespoon sherry vinegar ·2 tablespoons chopped fresh parsley
1 Heat the oil in a 12-inch skillet over high heat until it's hot and shimmering. Add the mushrooms, season with 3/4 teaspoon kosher salt, stir to coat in the oil, then let the mushrooms cook undisturbed until the liquid released by the mushrooms evaporates and they're deep golden brown, 5 to 7 minutes. Stir and continue sauteing, stirring occasionally, until most sides are nicely browned, 3 to 5 minutes more. 2 Reduce the heat to medium, add the garlic, and cook just to soften it, 15 to 30 seconds. Add the vinegar and stir, scraping the bottom of the pan, until the vinegar evaporates, about 15 seconds. Remove the pan from the heat and toss in the parsley. Season to taste with more salt, if you like. Transfer to a dish and serve with toothpicks for spearing the mushrooms or a serving spoon for putting on individual plates You can serve these sweet and garlicky mushrooms as a side dish, snack or hors d'oeuvre. Or you can just eat them straight from the pan with a piece of crusty bread to dip into any remaining delectable juices. These go fast, so now that you know how to cook mushrooms, consider doubling the recipe.

Partial Knee Replacement May Be Safer Than Full Surgery
A new study finds that partial knee replacement surgery, where only the damaged parts of the knee get swapped out while the healthy ligaments remain intact, is much safer than total knee replacement. Both types of surgeries are most often given to people who suffer from severe osteoarthritis in the knee. But when it comes to the risks involved, they are not equal. Even though patients who have partial operations are 40 percent more likely to need more follow-up surgery than those who undergo total reconstruction, doctors from Oxford University in England have discovered some potentially scary outcomes linked to total knee replacements. According to the study, people who have a total knee replacement are twice as prone to blood clots, deep infection, or heart attack and are three times more likely to have a stroke than partial-replacement recipients. And although the risk of death following any type of knee surgery is small, you are four times more likely to die within the first month of a total reconstruction and have a 15 percent greater chance
of dying in the next eight years than someone who has a partial operation. "Total knee replacement is a bigger, longer operation with more blood loss, more bone resection, and significantly more damage to the soft-tissue envelope that surrounds the knee," says study coauthor and surgeon Dr. Alexander Liddle. "The entire knee is exposed, and the ligaments have to be 'balanced' by releasing them at their insertions. This causes more blood loss, which puts strain on the heart, and makes blood clots more likely. This translates into a much higher rate of heart attack, stroke, and death after total knee replacement. We believe that the higher mortality rate is simply a reflection of the greater likelihood of complications that put stress on the body."

Samantha resumes shooting for Murugadoss film The shooting for Vijay and Samantha starrer Kaththi would resume from Saturday in Chennai. The film is directed by AR Murugadoss and the shooting is progressing at a brisk pace. I was born and brought up in Mumbai. I got training in acting course also there itself. I have a strong ambition to become a film artiste right from my childhood.
What are your hobbies? I love reading books and gardening, badminton and I also like dancing. I like classical dance as well. I used to participate in cultural programmers' like dancing, singing, games and sports besides acting, right from my school days
Tell us about “Tappatadugu” Movie? It is a very different film. Such subjects are quite unique and I
strongly feel that such films would rarely appear on the screen. It is a fantastic subject.
Tell us about your character in 'Movie Name'? My Character name is Sita. A very bubbly looking traditional character.
How about music and the producer of this film? About the music in the film, all the songs are different from others. The music in the movie shows Sai madhukar eclectic music taste. There is so much beautiful influence of music. There is never ever relevant. He has managed to start the film with a song. The producer Sri Aarun was very cooperative and helped complete the film without any disturbance. The shoot happened as per schedule because of him. I believe that 'Tappatadugu' would give him a good break as a producer.
Tell us about your character in “Tappatadugu” Movie? I am playing the role of “Sita”. It is a very good character with shades of typical South Indian culture. It is a two dimensional character. As I already told you, the character has a lot of scope for Acting. It is a very good character and has all the elements that a heroine would expect in a film. I have got such an opportunity in this film itself. I think I am lucky for having got a chance to work in this film. When the story was narrated to me, I think out of all the characters, “Sita” character was a little biased. I love my character in the movie..

A.S.S.V Ateliers & Violet Kite productions are making their foray into movies with their debut movie Tappatadugu in Telugu & Tavaranapaathai in Tamil. The movie holds itself to a strong story line which itself is the protagonist . The characterization have been seen scripted in a way that gives each and every character a strong characterization. The artists have been seen handpicked from acting school and in theatres so that the entire depiction seemed very natural. In order to be accurate we had trained the entire actors in our workshop's where we had several rehearsals on script, acting, and other minute details of the acting. Then the revision done at the preproduction stages had eased away our process while at shoot. The shoot had been done in complete remote locates in order to have an authentic look. It had been a tedious job for our unit member while doing our location scouting . we had to travel completely to remote areas and had to also shoot our part as per our stories requirement. Our cinematography had been done by Mr. Karna who has assisted Mr.Chota K Naidu in many prestigious projects. He had done tremendous work as for as photography in concerned. Mr.Sai Madhukar had done excellent tunes for our project and had given a remarkable rerecording. This tunes will definitely haunt the listeners.
