Eat & Drink Hampshire I like to think that no other county does a food festival quite as successfully as Hampshire. This is partly due to the county’s natural bounty: Hampshire’s varied landscape encompasses coast and chalk streams, downland and farmland, heathland and woodland.

It is also partly due to our dedicated producers. Between them they create an astonishing range of food and drink from award-winning cheeses to charcuterie, and sparkling wine to smoked trout. But it is also attributable to the enthusiasm of the team at Hampshire Fare, the county food group who organise this annual, month-long and countywide celebration of local food and farming. Now in its 14th year, Hampshire Food Festival runs throughout July (running into the beginning of August) and really does offer something for everyone including families and foodies. The extensive diary of events has regular favourites such as brewery, farm and vineyard tours, demonstrations and cookery classes, tastings and picnics, markets, fetes and fairs. But there are new additions such as steamship cruises to Bembridge on the Isle of Wight and a wine festival held in a vineyard. Pubs and restaurants will also be serving up special Festival menus showcasing local ingredients. We are delighted to invite you to come and discover Hampshire through its food and drink... You will appreciate just what a very special county we have here, and have some memorable fun and feasting at the same time, too.

Welcome to the Hampshire Food Festival from Angela Hartnett and Luke Holder To be asked to take part in the Hampshire Food Festival was a no-brainer for us! At Lime Wood we love local, and our passion for seasonal, organic and locally grown produce is matched only by the tantalising diversity, flavour and quality of delicious ingredients the county has to offer. Living, eating and cooking in Hampshire is a sensual and gastronomic delight. We can’t get enough of the county’s forest-fresh mushrooms, wild garlic, herbs and watercress, local venison, home-reared beef and lamb, and garden-ripened fruit and vegetables. The county’s distinctive character and unique combination of ancient woodland, agricultural farmland and chalky terrain, all within casting distance of the sea, means we have access to some of the freshest local fish and the most amazing meats, award-winning cheeses and delicious English sparkling wines in the country. At Lime Wood we work to create locally sourced English dishes that allow the very best of Hampshire’s produce to taste as it should, home-grown, comforting and flavoursome. We believe the best meals are natural, simple ones, shared with friends. Food and fun and eating and enjoyment go hand in hand, and together with Hampshire’s incredible farmers and producers, we aim to produce Great British food at its best - with the Hartnett Holder signature twist of Italian verve of course! But do you know anything about the organisation behind the Hampshire Food Festival? Well, that’s Hampshire Fare, one of the country’s oldest and most successful food groups. Planning the countywide, month-long Festival is one of Hampshire Fare’s key roles. INGREDIENTS: 400g hot-smoked salmon 12 quail’s eggs 400g new potatoes 200g black olives, 200g fine beans 200g of mixed lettuce leaves 100g breadcrumbs 60g plain flour 1 free-range egg French dressing Salt and pepper

METHOD: • Place the quail’s eggs in salted boiling water and simmer for 2 minutes and then place under cold running water. • Cook the new potatoes until soft and then refresh in cold water. • Blanch the beans in boiling salted water until crisp and then drain. • Once the quail’s eggs have soaked for 20 minutes, peel them, and place on a dry cloth. Coat them in seasoned flour, beaten egg and breadcrumbs. Set aside. • Cut the potatoes into quarters, place in a bowl and add the beans, olives and lettuce. • Remove any skin or brown flesh and flake in the hot-smoked salmon. • Add olive oil and lemon juice to the salad and season with salt and pepper. • Blanch the quail’s eggs in a fryer (or in a deep pot with hot oil) until crisp and golden brown. • Add the quail’s eggs to the plated salad.

CHEF’S TIP: Here’s the secret to easy-to-peel boiled eggs. Boil your eggs for 2 minutes, cool them in ice water and add 100ml of white wine vinegar for every 500ml of water. Then soak for 30 minutes before peeling.

metHod: First, marinade the lamb: • Season the necks of lamb with salt and pepper and place in a dish. • Cover with the tamarind paste and wrap with cling film. • Ideally you should leave it overnight in the fridge. • Now prepare the Tarka Dahl and Pomegranate Raita.

CHiCK Pea tarKa daHL ingredientS: 175g tinned chickpeas, strained and washed in cold water 250g chana dahl (yellow dried split peas), rinsed until water runs clear 400ml tin of coconut milk 30g vegetable oil 20g cumin seeds 1 small onion, chopped 50g fresh ginger, grated 3 garlic cloves, grated ¾ tsp ground turmeric ¾ tsp garam masala 1½ tsp ground coriander Salt and freshly ground black pepper A handful of fresh coriander

metHod: • Heat the spices in a pan to enhance the flavours. • Heat a large frying pan and add a few spoons of olive oil. • Add the chopped onions and caramelise. • Add the ginger and the garlic and cook for a few minutes. • Add the spices to the onions and garlic. • Cook out the onion and spice mix but keep the mix moving so it does not burn. • Add the chana lentils and stir well. • Cover the lentils with cold water and bring to a simmer. • Cook the lentils for 35 - 45 minutes or until they are cooked. • Add half the coconut milk and stir well. • Season for taste using the zest of a lemon, salt and pepper. • Add the chickpeas and mix thoroughly. • Add the remainder of the coconut milk and season to taste. • Chop the coriander and stir it in, then add lemon juice to taste. • Now prepare the Pomegranate Raita.


Pomegranate raita ingredientS: 2 pomegranates – de seeded 1 lime 300g Greek yoghurt 150g cucumber

metHod: • Remove the seeds from the pomegranate by cutting the fruit in half, placing over a bowl and using a rolling pin to knock the seeds out. If any white pith falls out remove from the bowl as this is inedible and very bitter. • Zest the lime on to the pomegranate seeds. • Grate the cucumber into a separate bowl. • Remove the cucumber pulp from the grater and then add to the pomegranate seeds and lime. • Add the Greek yoghurt, gently mix together and season to taste. • Store in an airtight container until required. now cook the lamb: • Remove the marinade from the lamb. • Heat a pan and add some oil. • Caramelise the lamb – be careful not to burn the marinade. • Turn the lamb every 30 seconds. • It should take 6 minutes to cook the lamb to medium rare. • If you want to cook the lamb medium-well, place in a preheated oven for an extra 4-5 minutes. • Serve the lamb, chickpea Tarka Dahl and Pomegranate Raita as shown.

CHeF’S tiP: If you like your lamb to taste a little fruity, you can use raspberry jam rather than tamarind when marinading. Cover the lamb with jam and then season with cumin and coriander powder, just like seasoning with salt and pepper, then leave to marinade.

W H I T E C H O C O L AT E A N D R A S P B E R R Y TA R T A light, fruity but delicious pudding – perfect for finishing off a summer evening. SWEET PASTRY BASE INGREDIENTS: 250g plain flour 100g butter 100g icing sugar 2 medium eggs

METHOD: • Crumb together the butter and the flour by hand. • Add the icing sugar and mix in the eggs to form a soft dough. • Roll into a ball, wrap in cling film and rest in the fridge for 30 minutes. • Roll out the pastry into an 8-inch flan tin to create your pastry case. • Pre-bake the pastry case for 20-25mins at 190°C and rest until cool. WHITE CHOCOLATE AND RASPBERRY FILLING

INGREDIENTS: 375ml double cream 125g white chocolate (only melt 90g) 125ml semi-skimmed milk 9 egg yolks 3 whole eggs 1 vanilla pod, split and scraped 1 punnet of raspberries

METHOD: • Add the cream, vanilla and milk to a hard-bottom pan. • Bring to a simmer and allow to infuse. • Take off the heat and whisk in the white chocolate until all of it has melted. • Pass the mix though a fine sieve. • Crack the eggs in to a bowl and mix well. • Slowly add the liquid mix to the eggs, but ensure you do not scramble the eggs. • Pass the mix though a fine sieve again. • Evenly place the raspberries on to your pastry case. • Pour over the mix until the tart case is full. • Crumble the remainder of the white chocolate over the tart top. • Add a dusting of cinnamon, freshly grated nutmeg and orange zest to the tart. • Bake for 35 minutes or until set at 150°C and rest for 15 minutes before cutting.

CHEF’S TIP: For a winter tart, replace the raspberries with blackberries, and use cinnamon and apple in your tart filling.
