Walkers light up for Christmas

ou may find yourself reaching for your sunglasses at night if you happen by Dale and Vel Walker’s house on Grand Avenue in Electric City. The house has an elaborate Christmas lights display

that is really quite the spectacle. For about 30 years now, the Walkers have been making their own handmade, handpainted, wooden Christmas decorations, including Santa in his reindeer-drawn sleigh, snowmen, a manger scene, and much, much more.

Tips for making the holidays smooth By JoAnn Derson

• Having a holiday party? Put food and drinks in separate areas, as these are places that guests tend to linger. With different stops for each, guests will not bunch up in one place trying to do both, and it actually encourages mingling! • Dirty candles can be cleaned up quickly with a leg of pantyhose. Slip the candle in the hose, rub the outside of the candle and release. • Need a quick batch of cookies? Keep a box mix of cake on hand. Instead of the listed ingredients, add two eggs and a half-cup of oil to the mix. Mix and shape, then bake at 350 F for 10 minutes. They are really good, and you can get pretty creative. • Inexpensive gift idea: a cute holiday coffee mug with a bar of chocolate, a packet of hot cocoa or instant coffee, a peppermint stick and a decorative holiday pick or spray. Place inside a gallon-size zipper-top bag, tie

with a ribbon, then trim off the zipper-top, leaving just the plastic. Looks nice. • “Wondering what wine to serve at your holiday party? Order a case of mixed wines. Red Velvet Cupcakes Add Holiday Sparkle

Decked with glitter and iced snowflakes, these sprightly cupcakes are a sweet way to celebrate the holidays. 2 cups all-purpose flour 1/4 cup unsweetened cocoa 1 teaspoon baking soda 1/2 teaspoon baking powder 1/2 teaspoon kosher salt 1½ cups granulated sugar 1 tablespoon liquid red food color 2 teaspoons white vinegar 2 teaspoons pure vanilla extract 1¼ cups unsalted butter 2 large eggs 1 cup buttermilk 2 packages cream cheese 1½ cups confectioners’ sugar Red gel or paste food coloring and red and white sanding sugar, for decorating 1. Heat oven to 350 F. Line two 12-cup muffin tins with paper liners. In a medium bowl, whisk together the flour, cocoa, baking soda, baking powder and salt. 2. Using an electric mixer, beat the granulated sugar, food color, vinegar, 1 teaspoon vanilla and 3/4 cup (1 1/2 sticks) butter in a large bowl until light and fluffy. Beat in the eggs one at a time. Reduce the mixer speed to low and alternately add the flour mixture and buttermilk, mixing just until incorporated. 3. Divide the batter between the pans and bake until a wooden pick inserted in center comes out clean, 18 to 20 minutes. Let the cupcakes cool in the pans for 5 minutes, then transfer to a wire rack to cool completely. 4. Meanwhile, using an electric

mixer, beat the cream cheese and remaining 1/2 cup (1 stick) butter until smooth. Add the confectioners’ sugar and remaining teaspoon vanilla, and beat until fluffy, 3 minutes.

5. Transfer 1/2 cup of the icing to a small bowl and tint red using the paste or gel; transfer to a pastry bag fitted with a writing tip. Transfer 1/2 cup white icing to a pastry bag fitted with a writing tip. Working with one cupcake at a time, frost the cupcakes with the remaining white icing, then immediately dip in the sanding sugar to coat completely; repeat with the remaining cupcakes. 1/2 teaspoon ground cinnamon 4 slices bacon, chopped 1. Leave bread slices spread out on rack or platter at room temperature at least 2 hours, or until slightly stale. Grease 3-quart baking dish. 2. Arrange bread in prepared baking dish, slightly overlapping. In large bowl, whisk eggs, half-and-half, Gruyere, 1/4 cup maple syrup, cinnamon, and 1/2 teaspoon each salt and pepper until combined. Pour all over bread in baking dish. With hands, press down on bread to submerge. 3. Cover baking dish with plastic wrap. Refrigerate at least 4 hours or up to 1 day. 4. Preheat oven to 375 F. Remove plastic wrap. Sprinkle bacon all over top of bread mixture. Bake 45 to 50 minutes or until golden brown and set. Drizzle with remaining 1 tablespoon maple syrup before serving.
