Roasting beans for the brew BY ANNA SALDANA STAFF WRITER
ST. CLOUD — Walking into a coffee shop, one hears and smells a number of different things – the steaming milk, the slow brew of espresso and the grinding of coffee beans. Within minutes, a coffee bean can go from a whole bean to a lique ed, steamy beverage. But, how often do you think about where your coffee comes from before it is in your mug? Muggsy’s Beans, of St. Cloud, has your answer. “Coffee beans come from all over,” said Muggsy Lauer, owner of Muggsy’s Beans. “I think that’s what makes coffee unique. Every region grows coffee differently, and it has a different taste because of the climate and the soil.” The roasted worldly beans will be available for retail sales at the Sauk Rapids Market this summer which will take place every Thursday from 3-6 p.m. at the Coborn’s parking lot – 110 Street S., Sauk Rapids. Lauer orders coffee beans from regions of the world. “There’s a lot of tales hidden in this little space where I roast the beans,” Lauer said. “I have coffee from Brazil, Colombia, Ethiopia, you name it. If only the beans could tell their journey, it
would be great.” When Lauer receives the burlap bags, he scoops the beans out of the bags and puts them into his Probat roaster, heating them up, roasting them to perfection and then cooling them back down to package them. “They come bagged and you can brew them right away,” Lauer said. “But I like to let my beans sit for a day before I brew them.” Muggsy’s Beans specializes in roasting coffee beans for churches, such as Calvary Community Church in St. Cloud and The Waters Church in Sartell. He also sells to three local coffee shops – Rock Creek Coffeehouse in Sauk Rapids, Liquid Assets in Sartell and The Local Blend in St. Joseph. “I love that we have local coffee shops,” Lauer said. “It really creates a local culture, and I think a lot of people enjoy being able to support small businesses in the area. Plus, the owners of the three shops have started to become good friends of mine. It’s a great partnership knowing we are friends and working to create an ambiance in central Minnesota.” The Sauk Rapids Market is one of minimal public sales. “I really enjoy the contact I have with people at the market,”
