rey Eagle – Marc Brinkman is an extrovert. This comes in handy for the Grey Eagle farmer, who on any given day may have a visitor step into the barn while he is milking his 40 cows. Oftentimes in the summer, the evening milking can take a little longer than usual. “I can be a bit sociable sometimes,” Brinkman said. “On weekends, it can take an extra hour to do chores because people stop by and talk.” The visitors come from the many cabins and lake homes that are accessed with the help of a cartway that runs through the farmsite, just a few feet from the barn. Not even a township road, the private cartway has been there since people began building rustic cabins along the lake many years ago. Rustic itself, the trail winds through hills along the lake and comes out on a gravel road to the south. “My driveway is literally a freeway on the weekends,” Brinkman said. That was July 5, just after the busy holiday weekend, when many of the cabin residents have hosted large gatherings of family and friends. Visitors are often surprised to find themselves in the middle of

They turn off the county road onto the gravel road and, when they drive into the Brinkman yard, they will turn around thinking, “This can’t be right!” For the cabin residents, their year-round road is aptly named, “Amigo Trail.” They have a friend in Brinkman. His philosophy is one of cooperation and communication. “Some of my best friends growing up were lake people,” Brinkman said. “If you want to have good neighbors, be a good neighbor. Of course, you set expectations, like take it easy through the yard, and the biggest thing is keeping them off the silage bags.” While casually noting a couple walking their dog down the cartway toward the cabins, Brinkman explained that he remembers all the things he did as a kid – things kids still like to do. Not many years ago, the Brinkmans had a batch of kittens that were particularly friendly, because the cabin kids knew where they were and had them all tamed. For people who have not grown up in the country, farm life is filled with wonder. Brinkman takes this as an opportunity for education, and for him keep in mind that they don’t always understand things that to him are obvious. “So many people have never seen cows before and they are amazed at how big they are – and, how much

they can crap,” he said. “You explain these are animals, not people; I always tell people there’s a reason why cows can reproduce in two years, because their life expectancy is not that of a human.” People love seeing calves being born. One of his favorite stories is when a couple with their little girls stopped years ago when a calf was born on the Fourth of July. They called it Freedom and “adopted” it. They always checked in on their calf and kept track of it in the herd throughout its five

or six lactations. The girls are now grown and have become like extended family, as have others who have their cabins nearby. People are always curious about the farm and concerned about how the crops are coming along. One of his neighbors recently had a personal concern, which he brought up to Brinkman. “I hope you don’t mind, but I talk to your cows all the time when I come to get the mail,” he said. “I hope you don’t think I’m crazy!”

Brinkman reassured him that was fine and that he talks to his cows all the time. Part of the ease in relationships with the neighbors has come through Brinkman’s involvement in the lake association, which he joined when taking over the farm from his parents. When he attends meetings, he gets teased with things like, “You were late for milking one morning,” or, if the cows make a little extra noise, “You need to feed your cows a little!” Farming on the lake Lake life and farming blend together for the Brinkmans, who are the third generation of the family to farm the land. Marc and his wife, Julie, are parents to Justin, Hailey, Jailyn, Mady, Camryn and Josh, all grown. Josh’s high school graduation was celebrated July 1, adding to the activity levels on the farm over the weekend. They have 320 acres of land; the home place is 140 acres with 40 tillable and 100 acres of woods and pasture. Marc does the milking himself, and always preferred to get done quite early so he could attend the kids’ many sporting events; they were heavily involved in athletics, including tennis, gymnastics, diving, track, wrestling and football. “I always tell people, ‘I get up at 3:30, but it’s only seven days a week so it’s not so bad,’” Brinkman said.

reminded of a time several years ago when a yearling heifer got out, ran down to the lake and jumped into the water. They took the pontoon out to corral the heifer and guide it back to shore. “Now, I can use pontoon as a tax deduction,” he said, jokingly. What is in their future, with 4,000 feet of shoreline on the farm? Most likely, the dairy will not continue. Marc and Julie would be thrilled to have their family close, even to have their own places nearby. Already, one daughter lives across the narrow stretch of the lake, visible from the Brinkmans’ farm. The farm land will likely stay in the family. “I could cash in on this place and be miserable with a lot of money the rest of my life, or, I can be in this place and be happy,” Brinkman

“We went out and milked the cows and, afterwards, we’d jump in the lake, shorts and all, and wash our hair with shampoo we had down there. It was so refreshing!” - Marc Brinkman said. When asked if he’s glad he kept the farm small, the answer was immediate. “I am absolutely glad I did,” he said. “As far as passing it on, it would be nice to have upgraded some things; it was sort of an old modern. But ultimately, in life, simple is always better. I like to keep simple as long as you can pay the bills. The kids would agree. “My kids thank me all the time, they say, ‘we had the best life ever,’”

Brinkman said. “This is like heaven out here.” On a day when the traffic on the cartway past the barn was fairly minimal, neighbors just out of sight enjoyed their cabin life and lake homes. A boat on the lake quietly went by in the fog. The lake beckoned. “It’s pretty peaceful,” Brinkman said. “I wish I would use it more. You take it for granted it’s there; you just kind of just say, ‘oh it’ll be there tomorrow.”

I can see it now. Somewhere in Country Acres land, on a lonely gravel road, there is a young person walking along. A calf walks at his or her side, ideally following the prompts of its master. If it has chosen to not follow the prompts, it’s more likely pulling on a halter, stubbornly refusing to do as asked. County fair time is coming up and it’s on the minds of 4-H kids and program coordinators everywhere as they gear up for their shows and exhibits. The organization has been around since 1902, when Random Reflections the first youth club was formed by A. B. Graham in Clark County, Ohio, according to information obtained from by Diane Leukam 4-H.org. This brand new club had two names – the Tomato Club and/or the Corn Growing Club. Interestingly, T.A. Erickson in our very own Douglas County “… started local agricultural after-school clubs and fairs the same year.” That probably happened along some gravel road as well. By 1910, the clover pin was developed with an H on each leaf, and by 1912, they were known as 4-H clubs. The organization was nationalized in 1914, and 4-H clubs are everywhere today. In just Stearns County, for example, there are 17 4-H clubs. Their members are among the more than 6 million youth involved nationally. For these kids, fair time is go time. They are kept busy with a variety of activities like showing animals of all kinds, with divisions of livestock divided into dairy and beef, along with equine, llamas, sheep and goats, swine, poultry and rabbits – and I’m probably missing something. There are performing arts showcases, rocket launches, fashion reviews and the ever-popular Blue Ribbon Auction. Obviously, there is much more to county fairs than 4-H, and I hope you will all have a chance to take in some of the sights, sounds, smells and just plain fun at your local county fair and beyond. Each county has its own flair, unique features and culture. History-wise, we all have to take a backseat to Minnesota’s longest-running county fair, the Blue Earth County Fair, which is in its 165 year and held in Kasson. Here at Star Publications, we publish the Stearns County Fair Guide each year – this year being the 120th annual event. You probably have a similar publication in each of your counties. The 64-page guide is filled with information on everything related to the fair, and it’s amazingly involved. No doubt, this is the case with every fair in the state. Surely, there is something for everyone, and maybe you will be inspired to do a tour of all our fairs. Miltona – When Rick and Calli Yanke began their mobile butcher shop and poultry-processing business eight years ago, they never dreamed they wouldn’t be able to keep up with demand. They started out slowly, thinking they wouldn’t tell anybody until they knew their operation could work. They thought they’d raise some of their own birds and give it a try, but then word got around and they had a couple customers. By their third or fourth year, they were processing 3,000 birds a summer. The next year it doubled and last year, their seventh in business, they processed more than 10,000. “It’s been a bit shocking to see how much and how quickly it has grown,” said Calli. They began with an open 14-foot trailer and four years ago upgraded to an enclosed 30-foot trailer where they can control the weather. Rick learned how to butcher chickens at his job at Kadejan in Glenwood, where he processes all-natural chickens. He realized, over time, that farmers need to process smaller numbers of chickens on site at their home farms and he was inspired to provide a solution. “The type of people (who need services) … they’re young

and old, experienced and inexperienced,” he said. He likes working onsite and getting to know his customers. Not only is it a convenience for farmers for Yanke to work onsite, Calli said it’s less stressful for the birds. “They’re in their normal environment until they’re processed,” she said. Oftentimes, Rick said, his clients will get the birds corralled so they’re easier to catch. He backs up his trailer, connects to a power and water source and gets working. Rick leaves the chickens whole, but some of his clients employ help the day of processing to cut them up before they’re frozen. In some cases, the clients are working with the gizzards. He processes the chicken and then places the finished pieces in vacuum-sealed bags. Once he leaves, the customer is left with only wrapped chickens ready to go straight into the freezer. His equipment includes a commercial-grade scalder and a commercial-grade plucker which came from a fabricator out of Pennsylvania, stainless steel tables and shackles to hang the birds as they’re processed. Yanke from page 6 created from an old Surge pump, and he uses a dairy bulk tank straight off Calli’s grandparents’ farm to cool the chickens. A lot of times, Rick said, customers will want to watch the process or learn more about it as he works. Depending on the client, he processes between 50 and 400 birds. For clients who need 400 processed, it’s a two-day job because he averages about 100 chickens a day, so he hires help to meet the added demand. When they get a call to process more than 100 birds, Rick usually asks his brother-in-law, Jake Long, for assistance. Some clients schedule him to come on a rotation, three times throughout the summer, allowing them to raise and process more chickens without taking up more space. More than half the jobs Rick goes on these days are repeat customers. “I’ve actually developed pretty good relationships with a lot of them,” he said. “You meet a lot of people.” He’s seen his clients’ kids grow along with watching his own. He has farms he went to when the kids were just little tikes and now, they’re catching chickens and actually assisting. Some of his customers make processing day an event and bring out the family. The Yankes’ son, Oliver, 10, has been tagging along for a couple of years Calli handles all the scheduling, mileage and bookkeeping, while Rick works with customers onsite. Sometimes, the couple gets urgent calls from clients whose birds have grown faster than they expected. Usually, he said, people try to process their chickens around eight weeks, but some clients want bigger chickens and may go out to nine or 10 weeks. “There are people who know what to expect when they get their chickens and others who are trying it out for the first time and learning as they go,” he said. They start taking appointments each February and, usually, all the summer processing spots are full before

Calli said it’s difficult to turn away customers, but the couple works May through the first week of October Monday through Thursday and takes off Friday through Sunday to be with their family. “If somebody has chickens and they need help and we’re already booked, you feel badly you can’t help them out,” she said. “But, we could do this seven

days a week, all summer long.” When the season is over, Rick goes back to work at Kadejan in Glenwood and waits to start all over again. Calli also looks forward to the work. “It’s been a fun journey,” she said. “It’s been fun to see; we really just enjoy our customers and we look forward to scheduling with them each summer.”

was impressed by the strength the small draft breed has for pulling. It’s not just about the horses’ ability to work that keeps them around the Ressemann farm. The Norwegian Fjord breed is well known for their calm temperament and sweet personalities. They are easy-going enough to let kids ride around with little fear of the horse taking off in the wrong direction. “My dad is probably rolling around in his grave watching me use these horses,” Walter said. “It makes me less nervous to use these horses, because I know they won’t take off on me; in fact, they would need persuasion to go any faster.” Walter dotes on his Norwegian Fjords and the two pulling his sickle mower July 1 were 12-year-old Trixie and a 3-year-old, Gus. These Norwegian Fjord horses, driven by owner Walter Ressemann, are a sure-footed breed which means they can maneuver over challenging terrain better than some other breeds.

Ressemann from page 11 perfect animal for the job. Training of these horses for pulling begins around 2 years of age. Walter will tie the foals to their mother when cutting or raking to get them used to the action, sounds and signals. He then gets them used to the harnesses by attaching the young horse to a lighter piece of equipment. “They are the easiest horses I’ve ever trained,” Walter said. “They have an easy-going personality and they want to work, which makes them perfect for the jobs I give them.” The Ressemanns’ horses pull a sickle mower, a 10-wheel rake and a ground-driven manure

spreader. The horses are attached to the machines by the tongue, which is a long bar protruding from the machine. From the tongue attaches eveners, which then attach to the tug straps which pull their power from the neck collar of the horse. The collar makes the power from the horses’ bodies pull the machine along the field. On their heads are blinders, and a bridle and mouth bits are attached to reins that the driver uses to control the horses’ direction. The horses have been a true blessing for Walter; they allow him the chance to continue farming in a

way he enjoys, while providing a wonderful display for passersby. “People will stop and take pictures when you are out here working,” Matt said. “I think they are always amazed that we are still using horses to do work.” It is a sight to see the horses powerfully pulling the mower, rake or manure spreader across the field. Norwegian Fjord horses have been long adored for their yellow dun color and long, thick manes, and tails that are white and black. Traditionally, the manes of the horses are trimmed to exemplify their black dorsal stripe and show the prominent muscular neck on these small drafts. Once

cut, the mane stands on end and looks much like a mohawk. Walter currently has four adult Norwegian Fjords and raises a few foals each year. He used to raise cattle until he realized he was making just as much raising and selling the foals. “There aren’t many of the Norwegian Fjords around, so people that want them will pay a decent price knowing how good the breed is with kids and work,” Walter said.

Trixie was Walter Ressemann’s first Norwegian Fjord. She has had several foals since moving to the Ressemann farm.

Brooten – The life Paige Roberts has built is neither the life she could have predicted, nor the life friends and family might have imagined when she was in high school. Coming from a cow-less childhood, she still marvels that she now spends her days surrounded by them. She is a herdswoman at Jer-Lindy Farms – founded and owned by Jerry and Linda Jennissen – and assists with cheesemaking at Redhead Creamery in Brooten. For thousands of children and visitors, Roberts has served as their first introduction to where milk and cheese really come from. With hard work, a passionate team and a herd of cows, Roberts transforms dairy production into

When she headed off to the University of Wisconsin, she imagined becoming a veterinarian, but into her first year, she discovered an unexpected new interest: cows. “I fell in love with cows while I was there,” Roberts recalled. “I always loved animals, so it was natural.” After graduation, Roberts was working for a large animal veterinarian in Rochester and thinking about bringing her life closer to her family. Roberts from page 13 ple, Lucas and Alise (Jennissen) Sjostrom who, just a year or so prior, had opened a new creamery in Brooten, which was close enough to New London. As often goes the way of good fortune, the welcome of a life’s new turn is warmest by way of friends and family. Seven years ago, Roberts joined the small team at the farm and creamery, and they have been growing and innovating ever since. Because Roberts came to cows as an adult, becoming a herdswoman meant learning essentially everything. There are so many particular details, and unwavering routines, necessary to keep things running. For example, the elements necessary simply to milk the herd of 200 Holsteins and Brown Swiss. “They’re smart, but they’re creatures of habit,” Roberts said. “When they get out of their routine, they

know, and they’re not happy about it.” In a well-structured dairy operation, habit is more than just an odd companion to bovine smarts; the intelligence of cows could be said to lie in that very love of a good habit. Roberts is at the dairy at 4:45 in the morning, and the timing is not negotiable; the cows are waiting in the morning to be milked. “They’re excited that it’s milking time,” Roberts said. “Their udders get pretty full, and it probably feels pretty good to get that pressure off of them.” After milking, the cows will find the very same stall they had before. “They’re not assigned a stall,” Roberts said. “They can do whatever. We had a cow named Candy. If another cow would lay in her stall, she would head butt that cow so that she could lay there. That says a Paige Roberts gazes down at the creamery equipment, visible from the visitor shop. Roberts shares the world lot about cows.”

Roberts from page 14 The milking parlor just off the holding pen is a double-8 herringbone formation. Eight at a time, the cows file in, knowing their approximate order and placement, all by habit. In this parlor, again, is exacted a specific routine by the two handlers and each group of eight cows. “We do the same thing every single time,” Roberts said. “When I touch her udder for the first time, her brain starts to release oxytocin. That’s the milk let-down hormone. That hormone will reach peak in her bloodstream by two minutes.” Those two minutes act as a timer to get the milker on the teats and catch that milk let-down. The udder is cleaned, pre-dipped with a sanitizer, checked for any mastitis, and wiped again. With good habits comes harmony, and so, two people can milk 200 cows in under three hours. Within the day each individual cow produces around 85 pounds of milk, which either flows to the onsite creamery for cheeses, or is sold to Bongards’ Premium Cheese, a cooperative creamery. The immediate purpose of Roberts’ work as a herdswoman may appear to consist in happy and healthy cows, which it is. It is also supporting the running of a successful business, and producing some of the milk that feeds the Midwest. She has a further purpose, though, whose scope is bigger than her, bigger than this dairy and this creamery. For many in the community and the greater public who have never seen a dairy farm, Roberts knows she may be the first real person who welcomes them and shows them how milk happens. “People are shocked when they come to a dairy farm,” Roberts said. “It’s not what they expect. The cows look happy, and everything looks nice. It looks like that at most farms. People are surprised that we do care for our cows. They aren’t expecting this to be way out here, after driving two hours from the Cities and down a dirt road.” Roberts leads tours and supports the annual Curd Fest in June, which draws thousands of visitors. Last year, she supported the dairy’s participation in the Adopt-A-Calf program, by which 415 Minnesota classrooms fol-

lowed the life of a calf. Telling the story of the cows, the dairy, the creamery and the incredible people behind it all, is uniquely rewarding. “My favorite part is giving the tours,” Roberts said. “A lot of people don’t have the connection to the farm anymore. It’s fun for me to see them make the connections. Hopefully, when they go to the grocery store, they’ll understand that milk isn’t just coming from the refrigerator. There are cows and people that are working pretty hard.” Roberts said children ask funny questions, like “Do cows eat dessert?” They also notice things, such as that the cow has a calf when she’s 2 years old, but their own mom is not 2 years old. Roberts speaks of her team with appreciation and pride. The founding family of the dairy and the creamery all chose to take on a big new venture, persist through the challenges and strive to innovate and grow. “I’ve been here for six years now,” Roberts said. “Some days, I still feel like I’m new, because things are always changing. When I first started, I pretty much knew everything that was going on all of the time. Now, I learn to rely on other people. It’s really special to get to work with all of these people who are just as passionate. It rubs off on all of us.” Roberts has fortunately become an ambassador for dairy, and perhaps is a uniquely insightful one because she recalls a time when she would never have imagined working with cows. By the example of her inspiring team and the surprising changes in her own life, Roberts affirms that it is worth it to try something unexpected and new, as she has. “I didn’t think I would ever be on a dairy farm when I was growing up,” Roberts said. “I think people who have known me from my life before are sort of shocked. Sometimes, I wake up and think that this is not what people expected. I’ve learned that you can do whatever you want. You don’t have to be an expert at it. You can learn as you go. You might fall on your face a couple of times, but you can still do it.”

Their goods are available at the Cold Spring Farmer’s Market on Wednesdays, the St. Joseph Farmer’s Market on Fridays, Richmond Farmer’s Market on Mondays and at a couple vendor fairs throughout the region. Their products are also available online on their website and through Etsy, Gathering Grounds in Avon, Backwards Bread in St. Cloud, and Smith and Trade Mercantile in Stillwater. Jolene also welcomes people to call or text her their needs. They ship out orders one to three times a week. The family business is truly that. The whole family, including the kids, help with the livestock and crops on the farm. Their children include Kelley, 20, Brooke, 19, Ivan, 13 and Henry, 11. As the oldest ones grew, the younger kids took over their chores. Ivan gets excited to grow pumpkins and squash, Jolene said. He also cares for the chickens and turkeys and manages the eggs. Henry is in charge of the pigs and the dog. The kids handle feeding, watering, cleaning stalls, caring for the horse and assisting with big chores. Tony said the kids help with the cattle and the crop farming as well. They know how to operate equipment and tractors, skid loaders. They know how to make hay to feed the cattle daily.

Rausch from page 24 it to their son, John, and his wife, Susanna, in 1874. John and Susanna’s son, Michael, bought the farm in 1922 with his wife, Wilhelmina, creating the third generation. Michael and Wilhelmina farmed for 38 years before they sold it to their son, Michael, Clinton’s grandfather – the fourth generation. Michael’s sister, Marie Rousselange, is the last living relative of the fourth generation of Rausches to grow up on the farm. In her time growing up there, she experienced major additions made to the farm, including the building of the barn and house in 1936, when she was just 7 years old. “We didn’t have much growing up, but we had a good time,” Rousselange said. Rousselange married and moved off the farm, and Michael took the farm over with his wife, Irene, in 1960. Michael and Irene were the first generation on the farm to establish

themselves as dairy farmers, rather than subsistence farmers. “We had 16 cows when we first started out, which is a lot of cows for that time,” Irene said. Throughout Michael and Irene’s

ownership of the farm, they had not only expanded their herd size, but also grew their family. They had six children, including Dennis, Clinton’s dad. “My dad was very particular about his cows,” Dennis said. “Nobody else could milk the cows. I milked the neighbor’s cows before I ever had the chance to milk any of Dad’s.” Dennis had no intention of taking over the farm. He worked various jobs in his adult life before landing back on the home farm with his wife, Karen – the fifth generation. “At the time my dad wanted to sell because his knees were getting bad, I was working for Dairy Herd Improvement Association as a supervisor,” Dennis said. “I thought, ‘I’m putting in dairy hours anyway,’ so I asked my dad if he would mind letting us get a chance at it. He gave me a look like, ‘you would be interested?’” However, Karen was not completely sold on the idea of her husband becoming a dairy farmer at first.

“I grew up working on my family’s farm, so I knew what farming meant,” said Karen. “I did not want to be a farm wife at first. I told Dennis that if we are going to do this, we are raising our kids to help out on the farm and we are going to actually let them help.” Dennis and Karen took the farm over in 1988. Like the generations before them, the couple worked to retrofit the dairy. Among the improvements they made were renovating the barn to fit 52 stalls and purchasing a Quonset. Dennis and Karen raised their four sons on the dairy. The family enjoyed working together and bringing out their competitive sides, whether it was in the milking barn or on the ball field. “There really is no better way to raise your kids,” Karen said. “The boys grew up knowing what hard work meant.”
