INGREDIENTS

1. Preheat oven to 400 F. Line a rimmed baking sheet with aluminum foil and spray it with cooking spray. Set aside.

2. Spread the shredded zucchini across a paper towel and cover it with a second paper towel. Press down to squeeze out the extra liquid.

3. In a large bowl, combine the zucchini, ground chicken, egg, bread crumbs, oregano, salt, and pepper. Use clean hands to mix everything together until well combined.

4. Using your hands, roll the meat mixture into 2-inch-wide balls. Place the meatballs on the prepared baking sheet, 2 inches apart.

5. Bake for 20 minutes, or until cooked through. Garnish with fresh herbs.

Tip: If preparing in advance, roll the meatballs and then freeze them. They can be kept frozen for up to 3 to 4 months in a zip-top bag. Thaw completely before baking.

Sour Cream Cookies

Makes 22 Cookies

11⁄2 cups all-purpose flour, spooned and leveled

1 teaspoon baking powder

1⁄4 teaspoon salt

1⁄2 cup (1 stick) unsalted butter, softened

3⁄4 cup granulated sugar

1 large egg, at room temperature

11⁄2 teaspoons pure vanilla extract

1⁄2 cup sour cream, at room temperature

VANILLA BUTTERCREAM FROSTING

1⁄2 cup (1 stick) unsalted butter, softened

11⁄2 cups powdered sugar

1 tablespoon heavy whipping cream or milk

1 teaspoon pure vanilla extract

Gel food coloring (optional)

1. To make the cookies: Preheat the oven to 350 F. Line two large baking sheets with parchment paper or silicone baking mats and set aside.

2. In a large mixing bowl, whisk together the flour, baking powder and salt until well combined. Set aside.

3. In the bowl of a stand mixer fitted with the paddle attachment or in a large mixing bowl using a handheld mixer, beat the butter and granulated sugar together for 1 to 2 minutes, or until well combined.

4. Mix in the egg and vanilla extract until fully combined, making sure to stop and scrape down the sides of the bowl as needed.

5. Mix in the dry ingredients in two additions, alternating with the sour cream. Make sure to mix in each addition until just combined, and be careful not to overmix the batter.

6. Using a 11⁄2-tablespoon cookie scoop, scoop the cookie dough onto the prepared baking sheets, making sure to leave a little room between each one.

7. Bake for 14 to 16 minutes, or until the tops of the cookies are set and spring back when touched lightly. Remove from the oven, and allow to cool on the baking sheets for 10 minutes, then carefully transfer the cookies to a wire rack to cool completely.

8. To make the vanilla buttercream frosting: In the bowl of a stand mixer fitted with the whisk attachment or in a large mixing bowl using a handheld mixer, beat the butter for 1 to 2 minutes, or until smooth. Add the powdered sugar, 1⁄2 cup at a time, mixing in each addition until well combined.

9. Add the heavy whipping cream, vanilla extract, and gel food coloring (if using), and continue mixing until fully combined.

10. Once the cookies have cooled completely, spread the frosting on top of the cookies.

11. Store the cookies in an airtight container at room temperature or in the refrigerator for up to 4 days.

Serves 10

CRUST:

cup amaretti cookie crumbs (about 16 cookies)

tablespoons butter, melted

tablespoon sugar Cooking spray

FILLING:

(8-ounce) blocks fat-free cream cheese, softened and divided

(8-ounce) block 1⁄3-less-fat cream cheese, softened

cup sugar

tablespoon all-purpose flour

large eggs

teaspoon almond extract Raspberries, optional

1. To prepare crust, combine the first three ingredients, tossing with a fork until moist and crumbly. Gently press mixture into the bottom of a 7-inch springform pan coating with cooking spray.

2. To prepare filling, beat 1 block fat-free cream cheese and 1⁄3-less-fat cream cheese with a mixer at medium speed until smooth. Add remaining 1 block fatfree cream cheese; beat until blended. Add 2⁄3 cup sugar and flour; beat well. Add eggs, one at a time, beating well after each addition. Stir in almond extract. Pour batter over crust in pan.

3. Pour 1 cup hot water into bottom of a 5-quart slow cooker. Place a rack in slow cooker (rack should be taller than water level). Place pan on rack. Place several layers of paper towels over slow cooker insert. Cover and cook on high for 2 hours, or until center of cheesecake barely moves when pan is touched. Remove lid from slow cooker; turn off heat, and run a knife around outside edge. Let cheesecake stand in slow cooker 1 hour. remove cheesecake from slow cooker. Cool to room temperature in pan on a wire rack. Cover and chill at least 6 hours. Cut into wedges. Garnish with raspberries, if desired.
