South Routt Facts ★ The population of the Oak Creek area in the early to mid-1900s was larger than it is today, with about 2,000 to 3,000 people in South Routt. ★ The 12th cavalry came to Oak Creek in 1915 on horseback and stayed nearly two years to keep the peace over the town as immigrants wrestled with local coal mine business owners over whether they could start their own businesses. The camp and barracks for the cavalry were located on the property that now houses the middle and high schools. ★ Since at least 1913, Oak Creek has attracted throngs of people, residents and visitors, for the annual Labor Day festivities along the streets of the town. What began as a literal celebration of the holiday brought organizers from each of the local mine unions to speak in the town center.

★ In the ’30s and ’40s, the population in a 4-mile radius around Oak Creek was 5,000 to 6,000. There have been 10 operational coal mines in and around Oak Creek. The housing, stores, restaurants and bars were “company owned.” ★ Since the 1920s there have been seven different newspapers in South Routt. ★ The Boor-Redmond Ranch near Yampa played a significant role in the development of farming and ranching in Routt County. It is an intact agricultural complex in continuous use since circa 1890 whose buildings have been adapted to meet changing ranch needs. The Redmond Ranch, more than any other ranch in the community, tells the story of agriculture in southern Routt County. 19

What’s
new for 2010-11 Explore Steamboat magazine staff
Whether you’re an annual visitor to Steamboat Springs or you haven’t been here in years, there are some exciting changes in store for the 2010-11 ski season. Not all of them have to do with Steamboat Ski Area.
Mountain Village
A number of public and private improvements at the base of the ski area have taken shape over the past couple years, but perhaps none are as visible as last year’s completion of the new One Steamboat Place luxury condominium project adjacent to Gondola Square. The massive development includes a heated stone pedestrian square that leads skiers and riders from the Gondola Transit Center past the passenger drop-off of the new Wildhorse Meadows people-mover gondola and a public seating area and fire pit straight into the heart of Gondola Square. Other recent work near the base area includes a traffic roundabout at Mount Werner Circle and Aprés Ski Way, a redesigned Gondola Transit Center, improved pedestrian walkways and signage throughout the base area, and the beginnings of what will be a large public plaza and promenade connecting Gondola Square to Ski Time Square along the
exploresteamboat.com
base of the slopes of Mount Werner. Some of the progress of that project can be seen in the new outdoor seating area and fire pit north of Slopeside Grill.
Steamboat Ski Area Dining
The Gondola Square deck overlooking the base of the ski area at Bear River Bar & Grill has been an apres ski staple for decades. It takes on a decidedly new look this winter with the addition of the Burgess Creek Terrace and Umbrella Bar. A fully heated outside patio with a fire pit and terraced steps perfect for lounging provides a comfortable spot from which to watch family and friends descend the mountain or to sip on a microbrew after a long day on the slopes. The Umbrella Bar features floor-to-ceiling windows to let fresh air in during Steamboat’s ideal spring weather conditions. The Burgess Creek Terrace offers a full menu from Bear River Bar & Grill as well as a full bar.
Terrain parks The ski area added 30 new and refurbished rails and other features to its four terrain parks for the 2010-11 season. The new features range from small 8- to 12-foot boxes
perfect for skiers and riders just getting comfortable in the park, to a 16-foot picnic table and several 24-foot shaped boxes for intermediate riders. In the ski area’s advanced terrain park, jibbers can look forward to a new wall ride, several other large features and a new park entrance.
Magic carpet Last season saw the unveiling of a renovated Kids’ Vacation Center at the base of the ski slopes. This year brings a new location and realignment of the Buckaroo magic carpet in the new One Steamboat Place snow area adjacent to Gondola Square.
Snowmaking Sometimes Mother Nature can’t be depended on to provide ideal skiing and riding conditions from November through April. And that’s where the ski area’s extensive snowmaking system comes to the rescue. Steamboat Ski Area’s snowmaking system covers nearly 360 acres of terrain from the top of the mountain to its base. New this year are two 200-horsepower water pumps that will result in a significant increase in water flow. That means more snow, faster.

Putting the ‘Springs’ in Steamboat
There’s a reason this place is called Steamboat Springs. And you haven’t truly experienced it until you’ve soaked your aching bones in the area’s natural, hot spring-fed pools. Old Town Hot Springs, Third Street and Lincoln Avenue (see directory listing on page 57) provides the most convenient option, plus it boasts a pair of 230foot waterslides for the munchkins. But if you have the time, the seven-mile trip to Strawberry Park Hot Springs (see directory listing on page 57) north of town is well worth it. Experience the healing powers of the hot springs as the Utes once did — under the bright stars of a Yampa Valley evening.
Live like a local There are certain events that even locals can’t pass up, no matter how long they’ve lived here. Cross your fingers and hope your vacation coincides with one of them. ■ Cardboard Classic: An end-of-sea■ New Year’s fireworks and son tradition, locals build cardboard torchlight parade: Beginning crafts and race them down a plowed at 7 p.m. Dec. 31 at the base course at the ski area. This year’s ebration of winter; this year’s event Splashdown Pond Skim is April 10. is Feb. 2 to 6.
Explore historic downtown Steamboat’s historic shopping district combines the nostalgia of old-time storefronts with the allure of boutique shops and galleries. Take the free city bus to Fifth Street and begin your journey by passing the historic Routt County Courthouse before entering the heart of the downtown area. Plenty of restaurants, bars and shops await you. 8 | Explore Steamboat winter 2010-11
Step out of your comfort zone Nothing speaks to the quality of a trip quite like doing something you won’t — or can’t — do just about anywhere else. Create a lasting memory through Rocky Mountain activities like leading your own sled-dog team, taking the family for a sleighride dinner or embarking on a full-moon snowshoe tour. For the more adventurous, tag along on an ice-climbing adventure up frozen Fish Creek Falls. See the activities directory beginning on page 54 for more ideas. exploresteamboat.com
Load up on calories … Like any ski town worth its weight in snow, Steamboat offers too many lip-smacking breakfast establishments to count. Creekside Cafe, Winona’s, Freshies and The Shack Cafe are four of the best. Get your fill before you spend a day on the slopes.
… and then work them off You came here to ski, now get to it. But to make the most out of your days on the mountain, you’ll have to leave behind that ’90sera equipment. All of Steamboat’s full-service retail and rental shops offer the latest in ski and snowboard equipment. Demo a pair of new sticks for the day, and then spend the rest of your trip convincing your significant other why a new pair of skis are a worthwhile investment.
Get pampered Northwest Colorado’s dry air can wreak havoc on your skin, just like a day on the slopes can wear out your muscles. Lucky for you, Steamboat’s got the salons, day spas and massage studios to cater to your every whim.
Après ski We can all agree that nothing puts an exclamation point on a brilliant day of skiing or riding like slopeside drinks and appetizers. Start your afternoon at Slopeside Grill, which shouldn’t be hard to find with its outdoor seating just off the Right-O-Way trail at the base of the ski area. New to the scene is Truffle Pig in the expansive One Steamboat Place development at the base of the ski area. Return visitors also might notice changes to the former Bear River Bar & Grill deck in Gondola Square, which is now home to a European-inspired terrace and umbrella bar. exploresteamboat.com
Look back Revel in downtown Steamboat’s historic past. The Tread of Pioneers Museum (northwest corner of Eighth and Oak streets) will leave you feeling like a fourth-generation local. You just might impress your ski instructor or your new friends at the bar with your knowledge of local history. See the museum’s directory listing on page 58 for more information.
Eat some more You deserve to eat well while on vacation, and those après ski appetizers won’t hold you over till morning. Satisfy your stomach with some real Colorado fare, like elk tenderloin and fresh caught trout. The best multi-course meals can be had at Cafe Diva, The Cabin and bistro c.v.

From its humble beginnings at the hardworking hands of a small group of dedicated ranchers, Steamboat Ski Area always has stood out among its Rocky Mountain peers. Accentuated by its legendary tree skiing and trademark Champagne Powder, the slopes of the ski area offer a skiing and snowboarding experience on par with just about any ski area in the world. Then consider that snowfall totals have surpassed 400 inches during three of the past five winters, and you’ll be pleased you booked your vacation in Steamboat Springs. The record-setting winter of 2007-08 dumped 489 inches of snow on Mount Werner, including three consecutive months of 100-plus inches of snow (December, January and February). Rest assured locals won’t soon forget the 58 powder days of 4-plus inches of snow. At a lot of resorts, fresh snow is quickly “tracked out” by eager skiers and riders. That inevitable reality plays out slower at Steamboat Ski Area, thanks in part to its 2,965 skiable acres — making it one of the largest ski areas in Colorado. Mount Werner has 3,668 feet of vertical gain and 165 named trails. Fourteen percent are for beginners, 42 percent for intermediate skiers and riders and 44 percent for advanced riders. Skiers and riders who like spending time launching off kickers and hitting rails won’t be disappointed with the mountain’s four terrain parks, highlighted by Mavericks Superpipe — a 500-foot long halfpipe with 18-foot walls and 22-foot transitions. The ski area added a number of rails and features to all of its parks this year, meaning there’s something to challenge skiers and riders of all abilities, whether you’re a newbie looking to jib on your first rail, or a seasoned pro ready to take on Mavericks. Excited? Just make sure you get to the mountain early to maximize your day. The ski area’s lifts open between 8:30 and 9 a.m., with the gondola taking its first passengers at 8:30 a.m. Most lifts stop service at 3:30 p.m. The ski area has made strides to increase uphill capacity in recent years, most notably with the addition of the Christie Peak Express and Sunshine Express chairlifts. Return visitors might notice the redesign of the beginner trails on Headwall, a change made three years ago to make the mountain’s lower slopes friendlier and more organized for new skiers and riders. The change pairs well with Steamboat’s award-winning Ski and Snowboard School, which includes six Olympian instructors. The Kids’ Vacation Center has a variety of programs for kids of all ages, and is one reason Steamboat was named the No. 1 Family Resort in the West for seven of the past eight years by SKI magazine. On-mountain facilities include Thunderhead, Rendezvous Saddle and the Four Points Hut. Each offers a variety of food and beverages. Fine dining can be found at Hazie’s and Ragnar’s.

Food and drink aside, there’s no better way to end a day on the slopes than with quality live music and a pitcher of beer. The ski area hosts the Bud Light Rocks the 'Boat free concert series as well as the Steamboat MusicFest and Ski Jam. Other special events take place at the base area throughout the ski season. Visit SteamboatPilot. com and ExploreSteamboat.com for all the latest event information.

Although Champagne Powder is a registered trademark of Steamboat Ski and Resort Corp., it’s not just skiers and snowboarders who revel in the area’s world-famous snow. The snowy mountains of the Park Range attract thousands of snowmobilers each winter, from novices looking for a new experience on a commercial tour to the sport’s most elite and dedicated riders. Don’t be surprised to spend a day sharing Rabbit Ears Pass terrain with Winter X Games athletes stocking footage for their next film segment — although there’s no guarantee you’ll drop the same cliffs or clear the same climbs. For machine-riding greenhorns, outfitters across the valley can provide chances for riders to experience everything from open meadows and diverse down-valley terrain west of Steamboat to the timbered, Alpine terrain of the high country near Steamboat. There’s been tremendous collaboration among various snowmobile organizations in recent years to groom a vast network of trails

throughout Northwest Colorado. The Routt Powder Riders (www.routtpowderriders.com) groom more than 100 miles of trails on Rabbit Ears and Buffalo passes. Steamboat Lake Snow Club does the grooming around Steamboat Lake, north of Columbine to the Wyoming border and west to where it meets with trails groomed by the Northwest Colorado Snowmobile Club (NOWECOS), which maintains more than 100 miles of groomed trails in the Black Mountain and California Park areas of the Elkhead Mountain Range north of Craig. In addition, the White River Snowmobile Club marks, grooms and maintains nearly 200 miles of snowmobile trails in eastern Rio Blanco County. With all the areas to ride in and around Steamboat, don’t forget to respect key non-motorized areas such as the west summit of Rabbit Ears Pass. And, of course, snowmobiles are prohibited in all wilderness areas.
■ Maps of the trail systems, highlighting critical elk and deer winter range and motorized and non-motorized boundaries, are available at the U.S. Forest Service office at 925 Weiss Drive in Steamboat (970-870-2299). Season pass permits for the Buffalo Pass Backcountry Winter Recreation Area also are available at the Forest Service office. There is no fee to use the area, or for the permits, but each user is required to obtain one at the Dry Lake Campground trailhead or at the office. ■ Off-highway vehicles operating on any public lands or trails in Colorado, including snowmobiles, must be registered or permitted for Colorado use by Colorado State Parks. Out-of-state residents must purchase a $25 Colorado Non-Resident OHV permit. Resident registration (residents must register annually) locations include various OHV dealers or any Colorado State Parks location. Non-resident permits available online, at State Parks offices or anywhere Colorado hunting and fishing licenses are sold.

There’s a way to experience the solitude and serenity of Northwest Colorado’s beautiful winter landscape without the hum of ski lifts or the whine of snowmobile engines. And for most folks, it can be done for a fraction of the cost of a day on the slopes. Cross-country skiing and snowshoeing are energizing activities available to anyone with a little sense of adventure. The valley is home to five diverse Nordic touring areas, not including the marked trails on Rabbit Ears Pass. Nordic centers in the valley stretch from Catamount Ranch in the south to Vista Verde Guest Ranch and Steamboat Lake State Park in the north. Of course, there’s excellent skiing right in town, including the Steamboat Ski Touring Center, with expertly groomed trails and daily lessons at Rollingstone Ranch Golf Course on Clubhouse Drive. The trails criss-cross Fish Creek, where snow pillows dot the streambed. There are good beginner options on the trails at Howelsen Hill, but experts also will be challenged by the routes that have hosted international competitions. Resident aerobic warriors pound the trails on Emerald Mountain behind Howelsen. If the touring centers don’t offer adequate adventure, well-equipped and experienced skiers will find nine cross-country and snowshoe trails on Rabbit Ears Pass in the Routt National Forest ranging from 1.6 to 7 miles. The trails are

marked by blue diamond emblems that are nailed to posts and trees along the routes. Informal maps can be picked up at the U.S. Forest Service office on the eastern edge of Steamboat, across U.S. Highway 40 from the Holiday Inn. Skiers on Rabbit Ears Pass should carry backpacks with topographic maps and a compass, emergency supplies and extra clothing. Visitors from lower elevations may have to make adjustments in their itineraries to account for elevations above 9,000 feet on Rabbit Ears. Snowshoeing options abound, too. Whether it’s a walk at Steamboat Lake State Park or a run on Rabbit Ears Pass, snowshoeing is an activity for all ages and fitness levels. Many snowshoers, particularly those unfamiliar with the backcountry and the area, prefer to stay near well-marked and groomed trails. Snowshoers are reminded to stay to the sides of groomed Nordic trails used for cross-country skiing. All that’s required to snowshoe are a pair of semi-waterproof hiking boots, warm socks, winter clothing and a pair of snowshoes. It also might be wise to bring a camera. Snowshoes are available to buy and rent from almost every outdoor sporting goods store in Steamboat Springs.

Navigating
STEAMBOAT
Explore Steamboat magazine staff
Steamboat is typically thought of as having two main areas — the historic downtown shopping and dining district, often referred to as Old Town, and the mountain village area that includes the base of Steamboat Ski Area and the surrounding commercial and residential developments. Of course, as Steamboat has grown throughout the decades, the space in between and on the borders of the downtown and mountain areas has filled in with new residential and commercial development. But Steamboat remains easy to navigate for newcomers, and it typically never takes more than 10 or 15 minutes to get from one destination to the next, regardless of where you are in the city. Here are some tips to getting around Steamboat during your vacation.
18 | Explore Steamboat winter 2010-11
City bus system
Steamboat Springs Transit, the city’s free to rider bus system, runs all year long. The service is beefed up and extended in winter, providing a fast and better-than-affordable means of transportation for visitors. All buses are wheelchair accessible and include exterior ski carriers. Get the full bus schedule and map by logging onto www.steamboatsprings.net or calling 970879-3717.
Taxi and limousine service
Go Alpine is Steamboat’s lone local taxi and limousine service. Go Alpine taxis run all day and night. Arrange a ride by calling 970-8792800. The standard rate for taxi service in Steamboat is $3 per person plus $2 a mile. Children younger than 2 ride for free.
Go Alpine and Storm Mountain Express both offer executive shuttle service and transportation to and from Yampa Valley Regional Airport and Denver International Airport.
Lodging shuttles
Most of Steamboat’s lodging properties offer shuttle service to guests. Inquire at the front desk of your specific property to see what shuttle services are included with your stay.
Yampa River Core Trail
The Yampa River Core Trail is the city’s beautiful concrete path that parallels the river. The trail is cleared of snow throughout the winter, and it’s a great place to stretch your legs and enjoy a peaceful walk or snowshoe any time of year.

When the
SNOW flies the fish still bite
Explore Steamboat magazine staff
Just because snow and ice cover area streams, rivers and lakes doesn’t mean the fish aren’t biting. In fact, some experienced local anglers say winter fishing is one of their favorite times of year to cast a line in the Yampa River and other local water bodies. For those looking to fly fish, finding open, moving water provides the challenge and, in the case of the Yampa’s tailwaters beneath the Stagecoach Reservoir dam, the reward. With consistent water temperatures, the Stagecoach tailwaters yield plenty of bug life (think midge hatches) to sustain substantial trout numbers even in the dead of winter. The trick is that the vehicle access gate to enter the prime location through Stagecoach State Park remains closed until April 1. Due to the hike (or ski/ snowshoe) down the plowed road, the closure keeps weekday angler pressure down. Most Steamboat-area fly shops offer walk/ wade day trips to the area by providing snowmobile access to guests. Other high-quality tailwaters sections to consider — ones with simpler public access but
longer drives — include the Upper Colorado River beneath the Williams Fork Reservoir dam (east of Kremmling), the Blue River below the Dillon Reservoir (Silverthorne) and the Green River beneath the Flaming Gorge Dam (northeast Utah). For those unwilling to go the distance or to use a guide to outwit crafty fish lurking in these popular, often technical sections, winter brings huge volumes of the area’s public waters to the people in the form of ice fishing. Although some outfitters offer guided ice fishing, ice fishermen are, for the most part, left to their own auger-drilling. Other top area ice fishing options include Steamboat Lake, Elkhead Reservoir, Lake Avery (19 miles east of Meeker) and Wolford Mountain Reservoir outside of Kremmling. All that’s required to snowshoe are a pair of semi-waterproof hiking boots, warm socks, winter clothing and a pair of snowshoes. It also might be wise to bring a camera. Snowshoes are available to buy and rent from almost every oudoor sporting goods store in Steamboat Springs.

When most of
Steamboat is still asleep at 6 a.m., the kitchen is bustling and the counter is full of regulars at The Shack Cafe. The breakfast hot spot is usually full of workers having their morning coffee and locals scanning the headlines, perched on green bar stools in the rustic, wood-paneled restaurant on Lincoln Avenue. Some local devotees have been known to visit The Shack for one and sometimes two meals a day, and seasonal residents will want to put a visit to the cafe on their to-do lists.
“We have people saying, ‘We had to go to The Shack before we left town,”’ said Merdy Davies, who has been serving pancakes and avocado burgers at The Shack for more than 20 years. The Shack has been feeding hungry locals and tourists downtown since 1969. Current owners Jay and Marci Baverstock bought the then-Waffle Shack in 1978 after leaving jobs in California to live and raise their family in Steamboat Springs.
The carefully crafted menu includes the classic bacon and eggs, homemade hash brown potatoes and grilled sourdough toast freshly cooked to order. The Hobo Special — eggs with onions, peppers, cheese and a choice of meat as well as hash browns and toast — is a local favorite. Other popular breakfast favorites include the spicy huevos, The Shack’s kicked-up version of huevos rancheros, and the Jay’s choice, a traditional breakfast platter of bacon, eggs, pancakes and hash browns. Diners can also choose from three versions of eggs Benedict — traditional, Southwestern and vegetarian — each served with The Shack’s homemade Hollandaise sauce. While The Shack is best known for serving breakfast all day, the kitchen also offers lunch dishes beginning at 11 a.m. The lunch menu includes an extensive sandwich board, with offerings such as the standard club sandwich or French dip, served with onion rings, french fries, baked beans, coleslaw or cottage cheese.
Diners also can choose entree salads or Marci’s long-standing favorite — the best cheeseburger ever built. Weekday breakfast and lunch specials are just $5.95. Although The Shack mainly caters to the “meat and potatoes” crowd, a number of vegetarian options have been added to the menu in recent years. At breakfast, vegetarians have a variety of omelets and griddle dishes to choose from, including waffles, pancakes and French toast dishes. At lunchtime, vegetarians can choose between the veggie burger, grilled cheese sandwich and the grilled vegetable sandwich with tomatoes, onions, bell peppers, mushrooms, avocado and cheese on whole wheat bread. Customers can expect friendly and attentive service from the staff, many of whom have been there for years and greet regulars by their first names. “People know they’ll find a familiar face here,” Davies said.

Double Z Bar & BBQ — a friendly place to eat and drink
The Double Z Bar & BBQ is an organic high-
country collision of cowboys and ski bums who found common ground over beers at the bar. Head downtown to the evening’s real event: a beer and barbecue throwdown at the Double Z Bar and BBQ. Double Z — winner of the “Best of the ’Boat” for burgers, fries and barbecue — is a small but friendly bar with patios in the front and back. The lively bar and
grill quickly fills to capacity most nights. The crowd is eclectic— a talkative, welcoming, mostly local mishmash of extreme-sports enthusiasts tugging at eyebrow rings, ruddy-cheeked Shaun Whites wrestling with undisciplined locks, rumpled plaid-clad fishermen fresh out of the creek, rodeo chasers in sharp-creased jeans, and polarfleeced tourist families of four, dizzily ravenous after a taxing day of high-country recreation. You’ll find them all at “The Z.”
If you have a love of barbecue and are not afraid to get your fingers dirty, this is the place for you! Barbecue is nothing without its sauce, and Double Z’s is made on site. The sauce is balanced and sassy, a tangy-silky glaze that is at once bold and delicate with confident layers of tomato, garlic, smoke and sagey ranchland air. Try the sauce on a rack of ribs, pork or beef. The meat is slow smoked to perfection, not burnt but smoked, and not fatty but meaty. Go ahead and gnaw; you won’t feel inhibited
here licking your fingers. Ask for baked beans and crunchy coleslaw on the side. Servers at the Double Z are as casual as the place itself. There is no formality here, so relax and enjoy. If you’d like to see for yourself what Steamboat is really like, stop in. If you’re in the mood to stay in, pick up the phone because Double Z delivers for lunch and dinner. And if you just can’t get enough, you can also buy a tub of Z sauce to go.

La Montaña — Award-winning Mexican & Southwestern cuisine
Get La Montaña this winter! When Michael Fragola and Katie Weeks are looking for inspiration for their Steamboat Springs restaurant La Montaña, they head to Santa Fe, N.M. The restaurant partners and chef Jeff Bresnahan recently came back from what Fragola called “a three-day feeding frenzy” there.
“Santa Fe” is the best adjective Fragola can find to describe the style of cuisine at La Montaña, whose 28-year run near the ski area makes it one of Steamboat’s best known and most popular restaurants. At the crux of that populari-
ty is the food — a creative blend of Southwestern and Tex Mex dishes with some surprises thrown in. Take, for example, the Camarones de La Montaña, which is perhaps the restaurant’s signature entre. The dish features jumbo shrimp stuffed with crabmeat, cheese and poblano peppers, then wrapped in bacon and topped with a jalapeno hollandaise sauce. Another favorite is the Southwest Enchiladas — blue corn tortillas layered with roasted peppers, onions, goat and jack cheeses, and a tomato ancho sauce. Diners can choose chicken or shrimp, and the
dish is served with Spanish rice, pinto beans and a vegetable. Other dishes that differentiate La Montaña from other Mexican restaurants in Steamboat include the Pork Tenderloin Puebla, the Pepita Tuna and the Barbecued Glazed Salmon. Bresnahan, a Pittsburgh native and graduate of the Culinary Institute of America, runs a “total scratch kitchen,” meaning everything at La Montaña is handmade from the freshest ingredients. Fabulous photos of the Southwest by former restaurant owner Tom Garrett, “art filled decor” and linen napkins help give La Montaña the
“Southwestern upscale” atmosphere Weeks and Fragola seek, but they are quick to say the restaurant is as welcoming to families and children as it is to a couple seeking a romantic dinner. La Montaña’s location on Village Drive across from the Highmark at Steamboat Springs and One Steamboat Place puts it within walking distance of just about any condo on the mountain. The bar opens at 4:30 p.m. daily with happy hour going until 6. The restaurant’s handmade margaritas, including La Montaña’s homemade sweet and sour sauce, are a must. Dinner service is from 5 p.m. to close.

Ski the Mahogany Ridge this winter! Mahogany Ridge Brewery & Grill is like no other Steamboat Springs restaurant. First, it’s the town’s only brewery, offering 30 different craft-brewed beer styles throughout the year. There are 7 on tap at any given time ranging from the renowned Alpenglow, a rich amber ale, to Uncle Daryl’s Dunkelweizen, a Bavarian wheat beer with a banana and clove aroma. Second, it’s the only restaurant with a “dipping menu.” Entrees come with two chef-recommended dipping sauces or patrons can choose from any of the 20 dipping sauces on the menu ranging from Apple Chutney to Porter Cream made with Mahogany’s Powder Cat Porter. Mahogany Ridge also stands out for its food. “People come in and are definitely surprised by the food,” owner Charlie Noble said. “It’s not your typical brewpub fare.”
For example, not many brewpubs offer Adobo Rubbed Lamb Sirloin, Caribbean Jerk Spiced Duck Breast or the dozens of other internationally inspired dishes on Mahogany’s menu. Veteran Steamboat chef Jason Salisbury has manned the kitchen since Mahogany opened in 2003. Salisbury loves to travel, especially to Central and South America, and always brings back new cuisine ideas from his trips. For example, a trip to Costa Rica influenced the marinade Salisbury uses for the Spicy Tuna Ceviche, and Salisbury’s visit to Savannah, Ga., prompted the Southwestern Shrimp and Grits to make its way onto the Mahogany menu. Noble and Salisbury are veterans of the Steamboat restaurant business. Noble started with the Steamboat Brewery and Tavern as the brewer in 1993 and stayed with the business until it closed in 2002. He came back to the
brewery when it reopened as Mahogany Ridge in 2003 and bought the restaurant in 2004 with his wife, Nancy. Salisbury worked for La Montana as a chef for 9 years before coming to Mahogany Ridge when it opened. He’s been there ever since. Together Noble, Salisbury, sous-chef Brad Bates and Manager Jake Owens have created a winning formula — great food and hand-crafted beers in a wonderful setting downtown. And the prices accommodate just about anyone. “Locals say it’s their go-to place,” Noble said. “They’re always satisfied and they never break the bank.” Dinner is served at Mahogany from 4 to 10 p.m. Happy hour, featuring half-price drinks and $1 tapas, is from 4 to 5:30 p.m. The restaurant also does a late-night happy hour from 10 to midnight, with half-price appetizers and $2 pints.

Riggio’s Ristorante — traditional Italian cuisine
Exceptional Italian fare Great wine Relaxed atmosphere
There is something unique about traditional Italian cuisine that separates it from the culinary styles of other countries. Welcome to Riggio’s Ristorante, an escape to authentic Italy. Located on the west end of downtown, Riggio’s is a local’s favorite and an award-winning restaurant that blends the styles of northern and southern Italy with creative revisions of classic Italian dishes. Perfect for a romantic dinner for two or a traditional family meal, Riggio’s offers something for everyone to mangia! For Rich Most, owner and executive chef at Riggio’s, passion is the defining characteristic of Italians and their food. That passion for family and friends, great wine and perfectly prepared meals is always on display at Riggio’s.
Richard and his wife, Stacy, are entering their seventh winter as Riggio’s owners. They bring a family-first philosophy to every aspect of the restaurant. Nowhere is that more evident than their interaction with staff and guests. It’s one of the reasons Riggio’s has been among Steamboat’s most successful restaurants for more than 20 years. That success begins in the kitchen, where the professional staff uses only the freshest ingredients. The aromas of sauteed garlic and fresh lemons, rosemary and sage float from the kitchen into the main dining room, invoking thoughts of the Mediterranean that are brought to life in this newly renovated warm Tuscan atmosphere. Large, full-color Jim Steinberg landscape photographs of old-world Italy and the rugged Rocky Mountains of Colorado adorn the restaurant’s walls.
A large upstairs seating area is ideal for private parties, large gatherings and other special occasions. Riggio’s menu has been carefully crafted throughout the years to offer the perfect balance and variety of dishes. Many of these dishes have become local favorites. Riggio’s offers nightly specials and chef Most likes to get creative and incorporate fresh ingredients such as seafood risotto with truffle oil and taleggio cheese or Colorado lamb topped with an arugula hazelnut pesto. The restaurant’s wine list is constantly revised to offer patrons top selections from Italy and around the world. “The wine is as important to the restaurant as the food is,” Most said. Saving room for dessert is a must at Riggio’s, which offers a variety of
homemade Italian desserts. The desserts are made fresh daily and served in small portions for just $2.50 each, tempting patrons to sample more than one. A full selection of after-dinner drinks, including espresso, cappuccino and latte from Steamboat Roasters is a perfect complement to a great meal. Rich Most said an experienced, professional staff is one of the keys to Riggio’s success. Customers will recognize the staff year after year, which really reflects the family feeling the restaurant promotes. In fact, don’t be surprised if Lida Most, the owners’ 8-year-old daughter, visits your table to ask about your meal and your dining experience. But a visit from Lida should come as no surprise at a restaurant whose motto is “Let our family feed yours.”
Bon Appetito!

Idyllically situated at the base of Mt. Werner, the Truffle Pig is Steamboat’s newest and most vibrant mountainside dining establishment. The ski-in/ski-out restaurant at One Steamboat Place is open daily for lunch, après-ski and dinner with indoor and outdoor seating year-round. “While our service, setting and location are all premier, the creative flavors truly set us apart from any other restaurant in town,” notes Lance Thompson, director of operations for One Steamboat Place. Inspired by Napa Valley’s style
of farm-to-table cuisine, Truffle Pig Executive Chef Ezra Duker integrates local and regional products throughout the menu that are perfectly complemented by a range of microbrews, organic wines and clever cocktails on the bar list. A gourmand through and through, Duker’s experience at renowned restaurants in Oregon and Northern California bears great influence on his signature dishes in Steamboat, many of which have already emerged as local favorites since its debut this summer. Among the most requested are Mussels and Fries presented in a cast iron
pot with a white wine and garlic confit; the Truffle Pig Bacon Burger served on a brioche bun with aged cheddar, lettuce, tomato and onion; the Baby Beet Salad and Gnocchi of the Day. Flatbreads, pasta and pizza dough are always made daily from scratch. The adjacent Truffle Pig Market offers a full coffee bar, seasonal soups, fresh salads, savory wraps, hearty sandwiches and pizza by the slice. In full view of the slopes, an outdoor patio comfortably seats up to 60 and features heat lamps and a rectangular firepit where diners
can even roast s’mores. Inside, a wall of windows captures the light from morning sun over the peaks through alpenglow in the evening. The handsome finishes in the dining room include reclaimed barnwood doors and western appointments. A 45-foot-long bar features seven flat screen TVs, and a glass-encased cellar reveals the restaurant’s extensive wine list. The Market opens at 8 a.m. and the Truffle Pig opens at 11 a.m. for lunch with an incredibly reasonable après-ski menu offered from 2:30 to 5:30 p.m. Dinner service is available from 5:30 p.m. to close.

Get Slopeside this winter! Slopeside at the
base of Mount Werner is the place to be for après ski.
The Slopeside Grill hosts many a skier who stop for drinks and food on the restaurant’s “beach” after a day on the slopes. In summer, bikers, hikers and sightseers find the restaurant just as alluring. Slopeside offers everything from a family-friendly menu during the day to drink specials at night. With a large indoor seating area and plenty of outdoor, heated seating, the wait is never long and always worth it. Starting in February, the Slopeside bartenders serve up drinks on Steamboat’s one and only “ice bar” constructed of the cold stuff. And in the spring, live music fills the “beach” scene. Slopeside is open from 10 a.m. to midnight. It’s walking distance to the Gondola and skiers and snowboarders can glide right into the restaurant from the Right-O-Way or Preview ski runs. While its pizza is renowned by locals and visitors,
Slopeside also features a tempting assortment of dinner entrees such as blackened mahi, lemonherb halibut and homemade meatloaf. One of the restaurant’s specialties is the full rack — baby back barbecued pork ribs slow roasted to tender perfection with wood smoked flavor and served with potato and sauteed vegetables. The kitchen closes at 10 p.m., but the fun doesn’t stop! Slopeside’s late-night happy hour features $7 pizzas and $3 draft beer. With more than 20 pizzas and nine drafts to choose from, there is never a shortage of late-night options. General manager Chad Gagliano — who used to own Levelz, a Ski Time Square nighctlub and music venue lost to redevelopment three years ago — says he plans to “bring music back to the mountain” with live acts and other entertainment at Slopeside. “This is a fun, family place,” Gagliano said. “It’s a great place to eat, have a good time and just enjoy the mountain.”

With more than 50 HD TVs and full satellite capability, The Tap House provides sports programming that rivals any big-city sports bar. And although it features a large dining room and bar, The Tap House retains the small-town charm and comfort unique to Steamboat.
The Tap House offers all the traditional sports grill food — burgers and fries, battered chicken fingers, onion rings and heaping piles of nachos.
Tuesday is Wing Day at The Tap House, when 33-cent wings are offered from 11:00 a.m. to midnight. Wing Day is so popular that owners track sales by weight, usually selling 2 to 3 tons of wings a month.

The spacious dining room is a favorite spot for locals and tourists. The bar often has been referred to as the Cheers of Steamboat — “the place where everybody knows your name.” The analogy always puts a smile on the faces of local owners Gary Saxe and Melissa Baker.
But the restaurant is equally proud of its authentic Mexican fare such as the quesadillas, burritos, fajitas and tacos. And, of course, there are the buffalo wings. Often regarded as the home of the best wings west of Buffalo, The Tap House offers nine varieties of wings: mild, medium, hot, super hot, hot barbecue, barbecue, spicy garlic, cajun and the ever-popular oriental
“Not only is Wing Night a great deal, but it has become a weekly social event,” Saxe said. If your appetite demands more than wings after a long day of enjoying the Yampa Valley, The Tap House has appealing entree choices, as well. Take your pick from ribs, a half chicken, a tuna dinner, an 8-ounce sirloin steak, a 12-ounce New York Strip or a 16-ounce rib eye.
