Hidden behind shoji screens in each bedroom pavilion is a small kitchen with refrigerator, freezer and microwave. Personal laundry facilities (washer & dryer) have been included in the upstairs bedrooms of the beach pavilion, the master bedroom, the kitchen and by the pool for guest convenience. Housekeeping laundry facilities are also available at two other discreet locations on the property. At the furthest end of the property in a secluded position, the master bedroom is reached over its own bridge and boasts its own sun terrace with fire pit. Unwind from a hard day at the beach in the oversized double shower that opens out on to a private koi pond complete with waterfall. The Superyacht Regatta was first launched in Porto Cervo, Sardinia in 2008, marking the beginning of the Mediterranean superyacht calendar. Perhaps the most extravagant event to take place during the week was the Hollywood Glamour Beach Party, hosted by Oil Nut Bay at their outdoor pool and patio entertaining area. The vintage Hollywood themed party attracted an exclusive list of guests, who dressed up in fancy attire, with feather boas and elaborate accessories, complementing the property’s extravagant decor. At the Loro Piana Owner’s Dinner at YCCS meanwhile, a noted Italian soprano was flown in to regale guests during a gourmet dinner. The regatta was a huge success for all those who viewed and participated in the races. After three days of racing events, the overall victory was awarded to P2 in Class A, and Marie in Class B. To start off, I, chef Megan, am a shameless hugger. I love a parental-hug; a sibling-hug; a friend-hug; heck, I love a dog-hug. Just as hugs are all about love, so is the food I prepare for our very special guests onboard Lolalita. Every detail is carefully selected and dreamed-over, with the expectation of pure, delicious delight as a final plated result. When Lolalita is preparing for charter guests’ arrival, we get to know them through email and phone conversations, and already, before the week begins, we start to feel the bond. People board and I want to give them big hugs right out of the gate – not only because I love hugs, but because I feel I’m already acquainted with them and can’t wait to know them better. Naturally, some guests become very comfortable with the crew as the week progresses. As night-time falls, the cocktails flow and the

atmosphere warms with laughter and good cheer. One evening, anchored outside Spring Bay on Virgin Gorda, after enjoying a beautiful sunset overlooking the Sir Francis Drake Channel, we started our dinner service for a particularly affectionate group of Canadians. All throughout the day, we had been laughing, cutting jokes, becoming ‘framily:’ a loving mix of friends and family. After serving the main course, I went back out to check on our guests and one man stood up abruptly. As could be imagined: I was intrigued. He pushed his chair away; walked swiftly over to me; held my face in his hands; and kissed me on the forehead, exclaiming, “THIS IS THE BEST RISOTTO EVER!” I laughed, relieved at his elation. A chef can’t complain about so overt a compliment. And so, here’s my ‘Kiss The Cook Risotto,’ made with love, and served with sheer bliss.


Kiss The Cook Risotto

Method

2 cups risotto rice (Arborio, Carnaroli, or Maratelli, for example) 5 cups simmering beef stock (homemade is best) 1 tbsp olive oil 4 tbsp butter 1 medium onion, minced 4 cloves garlic, smashed and minced ¼ cup sundried tomatoes in olive oil, minced ¼ cup crispy-fried bacon, diced (not as fine as the sundried tomatoes) ¼ cup minced fresh basil ½ cup finely grated parmesan cheese ¼ cup finely grated romano cheese ¼ cup finely grated asiago cheese ¼ cup mascarpone cheese ½ cup sour cream Salt and pepper to taste Whole basil sprigs for plating

In a deep saucepan, melt olive oil and butter. Sautée onions; add in garlic; cook until just opaque, barely caramelising. Add in risotto rice and stir constantly. The rice will turn slightly brownish-golden in colour and will give off a gorgeous nutty aroma. Add in sundried tomatoes and bacon. Lower heat and, one cup at a time, add in beef stock until rice has completely absorbed each cup, stirring constantly. When all beef stock has been added, turn off the heat and add in the basil, parmesan, romano, asiago, mascarpone, and sour cream, folding everything together thoroughly. Salt and pepper to taste and serve in a plating ring. This risotto has a strong enough personality to stand all alone, or beautifully complements many dishes, such as filet mignon, ossobuco, mahi mahi, or roasted chicken. Buon appetito!

In 2005, I spent many weekends on the island of Anegada helping local shipwright Watson White build a traditional wooden sloop named Sea Moon. My record of that endeavour has since been recorded in a book titled How to Build a Virgin Islands Sloop which is aimed at educating youths at the primary level about the techniques used in traditional sloop construction, and to nurture an appreciation of the maritime heritage of the Virgin Islands. In addition to learning these construction techniques from Mr. White, I was also very fortunate to hear many stories from the past as related by him during our long days cutting wood in the bush, and under the sea grape tree preparing the frames. I would like to share two short ones with you now. The first took place in Anegada during the Second World War. Although most of the fighting occurred in Europe and Asia, the Caribbean became a battleground too as the war at sea was waged here also. German and Italian submarines, or U Boats as they were called, roamed the region sinking merchant vessels bound for the Allies in Europe. In response, the U.S. built a naval and submarine base in St Thomas in Charlotte Amalie. One day, late in the war, Watson White was out fishing with his uncle towards the West side of Anegada when they came across

a very strange object floating in the sea. It was large, black, and made of steel with several long prongs sticking out of it. Without any idea that what they had just discovered was a naval mine with enough explosive power to sink a large ship, they tied a line to it and towed it back to the

settlement with them. When reaching the shore in Way Pole Bay, Watson’s uncle declared he was heading home for lunch and would return later to investigate their find. He suggested that Watson do the same thing. Watson however decided to linger a bit after his uncle had left and being a young teenager, his curiosity won the better of him. There was what looked like a large inspection plate, bolted onto the cylinder and with a hammer and screw driver he found nearby, he began to knock the bolts off of the plate. What a surprise to Watson when he finally knocked off the plate and discovered that the cylinder was full of gunpowder. He may not have possessed knowledge of naval mines, but he well knew what gunpowder was. Watson’s heart stopped as fear crept over him. Not only the fear of blowing himself up, but that of discovery when his uncle found out what he had done. As luck would have it, his uncle showed up just as he was attempting to put the plate back on. He had cut short his lunch out of curiosity of his own and an intuition that his nephew might do exactly as he had done. There was no need for punishment as the appearance on Watson’s face told him he would never do anything like that again. His uncle’s only words were: “My God there wouldn’t be enough left of you to bury.”


This second story takes place five or so years later in the early 1950’s. Watson was sailing in a sloop with his uncle to Charlotte Amalie with cargo to sell and a few passengers aboard. It was a very calm day with light winds if any at all. At times, they had resorted to oars to help them on their way and as they reached the end of the Ghut, approaching the rocks called the Cow and the Calf, Watson’s uncle saw some black shapes off in the distance. He ordered a young and very strong Watson to shimmy up the mast as far as the hounds—the point on the mast where the forestay and the shrouds meet—and get a better look at what was ahead. At reaching this height, Watson reported what looked like people in the water hanging on to bags of charcoal. They sailed in that direction and rescued five people indeed hanging on to bags of charcoal for dear life. They came from what I believe was the sloop May. There was the Captain, his young grandson, and three passengers. With the current being stronger than the wind, they were forced onto the Cow and the Calf where the sloop broke apart being also overloaded. There were two others onboard who drifted away from the first five, and they were fortunately saved by another boat.

This was a fairly common occurrence in those days. Boats were almost always overloaded beyond a safe level for operating and in light wind, if the current was against you, there was no way to control the progress or direction. There is one other anecdote that goes with this story. One of the passengers rescued by Watson and his uncle was a young man from St Thomas named Hughes. This Hughes was in love with a very beautiful woman, but was so shy and nervous, he was afraid to approach her. Apparently, he took his problem to some of his older friends and relatives and was given some very sound advice. They told him he needed to go to the pharmacy in town and ask for some ‘Compelling Powder,’ some ‘Taming Oil,’ and pills called ‘Come Bring Her To Me,’ which he did. The pharmacist on hearing the request said “Just one moment.” He retired to his back room and soon returned with the requested order filled for which he was paid in full. How these prescriptions were administered or the end results are not clear, but one thing is certain, Hughes did not return to complain or ask for his money back – perhaps he was too embarrassed.

Nominations are open June 1 Started in 2011, Virgin Islands Property & Yacht presented a set of awards to congratulate companies within certain industries for their respectable contribution to the BVI community. Every year since, VIPY has run the awards with the number of voters increasing and the competition ferocity intensifying. BVI visitors and residents have found the awards to be extremely helpful with the results at the end representing the most popular companies within each category. Due to its soaring popularity, in order to prepare you for the 2015 reader vote adequately, we are alerting you about this early. Subsequently, over the next few months we will be conducting both the nominations and voting period for this anticipated event: June’s issue will outline full definitions of each category for people to nominate their favourites as well as the rules for voting July and August’s issues will be the period for voting September we will tally and screen the results The final event will be in October as is usual with the venue to be confirmed
