THE PRISTINE NATURAL BEAUTY of the Virgin Islands is fantastically unique and provides a stunning backdrop to island living. The Caribbean’s native plants and flowers add colour, provide shade, and enhance an island home with organic charm. One of the best parts about living on an island is the unbelievable vista, and any landscaping should add to the scene without obstructing water views or creating visual distractions. Ms. Natasha Harrigan of the J.R. O’Neal Botanic Gardens in Road Town, Tortola offered invaluable information on the best plants native to the Virgin Islands to grow indoors and out. With the fluid nature of indoor-outdoor living, these native plants offer local flavour to complement the island’s natural surroundings.

OUTDOORS

Landscaping is the ‘welcome mat’ of a home. It is the first thing people see as they arrive and the last thing they see as they leave. These outdoor plants thrive in the tropical climate and add shade, colour, and beauty to an outdoor space. TREES Palm trees are recognised

the world over as a symbol of the tropics, and the many varieties each offer their unique shape and shade capabilities. Some plants native to the BVI that provide excellent shade include the Jacquinia, the Orange Manjack tree, Wild Mauby, and the Mahogany tree. These trees tolerate the Caribbean sun well and provide a

variety of contrasting shapes. If you’re looking to add some colour to your landscaping, ornamental trees provide a stunning array of hues in addition to offering desirable shade. The flowering yellow poui, black pearl, ylang ylang, and vivid flamboyant tree each offer a colourful canopy. The beautiful Frangipani are also known to be particularly tolerant to pests and wild animals. GROUND PLANTS Traditional yard grasses don’t grow particularly well in the islands, so other ground plants can provide coverage and diversity to a landscape. Many cacti are native to the BVI and require little water to thrive. Aloe vera and bromeliads provide beautiful and low-maintenance ground coverage. Crotons, red and green dracaena, schefflera, and bougainvillea plants are very tolerant of the sun, can withstand a longer period without watering, and have fewer nutrient needs, making them ideal for outdoor landscapes. “If your property comes into contact with much seablast, stay away from the softer and more delicate plants like annuals, perennials and some variegated species of plants as they may not be able to tolerate the high salt content,” said Harrigan. are eye-catching and often the showpieces of a home’s landscaping plan. Bougainvillea and blooming agave require less water, but provide fantastic flowers. Morning glory and hibiscus also offer beautiful flowers to welcome anyone into a home. Heliconias, ginger lilies, numerous ferns, and the beautiful bird of paradise plants don’t require many nutrients, but need lots of shade and water. Once planted in the right spot, these beautiful plants thrive and produce stunning flowers.

INDOORS

Plants provide an organic element indoors, as well as helping keep the air clean and providing a relaxed sense of calm inside a home or office. Potted plants like anthuriums and coleus offer beautiful texture to a room, while the flowering prunella and the ever-popular orchid radiate stunning colour into the home. The unique shape of sansevieria and lucky bamboo add diversity to your indoor landscape while requiring less maintenance.

THINGS TO CONSIDER

Caribbean living has its own unique challenges that go along with creating a beautiful space. Consider how day to day life with these plants will affect your choices. If your property has a pool, remember when placing plants around it what kind of leaves you will have to scoop out of the water. Any pets will also potentially be interacting with the landscaping around your home, so make sure any poisonous or hazardous plants aren’t anywhere the pets could be harmed. island living. “Most plants are pruned to pests, especially non-native plants that are more at risk. Some pests are even known to only affect certain families of plants. The truth is, once your plant is stressed—lacking water or nutrients—they will be more prone to pests,” said Harrigan. Take into account the placement of your plants based on the orientation of your home. The Caribbean sun can be rather harsh, so make sure the plants you choose can withstand the amount of sun or shade they receive based on their placement in

Conceived in the mid-70s, Nanny Cay is renowned for its comfortable, loyal nautical community that encompasses ‘village camaraderie.’ Famous for hosting the BVI Spring Regatta and Sailing Festival, the BVI Charter Yacht Show, the Caribbean 1500, the Biennial Caribbean Oyster Regatta, and many other well-known sailing events, the modern, naturally sheltered marina holds berths for 222 yachts. Comprised of a high-speed fuel dock, pump out station, luxury shower facilities and restrooms, and water and ice from the marina’s own R/O plant, Nanny Cay’s full-service boatyard now has storage for 310 yachts. OVER THE PAST THREE years, the College has found it more and more difficult to fund the maintenance and repair of our traditional wooden sloops. Four years ago, our active fleet of sloops was up to an all-time high of five and prospects for the future looked bright. Today, we only have three that are sea-worthy while two remain hauled out in the boatyard at Nanny Cay in dire need of repairs. Wooden boats—like any boat— need regular maintenance or they will deteriorate rapidly. Exposure to the sun and the absence of being in the water, make the planks shrink and

decay quickly. The longer they remain out, the worse their condition gets. Our two traditional sloops Sea Moon and Moon Beam have reached the point where their condition is critical. It is with this in mind that I have reached out to the private sector to raise monies for the benefit of our sloops and the Maritime Heritage programme in general. One of my duties is developing funding possibilities from private groups and individuals, so in the fall of last year (2016), I began discussions with individuals who have assisted me in keeping our programme alive. The response to my inquiries was

immediate and overwhelmingly positive. A group of us met for the first time in early September and have formed what is called the Virgin Islands Sloop Foundation. We created a board and have been meeting regularly for the past six months. We have applied for incorporation and by the time this article is published, we should be registered as a nonprofit organisation. The members of the board of the VI Sloop Foundation consist of representatives from the BVI Spring Regatta Committee, the management of Nanny Cay Marina, the Governor’s office, the College, Sister Ship Yacht Management, VP Bank,

aLookingGlass, a local shipwright, and a local sloop Captain. All of these individuals and organisations are no strangers to our local sloops. They’ve been supporters contributing time, money, and talent to help me maintain our sloops and our programme for over 15 years. In addition, every one is a veteran sloop sailor, which is a prerequisite for membership on the board. Now our relationship has been formalised, we can operate on a higher plane in an enhanced position since all of our talents are pooled together and structured in an organisation. Our purpose is: • To preserve the maritime heritage of the Virgin Islands by ensuring that the history and knowledge of traditional wooden boat building is passed on to future generations.

Our mission is: • To provide funding and supervision for the maintenance and restoration of historically significant wooden sloops in the Territory. • To organise and develop programmes that teach and enhance boat-building skills as a learning opportunity for the youth of the Virgin Islands. As we move forward, we’ve already begun several fundraising initiatives in which included is a founding membership card, requiring a one-time fee of 50 dollars. We feel confident that we will receive the funds needed not only to repair our existing sloops, but to enhance our Museum activities and bring the College’s Maritime Heritage programme to a level never before dreamed of. ■

BRUNCH TO ME IS ALL about Eggs Benedict! It is a dish that I’m guaranteed to have at any brunch. Recently, I was in Annapolis and had an amazing crab cake Benedict which was absolutely to-die-for. It got me thinking how I could create my spin on it and I came up with a salmon cake. It really is a wonderful alternative to the regular English muffin – much more flavour and texture, and probably a bit healthier too! Did I mention it’s gluten free? I love the sweetness the comes through in the salmon cake, the tanginess of the roasted tomato, and hollandaise and creamy poached egg. A delicious combination. Eggs Benedict has a few steps to it, however, it can be done at home. If you haven’t made it before, make sure to test it out before you try it on a crowd so that you know what to expect. Enjoy and Happy Easter!

Eggs Benedict with Sweet Potato Salmon Cake For the Salmon Cake M A K E S A P P R OX . 6 C A K E S L E V E L : E A SY GLUTEN FREE! INGREDIENTS 3 /4 lb cooked, flaked salmon 2 small sweet potatoes 1 tbsp of olive oil 1 tbsp of butter 1 /3 cup diced red bell pepper 1 /4 cup diced shallot 1 tbsp minced ginger 1 tbsp mayonnaise 1 egg 1 tbsp Salt 1 tsp Pepper Your favourite hot sauce (to taste) METHOD Start by peeling the sweet potato and cut into same in size cubes. Transfer to pot filled with salted water. Bring the sweet potato to boil and simmer until fork tender. Strain and transfer to food processor and puree until

smooth. Transfer to medium mixing bowl. In a medium sized frying pan, heat up oil and butter on medium heat. When the butter is foaming, add the bell pepper, shallot, and ginger. Cook until tender not browned. Add the cooked vegetables to the sweet potato puree, along with the flaked salmon and the final 6 ingredients. Mix together well. Using a 1 /3 cup measure, scoop the mixture and form into a patty (like you would making burgers). Transferred to a baking tray lined with parchment. Wrap the baking sheet with plastic wrap and refrigerate for at least 1 hour to firm the patties up. At this point you can freeze the patties on the tray. Once frozen, they can be wrapped individually and kept frozen in a zip top bag for up to four months. Preheat oven to 375 degrees and bake for 30 – 40 minutes until golden brown and cooked through.

For the Roasted Tomato INGREDIENTS 1 medium sized tomato Drizzle of olive oil Salt & Pepper

METHOD Preheat oven to 375 degrees. Slice tomato into thick rounds (1cm thick – approx. 4 slices per tomato). Place onto baking tray, drizzle with olive oil, season with salt, pepper, and roast for 25 – 30 minutes. Try to time this at the same time the salmon cakes are baking. Set aside until ready to assemble eggs benedict.

For the Poached Eggs INGREDIENTS 4 eggs Juice of 1 lemon METHOD Bring water to a gentle simmer. Add 1 tablespoon of lemon juice to water. Gently crack 1 egg into a ramekin or glass (to help with pouring). Using a slotted spoon, slowly swirl the water in a wide circular motion to form a vortex. Gradually add the egg and allow to simmer for around 5 minutes or until the egg whites are cooked, but the egg yolks are still runny. Time will differ depending on heat.

TIP You can make poached eggs in advance! Follow the first five steps, and transfer straight to an ice bath and keep in refrigerator until ready to use. Simply heat through in a pot of simmering water for no more than 1 minute – you don’t want to overcook your eggs!

For the Hollandaise Sauce INGREDIENTS 4 egg yolks 2 tbsp lemon juice (or to tasted) 6 oz cold cubed butter METHOD Using the double boiler method, bring a small pot of water to a simmer and place a heat proof bowl over the top. Add the egg yolks and whisk until they begin to turn lighter in colour. Add 1 tablespoon of lemon juice, save the other for the end. Gradually add 1 cube of butter at a time while whisking constantly. After each cube has been incorporated, add another. Alternate by whisking over the heat and off the heat to prevent from seizing or separating. This process may take 20 minutes or so. Add remaining lemon juice. TIP Unfortunately hollandaise does not keep well. You can make about 1 hour ahead of time. If it thickens too much, you can add just a touch of the warm water from the poached egg liquid to loosen up. TO ASSEMBLE Place salmon cake on the plate, followed by the roasted tomato, optional spinach, poached egg, and finally spoon over the hollandaise sauce. Add a sprinkle of cayenne (watch out, it is spicy!) or cracked black pepper for garnish. Serve with roasted asparagus if desired!

Crepes are one of the very first things I remember learning to cook in the kitchen as a kid. So whenever I make them, it takes me back to my childhood when my mum and I would spend the morning whipping up dozens of crepes for a big festive brunch. We would set them out on the table, family style, and lay out all of the fillings. We would fill them with whatever we had in the house, lemon, sugar, chocolate hazelnut spread, maple syrup, fruit and honey. I hope you enjoy making them as much as I do and who knows, maybe this will be the start of a new brunch tradition in your house!

MAKES 8 L E V E L E A SY !

MAKES ABOUT 2 CUPS L E V E L E A SY INGREDIENTS 4 oz butter 6 bananas, peeled and sliced 1 /4 cup brown sugar 1 /2 tsp cinnamon 1 /4 cup rum METHOD Start by melting the butter in a medium sized frying pan on medium high heat. Add the bananas, sugar and cinnamon, and cook until sugar starts to melt. Off the heat, add the rum and allow to cool down for about 5 minutes until a caramel sauce is formed. WARNING! Rum is flammable – please take caution when doing this step and never pour rum from the bottle. ■

INGREDIENTS 1 cup all-purpose flour 1 /4 caster sugar 3 eggs 1 1/4 cup whole milk 2 tbsp melted unsalted butter + more to coat frying pan METHOD In a medium sized mixing bowl, whisk together flower and sugar and form a well. In a large liquid measuring jug, add milk and eggs, whisk well until properly combined. Slowly add egg mixture to well of the flour mixture and begin to whisk, gradually combining the flour into the egg mixture. Add the melted butter at the end and whisk so there are no lumps. Refrigerate for about a 1 /2 hour. Over medium heat, heat up a 6 inch, non-stick frying pan and add butter to coat. Using a 1 /3 cup measure, add the batter and swirl slowly around the pan so that a thin layer is formed. Allow to cook on first side for about 1 minute and flip over for another minute. They should be golden and soft. Layer up on a plate and keep in warm oven with a cloth over them. Repeat steps above until batter is finished, re-coating the butter in between to prevent from sticking.

INTRODUCING PEOPLE TO THE BEAUTY of the BVI is our ‘ambassador artist’ Judith ‘Jinx’ Morgan – a watercolour painter with a fondness for lightness and brightness of our beautiful BVI vistas. “Finding a wonderful subject and trying to capture its essence on paper,” is Jinx’s motivation as she explained that the BVI is never short of stimulating material. “There are many technical aspects to watercolour, but they are secondary to having a vision of what you want to say and saying it convincingly,” she continued. “What often inspires me, is the counterpoint of sunshine and shadow that is especially dramatic in the tropics.” Many residents will know Jinx by her particularly distinctive signature works and the renowned establishment The Sugar Mill Hotel on Tortola, which Jinx and her husband Jeff sold more than a year

ago. Despite her clear skill in the art world, this was not the artist’s original background. Born in California, Jinx was raised in the San Francisco area, and attended Stanford University, where she graduated with an English degree. She and her college roommate wrote two bestselling cookbooks that led to a column in Bon Appétit

Magazine. Writing a further five cookbooks, for several years Jinx was also the food columnist of American Airlines inflight magazine. Another career shift took place when Jinx and husband Jeff arrived in the BVI in 1982

to take over The Sugar Mill Hotel and she began painting five years after. “Although I didn’t study art in school, I have been fortunate to have had many inspiring teachers including Roger Burnett, David Millard, Judi Betts, Jean Dobie, Carolyn Lord, and James Godwin Scott,” said Jinx. “When my responsibilities at the hotel prevented me from travel, we decided to offer workshops to other artists at The Sugar Mill and that way I was able to take the classes too.” Like many artists here in the BVI, the Territory itself raises the creative abilities out of Jinx; however, her representation of the islands uniquely replicates the natural beauty, fascinating history, and various boats travelling through the region. Painting with the same group of artists for many years, Jinx is part of a developed community of creatives who serve as an honest, humble, supportive group. “We paint every Thursday and after painting all morning, we critique one another’s work,” said Jinx of the friendship circle. “When we first started the critiques, we were all very polite about others’ works, but now we’re fairly ruthless and we like it better that way as we learn so much more from one another. That is not to say we always take the critique to heart and change things in a painting. Sometimes suggestions are very helpful in improving the work, but often they just make us think and reinforce our initial approach. “In 2006, 15 of my watercolours were included in a show in London at BVI House. Also, during the Duke of Gloucester’s visit to the BVI, he purchased one of my paintings as a memento of his trip. My work is in private and corporate collections in the United States, England, Canada, Italy, and Austria as well as the Caribbean.” In 2015, many will remember that Jinx held a very popular show at the

Lisa Grey of Images, BVI organised the event, displaying over 40 of Jinx’s paintings. “In 2016, The Art Council of the BVI International Arbitration Centre selected six of my paintings to hang in their new offices in the Ritter Building and four of my paintings were chosen to hang on the walls of the Legislative Council of the British Virgin Islands,” Jinx continued. With a subtle aim to provide a souvenir of the BVI’s beauty for all people who visit, she has had many examples where admirers of her works use them in precisely the manner she enjoys hearing.

“A gentleman purchased one of my hammock paintings and I asked him where he was going to hang it,” said the artist. “He said he thought it would go in his office. A week or so later I received an e-mail from him in which he said ‘when I’m feeling really stressed, I look at the opposite wall and I’m back in Tortola relaxing in that hammock. It’s like taking a mini vacation.’ I hope all my paintings give that much pleasure. ■
