editor’s picks I say it every year. I don’t know why I’m always so surprised, but this summer truly has flown by in a flurry of BBQ’ing, beach time, New York City, and our annual family trek to the lake. It’s been an incredible season; one that I’m not ready to say goodbye to yet. But, as the leaves cling to the trees for a few weeks longer, and we west coast dwellers enjoy the dwindling rays of sunshine, I’m comforted by thoughts of fall: cozy sweaters, hearty foods, and hibernating under a mound of blankets. While I do lament the loss of daylight, fall is my favourite season for fashion and I can’t wait to hit the stores to check out Tanya’s Top Trends (page 20). I’m also all about comfort food and Linda’s recipe for Steak & Stout Pie (page 26) just may have me enjoying beer. On one of those crisp, sunny fall days that we all wait for, I’m going to grab a bike and head over to Westham Island (page 30) where Kristine discovered an oasis in our metropolis. There is one other fabulous thing about this fall in particular – the launch of our latest print edition in Chilliwack. I’ve been spending a lot of time there over the past few months and I’ve been pleasantly surprised - these ladies know how to live a chic life in the country. There’s plenty of great shops and boutiques to browse through, so grab a few friends and make a day of it. With all that our community has to offer (check out our Events Calendar online) there is more than enough activity to keep me busy. What do you think? Will fall pass as quickly as summer? We’ll see. W

hen homeowners, Darryl & Jodi Bueckert, decided it was time to redecorate their bedroom, the transformation was about as drastic as it gets; they made a 180 degree flip from a French Country flair to a minimalist, hotel-inspired oasis. “We wanted a place where we can hide away from life for a bit,” says Jodi. “A place where the worries of the day fade away and we can have some quality couple time.” For the past year the couple has been making changes throughout their home, paring down their possessions in preparation for a big life change; they’ll be spending six months of the year in Mexico working in a not-forprofit capacity. “We felt the need to simplify our life,” says Darryl. “We don’t want to be tied to our things. We want to go where life leads us without the concern of everything we might be leaving behind.”

re-styled using copper pipe. The floating side tables bring in sentimentality as they are handcrafted by Darryl using the wood from the bed his grandfather built for his mother when she was a child. The new elements come via a few special pieces curated from the shelves at McBurney Junction Furniture & Interiors. “A pop of colour and lots of textures give life to a space,” says Jodi. We think this humble, minimalist space is full of personality and family – very much like the couple who occupies it.

Jodi is quick to point out that a simplified lifestyle does not mean boring or devoid of personality. “It’s about deciding what is really important in your space and finding the perfect pieces to bring it to life.” The space includes an eclectic mix of old and new, with furniture re-purposed from local thrift shops. The floating dresser used to have legs and the pendant lights have been 12

AN ECLECTIC PERSONAL REFLECTION This is a story within a story; the second phase of a journey that began in a rather typical fashion. It goes something like this: mom has a child with skin challenges. Mom can’t find pyjamas and clothing to soothe her child’s skin. Mom steps into the world of entrepreneurship to create the perfect pj’s for her child. We’ve heard this story before, but what we don’t often hear is the continuation of the story, the sequel, part deux, if you will. Fast-forward 11 years through the building of a wholesale business, to a new phase and a new challenge. With tears of happiness in her eyes, Krisztina Lyle, owner of PJ’ZZZZ Bed Bath Sleep, and creator of the wildly popular PJ’ZZZZ brand of sleepwear, tells us that the new retail location in South Surrey is the realization of a dream she didn’t even know she had. “Everything came together with no specific plan,” she reflects. “It is a collection of all of my favourite things under one roof creating an eclectic mix of offerings that inexplicably work together.” Work together, they do. With everything from children’s pj’s to women’s chemises, bath and body products to gift ideas for all ages, the shop is a veritable treasure trove of beautiful things sourced from all over North America. “I love to travel and discover unique products,” says Krisztina. “If I find something new that I like I will figure out a way to bring it into the store - I don’t take no for an answer.” Indeed, while browsing through the store we couldn’t help but notice the diversity of choices that stimulate the senses, and the fact that the product selection is very different from other shops and boutiques. “We work very hard to ensure you won’t see the same items here that so many other boutiques carry,” adds Krisztina.

& stout pie This comforting classic is transformed with a fabulous local stout beer, choice cuts of steak and bacon, and buttery pastry. On a crisp fall day, nothing’s better than digging into a rich, meaty dish full of amazing flavours. Photo & text by Linda Horn

Steak & Stout Pie Serves 8 hungry folks Ingredients

Pastry: 3 cups all purpose flour 2 tsp sea salt 1/2 cup unsalted butter, chilled, cut into cubes 1/2 cup vegetable shortening, cubed 1/2 cup ice water More flour for dusting & rolling Filling: 6 strips bacon, cut into chunks 2 Tbsp olive oil 1.5 lbs sirloin steak, cut into bite-sized chunks 2 Tbsp all purpose flour 1 medium onion, diced 4 cloves garlic, smashed 1 carrot, sliced 2 stalks celery, diced 12 small new potatoes, cut in half 12 white or cremini mushrooms, cut into quarters Small handful each: fresh rosemary and thyme, chopped 3 small bay leaves 1 398ml can diced tomatoes 2 Tbsp tomato paste 3 Tbsp Worcestershire sauce 1 650ml bottle Stout beer (not bitters) 1.5 cups organic beef broth Salt & pepper to taste stimulimag.ca | fall FALL 2014

Directions

For the pastry: In a food processor, combine flour and salt and pulse until combined. Add chilled butter and shortening and pulse until mixture resembles rough pea-sized crumbs. Turn mixture out onto floured counter and sprinkle with ice water. Mix dough together with a fork, press into a disc shape, wrap in plastic, and refrigerate for at least an hour. Remove dough from refrigerator about a half hour before you will roll it out. For the filling: In a large dutch oven style pot, cook bacon on medium heat until cooked. Remove bacon to drain on paper towels, pour out bacon fat but reserve 1 tablespoon in the pot. Add 1 tablespoon olive oil to the bacon fat. Roll steak chunks in flour until lightly coated and over medium heat, lightly brown chunks of steak, a few at a time. Remove steak chunks to a plate; repeat with remaining steak chunks. Add remaining 1 tablespoon of olive oil to pot and add onion and garlic, cooking until soft and translucent, about 5 minutes. Add carrot, celery, and potatoes, and cook for another 5 minutes. Add back the steak and bacon, and add mushrooms, herbs, diced tomatoes, tomato paste, Worcestershire sauce, beer and broth. Increase heat until bubbling, then reduce heat to low. Simmer gently for 1.5–2.5 hours or until meat is tender, vegetables are cooked, and sauce is thickened. Remove from heat. To assemble and bake: Pre-heat oven to 375° F. Remove bay leaves and pour filling into a pot or pan. Sprinkle your counter with flour, and roll out pastry dough to about 1/8" thickness. Gently cover pot or pan with pastry. Cut off excess pastry, leaving about 2" of overhang. Roll and crimp up excess pastry around edge of pot to seal in the filling. Bake for about 45-55 minutes, when pastry is browned and filling is bubbling. Let cool for about 15 minutes before serving. Enjoy! 27

An Island in a

Metropolis

Tucked along River Road in Ladner, B.C. lies scenic Westham Island. This quiet farming community is accessed by a century-old wooden swing bridge flanked by float homes and the Fraser River Delta. A picturesque spot with a rich history in farming, Westham Island is a perfect destination for an afternoon visit. Westham Island Herb Farm is located on part of the Ellis family farm; the property has been farmed by the family since 1916. Open until October 31st, Westham Island Herb Farm is a great stop for more than just herbs. Pick up fresh flowers, preserves, and of course, fresh produce. At the furthest point of the island, you will find the George C. Reifel Migratory Bird Sanctuary. Open yearround the sanctuary is made up of 350 hectares (or 850 acres) of wetlands, marshes, and low dykes in the centre of the Fraser River Estuary; a perfect spot to get back to nature, especially with the migration season of Lesser Snow Geese, which typically starts in October. Also on the island, Westham Island Estate Winery and Cropthorne. Run by sisters, Lydia and Rachel, their produce can also be found at some of our local farmers markets through October.

Tips for your trip: • Ride a bike. Park your car in the Village of Ladner, ride along River Road and over the Westham Island bridge to appreciate this farming community. It is a flat and easy ride on public roads. • Leave your dogs at home. The island is made up of farms and the bird sanctuary which are open to the public. Dogs are not suited for this adventure. • Pack a lunch. Enjoy a packed lunch at the picnic tables in Reifel Bird Sanctuary. They also have public washrooms, a welcome pit stop during your trip. • Support local. The farming history on Westham Island is evident and inspiring. These families have farmed the land for multiple generations and it isn’t an easy way to earn a living. Their passion to protect our farm lands and provide a local food source is awesome.
