“If you build it they will come…” A famous line from Field of Dreams, but it holds so much truth and hope in one sentence that it has become iconic. As the Editor of Stimuli magazine Chilliwack, this has been my mantra since the beginning. This undertaking has been years in the making, even if Maryanne, our Editor-in-Chief, and I didn’t fully realize it. I have watched her grow from the moment I met her and was there with her when she took her leap of faith going on six years ago now. Stimuli magazine was born of an idea and a whole lot of hardwork and dedication. At the time I didn’t realize the significance of helping her name her business and how the universe would bring it back to me full circle. But here I am, in this city I love, launching our inaugural print edition as the Editor of something I have had personal experience with as a retailer, supporter and now an intricate part of its success. I am so excited about the launch of this magazine here in Chilliwack. A city I love with people that are hard working, dedicated and authentic. My hope for this magazine is that it provides a positive experience for all who come across it. To me, Stimuli is more than just a magazine, it is a place where we can all gather and enjoy this beautiful city together. Ryan, following in his family’s footsteps, understands the importance of the Ballam traditions and you can tell that he has worked hard to follow his father’s lead and build on the foundation of customer service excellence. Ryan also brings a new perspective and a younger vibe to the store, offering a forward-thinking edge with a traditional twist. Steak & Stout Pie Serves 8 hungry folks Ingredients
Pastry: 3 cups all purpose flour 2 tsp sea salt 1/2 cup unsalted butter, chilled, cut into cubes 1/2 cup vegetable shortening, cubed 1/2 cup ice water More flour for dusting & rolling Filling: 6 strips bacon, cut into chunks 2 Tbsp olive oil 1.5 lbs sirloin steak, cut into bite-sized chunks 2 Tbsp all purpose flour 1 medium onion, diced 4 cloves garlic, smashed 1 carrot, sliced 2 stalks celery, diced 12 small new potatoes, cut in half 12 white or cremini mushrooms, cut into quarters Small handful each: fresh rosemary and thyme, chopped 3 small bay leaves 1 398ml can diced tomatoes 2 Tbsp tomato paste 3 Tbsp Worcestershire sauce 1 650ml bottle Stout beer (not bitters) 1.5 cups organic beef broth Salt & pepper to taste stimulimag.ca | fall FALL 2014
Directions
For the pastry: In a food processor, combine flour and salt and pulse until combined. Add chilled butter and shortening and pulse until mixture resembles rough pea-sized crumbs. Turn mixture out onto floured counter and sprinkle with ice water. Mix dough together with a fork, press into a disc shape, wrap in plastic, and refrigerate for at least an hour. Remove dough from refrigerator about a half hour before you will roll it out. For the filling: In a large dutch oven style pot, cook bacon on medium heat until cooked. Remove bacon to drain on paper towels, pour out bacon fat but reserve 1 tablespoon in the pot. Add 1 tablespoon olive oil to the bacon fat. Roll steak chunks in flour until lightly coated and over medium heat, lightly brown chunks of steak, a few at a time. Remove steak chunks to a plate; repeat with remaining steak chunks. Add remaining 1 tablespoon of olive oil to pot and add onion and garlic, cooking until soft and translucent, about 5 minutes. Add carrot, celery, and potatoes, and cook for another 5 minutes. Add back the steak and bacon, and add mushrooms, herbs, diced tomatoes, tomato paste, Worcestershire sauce, beer and broth. Increase heat until bubbling, then reduce heat to low. Simmer gently for 1.5–2.5 hours or until meat is tender, vegetables are cooked, and sauce is thickened. Remove from heat. To assemble and bake: Pre-heat oven to 375° F. Remove bay leaves and pour filling into a pot or pan. Sprinkle your counter with flour, and roll out pastry dough to about 1/8" thickness. Gently cover pot or pan with pastry. Cut off excess pastry, leaving about 2" of overhang. Roll and crimp up excess pastry around edge of pot to seal in the filling. Bake for about 45-55 minutes, when pastry is browned and filling is bubbling. Let cool for about 15 minutes before serving. Enjoy! 15
