estled under the trees in Fort Langley you’ll find Infusion BouTEAque, a tea merchant that is anything but typical. “We offer a one-of-a-kind experience,” says Jason Turner. “With the ever-growing culture surrounding tea, Pamela and I wanted to create an environment where people can learn, taste and experience new teas in an intimate setting.” With over 275 varieties from all over the world regularly in stock, co-owners Jason and Pamela are able to find the perfect blend for everyone from the budding enthusiast to the experienced connoisseur. For the purists at heart you’ll find a selection of single source as well as blended teas from all over the world. “Our steeping process is distinct in that we steep each cup individually using the BREWT, an ingenious infuser that provides a quality cup of tea efficiently,” notes Jason. “The absolute creme de la creme of the shop is the Teapresso machine that allows us to brew the best tea lattes and iced teas in the Fraser Valley. If you find yourself overwhelmed, Infusion BouTEAque offers instructional classes where you can learn, not only about the history of tea and the varieties available, but about how tea is being incorporated into the foodie world. “The interactive classes are fun and offer participants a chance to really taste the difference between teas,” comments Pamela Karrer. “Think of it like a wine and food pairing evening without the concern of how to drive home.” Infusion BouTEAque is located in the Fort Mall in historic Fort Langley, B.C. EARL GREY SHORTBREAD BITES 2 cups all-purpose flour 3 tbsp finely ground Earl Grey black tea leaves (use rolling pin or pestle and mortar) 1/4 tsp salt 1 cup unsalted room temperature butter 1/2 cup sugar 1-1/2 tbsp finely grated lemon zest Sift flour, Earl Grey and salt together in a bowl. In a separate bowl, mix butter, sugar, and lemon zest on medium speed until pale and fluffy. Reduce speed to low and slowly add flour mixture until the ingredients are combined. Do not over mix. Divide the dough in half. Wrap each half in saran wrap and then place in fridge for about half an hour. Preheat oven to 350°F. Take out the first half of dough and place between two sheets of parchment paper. Roll dough out to about 1/3 of an inch thickness. Using a cookie cutter cut shapes from dough, and place on a parchment paper lined baking sheet. Do the same for the second half of dough. Bake cookies for about 14 minutes or until edges become golden, making sure to rotate the baking sheet about half way through. Let cool and sprinkle with confectioner’s sugar if desired. Please note that these cookies taste even better a few days after they’ve been baked.

Ingredients

S

pring is around the corner, and fresh colours and bright green flavours are what I am craving. These crisp little bitesized hors d’oeuvres, or amuse bouche, are the perfect Spring party appetizer to serve to your guests. They will never guess how easy they are to make! The smoked salmon lox is rich and salty and balances perfectly with the bright lemon cream cheese. The tiny hit of red onion and the more mellow chive cream are a spicy counterpoint to the fresh cucumber. One bite and the combination of flavours mingle to create a surprisingly complex mouthful. These appies are unbelievably easy to make. Don’t get stressed if your chive mush is not perfectly smooth — mine wasn’t! It tastes great no matter how chunky it is. To keep this morsel on the lighter side, substitute light spreadable cream cheese and fat-free greek yogurt.

1 English cucumber, sliced diagonally 1 - 85g package Ocean-Wise™ Smoked Salmon Lox 1/2 tub spreadable cream cheese 1/4 cup greek yogurt 1 lemon, zested and juiced 1/4 red onion, sliced into small rings 4 tablespoons fresh chives, chopped Fresh dill sprigs for garnish

Directions

In a food processor or clean coffee grinder, pulverize the chives until they are mush. Stir into yogurt and set aside. Stir together cream cheese, lemon zest, and lemon juice 1 teaspoon at a time to your taste. I used 3 teaspoons of lemon juice – but I like lemon! Spread 1 teaspoon of lemon cream cheese onto the cucumber. Roll a small piece of salmon lox and place it on the cucumber. Lay a small ring of onion on top of the salmon.
