s the days get longer and the nights get warmer we West Coast dwellers come out of hibernation. Our doors are flung open and our living space expands as we move outdoors for the next few months – it’s patio time. e’re often so excited by the warmer rays of sunshine in April that we race to the garden centre to buy our hanging baskets and get our space ready for the unofficial start of summer, the May long weekend. But, come early June our once beautiful baskets have turned scraggly and uninspiring. Rather than break the budget by starting from scratch, our resident gardening maven and DIY expert, Shelley, shows us how to give them a new lease on life that will take you through to the cooler mornings of late September.

Lavender Panna Cotta with Blueberry Riesling Sauce Makes 6 small dishes
During my recent trip through Okanagan wine country, I was enjoying a glass of crisp white wine in the garden at Peachcliff B&B when I found myself inspired by the aromas of lavender and roses. Gathering up a bundle of the fresh blooms I came home and created this decadent dessert. Recipe & photos by Linda Horn
Ingredients
Directions
Lavender Panna Cotta
Pour 1/3 cup cold water in a bowl and sprinkle in 2 teaspoons of unflavoured gelatin. Set aside.
1/3 cup cold water 2 teaspoons unflavoured gelatin 1.5 cups heavy cream or whipping cream (unwhipped) 1 tablespoon granulated sugar 1 teaspoon vanilla extract Pinch of salt 2 tablespoons dried lavender flowers
Blueberry Riesling Sauce 1 cup fresh blueberries 3 tablespoons granulated sugar 2 tablespoons water 1 teaspoon fresh lemon juice 2 tablespoons late harvest Riesling or other sweet white wine, such as ice wine, divided
In a saucepan, whisk together heavy cream, 1 tablespoon granulated sugar, and salt, and bring to just barely boiling. Remove from heat. Stir in lavender flowers and vanilla, and let steep for 5 minutes. Pour gelatin mixture into the cream mixture and stir until gelatin is completely dissolved. Strain out lavender and pour into small dishes. Refrigerate overnight to set. To make the Blueberry Riesling sauce, combine blueberries, sugar, water, lemon juice and 1 tablespoon of Riesling in a saucepan. Bring to a boil. Reduce heat to a simmer and cook, stirring often, until thickened. Mash some, but not all, of the berries with a potato masher. Remove from heat and stir in remaining 1 tablespoon of Riesling. Chill in refrigerator overnight to thicken. Serve Panna Cottas with a heaping tablespoon of Blueberry Riesling Sauce.

The slight flowery but not overly sweet flavour of this dessert pairs perfectly with a sweeter more acidic wine like the botrytis-affected Riesling from Wild Good Vineyards. 28
