Christmas is a time to spend with family and friends and gatherings are often steeped in tradition, however, that doesn’t mean your holiday table needs to feel like it belongs in a bygone era. So, how do you honour the tradition of the season while bringing in a more modern, sophisticated style? “Blend the two,” says Briar Codesmith, owner of HouseWarmings Design in South Surrey. “These days it’s about using traditional elements while incorporating pieces that are unexpected.”

This table-scape is the epitome of a modern, traditional style; a quintessential round table is dressed with red accents, yet the dinnerware is anything but typical. After all, the best memories are created from life’s little surprises.

A

nyone who knows me knows that I absolutely love Christmas and the holidays! The decorations, the parties, the corny music — all of it puts me in a festive spirit that lasts at least until spring. I go to a lot of parties, and I always find myself scrambling at the last minute for a really cool hostess gift. What better solution to the panic moment than a gift from your kitchen, one that you made yourself?

This Salted Caramel Hot Chocolate mix is fairly easy to whip up — you make a basic caramel, let it harden, then pulverize the caramel and the rest of the ingredients in a food processor. The hot chocolate also tastes great! No one will believe you made it yourself. To make a grown-up mug of this deliciousness, add a glug (or two) of your favourite liqueur. Bailey’s Caramel Irish Cream is my fave — hint, hint!

Salted Caramel Hot Chocolate Mix Makes enough mix to fill 5 - 500ml Mason Jars

Ingredients 2 1/2 cups white sugar 3 Tablespoons vanilla extract 1 1/2 cups cocoa powder 1 Tablespoon fleur de sel or sea salt 1 cup powdered milk 3/4 cup light brown sugar 10 oz. dark or bittersweet chocolate Small decorative jars

Instructions Place sugar in a large, heavy saucepan over medium heat. Heat sugar until it starts to melt. Don’t stir it, but swirl the pan around to keep the liquid moving. When liquid sugar reaches a deep, amber colour, remove from heat and carefully whisk in vanilla until smooth. Careful, it will bubble up! Pour caramel onto a parchment-lined baking sheet and tilt the sheet around to spread caramel into a thin, even layer. Set aside to harden. Once hardened, break the caramel into pieces.

With the food processor running, feed the pieces of caramel through the tube until all the caramel has been pulverized into powder. Don’t be alarmed — the process will create some caramel smoke! Stop the food processor, and add the remaining ingredients except the chocolate, and process until mixed. Pour out mixture into a large bowl, add the chocolate to the food processor, and process the chocolate until it’s a fine powder. Add back the caramel mixture and process until completely blended. Pour powder into jars. Decorate with ribbons or your own custom label! To make Hot Chocolate: Stir 3 Tablespoons of Salted Caramel Hot Chocolate mix into a cup of very hot milk. Stir well until the chocolate has melted. Add liqueur or marshmallows (or both!) and enjoy!

west coast wanderings Travel or vacation — this west coast wanderer has been pondering the difference as the rain comes down and winter whispers her arrival. Are you a sun seeker in the winter months, longing for a vacation with palm trees, sand, and drinks with umbrellas? Or, do you crave getaways that are more about exploring, meeting the locals, and soaking up the culture of your chosen destination? Either way Vancouver is a fantastic gateway to endless choices, short or long, near or far. Regardless of where your wanderings may take you, here are some of my favourite, tested tips for your next getaway:

Roll your clothes. Really, it works. Rolling items to pack into your bag saves space and helps keep the wrinkles at bay. Maximize each piece you pack. Added baggage or cramming more into your allotted allowance quickly adds up. As the queen of shoes, I select pieces that can perform with multiple items.

Pad your carry-on. There is nothing worse than arriving at your destination feeling less than fresh. My carry-on is stocked with my must-have toiletry items for a refresh before touch-down: a water bottle to stay hydrated, a change of clothes (you never know when your bag may not arrive at the same time you do), chargers for my technology, a pashmina to keep cozy in flight and pretty when deplaning, and backup shoes.
