Simply pull off the petals and sprinkle them on a salad with roasted red beets and fresh locally produced goat cheese.

(Bee Balm, Bergamot) Monarda This lovely flowering perennial is a favorite of bees and butterflies. Bee Balm is red, pink, purple or white and can grow up to 3ft tall. The minty flavored flowers and leaves are both edible and are used in teas and cooking. Add chopped leaves to grilled fish or fresh scallops and use the flowers to garnish a salad.

Lavender Well known for its aromatherapy properties, did you know that it tastes divine in ice cream and shortbread? Culinary Lavender is a term referring to organically grown chemical free plants. If you’re growing Lavender for the first time this year from plants you bought at a nursery, you’ll have to wait at least one full calendar year before using it in your cooking. But if you have plants already established, harvest those flowers and hang them in bunches to dry out before you add them to your favorite ice cream recipe.

Chamomile

This fragrant herb looks lovely spilling out of a flowerbed or container. It’s a favorite for a relaxing tea but it can be used in other recipes as well. Try combining dried flowers with poached peaches and cream for a delicate flavor combination that your guests will love. Steep flowers in boiling water with some cinnamon sticks, then strain and cool. Add honey and serve over ice for a refreshing summer sipper.

Roasted Rhubarb Donuts h t i w Greek Yogurt Glaze Ingredients 2 large stalks rhubarb + 3 tablespoons sugar 1 egg, room temperature 1/4 cup Greek yogurt 1/3 cup milk 1 tablespoon melted butter 1/2 teaspoon almond extract 1/2 teaspoon vanilla extract 1 cup all-purpose flour 1 teaspoon baking powder 1/4 teaspoon salt 1/4 cup sugar

Instructions Preheat oven to 400F. Chop the rhubarb into 1/2 cm pieces and place in a baking dish with the 3 tablespoons of sugar. Roast at 400F for 15 minutes, or until fork tender. Set aside to cool. Leave the oven at 400F and grease a donut pan with a little butter or nonstick spray. In a bowl, whisk the egg, yogurt, milk, butter, and extracts until well combined. In another bowl combine the flour, baking powder, salt and the 1/4 cup of sugar. Gently stir the dry ingredients into the wet until just combined. You should have thick sticky batter. Fold 2/3 cup of the roasted rhubarb into the batter. Using a piping bag with no tip or a teaspoon, evenly fill the donut pan. Do not overfill as the batter will rise considerably while baking. Bake for 10 minutes, remove from oven and turn onto a cooling rack. For the glaze, whisk 2 tablespoons of Greek yogurt with 6 tablespoons of icing sugar and a dash of vanilla. Dip the rounded side of the donuts into the glaze and let set slightly. If desired dip each donut twice before sprinkling the rest of the rhubarb bits on top. FOOD
