LOCAL EVENTS AUGUST SOWAL CRAFT BEER & SPIRITS FESTIVAL Friday, August 3 | Shades Bar & Grill | 12 – 4 PM The inaugural event will be held at Shades Bar & Grill in Inlet Beach, FL. Cooled tents will set the stage for the outdoors event, with tables that include more than 60 craft beers, ciders, Florida distilled craft spirits, and rosé wine and mimosas. Beer and spirit experts will be on-site sharing their knowledge with attendees. Food samplings will be provided by Shades Bar and Grill, Pescado Seafood Grill and Rooftop Bar, and Southside Slice Pizzeria. A radio host will be pumping out the jams all day and announcing sponsors. For added entertainment, there will be two bounce houses and a cornhole section for kids. KAYAK ECO TOUR Thursday, August 9 | Camp Helen State Park | 9 – 11 AM A leisurely 90-minute paddle on Lake Powell, one of the world’s largest Coastal Dune Lakes. Learn about the history, natural communities and wildlife that make this Outstanding Florida Water so unique and important. This guided kayak tour will be enjoyable for individuals, families and groups. All levels of experience are welcome. Watercraft and gear from outside the park are not permitted. Be sure to bring sun protection and drinking water. $30 for a single kayak, $40 for a tandem kayak. Advanced reservations are required and can be made by calling Camp Helen State Park at least 24 hours prior to tour at (850) 233-5059. PADDLE AT THE PORCH Saturday, August 18 | Pensacola Beach | 12 PM The 7th Annual Paddle at the Porch, sponsored by Destin ER, showcases the beautiful emerald green water and white sandy shores of Destin, Florida. It features a Kids’ Fun Race, 1-Mile Beginner, 3-Mile Recreational, and 6-Mile Elite. Races will be followed by awards. For details, visit paddleattheporch.com. SEPTEMBER ALYS BEACH 5K & 1 MILE FUN RUN Sunday, September 2 | Alys Beach | 7 AM – 12 PM The 7th Annual Alys Beach 5K & 1 Mile Fun Run takes place Labor Day weekend on September 2. Located along Hwy 30A, the course winds through the resort town and ends with an oversized obstacle course for kids of all ages. Music, food, and beverages will be available in the Amphitheatre at the after party. Proceeds from the 2018 race will benefit Emerald Coast Children’s Advocacy Center. You may have noticed the “Photo of the Week” section that we started featuring in the Weekly Communications and Events email that is delivered to your email every Saturday morning. (Side note: if you’re not receiving this email, please email victoria.grandal@stjoeclub. com!) We hope that you will take a look to see what’s happening at the Clubs and enjoy a different view each week. This past week was a photo of Assistant Golf Professional, Jacob Hill, with the participants of the Junior Golf Camp at Origins. This event was fun for all ages and we’ve already had Members asking about golf instruction for their children. We like to share what’s happening with us and we’d like for you to do the same! GOLF A MESSAGE FROM THE DIRECTOR OF GOLF Sean McGaughey, PGA Director of Golf July was a great month! Not only did we get to celebrate our country’s independence, but we also got to experience all the great things that The Clubs by JOE has to offer. Watching the fireworks at the beach was amazing and I hope you all were able to experience and celebrate this wonderful time of year with family and loved ones. To kick off last month, we had our annual balloon sale at Camp Creek and Shark’s Tooth Golf Shops. It was a shop till you drop atmosphere and we appreciate and thank you for being a part of it. If you haven’t had a chance to see all of the new lines we have in the shops, please stop by and let us help outfit you for the remaining summer months. Being a golf professional, it is always wonderful to see knew players pick up the game. And thanks to our Junior Golf Camp we were able to see just that! Led by Assistant Golf Professional Jacob Hill we had 13 juniors participate in last month’s camp. Jacob was able to take the juniors through a variety of golf mechanics to help them understand the game. The campers ended the week with a nice lunch and received certificates for graduation. Thank you to all the parents who allowed us to help educate your children on this wonderful game we call golf! We added in a Couples Nine & Dine in July and had phenomenal participation yet again. As I told the participants at the dinner, I can honestly say I’m proud to see such comradery at the Clubs! A big congratulations to the Corbins and Hendersons for coming in first place in the event. The team shot an amazing 21.2, which barely snuck by the Michaliks and Brekelmans. Great playing everyone and thank you for participating. As an added reminder we will be doing some necessary maintenance on the greens in this month. This process will take place over the weeks of the 6th through 9th at Shark’s Tooth and the 20th through 24th at Camp Creek. During that time the corresponding Club will be closed, but you will have access at the other facility. As always I look forward to seeing you at the Clubs and hope that you and your families are having a wonderful summer.

CHEF’S CORNER FRENCH TIAN PROVENCAL Ingredients: • 1 bunch of fresh basil • 3 plum tomatoes • 1 summer squash • 1 zucchini • 2 sheets of puff pastry, frozen • sea salt & freshly ground pepper • 4 oz. creme fraiche • 2 tablespoons parmesan cheese Directions: 1. Preheat oven to 400 degrees. Line 2 baking sheets with parchment or spray with cooking spray. 2. Roll out puff pastry sheets until the lines have disappeared, one per baking sheet. 3. In a small bowl combine Creme Fraiche and 1 tablespoon chopped herbs. Spread 1/4 cup of mixture on each pastry. 4. Begin and end with a layer of tomatoes slices. In between, alternate layers of zucchini, summer squash, and tomato slices. Repeat until each puff pastry is full.

Q&A WITH CHEF TIM Timothy Doucet, Chef de Cuisine WaterSound Beach Club When did you know you wanted to be a chef? I would have to say 10th grade in high school is really when I started to get infatuated with cooking. There was a Gourmet Foods class that was quite challenging, thrilling, and exciting all rolled into one event. When the class was over, I missed that feeling so I starting to research that career field closer towards graduation. What is your favorite food memory? Anytime I have a meal that exceeds my expectations. When the food is so good that nothing else matters. I constantly pursue opportunities in life when I can stop and say “This is the best thing I’ve ever eaten in my life!” Who in the food world do you most admire? Open-minded customers. People who are adventurous, willing to try new things, and understand the amount of work that goes into a dish. These are the people who are the most appreciative and usually provide the most helpful feedback. They also challenge a chef to become more than what he is and are devoted followers to the evolution of his cuisine. Who would you most like to cook for? My late grandmother. I was still learning to cook when she passed and since she had cooked so many great meals for me as a child, I would love to cook her one great meal as a thank you.

Favorite food to cook with? I like cooking with any ingredients I’m not familiar with. I’ll always take random trips to hole-in-the-wall international markets to find odd ingredients and try to find a flavor profile for them.

6. Bake in a 400 degree oven for 17 to 20 minutes or until golden brown and nicely puffed around the edges.

Most challenging ingredient to work with? Mostly anything to do with baking from scratch. Baking is a time and temperature sensitive process so getting either one of those off balance can absolutely ruin a dessert.

7. Garnish with remaining chopped herbs and an additional sprinkling of sea salt and pepper.

Favorite cookbook? My favorite cookbook is not quite a cookbook at all. The Flavor Bible by Karen Page is the essentials guide to culinary creativity. It’s a book that helps you create your own cookbook and has helped me create outstanding dishes for the past decade. Favorite city for food – national & international? New York City is the best hands down. It has been said that you could live a lifetime in that city and never experience everything it has to offer. It’s currently estimated that there are 24,000 restaurants in Manhattan alone. And that’s not counting the Bronx, Brooklyn, Queens, or Staten Island.
