We are asking ALL Members to complete a form in order to file your Extended Family’s information with The Clubs by JOE for 2019. The deadline to complete this form is Saturday, March 30. If we do not receive an updated form by the required deadline, your Extended Family will not receive access to any Club amenities until this form is submitted. Who is Extended Family? Extended Family is defined as the Members Mother and Father, any adult children age 24 and older and their spouses and dependent children. Members Extended Family are eligible to be the Unaccompanied Guests of a Member. Extended Family DO NOT have any privileges to bring guests with them to the Beach Club. Generational Members do not have Extended Family privileges. Generational Members are not required to complete a 2019 Extended Family Form. We recently asked Members to participate in our Annual Member Survey. The survey asked for your opinions on everything from atmosphere and ambiance to menu options and staff friendliness. At the beginning of each year, we encourage you to provide us your feedback to help us better your Member experience. Your ratings and comments from this survey are imperative as we continually strive to be a better Club for you and your family. This is not just an Annual Member Survey but a guiding light to help us better understand your experiences, needs and desires. We were extremely pleased with the number of responses to this year’s survey as over 40% of our Members took the time to participate. With very detailed descriptions, we are able to utilize these comments as a tool to better serve you.

We are pleased to announce that 86% of Members would recommend the Membership to others. Referrals can be the best compliment one can give and it truly shows your level of satisfaction. Another statistic that we are very Hollie Parker proud to share is that you scored overall staff friendliness/helpfulness at 92%. This score has been shared with all staff and we are happy to see that the genuine hospitality we strive to provide is evident throughout the Clubs. GOLF A MESSAGE FROM THE DIRECTOR OF GOLF Sean McGaughey, PGA Director of Golf I hope this month’s newsletter finds you enthusiastic to get out on the golf course. The 2019 season is quickly approaching and we have a number of great events to look out for. If you have time please make sure to go online to The Clubs by JOE website (clubsbyjoe.com) and take a look at this year’s tournament schedule. You can help us make 2019 great by supporting the tournaments and joining us at the Clubs! February had its ups and downs when it came to weather, but the courses actually saw quite a bit of play. It’s exciting to see everyone getting ready for 2019 and remember if you ever need a tune up the golf professional staff is here to help. We had our first tournament of the season with the Super Bowl Shotgun. Thank you all for participating in this new event and congratulations to the team of John Clark, Rick Whittington, Mark McGuffee and John B Clark for taking home 1st place in the gross division. Playing equally impressive was the team of Gary Lorenz, John Ellis, Tom Balduf and Gregory Sheldon who took home 1st place in the net. Well played gentlemen! I had the honor of working with a group of Members for this year’s Short Game School. The class was coached on proper setup and technique to help them achieve consistent chipping and pitching around the greens. I personally had a great time and look forward to seeing more of you during my monthly clinics at the club. This month’s clinic will be held on Saturday, March 23rd at 12pm at Camp Creek Golf Club were you will be coached on Driver technique and fundamentals. I hope to see you there! With March upon us, it’s time to get fit for a fresh set of clubs. We will be hosting a Demo/Fitting Day at Sharks Tooth Golf Club on Saturday, March 16th from 9am to 1pm. We invite you to come try out all the new products from Titleist, Callaway, Ping, Taylormade, and Cleveland Golf to see what works best for you. All purchases made during fitting day will receive a 10% discount on all product. We look forward to having you out and fitting you for the clubs of your dreams! CHEF’S CORNER SEAFOOD PAELLA

Q&A WITH CHEF ERICA REYNOLDS, ORIGINS CAFE

INGREDIENTS

1. When did you know you wanted to be a chef?

• 25 threads saffron, crushed (a heaping 1⁄4 tsp.) • 1 lb. boneless fish filets, cut into 2” pieces • Kosher salt and freshly ground black pepper, to taste • 1⁄2 cup extra-virgin olive oil • 8 extra-large shrimp in the shell • 10 oz. cuttlefish or small squid, cleaned and cut into 1” pieces • 1 tbsp. smoked paprika • 4 medium tomatoes, minced • 3 cloves garlic, minced • 1 green bell pepper, cored and chopped • 1 small onion, minced • 7 cups fish broth • 2 1⁄2 cups short-grain rice, preferably Valencia or Bomba • 1⁄2 lb. small clams, cleaned

Definitely when I was about 15 or 16. My older sister was pregnant and before school I would always make her and the baby breakfast. I knew then that I enjoyed nourishing. Plus, my mom always cooked for us. Cooking was always and still is one of those things that brought family together.

2. What’s your favorite food memory? So many! Growing up, during me and my other siblings birthdays my mom would tell us to pick whatever we wanted our meal to be and what choice of cake. Mine every year was Lasagna, my favorite dish, and Marble Cake with Chocolate Frosting. It was good every year!

3. Funniest kitchen incident? Some things are too funny and a bit inappropriate to tell!

4. Who in the food world to you most admire? DIRECTIONS 1. Put saffron and 1⁄4 cup hot water in a small bowl; let sit for 15 minutes. 2. Season fish with salt and pepper. Heat oil in a 16”-18” paella pan over medium-high heat. 3. Add fish and shrimp and cook, turning occasionally, until golden brown, about 5 minutes. 4. Transfer fish and shrimp to a plate and set aside. 5. Add cuttlefish, paprika, tomatoes, garlic, peppers, and onions to pan and cook, stirring often, until onions are soft, about 6 minutes. 6. Add reserved saffron mixture and broth, season with salt, and bring to a boil over high heat. 7. Sprinkle in rice, distribute evenly with a spoon, and cook, without stirring, until rice has absorbed most of the liquid, 10-12 minutes. (If your pan is larger than the burner, rotate it every two minutes so different parts are over the heat and the rice cooks evenly.) 8. Reduce heat to low, add reserved fish and shrimp, and nestle in clams hinge side down; cook, without stirring, until clams have opened and rice has absorbed the liquid and is al dente, 5-10 minutes. 9. Remove pan from heat, cover with aluminum foil, and let sit for 5 minutes before serving.

Come join us for a morning of competition and fun on the courts! The Parent/Child Round Robin is March 16 10am – 12pm at the Shark’s Tooth Tennis Courts. Players must be able to serve and keep score in order to participate. Registration is open until March 14. The first 8 teams to enter will complete the draw. Our Ladies Beginner Clinic is held each Wednesday morning 9 – 10am at WaterSound Beach Club. This is a great opportunity to learn all aspects of the game. We will develop your skills so that you are ready for match play. If you have interest in being involved in a sport you can enjoy for a lifetime, this is your first step. Please contact me to get started. Our ladies teams will have home league matches March 5, 12, 14 and 28 at Shark’s Tooth. All courts will be utilized from 8:45am –1pm each day. If you would like to join a team, contact me for more details and placement. Private, semi-private and group lessons are available for all skill levels.
