WELCOME THE CLUBS BY JOE WELCOMES SHARON CARSON TO THE TEAM! The Clubs by JOE is excited to welcome Sharon Carson to our team as Club Manager at Shark’s Tooth Golf Club. Although native of Chattanooga, Tennessee, Sharon has been familiar with the area for the majority of her life from having family spread all over the Southeast – including Destin. Sharon brings with her a wealth of knowledge in the industry. Prior to joining The Clubs by JOE family, Sharon worked at country clubs in the Chattanooga area for several years. Most recently, she oversaw food and beverage operations for Burnt Pine Golf Club at Sandestin. In addition to her hospitality experience, Sharon has held positions in a variety of fields, including an extensive legal career. In her free time, Sharon enjoys spending time outdoors. From hiking and biking the area’s trails to boating and sports, Sharon feels most at home when she can be active with her family and friends. To help her relax and reset, Sharon also enjoys going to the beach, traveling, reading, and writing short stories and poetry. We are confident that Sharon’s professionalism, creativity and diverse experience in the industry will be an invaluable asset to Shark’s Tooth and The Clubs by JOE. Sharon looks forward to getting to know all of our Members and continuing to enhance the Shark’s Tooth Golf Club experience for each Member and their guests. If you are looking for a fun, relaxing weekend on the beach to meet other gear-heads and have a BLAST at the beach, THIS IS IT! Car show central is located at Destin Commons, located in the heart of Destin FL. This black-tie gala will benefit the expansion of the Comprehensive Spine Program at Sacred Heart Hospital on the Emerald Coast. Tennis has been offered as part of private club amenities for many years and the sport is growing. GOLF A MESSAGE FROM THE DIRECTOR OF GOLF Sean McGaughey, PGA Director of Golf What a great month at The Clubs by JOE! We saw plenty of beautiful weather in April which gave us the chance to play as much great golf as we wanted. Thank you to everyone who was able to visit with us during the month and I hope you had a wonderful time. We had some fun events in April, kicking off with our Couples Nine & Dine at Camp Creek Golf Club. A big congratulations to the team of Gerry Lee, Gillian Lee, Dave Goble, and Peggy Geppert on taking home the win! Great playing everyone and thank you all for participating in this great event. Each month, we hold a clinic covering a different skill or technique to help improve your game. Last month’s Putting Clinic saw Members learning or refreshing on basic putting fundamentals. I can’t wait to see everyone’s handicaps drop as they progress with the techniques they learned! May’s clinic will cover pitching to get even better with 20 to 70-yard shots. Our biggest event of the month was The JOE Cup Member-Member Golf Tournament. We had 31 teams participate over the two days of play. It was great to see everyone enjoying themselves both on and off the courses. Congratulations to Jeff Thompson and Bill Hodges on clinching the title of this year’s gross overall championship. Equally impressive was the team of Rick Whittington and John Norris who were able to capture the net overall championship. Congratulations and well played to all of our 2019 participants! Don’t forget that registration for our annual Sharkfest Member-Guest Tournament at Shark’s Tooth begin soon. Lifestyle Members are eligible to register beginning May 1st at 8 AM. CHEF’S CORNER PEACH & ALMOND TART RECIPE Recipe courtesy of: Dan Bower, Executive Chef at WaterSound Beach Club

Spring means fresh peaches. What better way to get into the Spring spirit than with this updated twist on a classic preparation. Enjoy! FILLING • 10 oz Almond Paste • 4 oz Sugar • 4 oz All-Purpose Flour • 4 oz Unsalted Butter, room temperature • 4ea Large Eggs • Blueberries, as needed (optional) • Sliced Fresh Peaches, as needed (skin on) 1. Blend almond paste and sugar in a food processor until the almond paste is smooth and finely ground. 2. Add in flour and the room temperature butter and continue to process until a thick paste forms. 3. Add in eggs and vanilla extract. Process until smooth. Place mixture in a bowl and set aside. 4. Cut each peach in half and remove pit. Slice each half into 4 even slices. Set aside. DOUGH: Yields: One 10’ round tart or 4-5 individual tartlets. • 1 tbs Sugar • 1/2 tsp Kosher Salt • 8 oz All-Purpose Flour • 3 oz Chilled Butter, cubed small • 1ea Large Egg, beaten 1. 2. 3. 4. 5.

Whisk sugar, salt, and 1 cup flour in a medium bowl. Add butter and rub in with your fingers until mixture resembles coarse meal with a few pea-size pieces remaining. Drizzle egg over butter mixture and mix gently with a fork until dough just comes together. Turn out dough onto a lightly floured surface and knead until smooth (a few dry spots are okay). Form dough into a disk. Wrap in plastic and chill until firm, at least 2 hours.

*Tip: Dough can be made 2 days ahead. Keep chilled, or freeze up to 1 month.

ASSEMBLY 1. Roll out chilled dough to roughly ¼ inch thickness. 2. Place in greased tart molds and press down until smooth. Trim excess dough from top. 3. Lightly dock each tart mold with fork. 4. Spread the filling over the dough up to 3/4th the side of the mold. 5. Sprinkle on blueberries if desired. 6. Chill for 30 minutes. 7. Arrange peach slices in concentric circles around starting at the outer edge. 8. Bake at 375 until the fruit is tender and the crust is brown. 9. Remove from molds and serve warm with vanilla gelato or whipped cream. 10. Can be prepared up to 8 hours ahead and let stand at room temperature. Warm in oven and serve.

With the great spring weather upon us, tennis is in full swing! Our ladies teams are finishing up the final stretch of league play. While juniors are completing their area middle and high school match season. This past month we hosting our Margarita Tennis Mixer and saw such a great turnout! Everyone enjoyed an afternoon of friendly competition and meeting new friends on the courts. Thank you to all players that participated and we look forward to seeing you again in October for the fall edition! If you are interested in getting started or getting back on the court, Beginner Clinic is held each Wednesday morning 9:00-10:00 at WaterSound Beach Club. This is the perfect opportunity to get involved! Space is limited and registration is required. Our Ladies League teams will have home matches May 9 and 16 at Shark’s Tooth. Please note that all courts will be in use from 8:30 a.m.-1:30 p.m. on these dates. Please let me know if you would like to join a team for the upcoming season. Private, semi-private and group lessons are available for both adults and juniors. You may contact me to schedule your specific day and time.
