WELCOME THE CLUBS BY JOE’S EXPANSION PROJECTS As you may have seen and heard, The Clubs by JOE is set to significantly expand upon our current Membership offerings and amenities over the next few years. Of the feedback we receive, one of the most requested items is updates regarding ongoing and future expansions and renovations. We are pleased to share updates on current projects, as well as plans for future development of the Clubs. In addition to the recently completed 7,000 square foot pool, expanded pool deck and additional bathhouse at WaterSound Beach Club, construction of a new food and beverage outlet – Costa Chica – is well underway. During the Beach Club’s short closure, crews worked to expedite construction to allow us to meet our late Spring opening deadline. The WaterSound Beach Club Mercantile retail shop and Sunset Bar also underwent significant improvements during this time. While there are plenty of exciting updates to come from the Beach Club, perhaps the most highly anticipated news is that of the planned expansion at Camp Creek Golf Club. This nearly $40 million planned expansion will transform Camp Creek into the Camp Creek Lifestyle Village. This new Camp Creek Lifestyle Village plans to include not only a state-of-the-art golf learning center and Outfitters shop, but also a variety of dining and recreation venues to fit any interest. We encourage you to read more details on this expansion in the latest edition of The Clubs by JOE Member Magazine. Whether you are new to the Clubs or a long-standing Member, full-time or part-time resident, we know that the memories created here will last a lifetime. We are committed to offering you and your guests with unparalleled amenities and world-class service that can only be found at The Clubs by JOE. LOCAL EVENTS FEBRUARY 14TH ANNUAL ROSEMARY BEACH GIRLS GETAWAY Thursday, January 31 – Sunday, February 3 | Rosemary Beach Rosemary Beach Foundation invites ladies to the 14th Annual Rosemary Beach Girls Getaway! This is a weekend for women to getaway, celebrate, and enjoy the beauty of South Walton. Held each year during Super Bowl weekend, this 4-day event is packed with fun, food, learning, and laughter for women. Proceeds from the event will benefit the Sacred Heart Hospital on the Emerald Coast NICU. Festivities include a Welcome Reception, Cooking Demonstration by Roux 30A, Succulent Workshop by Clay30A, Rosemary Beach Realty Tour of Homes, Saturday Evening Bash with Dinner, Dancing, Silent Auction/Raffle and Music with DJ Shane Keller, Rock The House. Once logged in to your Member account, simply navigate to Edit My Profile located under your name in the upper righthand corner. From here, you are able to update your email address, phone numbers, and mailing address should this information change at any time. Select Save at the bottom of the page and changes will be automatically updated in our system.

Over the past years we have experienced many Members that wish to allow their “extended family” to enjoy the Clubs under their Membership. This is a great opportunity for those family members to enjoy your Membership benefits while you may not be able to accompany them. However, we wanted to allow greater access and ease of access for your extended family so we created the Generational Membership! This “Add-On” to your Membership will allow your Extended Family to have a Membership of their own, allowing them to bring guests of their own to the Beach Club, play golf for a limited greens fee and even have their own charging privileges.

GOLF A MESSAGE FROM THE DIRECTOR OF GOLF Sean McGaughey, PGA Director of Golf I hope this month’s Member newsletter finds you all warm and cozy. The 2019 Season is almost here which means it’s time to get those clubs out and ready for some great golf. The 2019 Tournament season has been updated and can be viewed online through our Member portal at clubsbyjoe.com. If you ever have any questions about events at the Clubs, the Member website has an amazing amount of knowledge for all that The Clubs by JOE has to offer. Now that we are in a new year, we encourage you to give us a call to schedule your lessons with the Pros. It’s our goal to help all of you enjoy the game whether that’s learning course etiquette or setting you on the path to your PGA Tour career. Your Golf Professional staff is ready to aid you in your goal and would love to help you reach the next level of play! Our spring apparel should be arriving any day now so please stop by and check out all the new styles for 2019. We’ll be featuring a colorful spring line with brands such as Peter Millar, Turtelson, Dunning, Greyson, and Donald Ross. Let us help outfit you with some of the most popular brands for the 2019 season. I’d also like to remind everyone that this year we will be implementing a handicap policy for the Clubs. You can find this handicap policy in your 2019 Golf Handbook. That being said, one of the easiest ways to make sure your able to post your scores is by picking up the GHIN app on your phone. This wonderful app will help make things very simple by adding your favorite courses and tees. If you don’t have the GHIN app yet, please make sure to do so for the 2019 season.

CHEF’S CORNER BUTTERNUT SQUASH BISQUE

FOOD & WINE PAIRINGS

Ingredients

Good news: When matching food and wine, you don’t have to learn complicated systems for selecting the right wine to enhance the food on the table. This is not rocket science. A few simple guidelines will help you make successful wine-and-food pairings.

4ea Butternut Squash 1ea Small Onion, chopped 1ea Leek, chopped with greens removed 1oz Minced Garlic 1oz Micned Shallot 2qt Chicken or Vegetable Broth 4ea Thyme Springs 1ea Large Bay Leaf Extra Virgin Olive Oil, As Needed 4oz Brown Sugar 4oz Maple Syrup 1 1/2 tbs Allspice 1 1/2 tbs Cinnamon 2 tbs Nutmeg 8 tsp Kosher Salt 8 tsp Black Pepper

• 8oz Whole Butter

Directions 1. Cut butternut squash in half lengthwise. Remove seeds. 2. Pour olive oil in your hand and rub the entire surface of the butternut squash (both flesh and peel) until lightly shiny. Should barely coat the squash. 3. Lay all squash flesh side up on a baking sheet lined with parchment paper or sprayed with nonstick cooking spray. You should have 8 halves. 4. Spread salt and pepper evenly between the 8 pieces of squash. 5. Use the same technique with the brown sugar, maple syrup, nutmeg, cinnamon and allspice applying evenly to all 8 pieces. 6. Cube half of the butter and divide that by 8 placing 1/8 in each squash where you scooped the seeds. 7. Bake at 350 until tender (Approx. 90 minutes) Should be dark and golden brown. 8. Place chicken or vegetable broth in large sauce pot and bring to a simmer. Add thyme springs and bay leaves. Gently simmer for 1 hour. 9. Use remaining butter and melt slowly over medium low heat. Add onion, leek and garlic, cook slowly until translucent and soft. 10. Remove butternut squash from the oven. Scrape all pulp away from the skin and put in the pot with the onion and leek mixture. Including all liquid. 11. Stir to incorporate the squash and onion mixture. 12. Using a stick or immersion blender, pour the broth into the pulp and onion mixture until perfect consistency is maintained. Continue to puree until ultra-smooth. You may want to transfer to a blender or food processer. 13. Refine seasoning with any of the spices.

KEEPING IT SIMPLE 1. Drink and Eat What You Like Choose a wine that you would want to drink by itself, rather than hoping a food match will improve a wine made in a style you don’t like. That way, even if the pairing isn’t perfect, you will still enjoy what you’re drinking; at worst, you might need a sip of water or bite of bread between the dish and the glass. The same holds true for the food: After all, if you detest liver, there is no wine pairing with it on earth that will work for you.

2. Look For Balance Consider the weight—or body, or richness—of both the food and the wine. The wine and the dish should be equal partners, with neither overwhelming the other. If you balance the two by weight, you raise the odds dramatically that the pairing will succeed. There’s a fair amount of instinct to this. Hearty food needs a hearty wine. Cabernet Sauvignon complements grilled lamb chops because they’re equally vigorous, but the dish would run roughshod over a crisp white wine. In contrast, a light Soave washes down a subtly flavored poached fish because they are equals in delicacy. How do you determine weight? For the food, fat—including what comes from the cooking method and the sauce—is the main contributor. (Note how a salad with blue cheese dressing feels heavier than one with citrus vinaigrette, as does fried chicken versus poached.) For a wine, you can get clues from the color, grape variety and alcohol level, along with the wine-making techniques and the region’s climate. (Wines with less than 12 percent alcohol tend to be lighter-bodied; those with more than 14 percent are heavier.)

3. Match the Wine to the Most Prominent Element in the Dish This is critical to fine-tuning wine pairings. Identify the dominant character; more often it is the sauce, seasonings or cooking method, rather than the main ingredient. Consider two different chicken dishes: Chicken Marsala, with its browned surface and a sauce of dark wine and mushrooms, versus a chicken breast poached in a creamy lemon sauce. The caramelized, earthy flavors of the former tilt it toward a soft, supple red, while the simplicity and citrus flavors of the latter call for a fresh white.

With the start of the new year, we are looking forward to increased growth and activity for our tennis program. We will have two teams participating in ladies league play this Spring. Match days are Tuesdays and Thursdays from 9 AM – 1 PM at Shark’s Tooth. Team clinics will be held each Monday morning from 9 – 11

Beginner clinics are conducted each Wednesday morning from 9 – 10 AM at WaterSound Beach Club. This is a great way to learn the game and transition into league play. Registration is required, as space is limited. Men’s singles match play takes place on Friday mornings from 9 – 11 AM at Shark’s Tooth. This is an opportunity to develop your game and get in a great workout. Please notify me if you would like to join the group. Private, semi-private and group lessons are available for all ages and skill levels. You may contact me to schedule your specific day and time.
