WELCOME EXPLORING WALTON COUNTY’S COASTAL DUNE LAKES

What is a Coastal Dune Lake? Coastal dune lakes are permanent water bodies, typically shallow and irregularly shaped, found within two miles of the coast. They are primarily freshwater systems, but most of Walton County’s coastal dune lakes are brackish, composed of both fresh and saltwater. The lake-water is generally dark or tea colored - not dirty! The water soaks pine needles, cypress needles, leaf litter, and other organic matter in swampy areas causing tannic acids to leach into the water, resulting in the dark coloration. Coastal dune lakes are reportedly found in limited number throughout the world along the coasts of New Zealand, Australia, Madagascar, and along the coasts of Oregon and Northwest Florida in the United States. How are coastal dune lakes formed? Coastal dune lakes develop from various coastal processes, most commonly when sand deposition fills an inlet to a tidal basin or lagoon. Once isolated from the direct effects of tides, the water may become hyper-saline because of salt water intrusion through sandy substrates and rapid evaporation of surface water. Lake water may also gradually become less saline if there is a decline in subsurface saltwater intrusion and greater freshwater inputs from rain and watershed drainage. Are all of Walton County’s coastal dune lakes the same? Each coastal dune lake has its own personality, based on the combination of its size, shape, watershed features, surrounding land uses, and outfall characteristics. Some of the dune lakes can be completely freshwater, some brackish, and some saltwater. Varying degrees of salinity occur between different lake stages and between different portions of each lake. The changing condition of water chemistry makes them dynamic, biologically diverse ecosystems. What is an Outfall? Most Walton County dune lakes have an outfall - a natural opening to the Gulf of Mexico that occurs when a lake reaches flood level. Outfalls open and close intermittently based on varying conditions of the wind, tides, and lake water levels. Depending on tides and weather conditions (particularly winds and storms), saltwater from the Gulf may enter the lake, along with saltwater plants and animals. Outfall openings vary greatly in length, frequency, and duration. *Information provided by Choctawhatchee Basin Alliance (basinalliance.org)

GOLF A MESSAGE FROM THE DIRECTOR OF GOLF Sean McGaughey, PGA Director of Golf September... What an amazing month! College football had some great games with LSU taking down Auburn and Kentucky ended their losing streak to Florida after a 31 year drought! Not to mention history in the making with Tiger Woods winning the Tour Championship! That leaves him two short of Sam Snead’s all time winning record. It’s a really exciting time for golf and I personally can’t wait to see what Tiger has in store for us. The Clubs had quite a bit of action in September with many familiar faces coming back into town. We unfortunately had to cancel two of our events this month due to poor weather. Hopefully this month the weather will cooperate so we can provide more opportunities for you to enjoy our event schedule. On a brighter note, we hosted our September Stag Day at Camp Creek Golf Club with great participation. The format for this event was a 1 Best Ball of the 2. We paid three Gross & Net winners along with two closest to the pins. Hitting it close on hole #7 for the ladies was Mr. McCurley’s guest, Mrs. Ronya Simmons. This was followed by another of Mr. McCurley’s guests, Mr. Craig Simmons, winning the men’s closest to the pin contest on #16. Mr. McCurley certainly knows how to pick his partners! The big winners of the day in the gross division were the team of Claude Richardson and his guest, Mike Ross, with an impressive score of 73. Shooting an equally impressive net score of 60 was the team of Alan McCurley and Ronya Simmons. Great playing everyone and thank you all for helping us continue to grow these wonderful events. As we get closer to the holiday season, it’s time to start thinking about gifts for friends and family and apparel for cooler weather. Shark’s Tooth and Camp Creek Golf Shops received wonderful new Fall collections from your favorite brands. We are also excited to add several new apparel lines in both shops that include Lululemon, Vineyard Vines, and Turtleson. Our teams look forward to assisting you in finding the perfect holiday gift for family and friends, or getting you prepared for those cooler mornings as we head into the Fall and Winter months. CHEF’S CORNER HAWAIIAN BREAD PUDDING I wanted to take a moment and thank all of you whom I have met for the warm greetings I have received since arriving from Hawaii and becoming part of the team. Time sure flies when you are having fun. I’m excited to share a special bread pudding recipe from Hawaii as we move into the autumnal months and celebrate those flavors and cooking techniques we enjoy during this season. Hawaiian bread pudding typically is much lighter and less dense than those from other regions in America you might have experienced. You can use any topping or sauce you want depending on your personal taste. This recipe is actually wonderful if you want to cut it and fry it as French toast and eat it for breakfast. Chef’s tip: put a poached egg on it for breakfast and serve with maple syrup and pepper bacon. I hope you all enjoy the recipe. As they say in Hawaii; Mahalo plenty Chef Dan Ingredients: • 12ea Eggs • 32 oz. Sugar • 32 oz. Half & Half • 1ea Vanilla Bean, Pared and Scraped • 1T Vanilla Extract • A Pinch of Salt • Hawaiian Sweet Rolls

For the Rum Sauce: • 1/2 lb. Brown Sugar • 4 oz. Chilled Butter, Cubed • 2T Light Corn Syrup • 1T Ground Cinnamon • 4 oz. Rum • A Pinch of Salt • 2 oz. Heavy Cream

1. Crack eggs into a medium bowl and add sugar. Whisk vigorously until smooth. 2. In a medium sauce pot; bring half & half, vanilla bean, vanilla extract, and salt to a low simmer. 3. Pour 1/3 of cream into bowl with eggs and sugar. Whisk vigorously and pour mixture back into sauce pot and simmer gently for 2 minutes and set aside. 4. Tear or cube sweet rolls into large cubes (6 – 8 each per roll) and place in medium bowl from sugar and egg mixture in step one. 5. Pour custard mixture over bread, press and stir gently until all the bread has absorbed the custard. Let sit for 5 minutes. 6. Spray a 9x9 baking pan with non-stick spray. Pour bread into pan. Cover with aluminum foil and place in larger pan. Place in oven and gently pour warm water into the larger pan up to half the height of the smaller pan (Water Bath). 7. 325 Water Bath for 1 hour and let sit at room temp for 30 min before cutting.

1. Place brown sugar & corn syrup in a small sauce pot and add 1T of water to moisten the sugar. 2. Turn on high heat and stir constantly until sugar is melted. 3. Turn heat to low and add cinnamon. 4. Slowly stir in butter one cube at a time. 5. Once the butter is melted return to High heat. When mixture boils add rum. 6. Boil for 2 minutes (small flames will occur) 7. Remove from heat and pour in cream. Return to a boil and remove. 8. Hold at room temp for service. Cut bread pudding into desired portions and serve with rum sauce and ice cream.

Barry Webb Director of Tennis Construction of the new courts located at WaterSound Beach Club is completed! Come join us each week starting October 10th for Wimbledon Wednesday from 10 AM – 12 PM. Bring your doubles partner and enjoy round robin match play with instruction. Men’s Singles Play Day is held every Friday morning from 9 – 11 AM at the Shark’s Tooth tennis courts. Get in a great workout and develop your singles game. Ladies Beginner Clinic is scheduled each Wednesday morning from 9 – 11 AM at WaterSound Beach Club tennis courts. This is a fantastic opportunity to learn all aspects of the game with other players of the same experience level. You may contact me to register for any of these programs. The Ladies Team will have home matches October 9, 16 and 23 at Shark’s Tooth. The courts will be occupied until 1:30 PM on these dates.
