WELCOME TEAM MEMBER SPOTLIGHT It is our pleasure to welcome Sean McGaughey to our Golf leadership team as Director of Golf for The Clubs by JOE. Sean will lead the teams at Camp Creek and Shark’s Tooth beginning in early October. He has been in the golf industry for ten years and has had the privilege and honor of working with some phenomenal facilities, membership, and golf professionals. Some of our Members may have met him at his current location, Atlanta Country Club, where he has been the Head Golf Professional under Director of Golf, Scott Schroeder. Scott has an extensive background with the Discovery Land Company (Mountain Top Golf Club) and has placed six other Head Professionals throughout his career. Sean’s passion for golf started at a very young age and has been a focal point throughout his life and career. He attributes his character to the Junior Golf Program that started his career path. He attended Chico State University, located just outside of Sacramento, California, and his love for golf continued to grow. He spent four years as Lead Assistant at Mt. Shasta Resort in Mt. Shasta, California. He was then offered the opportunity to work for the Rosewood Hotel Group at CordeValle Golf Club in San Martin, California. During his tenure at CordeValle, he was able to be involved in amazing events such as the Fry’s.com Open and the PGA Cup for Club Professionals. When Sean arrives in October, he will be joined by his fiancé, Loren. We expect that Sean’s customer service background through the Rosewood Group and the mentoring by Scott will help us to continue to deliver a superior Member and guest experience. GOLF TIP FROM THE PRO – BUNKER PLAY Unfortunately, we all hit into the bunkers and for most golfers the bunker shot is difficult and can cause heartache. If you follow these few steps your life and game will change for the good. 1. Always open up your sand wedge at address. 2. Play the ball slightly forward in your stance. 3. Open your stance so your feet and shoulders align to left of your target. 4. Place your weight on your front side and keep it there throughout the shot. One of the biggest mistakes I see on the course is players falling back on their back foot during the shot resulting in a skull over the green or fat shot. 5. Always accelerate through the ball. Do not stop at the sand. If you follow these simple steps you are guaranteed to get out of the sand on your first shot! GOLF CAMP CREEK GOLF CLUB Lee Moran, PGA Head Golf Pro, Camp Creek Golf Club On Saturday, September 16, Camp Creek hosted its Annual Putting Championship. Players enjoyed an 18 hole par 3 putting course and was done using all 18 greens at Camp Creek. Each Member that participated agreed the event was fun and unique! Everyone that has played at Camp Creek knows and will surely tell you that the greens are very challenging. Congratulations to Robert Hatchett, this year’s Putting Tournament Champion with a score of 45 on this difficult Par 54 putting course. Dr. Bill Hargraves was the runner-up posting a score of 46. Hopefully, we will continue to grow this event each year as something Members will look forward to competing in annually.

CHEF’S CORNER BUFFALO CHICKEN DIP Ingredients: 1 (8oz) cream cheese, softened 1/2 cup blue cheese or ranch salad dressing 1/2 cup hot sauce 1/2 cup crumbled blue cheese 2 ounces mozzarella cheese, shredded 2 (9.75-ounce) cans chicken in water, drained Crackers, chips, and/or veggies, for dipping Directions: Preheat the oven to 350. In a (9-inch) deep-dish pie plate. Add the cream cheese and stir with a fork until smooth. Stir in the dressing, hot sauce and cheeses. Mix in the canned chicken and bake for 20 minutes or until the chicken mixture is hot and bubbling. Stir before serving with crackers, chips, and/or veggies.
WELCOMING THE FALL SEASON Christopher Waycuilis, Executive Chef Shark’s Tooth Golf Club As we head into the Fall season, Shark’s Tooth is glad to welcome back Member Monday! In addition to this fan favorite, we have changed the format of our Friday night dinner menu to eagerly invite the whole family to join us. The menu has more of a lighter fare feel to it with a few extra special features each week. We are also offering childcare services in case the parents want to enjoy a more private dining experience. This time of year also brings to the kitchen those favorite fall spices and smells that get you ready to sit around our brand new pergola, get close to the bonfire, and enjoy one of made from scratch desserts or specialty cocktails.
10 CULINARY TIPS TO MAKE YOU A BETTER CHEF Tim Doucet, Sous Chef Watersound Cafe 1. Pre-soak pasta overnight and it will cook in about 60 seconds. 2. Put a dish towel or damp paper towel under your cutting board to keep it from slipping and wobbling. 3. Use a spoon to peel a kiwi from the inside out. 4. Use a cheese grater to grate frozen butter straight into pastry dough for fast, even distribution. 5. Caramelize onions in half the time by adding a little baking soda. 6. Grate ginger with a microplane instead of mincing it. 7. Microwave lemons and limes to get more juice out. 8. Use an apple slicer to quickly cut potatoes into perfect wedges. 9. Freeze meat to make it easier to slice for stir-fries and stews. 10. No need to peel potatoes before boiling them; the skin will just slide off once they’re cooked.

Barry Webb Director of Tennis October is the perfect time to get involved in tennis. The exception fall weather in the panhandle of Florida coupled with our offered programs truly provides the ultimate tennis experience. Ladies Rookie Clinic is held each Wednesday morning 9–10 AM. Designed for the beginner player interested in developing their game for eventual match play. You will learn technique, court positioning, scoring and strategy. Men’s Play Day will take place each Saturday morning 9–10 AM. Doubles match play with round robin format. Instruction for doubles positioning and shot selection will be covered during matches. Come join us for a great workout and be home before your favorite collegiate football team kicks off! Looking for a tennis match? Our Match Finder service is designed to facilitate your needs. Simply contact me and provide your specific player profile information to join our list. Your inaugural Tennis Margarita Mixer scheduled for October 13 5–7 PM has reached maximum capacity. You may still register for the waiting list and be entered in place of a withdrawal team. There are a few openings available for Parent/Child Round Robin on October 22 2–4 PM.
