LOCAL EVENTS NOVEMBER BLUES, BREWS, & BBQ Saturday, November 3| HarborWalk Village in Destin | 12 – 4 PM Head down to the Destin Harbor for the 11th Annual Blues, Brews, & BBQ competition held at the HarborWalk Village. Area restaurants will once again compete in a spirited and fun BBQ competition. They will offer samples of creative BBQ styles (not necessarily the traditional pork, beef, or ribs!) and signature coastal food. The fun afternoon will feature “tasting stations” where guests can experience innovative food and cold beverages while enjoying live entertainment. This year’s festivities include Bud & Alley’s Wine Dinner on Thursday evening, the Gulf Coast to Table Dinner on Friday, the Festival Grand Tasting on Saturday, and a Celebration Of Bubbles Brunch on Sunday, all in coveted Seaside style. The Clubs by JOE staff has experienced an overwhelming response from our Members with concern and comfort from those who experienced loss from Hurricane Michael. Your outpouring of support and requests to lend a hand does not go unnoticed. We appreciate it and look forward to helping our staff during this time. For those of you who wish to help those affected by Hurricane Michael, we encourage you to join us as we help our neighbors build back the community by a partnership with Hope Panhandle. HOPE Panhandle, Inc. is a newly formed nonprofit organization led by neighboring community leaders. Your generous donations will go toward these continued efforts by providing essential items to local residents such as food, water, ice, gas, cleaning supplies, hygiene products, baby supplies, pet food and other vital necessities. There are also plenty of opportunities to volunteer to help, as well.

GOLF A MESSAGE FROM THE DIRECTOR OF GOLF Sean McGaughey, PGA Director of Golf It’s hard to know where to start this month’s newsletter after the calamity that hit the Panhandle area last month. Our hearts and prayers go out to all those affected by Hurricane Michael and the devastation it left behind. This tragedy has affected our community as a whole, and my hat goes off to all of The St. Joe Company as well as all the men and women who volunteered their time to help with the recovery efforts. The stream of lights headed towards the Panama City area every morning show how much humanity pulls together in a time of need. The courses were fortunate enough to weather the storm and even though we had substantial tree damage to Shark’s Tooth Golf Club, we were able to reopen within a week. Thanks to the efforts of Ryan and Josh, both facilities were brought back to life quickly. Thank you gentlemen for your efforts in getting our golf courses back in pre-hurricane condition. We hosted our 10th Annual Sharkfest Member-Guest Tournament at the beginning of October at Shark’s Tooth Golf Club. The golf course was in incredible shape and thanks to our 54 teams in the field, the tournament was a huge success. The teams played over two days in a team match play format. Even though the course played tough, the team of Wes Butler and Greg Baker took it all by sinking a fifteen footer on third round of the shootout. Congratulations gentlemen! The golf shops are fully stocked and we hope you have a few moments to come by and see our great selection of apparel. The golf department has been diligently working to introduce new lines and styles our Members will love. Some of these new lines include, Turtleson, Lululemon, Vineyard Vines, and Dunning. It’s never too early to start shopping for Christmas gifts! As always we look forward to seeing you around the Clubs!

CHEF’S CORNER HOLIDAY SIDES

Deviled Eggs
Ingredients: • 1 Dozen Boiled Eggs cut in half length • 6 oz sweet pickled Relish • 6-8 oz Hellman’s Heavy Duty mayo • 2 oz Mustard • 6 Cloves Roasted Garlic • 3 oz minced yellow onion • TT Garlic Powder, Onion Powder, Salt and Pepper • 3 fresh Thyme Sprig leaves Directions: Separate cooked yoke from sliced eggs, Reserve Egg white. Combine remaining ingredients in Kitchen aid mixer using paddle attachment, Mix until combined. Place egg mixture in piping bag with tip and pipe into egg whites. (This can be done using a spoon if piping bags are inaccessible)
Cornbread Dressing
Ingredients: • 6/8 oz Yellow Cornmeal • 2 oz All-purpose Flour • 1 tsp Baking Soda • 1 Cup Sugar • 2 Large Eggs • 2 oz diced green bell pepper, 2 oz diced celery, 2oz diced yellow onion • 1 oz minced garlic • TT Fresh Sage, Fresh Thyme leaves, Fresh Oregano • 1 qt Fresh Chicken, Veggie or Turkey Stock • 4oz Unsalted butter Directions: Combine and mix first 5 ingredients, let rest for 3 mins. Place into a 9in greased casserole dish and cook on 350F degrees for 8-10 minutes until middle comes out clean using fork or toothpick. Combine Cornbread and add stock a little at a time to make sure the cornbread has soaked up most of stock. Mix in 2oz of the unsalted butter and place cornbread and stock mixture back into casserole dish, pour remaining melted butter on top and bake until top is golden brown.
Cranberry Compote
Ingredients: • 1 Cup Fresh Cranberries • The juice of one Orange • Zest of ½ an orange • ½ cup sugar • 1/4tsp cinnamon • ½ tsp vanilla Directions: Combine all ingredients and cook on medium heat for 7-8 mins, and cool.

When did you know you wanted to be a chef? At 9-10 years old. We would have sleep overs on the weekends with some family friends we grew up with. I would tell everyone I was going to be a Chef when I grew up. In the mornings I would make everyone French toast and eggs for breakfast when we were watching Saturday morning cartoons. My friends still remind me of that to this day.
What is your favorite food memory? My Aunt Ruth and Uncle John were apple farmers in central Washington State. Each summer from the time I could work at 7 or 8 years old through High school I would go work on the farm for the summer. I would stay weeks at a time working in the orchard with my Aunt during the day learning how to care for the trees and the fruit. I would work with my Uncle learning the maintenance side of the farm, keeping the irrigation systems running and the machinery intact etc. Each evening we would work in their garden that was in the middle of their orchard. This garden had everything. Fruits, Berries, Sweet corn, cabbages, root vegetables and so on…I can still taste the currents on the vine. We would bring in the fruits and vegetables as they were ready and can and preserve all we could. We made jams, jellies, compotes and “fruit leather” my Aunt had constructed a food dehydrator out of an old roll top desk, screen doors and a light bulb. I swear she invented fruit roll ups and never knew it! We would work all summer on these projects and that’s how they lived through the winter…each year for Christmas, everyone in the family would get a box of love from Aunt Ruth, all different jams and jellies and everything we made throughout the summer. She even made her own wine!. I used to burst with pride knowing I helped do all that work. I will never forget any of that. Who in the food world do you most admire? Michel and Sebastian Bras, Father and Son Chefs from France. I admire their endearing spirit, the connection they have with what they do, and their passion for teaching and mentoring. The way they bring family into the focus of everything they do. Favorite food to cook with? Fish and Duck. And I love to do pastry. (plated desserts, not baking). Favorite cookbook? Too many to choose from. When people ask me what book they should get I always recommend “The Joy of Cooking”. It’s such a wonderful tool. Its factual, technique based and literally explains WHY to do things on a step by step basis. The recipes are timeless and well written. Favorite city for food – national & international? Hard to top NYC in USA, go to the corner of Baxter and Canal, its where Little Italy and Chinatown connect, wherever you turn you are going to do quite well. Do all you can to ignore Yelp and all that nonsense. Find out where the cooks go. That’s where the food is.

Barry Webb Director of Tennis Come join us each week for Wimbledon Wednesday 10 AM – 12 PM at WaterSound Beach Club! This program includes instruction during round robin match play. You may sign up with your partner as a team or you will be paired with another player. Ladies Beginner Clinic is conducted every Wednesday 9 – 10 AM at WaterSound Beach Club. This is a great opportunity to learn all aspects of the game and get prepared to join a league team. Men’s Play Day is held on Friday mornings from 9 – 11 AM at the Shark’s Tooth Tennis Courts. The format is singles play. This is a chance to meet other players and get a good workout. Private, semi-private and group lessons are available for all ages and ability levels.
