WELCOME NEW MEMBER WEBSITE The Clubs by JOE Member Website is now LIVE. All Members will have access to their personal Profile, Member Statements, Calendar of Events, and Email Communications. In order to access the Members only area, Members will need to register online, www.ClubsbyJOE.com. You will need your Member Account Number in order register. Please refer to your Membership Card for this number or email Memberships@stjoeclub. com to obtain. How to Register Online 1. Navigate to www.ClubsbyJoe.com and click Member Login on the upper right-hand side of the page. 2. Click the Member Registration button to register your account. 3. Enter your Member Number, First Name and Last Name exactly as they appear on your last statement and click Validate (Note: your first name is typically in our system as your given name). 4. Once your information has been validated, you will be taken to the Member Registration page to set your Username, Password and Email Address (for website communication). 5. You can select your Username and Password on this screen. Usernames are not case sensitive, however Passwords are case sensitive. 6. Once all fields are filled out, click on Create User to complete the registration process. 7. Upon successful registration, an email message will be sent to the email address entered during the registration process.
HOLIDAY HOURS OF OPERATION WaterSound Beach Club will be OPEN Monday, November 20 & Tuesday, November 21. As you aware from our communication last week, WaterSound Beach Club’s pump house that contained all pool operational equipment sustained a fire last week, resulting in major damage and rendering it non-operational. We are currently working with contractors to determine a timeline for rebuilding the pump house and for the pool to become operational. We are very fortunate that the fire did not cause any damage to the Club’s main building; allowing us to continue to provide food and beverage service from 11 AM until Sunset, Wednesday through Sunday. We realize that many of you have plans to visit the Beach Club over the upcoming holidays so please be aware that while the Club will be open and beach services available, the pool will remain closed until further notice. GOLF 2017 SHARKFEST MEMBER-GUEST The 2017 SharkFest Member-Guest held on October 5-7 at Sharks Tooth Golf Club was another huge success. Congratulations to Mr. John Bowden and his guest Mr. Stan Hobbs for being our 2017 SharkFest Champions! Mr. Bowden has been a long standing Member at the Club and has participated in all of our Member-Guest Tournaments, the victory was long overdue. All Members and their guests enjoyed outstanding food prepared by Chef Christopher and his team. We had good luck on our side going into Saturday’s portion of the tournament because it looked like the Tropical Storm Nate may have been headed our way. Fortunately, we were able to get in all matches for the tournament and complete the shootout before any bad weather came into the area. Thank you again to all of our Members who played in the event and we look forward to the 2018 SharkFest Member-Guest Tournament.

2017 INLET CUP We are very excited for this year’s Inlet Cup taking place Friday, December 8 and Saturday, December 9 due to the rescheduling of the Norman/ Fazio Classic. The tournament is a match between Camp Creek and Shark’s Tooth. The format of play for this event is Ryder Cup style. Friday’s play will be better ball matches at Camp Creek, and Saturday’s play will be singles matches at Shark’s Tooth. CHEF’S CORNER APPLE CRANBERRY SAUCE
DELECTABLE FALL DESSERTS
Serves: 8 servings
Tim Doucet, Sous Chef Watersound Cafe
Ingredients: • ¾ cup sugar • ½ cup orange juice + juice of zested orange • ½ cup water • 12 oz fresh cranberries, rinsed and picked through • 1 ½ cups Your Favorite Apple, Peeled, Seeded, and Diced • pinch of salt • 1 cinnamon stick • Zest of 1 Orange
We are featuring two fall style desserts until November. The first is a Pumpkin Cranberry Cheesecake that consists of delicate pumpkin custard with fresh tart cranberries in a gingersnapped crust. It’s everything we love about the holidays! The second is the our Pumpkin Cranberry Stack that boast a moist spiced pumpkin cake, pumpkin cheesecake, and tart cranberries all stacked with walnut cream on a gingersnap shortbread crust. Festive and cheery, our Pumpkin stack takes traditional favorites and dresses them up for a party.

THANKSGIVING PROBLEMS SOLVED
1. Combine sugar, orange juice, and water in a large saucepan over medium heat. Stir to combine.

2. Add cranberries, apples, salt, cinnamon stick and orange zest.
Solution: To keep organized, create what caterers call a prep list, which lays out, in order, all the tasks that need to be done in the two days prior to your Thanksgiving dinner.
3. Bring to a simmer over medium heat, stirring frequently. 4. Continue cooking, for about 10 minutes, or until all or most of the cranberries have popped. I like to leave a handful of berries whole. 5. Let cool for at least 30 minutes. Cover and refrigerate until ready to use. 6. Can be made up to 3 days in advance.
•
First, figure out which recipes can be made at least one day in advance. Things like pies, blanched vegetables, and gratins can all be prepared ahead of time and refrigerated. Find make-ahead Thanksgiving recipes.
• Second, identify which of the dishes to be made on Thanksgiving Day will take the longest. Work backward from the time you want to eat, allowing 10 extra minutes per recipe. • Third, look at cooking temperatures and see what can go in the oven at the same time. Use multiple timers to keep track of what’s in the oven and on the stovetop. Put a Post-it note on each timer so you won’t forget which dish it’s for.

This program is designed to pair players of comparable ability level to create matches and meet other tennis playing members. The Ladies Rookie Clinic is held each Wednesday from 9 – 10 AM. If you are interested in learning the game, this is your opportunity. All aspects of tennis are covered from a beginners perspective during the session.
