GOLF A MESSAGE FROM THE DIRECTOR OF GOLF Sean McGaughey, PGA Director of Golf It looks like winter has finally arrived with our first frost delay of the season coming in November. Luckily we only saw a few mornings with low temperatures, leaving us with excellent playing conditions for most of the month. The golf courses have been in fantastic shape all year long, and as we enter into our colder season, we are asking for your help to keep the courses in great condition. Below is a note from our Superintendents on how you can help us minimize damage over the next few months.

Dear Membership, We are asking that all carts remain on the cart path around the tee complexes and green surrounds during the winter months. It is essential this time of year as cart traffic will significantly affect the spring Bermuda transition. Please help us by adhering to the above request to keep our facilities staying in great shape throughout the coming winter months. Thank you, Josh Parker, Shark’s Tooth Golf Club Superintendent, and Ryan Dykes, Camp Creek Golf Club Superintendent This month marks the end of the 2018 tournament season, but we are thankful that we could round out another great year with a few amazing events. November’s Battle at the Beach tournament paired two teams of twelve players against each other in a Ryder Cup-style format. We would like to congratulate Team Black, led by captain Bob Dalton, as 2018 Battle at the Beach Champions. Team Black battled it out on day two in order to win the title over the Green Team, led by Jim Henderson. We also hosted our annual Turkey Shoot at Camp Creek Golf Club last month. Turnout for the event was excellent with 13 two-man teams in the field. The tournament was a two-man scramble paying out an overall Net and overall Gross champion. Taking home the Gross title was the team of Nick Henderson and Mark McGuffee with a phenomenal score of 69. That was followed up by an equally impressive Net score of 65.9 by Jeff Gregory and Jeff Roland who took home the title of Net Champions. Great playing gentleman and thank you, everyone, for your participation! The Christmas Stocking Sale was a hit this year with plenty of old and new faces coming into the shops. If you have not yet visited the golf shops recently, we encourage you to do so as we will be keeping both shops fully stocked with brand new apparel and accessories for the upcoming season. This month’s Frosty Frolic Member Holiday Party will offer another opportunity to score a deal on gifts for those on your shopping list. We thank you for your continued support of the golf shops. As always it was great to see everyone out on the golf course and I hope you and your families have a great holiday season!

CHEF’S CORNER BUCHE DE NOEL

WHAT IS YOUR FAVORITE HOLIDAY TRADITION?

Ingredients: • 2 cups heavy cream • 1/3 cup unsweetened cocoa powder • 1/2 cup confectioners’ sugar • 1 1/2 teaspoons vanilla extract • 1/2 cup unsweetened cocoa powder • 1/8 teaspoon salt • 1teaspoon vanilla extract • 6 egg whites • 6 egg yolks • 1/4 cup white sugar • confectioners’ sugar for duesting • 1/2 cup white sugar

Chef Erica Reynolds, Origins Cafe Christmas has become one of my favorite times of the year, especially now that I am closer to family. One of our favorite traditions for the last 4 years have been making Christmas sweaters every year on Christmas Eve! During this time we sit around the tree drinking hot chocolate and egg nog, laughing and joking about the creative and some ridiculous designs each other have come up with! We wear these sweaters all day on Christmas and eventually take family photos. We keep these sweaters and pack them to review and reminisce every year. We also have a tradition of fixing the biggest southern all day Christmas Meal that carries over for days after. We prepare everything from Turkey, Ham, Fried Fish, Fried Shrimp, Stuffed Salmon along with all the fixings such as Cornbread Dressing, Collard Greens, Baked Macaroni and Cheese, Potato Salad, Candied Yams, Sweet Potato Pies, Pecan Pies, Rum Cakes and Pound Cakes!

Directions: Preheat oven to 375 degrees F (190 degrees C). Line a 10x15 inch jellyroll pan with parchment paper. In a large bowl, whip cream, 1/2 cup confectioners’ sugar, 1/2 cup cocoa, and 1 teaspoon vanilla until thick and stiff. Refrigerate. In a large bowl, use an electric mixer to beat egg yolks with 1/2 cup sugar until thick and pale. Blend in 1/3 cup cocoa, 1 1/2 teaspoons vanilla, and salt. In large glass bowl, using clean beaters, whip egg whites to soft peaks. Gradually add 1/4 cup sugar, and beat until whites form stiff peaks. Immediately fold the yolk mixture into the whites. Spread the batter evenly into the prepared pan. Bake for 12 to 15 minutes in the preheated oven, or until the cake springs back when lightly touched. Dust a clean dishtowel with confectioners’ sugar. Run a knife around the edge of the pan, and turn the warm cake out onto the towel. Remove and discard parchment paper. Starting at the short edge of the cake, roll the cake up with the towel. Cool for 30 minutes.

Chef Dan Bower, WaterSound Beach Club Having a young family that was growing up in Hawaii, tropical Christmases gave us some unique experiences. Honolulu does Christmas like crazy! The town is lit up with lights and displays everywhere you look. Each year we would take the kids to Honolulu Hale (pronounce HA-LAY.) Hale is Hawaiian for “home,” it is the campus that the state capitol, city hall and federal buildings are on. Each year it is decorated and made into town Center for “Shaka Santa and Tutu Clause.” Its always fun to take the kids to ride the rides and see all the displays and of course get fresh malasadas from Leonard’s bakery! They had trolley rides from there where you could take the city lights tour and get your picture with Santa. It really became special to us.

Unroll the cake, and spread the filling to within 1 inch of the edge. Roll the cake up with the filling inside. Place seam side down onto a serving plate, and refrigerate until serving. Dust with confectioners’ sugar before serving.
