WELCOME THE CLUBS BY JOE STORY St. Joe Club & Resorts has been a place that provides Members and their families with a sense of pride and fulfillment. Now as The Clubs by JOE, we will continue to be your home away from home, creating memories and traditions to be cherished for a lifetime. As we continue to grow and expand our facilities and amenities, it is important that we create our own brand identity. As WaterColor Inn, Vacation Rentals and The Pearl currently have a strong brand identity, we felt it important to build our own brand identity. The Clubs by JOE offers a seamless level of brand continuity, unifying Camp Creek, Origins, Shark’s Tooth and WaterSound Beach Club under one Club.
WATERSOUND BEACH CLUB ANNOUNCEMENTS Please be advised of the new Hours of Operation for the WaterSound Beach Club beginning after Labor Day Weekend. September 6 – October 31 Wednesday – Sunday 9 AM – 8 PM Beach Service: 9 AM until 1 hour prior to sunset (Sunset posted on chalkboard daily) Lunch: 11 AM – 5 PM Daily Dinner: 5 – 7:30 PM Daily REMINDER: RFID vehicle tags for the WaterSound Beach Club Entry Gate are now available. Each Member may pick up their (2) tags from the WaterSound Beach Club Office; for security purposes RFID tags cannot be mailed. RFID tags must be placed on the front windshield of vehicle to be automatically scanned to gain entry. The WaterSound Beach Club office is open daily from 9 AM – 4 PM. 9th Annual Sharkfest Member-Guest Golf Tournament Thursday, October 5 – Saturday, October 7 | Shark’s Tooth Golf Club Sponsored by The Clubs by JOE Member Golf Association Save the date for the premier Golf event of the year for our Members and their Guests! The annual event provides our Members the opportunity to showcase their Club with three days of competitive golf accompanied by a long list of activities for all golfing participants.
Putting is the most individual aspect of golf; no two golfers have the same putting style. With that said, every good putter has common parts of their putting stroke. One key that I believe is very important is to accelerate through the ball on your stroke, especially on short putts. We need to make sure we accelerate the putter head through the ball, never decelerate. Always have the putter head accelerating through the ball into the hole. A suggested drill for improving this process, take 4 balls and line them up. Each ball should be about a foot apart and start about two feet from the hole. The drill is to putt each ball into the hole without hitting behind the ball, always accelerating through the ball. Try this drill the next time you are on the putting green! You will see a great improvement in your putting.

FOOD & WINE PAIRING
Ingredients:

1 (16 oz) can Refried Beans 2 cups Avocado, diced 1 (8oz) container Sour Cream 2 cups Salsa or Pico de Gallo 1 cup Shredded Cheddar Cheese 2 Tomatoes, diced 1 (2.25oz) can of sliced Olives, drained 1/2 bunch of Green Onions, sliced 1 package Taco Seasoning Salt, to taste Lime juice, to taste Tortilla Chips
What is your method of pairing food & wine? Wine dinners are a great way for me to explore new regions of the world. Through the food you learn old family traditions, cultural influences, and how that region’s cuisine is progressing with the times. I usually research the area’s more traditional cuisine and see how I can build a plate that would bring you to that place with the first bite. I start by finding the food first and choose a wine that would add another dimension to the dish, but you can start from any inspiration you have. A couple of “rules” (because you can always break the rules) to follow include: choose earthy wines for earthy foods; with lighter meats like pork or chicken, pair the wine with the sauce; match rich reds with tannic reds; and lastly, try low alcohol wines with spicy food. Just a couple of notes to keep your next gathering on point!
Directions: In a small bowl, mix half of taco seasoning with refried beans and the other half with your sour cream. Dice the avocado; add salt, lime juice, and mix to taste. Layer the dip in the order as they are listed in the ingredients and spread it out in a 9×11 inch pan (beans, avocado, sour cream, salsa/pico de gallo, shredded cheese, tomatoes, olives, and green onions. Store in the refrigerator until just before your event and serve with chips.

Enjoy a refreshing Candied Walnut and Pear Salad with Lemon Poppy Seed dressing or an Ahi Tuna Bowl with seasoned Sushi rice, avocado and cucumber. The house smoked turkey breast on “The Rachel,” the sister sandwich to the Ruben, is a must try. Another healthy option is the new Southwest Quinoa Power Bowl with a Honey-Chipotle Vinaigrette. Barry Webb Director of Tennis As we enter the fall tennis season, I would like to highlight several new programs that have been added to the weekly schedule. Future Stars Clinic will be conducted each Monday and Wednesday 3:15 – 4 PM. This program offers an introduction to tennis with instruction for ages 6 – 8 years old, focused on building hand-eye coordination and basic strokes of the game. Ladies Rookie Clinic will be held each Wednesday morning from 9 – 10 AM. Designed for the beginner player interested in developing their game for eventual match play. You will learn all of the strokes, court positioning, scoring and strategy. Men’s Play Day will take place each Saturday morning from 9 – 10:30 AM. Doubles match play with round robin format. Instruction for doubles positioning and shot selection will be covered during matches. Come join us for a great workout and be home before your favorite collegiate team kicks off! Private and group instruction times are also available upon request. If you would like to take your game or doubles team play to the next level, please contact me for scheduling.
