As a husband and father of three young children, I understand the importance of those special times for family and friends to remember for years to come, which is why I, along with our associates, take pride in providing a club that not only meets but surpasses your expectations. During the past year, we have worked diligently to create engaging activities and social events, to continue to train our associates in providing the best-possible guest experiences and to make significant improvements to our facilities inside and out. Member News A Look Back at Recent Club Enhancements and Forward with some Plans for the Future Life along Scenic 30A is a just little bit different. With a pace seemingly set by the gentle, emerald waves that wash over the opal-white sands, this area is a beachside treasure St. Joe Clubs & Resorts is proud to call home. And it is our mission to make the most of Northwest Florida’s abundant natural assets and incomparable lifestyle for you, our membership, with our diverse portfolio of amenities and unique offerings. Quite simply, at the forefront of our every effort is the desire to make your experiences through SJCR nothing short of exceptional, and we know that goal begins by listening to you. We hope you will be pleased to learn that through your feedback, we made many significant enhancements in 2015. WaterSound Beach Club, a main focus for the year, saw many improvements, including an extensive renovation to the exterior and a new boardwalk leading from the club to the beach. As well, a new boardwalk-style entry stairway to the pool deck was added, along with a cozy fire-pit area, new outdoor furnishings, a more convenient towel hut at the pool and a new tiki bar, offering beachside beverage service. We also introduced weekly beach bonfires at WaterSound Beach Club during the season, allowing for another informally fun way for members to socialize. And for paddleboard enthusiasts, we stocked a variety of complimentary YOLO boards to suit any skill level. In addition, we introduced more children’s activities and women’s interest-focused events.

At Wild Heron, Shark’s Tooth Golf Club ‘s 21,000-square-foot clubhouse underwent an extensive interior renovation, including the dining room, Grille Room and lounge area. As well, we presented new preferred rates for club members at all SJCR properties, including the luxurious Pearl Hotel at Rosemary Beach, as an added value to your membership. As we move forward in 2016, SJCR’s third year of operation, we will keep the momentum going with plans for some exciting changes and additions. On par with our golf member’s expectations, we plan to build a halfway house on Shark’s Tooth Golf Club course. This amenity would allow golfers the opportunity for a midway refreshment break as they play the 7,209-yard course. Enhancements to WaterSound Beach Club are also in the active planning stages, and we hope to share details with you soon. And finally, but quite possibly most important on our list of goals for the coming year is to increase our communication with you. We will continue to seek your input, particularly with our annual member survey; however, look for more information from SJCR in our club e-newsletter, especially covering the exciting changes mentioned above. As we continue to change and improve our offerings, we hope that we can bring you and your family further value and pleasure from your membership experiences, as well as more of what makes this area a little bit different and entirely special.

Fish Out of Water Fresh, Flavorful Fine Dining that’s always in Season

s the sun slips below the Gulf of Mexico’s wide-open horizon in a blaze of orange and pink, guests at Fish Out of Water pause to take in what is arguably one of the best beach views along the Scenic 30A Corridor. However, the expansive and ever-changing vista is simply a prelude to the deference the AAA Four Diamond-rated restaurant gives to the beauty and bounty of Northwest Florida.

Fish Out of Water, a three-time winner of Florida Trend’s Golden Spoon Award, offers a masterfully curated collection of breakfast and dinner dishes influenced by the emerald-green waters, just a few sandy steps from the restaurant’s door at WaterColor Inn. “It’s amazing to have the Gulf in your backyard,” said St. Joe Club & Resorts Corporate Executive Chef Todd Rogers, as he smiled and took an appreciative gaze through the floor-toceiling windows. “My interpretation of Fish Out of Water is something unusual, something different,” added Rogers, who has nearly 30 years’ experience in the restaurant industry and currently oversees the membership club’s nine restaurants. “But then again, it’s something local, regional, seasonal and reflective of the farmto-table movement.” Dishes like Big-Eye Tuna Tartar with lime-spiked avocado and plantain chips are one of the many appealing “first bites.” And the Fish Out of Water Seafood Grill, with lobster, shrimp and scallops served on creamy mashed potatoes with tender asparagus, balsamic shallots and finished with a Chardonnay-saffron

“It’s amazing to have the Gulf in your backyard” cream, is among an amazing array of entrees that demonstrate his philosophy. But Rogers builds on his regional cornerstone with international flavors, offering pleasant surprises with dishes like the Sake-Braised Pork Belly with fried green tomatoes, Asian slaw and house-steamed buns. “I don’t like to put limitations on myself,” Rogers said with a deep laugh, and he’s true to his word. He doesn’t rely on local seafood to carry the menu, but instead sources the best cuts of meats, including perfectly grilled pork loin and a Snake River Farms Kobe-style Wagyu “Eye of the Rib Eye” to round out the selection. With a litany of delicious desserts including a Seasonal Soufflé, the Chocolate Decadence Cake with a caramel-stuffed cookie and a Banana-Coconut Pie, laced with Chantilly cream, a great meal at Fish Out of Water comes to a close like those breathtaking Emerald Coast sunsets, leaving guests knowing they’ve experienced something undeniably unique to Northwest Florida. ith miles of sugar-white sand beaches and emerald green waters, the sun-soaked Scenic 30A corridor of Northwest Florida is continually growing as a vibrant vacation haven

for visitors from around the world and home to an increasing number of residents. St. Joe Club & Resorts (SJCR) is committed to being the best community partner possible by evolving with the area and continually providing unique, luxury experiences, from award-winning golf courses and restaurants to perfectly appointed rental accommodations. However, SJCR’s commitment also includes an equally important goal: supporting those in need. Last year, SJCR created the Community Involvement Committee, offering SJCR associates the ability to give back to and raise awareness for charities in Walton and Bay counties.

“The committee is focused largely on charities that represent the underprivileged and underserved,” said Gabrielle Testa, manager of The Pearl Hotel in Rosemary Beach and a founding committee member. “This goal allows our committee and the associates who participate through active and passive service to really make a difference in our community.” Testa added that for the burgeoning committee, it was important to members from the onset that they “collectively ensured the efforts were specifically focused, especially when it came to donations.” Therefore, the committee selected one locally based nonprofit, Food For Thought – an independent nonprofit that provides backpacks filled with healthy, easy-toprepare food weekly for more than 1,200 local students who are dependent on free or reduced school meals – as SJCR’s beneficiary for the first year.

“Community support and business partnerships are critical to our organization and this partnership has provided Food For Thought with much needed resources,” said Tiffanie Nelson, Food For thought founder and executive director. “This year, St. Joe Club & Resorts has participated in all our fundraising events and food drives and held their own in support of our work. We are happy to have their consistent support and [to] build a relationship with their team.” Through events such as a Latin-themed benefit dinner at The Pearl’s Havana Beach Bar & Grill, a beanbag-toss tournament at Watersound Origin’s second annual Great American Picnic, a car wash, a food drive and volunteers stocking the pantry and filling backpacks, SJCR has been a steady supporter of Food For Thought. “Our partnership with Food For Thought has been an incredible success,” said, Testa. “They had immediate needs, and we were able to help. Now, as a committee and a company, we know what we can do, and we look forward to growing our scope and the impact we can make on our community.” StJoeClub.com | 23
