Dear St. Joe Club & Resorts Member: As St. Joe Club & Resorts enters into its fourth year of operation, we are now able to experience the joys of watching our member families grow and change. From children who were once too young to venture into the water alone and are now joyfully diving headfirst into the emerald-green waves, to couples from across the country who are transitioning from part-time to fulltime homeowner status following much-deserved retirements, it is our great pleasure to see our members mark the passage of time with us in fun and memorable ways. And as your family changes, so does SJCR. This spring, we began moving in a very specific direction, making improvements under the guidance of those who know our club best: you. In January, we conducted our annual membership survey, and the rate of response was unprecedented, not only for SJCR but also for the industry. This tells us our membership is interested and positively engaged. And, the feedback – including suggestions on areas where we were already actively strategizing improvements, as well as some exciting and unexpected new ideas – was phenomenal. But, of course, gathering information is one thing; it’s how it is used as an impetus to create change that is important. Our commitment to you through this survey is to act upon the feedback to the best of our capability.
At all SJCR club dining venues, we worked quickly to improve our menu selection. Look for changes to continue seasonally, utilizing fresh, local produce in new creative and delicious dishes, crafted by our expert culinary team. And, among many more improvements, we have made it our mission to develop a mix of innovative and traditional club events through the guidance of our new social and golf committees. Turn to the calendar on page 8 – you will find it filled with a variety of events, including ladies’ luncheons, golf tournaments, our Fourth of July celebration and MountainFilm on Tour in WaterColor, which is also featured on pages 38-39. And, just as this is your club, JOE Club Experience is your magazine, so check out the story on page 18 covering Havana Beach at the Pearl; earmark Chef Brad Dees holiday tamale recipe on page 44; and get to know SJCR a little better by reading a quick Q&A with our director of events and member relations, Carolyn Webre, on page 42. We hope you enjoy this issue as much as we’ve enjoyed creating it for you. Since the survey, at WaterSound Beach Club, we improved overall service time by creating a service bar on the pool level; we hired a fulltime attendant to maintain the quality of the pool deck and restrooms; and we added 250 beach and pool chairs, as well as increased the number of attendants to provide better service. Mike Jansen For our members who like to hit the links at Camp Creek or Shark’s Tooth, we have increased staffing and are continuing to improve service levels. As well, we have created a golf association that offers members discounted pricing for many tournaments throughout the year.

New member groups focus on fun
I
n January, St. Joe Club & Resorts kicked off its 2016 focus on member satisfaction and participation by launching two member-driven committees. Powered by a group of members who are graciously volunteering their time and talents, these committees were developed to advise SJCR on the types of entertainment and leisure activities the membership prefers. The groups were created to serve as ambassadors of SJCR’s membership. The committee members give not only personal input, but they also network within the membership to gather feedback. Guidance from this collective voice enables SJCR to

do its best in offering fun and entertaining events that meet members’ needs. The SJCR Social Committee is comprised of 20 members from all the club’s communities. These active and organized individuals, who obviously share a love of fun, have joined the club managers to help create a more exciting social calendar. The committee immediately implemented SJCR Member Meet & Greets, to be held three times a year. (See the calendar beginning on page 10 for details on July 8 and November 18 Meet & Greets).
SOCIAL COMMITTEE MEET & GREET PONTOON BOAT CRUISE
A dozen members sit on the the SJCR Golf Committee, along with the club’s professional staff. This group quickly got into the swing of things by creating the SJCR Golf Association, which is generating increased participation from members through lower tournament fees. These two committees, which meet monthly, are working diligently to help SJCR fulfill the needs identified in the 2016 Member Survey, and they’ve already proven to make great strides. Participation on the committees includes an annual commitment. Make the most of your SJCR membership by enjoying some new and taste-tempting benefits. Members receive a 15 percent discount on food purchases at Havana Beach Bar & Grill at The Pearl Hotel. Every Tuesday, Havana also features Member Night, offering a one complimentary appetizer per table with the purchase of an entrée. Make sure and try the cured ham and artisan cheese empanadas, and read the feature on page 18 for more on this unique Cuban-inspired restaurant in Rosemary Beach. At WaterSound Beach Club, the dining hours have been extended to 11 a.m. to sunset so you can enjoy the longer days of summer. WaterSound Beach Club is also offering weekly features, including Seafood Ceviche with Avocado Salsa; fresh, local-caught Cobia, Grouper or Gulf Shrimp; and hand-cut Black Angus Beef Tenderloin or Ribeye. And dining at all SJCR clubs will get a seasonal update, to feature the freshest, local ingredients. Bon appétit! New at the helm of WaterSound Beach Club’s kitchen is Brad Dees, who was appointed as executive chef last spring. Dees – who comes to SJCR from Texas-based Global Event Group, where he also served as executive chef – is focused on
creating culinary offerings centered on seasonal ingredients for WaterSound Beach Club guests. The Texan native attended Le Cordon Bleu College of Culinary Arts in Las Vegas Nevada, and has held various positions of increasing responsibility in the restaurant industry during his notably successful 10-year career. Dees, his wife Jessica and daughters Elizabeth, Katelyn and Hailey live in Panama City Beach and are exploring and enjoying all the 30A corridor has to offer. To learn a bit more about Dees, go to the recipe feature on page 44, and make plans to enjoy lunch or dinner at WaterSound Beach Club soon. Exciting enhancements continue for SJCR, as many renovations focused on increasing membership satisfaction have recently been completed. Camp Creek 19th Hole Grille received a makeover this spring, complete with new décor and a new menu. Also featured is a community table, the perfect place to meet and greet other SJCR members and golfers, as well as a full bar, which will offer players a refreshing cocktail in a relaxing atmosphere after a round of golf. To improve overall service times and allow for a broader menu, in March, The WaterSound Beach Club completed a significant kitchen expansion and added a service bar on the pool level. And, 250 lounge and beach chairs were added to the inventory. These improvements and more reflect member suggestions in our 2016 member survey. Your voice counts as SJCR continues to develop and grow.

R
eflecting the legendary, avant-garde life of the 1940s’ Cuba in which American writer Ernest Hemingway found solace and creativity, Havana Beach Bar & Grill offers an immersive culinary experience that appeals to both passionate foodies and families alike. Anchored by a grand mahogany bar – where it is easy to imagine Hemingway could be found quietly sipping one of the restaurant’s handcrafted cocktails, such as a traditional daiquiri, the La Nueva Cubano or the Havana Buck – the dining room sets the tone, with pastoral and posh touches that blend to create a warm and intimate atmosphere for breakfast, brunch, lunch and dinner. Executive Chef Greggory Smith deftly develops evolving seasonal menus for the AAA Four Diamond-rated restaurant, located in Rosemary Beach’s boutique luxury hotel, The Pearl. And while his dishes are centered largely on Cuba, he transcends any suggestion of leaning on a banal theme through his desire to bring authenticity to each plate. “The dishes we craft do not begin in the kitchen, they are rooted in intensive research of the Latin culture,” said Smith. “We want

Havana’s food to reflect the diverse influences that inspire Cuba as a true cultural melting pot.” That inspiration shines in the saffron-perfumed Paella, piled high with lobster, scallops, shrimp, fish and chorizo, topped with a customary sofrito and served in a rustic cast iron dish; the tender, red wine-marinated and charred octopus; or the voluptuous crab cake, served with avocado crème, cilantro, jicama slaw and toasted cumin. Smith and Pastry Chef Rachel McCulley keep the momentum going to the final course, with a selection including the Cuba Libre, their take on a Coca-Cola cake with spiced rum and lime granita, and a Dark Chocolate Cheesecake enrobed in espresso ganache and plated with a texturally pleasing peanut butter crunch. However, it’s Havana’s Beachside S’more – with graham crackers and ethereal house-made marshmallows floating on a pool of spiced chocolate and presented in a mason jar, which releases unexpected curling whips of campfire-scented smoke when opened at the table – that creates the perfect fin to a feast which Hemingway would surely approve.

For many people, entering their clothes closet feels a bit too much like Alice from the fabled children’s tale, as she takes that tentative step through the looking glass and tumbles down a rabbit hole. It can be confusing, disorienting and overwhelming, even for the most stylish and organized amongst us. Penney Kelly, a self-professed “clothes person,” knows the scenario well. After living in Atlanta for 23 years and recently retiring, Kelley and her husband Bart moved to their Watersound Origins vacation home in May 2015 to live year-round. The relocation to the 2,000-square-foot house meant downsizing, but she struggled to make that lifestyle shift with her clothing. Kelley, a St. Joe Clubs & Resorts member, attended a neighborhood ladies’ luncheon the following fall at Watersound Origins Café and met fellow homeowner Amy Giles, owner of Wardrobe Made Simple, a personal styling and closet-makeover company. She quickly booked a consultation, and says, “I just thought it would be fun. I love clothes and I love to shop. But, I’m the kind of person who will buy something and then think, ‘How do I wear this?’” Fortunately for Kelley, Giles has the answer to that oft-asked burning question and more. The mother of four-year-old twin daughters, Giles has a firm handle on multitasking, so she knows how to help her clients with all aspects of their fashion needs. Offering services from closet cleanouts to personal shopping to packing for a vacation, she’s a one-woman wonder of fashion guidance.

A resident since 2009 of Watersound Origins, which she considers “living in paradise,” and a SJCR member, Giles has amassed clients in several local communities, including WaterSound, Wild Heron, WaterColor. “Every client is unique and has different needs and craves a personal style all their own. I believe it is so important to be yourself, “she says, which reflects her company slogan: Find your own chic. “My goal as a personal shopper is to build a wardrobe the right way, around a client’s personal style. As well, I take clothes a client owns and style them in new ways, and I also make a needslist of updated essentials, or shop for them.” The Alabama native says. “But at the end of the day, no matter what I do, my goal is always to make people feel good about themselves.”
“…at the end of the day, no matter what I do, my goal is always to make people feel good about themselves.” It was makeover mission accomplished with Rachal Smoker, who credits Giles with helping her build confidence in her ability to create great looks on her own. The resident of Wild Heron since September 2015 says, with a laugh, “My husband (Jason) says I have meltdowns in my closet before I go out.” His good-natured jesting came to an end after Smoker booked a Wardrobe Made Simple session, which she called “the best money I’ve ever spent,” last March. The hair stylist and mother of a 13-year-old daughter says the consultation resulted in the creation of about 30 outfits from her own clothes, jewelry and accessories in three hours. Giles also took photos and helped Smoker create a digital gallery on her iPhone for reference. “We go to Shark’s Tooth Golf Club on Friday nights or Member Monday at the WaterSound Beach Club and I can recreate the looks she made for me.” Smoker says she no longer feels intimidated when putting together an outfit, and that makes her closet, as for so many of Giles’ clients, a wonderland of peace and possibilities.

MOVING MOUNTAINS MountainFilm returns to WaterColor with spectacular lineup as sub By Lori Hutzler Eckert
The stars always shine bright on the beaches of Northwest Florida; however, on Friday, Nov. 4 and Saturday, Nov. 5, a stellar lineup of big screen documentaries will illuminate the night at WaterColor Inn & Resort’s Marina Park Amphitheater during the 2016 MountainFilm on Tour.
“Attendees of MountainFilm on Tour in WaterColor can expect two full evenings of fantastic films that will feature thrilling adventure pursuits, inspiring cultural perspectives and important conservation issues,” says Crystal Merrill, tour director for Telluride Mountain Film.
Returning for the 16th year to WaterColor, MountainFilm on Tour, which occurs each year following the renowned Telluride MountainFilm, features entertaining and thought-provoking documentaries from around the world, with the mission to “use the power of film, art and ideas to inspire audiences to create a better world.”
The festival-style screening, which had a record-breaking attendance of more than 1,300 guests last year, is a signature event for SJCR and major sponsors include Delta Airlines, Visit South Walton and the WaterColor Home Owners Association. “Each year as WaterColor serves as host to this unique outdoor event,

Get to Know St. Joe Clubs & Resorts Carolyn Webre Director of Club Events & Member Relations St. Joe Clubs & Resorts hosts a year-round calendar of events, from golf tournaments to a spectacular annual Fourth of July celebration, with the goal of providing members unique and entertaining experiences. Behind the planning and execution of these special occasions, including private functions, is Carolyn Webre, SJCR director of club events and member relations. The New Orleans Native joined SJCR in 2006 as the catering sales assistant at WaterColor Inn & Resort and has since been promoted several times for her talents and tireless work ethic. This self-confessed “natural planner” is always on the go, but Carolyn recently found a few minutes to sit down and share how her busy work day shapes up, give a couple of dinning recommendations and express her goal for creating memorable events for SJCR members.
What’s a typical day look like? Like most people, I start by checking email, then I write a to-do list for the day. But from that point, there is no typical day, which keeps it fun and exciting. Planning an event is a process; some things can happen on the fly, and others take months of preparation. I enjoy working with the local talent, like musicians, our culinary teams, photographers, florists and event décor specialists. And getting to meet members and build relationships with them so they get the most out of SJCR is always a very rewarding part of my day.
What’s your favorite event to execute? I really enjoy coordinating the annual SharkFest Member-Guest Golf Tournament. It’s in October, which is such a nice time of year in Northwest Florida, and it’s great to see the pride members take in sharing the Shark’s Tooth course with their friends. (For info on the 8th annual SharkFest, go to page 31.) What’s your current favorite SJCR restaurant menu item? I love the falafel at Watersound Origins Café, and I always recommend the chicken Caesar wrap at WaterSound Beach Club.
What are your goals for overseeing member events? What drives me is for the membership to be wowed and blown away every time because they had such a great experience. When a member says they can’t wait until the next event, I feel like I’ve done my job. What’s the biggest change you’ve seen at SJCR during the past decade? The growth has been amazing. I remember when phase 1 of WaterColor had just a handful of houses. SJCR has expanded and evolved along with this region and that puts us in an excellent position to serve our members in the best way possible. 42 | Every Day is a New Adventure with St. Joe Club & Resorts®
What do you do in your spare time? I spend time with my husband of 10 years, Beaux and our three dogs. Our idea of a fun is pretty simple … we like to go to the beach and take day trips to nearby state parks and other coastal towns like Pensacola and Apalachicola. Favorite thing to do at the beach? I like to just sit in my beach chair and watch the waves go by.

very year at the holidays, our entire family gathers in the kitchen for a special family tradition: making tamales. And to make the experience even more meaningful, we use a special recipe that has been passed down, generation after generation. My grandmother, Consuelo Bernal, was given this recipe by her mother-in-law, Lilly Bernal. Lilly also shared this recipe with her ten children, and I’m sure it was used for generations before, as well. Being a part of this Christmas tradition helped inspire me to become a chef. Consuelo or “Memo” taught me this recipe shortly after I graduated from culinary school and it is something I hope to one day pass down to my children.

TAMALES FOR THE MEAT FILLING: In a small bowl, combine the chili powder, kosher salt, paprika, smoked paprika, garlic powder, onion powder, cayenne pepper, black pepper and cumin. Divide the mixture in half and reserve one half for later use.
FOR THE MEAT FILLING: ¼ cup chili powder 2 tablespoons kosher salt 1 tablespoon paprika 1 tablespoon smoked paprika 1 tablespoon garlic powder 1 tablespoon onion powder 2 ½ teaspoons cayenne pepper 2 teaspoons freshly ground black pepper
Cut the Boston butt into 6 even pieces and place into a 6-to-8-quart saucepan. Add half the spice mixture and enough water, 3 to 3 ½ quarts, to completely cover the meat. Set over high heat, cover and bring to a boil. Once boiling, reduce the heat to low and simmer until the meat is very tender and falling apart, 2 to 2 1/2 hours. Remove the meat from the cooking liquid to a cutting board, leaving the liquid in the pot. Allow the meat and liquid to cool Both slightly before making dough and handling. Remove any large pieces of fat and shred the meat into small pieces, pulling apart with your hands or using 2 forks.

Place a 4-quart saucepan over medium heat and add the vegetable oil. Once shimmering, add the onion and cook, stirring occasionally, until semi-translucent, approximately 3 minutes. Add the garlic, jalapeno and remaining half of the spice mixture and continue to cook for 1 minute. Add the meat and cook until heated through, 2 to 3 minutes, then remove from the heat.

While the meat is cooking, place the husks in a large bowl or container and submerge completely in hot water. Soak the husks until they are soft and pliable, at least 45 minutes and up to 2 hours.

FOR THE DOUGH: Place the cornmeal, salt, and baking powder into a large mixing bowl and combine. Add the lard and, using your hands, knead together until the lard is well incorporated into the dry mixture. Gradually add enough of the reserved cooking

liquid, 3 to 4 cups, to create a dough that is similar to thick mashed potatoes. The dough should be moist but not wet. Cover the bowl with a damp towel and set aside until ready to use. TO ASSEMBLE THE TAMALES: Working in batches of six, remove corn husks from water, pat dry and lay on a towel. Spread about 2 tablespoons of the dough in an even layer across the wide end of the husk to within 1 half inch of the edges. Spoon about 1 tablespoon of the meat mixture in a line down the center of the dough. Roll the husk so the dough surrounds the meat, then fold the bottom under. Repeat until remaining husks, dough and filling are used. Tie the tamales, individually or in groups of three, around the center with kitchen twine. TO COOK THE TAMALES: Stand the tamales upright on their folded ends, tightly packed together, in the same saucepan used to cook the meat. Add the reserved broth from making the dough and any additional water so the liquid comes to 1 inch below the tops of the tamales. Try not to pour the broth directly into the tops of the tamales. Cover, place over high heat and bring to a boil for approximately 12 minutes. Remove the lid, reduce the heat to low to maintain a low simmer, and cook until the dough is firm and pulls away easily from the husk, 1 to 1 ½ hours. Serve the tamales warm. For a ‘wet’ hot tamale, serve with additional simmering liquid. Store leftover tamales, tightly wrapped in plastic wrap, in the freezer, for up to a month. To reheat, remove the plastic wrap and steam until heated through.
