It would be a gross understatement to say the past few years have been difficult for our industry. The COVID pandemic, on top of exacting a horrible toll in human lives, has shuttered our open houses, cancelled in-person events, disrupted supply chains, and turned labor markets upside down. Climate change is altering weather patterns, unleashing new pests and scourges, and making the length and depth of our sugaring season less predictable. So, yes, these are challenging, in some ways unprecedented times. Yet none of us has a choice about the times we get to live in – these are the cards we have been dealt. But the good news is that we do get to choose how we respond to our circumstances. For our part, we at Leader choose to respond by doubling down in three areas: Community – you are our tribe, and we are here to support you and help you build your business or flourish in your hobby. Craftsmanship – we will continue to create the finest equipment in the industry, bar none. Creativity – we will tap into our multiple lifetimes of maple experience to develop new solutions and to constantly hone and improve the old solutions. We believe deeply that it matters not just how we do business, but why. With nearly 135 years in the maple business, there are few things we haven’t encountered before.
FOLLOW THE SCIENCE CORNELL'S NEW MAPLE LAB HAS TWIN LEADER EVAPORATORS AT ITS CORE At the end of July, the Cornell Maple Program had a ribbon-cutting ceremony at its new production and research facility in the Arnot Forest (Van Etten, NY). At the center of the new sugarhouse are two identical Leader, 3x10 oil-fired evaporators, installed this year after Leader won a competitive bid to be at the heart of this new research effort. “The purpose of this laboratory,” explained Co-Director Aaron Wightman, “is to be able to do controlled experiments, where we can study the impacts of various treatments on syrup quality, processing efficiency, and things of that nature that will help maple producers be more productive and make a better quality product.
Wightman said that Cornell has in mind “a whole series of studies” for the evaporators. In fact, combined with the new 20-C commercial kitchen, they plan to innovate and contribute to the creation of at least 20 new maple-based products each year. DENIS BUCHNER

“When we do an experimental treatment, say for example, if we want to bubble oxygen through our sap to see if that improves flavor, we'll need something to compare it to, we need a control. So with this setup, we can take a batch of sap, divide it into two different storage tanks, bubble air through one of them, leave the other one under just normal storage conditions and then process them separately through identical evaporators and then evaluate the flavor at the end of that process and see what our actual impact was of that experimental treatment.”

these have the capacity to do a lot of things that we're interested in looking at.” The half-million-dollar Cornell upgrade was funded through grants from the Appalachian Regional Commission and from the New York state budget. New York Agricultural Commissioner Richard Ball was at the ribbon cutting, and we asked him how significant it was that this project decided to buy American-made equipment.
He said we are finding, with buy local movements, that “when we do business with ourselves, it's not just fresher and tastes better. It actually is good for our economy. So, when we invest and we look to expand an industry, and we do business with other industries from New York, from the United States, we're doing business with each other. It's smart. It's local, but it's also smart for the economy.”

A Humbling Business Bottling up syrup, not troubles
IT IS MORE THAN LIKELY THAT, as you read these words, the world’s most expensive maple syrup is being finished and/or stored inside a former General Electric lightbulb plant in Jefferson, Ohio, owned by Nate Bissell. “So, what happened was my dad’s hobby, which he learned from his dad and learned from his dad… I took [it], and kind of put it on steroids," Bissell says. "And he says I kind of took the fun out of it.” Hardly. Bissell has a laconic storytelling style that is self-effacing and frank. “So really my love for maple syrup is from my father,” Bissell continues, “and the desire to grow that business. I don't know where that came from. Maple syrup's a sick addiction. You start making syrup and then you need more trees. You get more trees, and you a need a bigger evaporator. You get a bigger evaporator, and you need an RO. It's just a continual process.” The business was growing fast on the family property until one day a
tour bus pulled up when Nate’s mom was outside with the dog while still in her robe. The business got its moving papers and moved to the mentioned 40,000-square-foot factory in town. There, Bissell Maple Farm runs three businesses. First, there is maple farming: “We have our evaporator and it's a giant prop 10 months a year, but we use it and we make syrup. So we are farmers. Our first love is making maple syrup.” Second, there is equipment sales: Bissell supplies Leader equipment to other maple farmers. And
finally, Bissell says, “the largest part of our businesses is we bottle maple syrup. I think we're known for bourbon barrel aged maple syrup probably more than anything. We’re really good at that part of the business.” What is key, Bissell says, is that “the three business all work together. Making syrup gives us credibility with the farmers. And selling equipment gives us credibility and access to maple syrup, to complete customer orders [for bottling].” We tour the factory and watch barrels being dramatically un-bunged (see cover), explore the bottling line and storage area, take in the hush-hush, top secret methodology of their barrel

aging, taste the very fine results, and ask Bissell what he likes most about what he does. “What I love most about what I do is the people,” he replies. “I tell people that maple syrup was never the goal. It's just the glue. Whether it's the people that work here in this company, the vendors that sell us materials, the farmers, just the relationships and watching people grow either internally at Bissell Maple Farm, or helping farmers work through their issues. Oftentimes it's not equipment, it can be them.” He explains: “I of all people know this journey is getting over your crap as much as it is learning how to use a new piece of equipment. Oftentimes we are the problem... I think that's what I enjoy most – the journey of developing, looking at yourself five years ago and saying, ‘Holy crap, I can’t believe I was that stupid. I can't believe I made those mistakes.’ And then being able to share that with other people and say, ‘Hey, I

don't know exactly what the right thing is, but I can tell you what didn't work for me.’ And trying to be a leader. So leadership is probably something that we talk about most here as an organization.” That, and family. “My family has been making maple syrup in Ohio for over 100 years,”
Bissell says, “but it was really about working with my dad. I tell people this was an overnight success story 20 years in the making. But being able to at the age of 19 really do something with my father and learn from him, just having that time with him. What hap-
pened was, as my dad and I got more interested in maple syrup, my mom got more interested in maple syrup, my brother, my brother-in-law, cousins – it became a family affair, and it just kind of propelled itself, almost like a snowball going down the hill… “And then it's the coming together for this common goal. Everybody's bringing food, you've got cinnamon rolls and just the smells in the air. You're eating together. You're laughing together. Sometimes you're crying together. About just the stakes – woulda, coulda, shoulda. Learning from it, having people there you can depend on, that while you're taking a nap they're fine… I will never forget those times. You're just depending on each other, getting through.” Bissell didn’t invent bourbon barrel aged maple syrup, but he was an early adopter, pursuing the idea after learning of a colleague’s mistake. He was consulting with a sugarmaker in Kentucky who had syrup in plastic drums that got contaminated by a nasty lemon flavor.

“I just remember driving home and thinking to myself, they destroyed like $30,000 in maple syrup and they are from Kentucky,” Bissell says. “They could have at least used some bourbon barrels [for storage] and increased the value of that maple syrup. And that was the first inkling that maybe there is something with this barrel syrup. "So we tried a small barrel, and then I went to 10 small barrels and telling my wife we've got to write a home equity check to fill as many barrels as possible before we even sold our first bottle. “I knew it was a delicious product, and just wanted to take the risk early on to grow and to make as much as possible as fast as possible, because when you have a good product and a
good idea, people are going to adopt that as well.” Bissell’s location in Ohio makes them ideally situated to work with Kentucky bourbon distilleries. “These particular barrels,” he says, gesturing behind him, “they're Pappy Van Winkle barrels. And we've been working with the Van Winkle family for coming on a decade, making this the most valuable maple syrup in the world. I can say that with confidence, and it’s made right here in Jefferson, Ohio. It's just a cool relationship. Two families working together, making a great product.” Yet all that comes with a caveat. “The maple syrup business as a humbling business,” Nate says. “We've had some awesome successes, where I just couldn't believe things that were

happening were happening to us. And we've had troubles as well. I couldn't believe that the things that were happening were happening to us. But as long as you just continue to fight through, you rely on each other. Letting go of things, it was very difficult for me. It was also the cause of a lot of issues. But letting go is also why we had our successes, and why we've been able to scale the business.”

Mike Lazorchak and George Schweigart
A HUNDRED OR SO MILES east of Lake Erie, small towns and large farms dot the rolling hills and narrow river valleys that straddle the 42nd parallel, which forms much of the border between New York and Pennsylvania. It is a quiet, rural, picturesque region. Not a bad place to retire. And there’s plenty of maple to boot. Michael Lazorchak and his wife Dolly live at the top of a long dirt road in Galeton, PA. “I started making maple syrup, when I was like 12 years old,” Mike says. “My dad got me involved in it. We just used a flat pan and had like 40 buckets out in the woods. And we were out there with lights on a tractor when we were finishing it off. But we had a good time doing it. We just made it for ourselves. But then, over the years, as I progressed, my dad was always here, and my kids, as they were growing up, I wanted them to get involved in it, because they wanted to see what it was about, and they really, really enjoyed it. My dad would always come up here. As soon as I was boiling, he was here sitting in the chair, watching it and helping put wood in the fire. “Then, once my boys got involved and even my daughter, I had them doing things. They were collecting sap because all we had was buckets. We probably had 150 or whatever, so they would be collecting and I'd be boiling. And we'd sit down here and have a sort of a get

together because, you know, it took us so long to get it finished off.” As they expanded their operation, the boils stretched into the wee hours. “It got to the point where it was getting to be a lot more work than it was fun,” Mike says. So they upgraded to a 30x8 Inferno Arch and their boiling time dropped to about three hours. “And now it's fun.” Mike says. “Now we're having a good time at it.” “My dad has since passed away,” he continues, “but my youngest son still comes up, and my oldest son, and they helped me out a lot tapping, and boiling as much as they can. They have a good time doing it and so do I. It's nice to get people together.” “Generation after generation,” Dolly interjects. Now that Mike and Dolly have retired, they will also be upgrading with an RO, allowing them to pursue their maple hobby at an even more measured pace. “I always bought as much Leader stuff, as I could,” Mike said. “And the reason I did that is that it's always been good products... I've always had good luck with them. And now of course George* has been a friend of mine… And with him being able to back me up, and help me in knowing that Leader's there to help me if I need assistance in anything – that, to me, plays a big part in it. I just feel like Leader is the Cadillac of all the evaporators, personally. I've seen
some of the other ones. And I just liked the Leader.” “George, he has been there for Mike any time of day,” Dolly adds. “He’s there to help Mike. He's actually come over and helped set lines up for him. When he gets the new equipment, he'll come and show Mike exactly what needs to be done. You're not going to find that through another dealer. We're really happy with him. I mean, he's here for us whenever we need it.” It gives them more time to focus on the part of sugarmaking that they love. “What I love about making maple syrup,” Mike says, “and my wife Dolly will attest to it, is when you come in here and you're boiling and all you smell is maple – there's nothing like it. And it's just, it's such a joy. We just enjoy it. But it's a lot of work.” “A lot of hours,” Dolly adds. “A lot of hours,” Mike agrees, “a lot of dinners down here too.” David and Ellen Moon live just a dozen or so miles away in Westfield, PA. He’s retired from farming, she from teaching. And they too love their winter dinners in the sugarhouse together. For retirees, Ellen says, “maple syrup is a wonderful activity. It’s short-lived. What’re you going to do in the winter time if you don’t go on a cruise?” “We have the property,” David says, “we have the maple trees, why not use them? We like to get outside in the wintertime a bit and this is an early

spring thing that the whole family can do together.” “And he likes to play with wood and fire…” Ellen laughs. The couple makes sure to always keep vanilla ice cream on hand in season, Ellen says, because their grandkids love to have it with the syrup, hot off the evaporator. “We scoop it right out and it has the niter on it and it still tastes delicious, and we love it. We just enjoy it. We really do.” The Moons also started small, with just 100 buckets, and, as their operation grew and they got older, they progressed to tubing and storage tanks. Now the chore of hauling sap is done with pumps, and, like the Lazorchaks, they upgraded their evaporator and added an RO to cut down the boiling time. “We don't want to get too big,” Ellen says. “We want to be small… The building's not overly large, but it's big enough for what we want to do. We want to enjoy the journey. We don't want to become overwhelmed. We don't want a second job. We're retired.” “It was getting to be a job for four, five, six weeks,” David says. “It wasn’t fun boiling that long.” Schweigart helped guide them to a suitable retirement setup. “There’s another dealer closer,” David says, “but they didn’t seem that interested in helping you that much.
They’re more interested in the bigger operators.” “George has been really helpful, he really has,” Ellen says. “He’s come and he’s helped David on different little things. ‘Call me anytime,’ George has said.” “He goes through whatever you want to know and helps you out,” David adds.” Including arranging custom stainless metalworking with some local Amish craftsmen, and helping them get their new evaporator bricked last February. “We have a good sense of Leader with our dealer…” Ellen says. “That’s what makes the difference... We want good consumer relations, and George has given that to us, which has been nice.” Paul and Winnie Nelson, in Bingham Center, PA, also needed help with their Maple Retirement Plan. Married for 50 years, they have only been doing maple for three, and only in a limited way. Actually, Paul did maple on the property 60 years ago when he was growing up here, but then he left for the army, and then work that took them to the eastern part of the state (Paul was an accountant). But they always had a connection to the land. “We did cattle for a long time,” Paul says. “We had a dairy farm, and then we did rotational grazing with beef cat-

tle. We did that for about 15 years. And then, my wife says, ‘Why don't we try to do maple? Then we only have to do it like three or four months of the year, and we don't have to do it year round.’” And so they took the plunge, but only so deep. They farm just under 10,000 trees for sap and concentrate it, then have Schweigart boil it for them. “Our kids thought it would be better, more secure, if we did the more rudimentary part,” Winnie explains, “and had the boiling done by someone else. Someone who wouldn’t forget about what they were doing…” “We enjoy Leader,” Paul says. “Our kids said if you are going to do it, you gotta get the best [equipment] you can. There’s other stuff out there, but they don’t give you the service. And George does give us very good service.” “And he tutored us too,” Winnie adds. “He was very good at teaching, very patient and deliberate, making sure that we understood…. I even ran the reverse osmosis the first year, with a lot of coaching… and we were successful.” It helps to have a guide. As Ellen Moon says, “It’s been a fun journey, it really has. We’re still doing it. I wish we were more complete, but you know what? Life is never complete. It’s always a process, so you just enjoy it.”

Wood-Fired Arch The Inferno wood fired arch features Leader’s forced draft system, installed using the special dome-shaped forced air grates, and properly sized air blowers with speed controls. Combining the forced draft with the special air tight front allows the blowers to be run at high levels, creating more turbulence in the fire box. That turbulence will increase the BTU output of your wood, and increase your fuel efficiency. Some secondary air is also injected through the front of the arch. Smaller arches have air coming in through the door casing, while on the larger arches the air comes in through the door itself. Reverse Flow System
Traditional to the US, these drop flue pans are completely welded with stainless steel fittings, and stainless steel draw-off valves. Unlike many other welded pans, Leader is committed to full-seam welding of all partitions. This is essential for preventing backmixing and dilution during boiling (both of which can cause a drop in the grade of the syrup). These pans are equipped with an automatic sap regulating system that allows the operator to reverse the flow of liquid quickly, easily, and without slowing down the evaporator's boil.
Features two floats, one for the flue pan and one for the syrup pan. This allows the ultimate in liquid level control: the flue pan can be run slightly shallower for performance and syrup quality, while the syrup pan can be run deeper for safety. All Patriot Evaporators have full-seam welded partitions, and are constructed by the industry’s finest craftsmen entirely from 20 ga. stainless steel for unsurpassed durability (we would never cut corners like others, and opt for lighter weight 22 ga.). When the syrup compartment begins to coat up with nitre and sugar sand builds up, you will have access to two valves and a single plug, all on the outside of the evaporator. These allow you to reverse the flow within the evaporator, so that syrup can be drawn on the opposite side of the syrup pan. With a Patriot Evaporator, there is no need for messy, time-consuming pan changes during peak boiling days. The Patriot Evaporator is also easily expandable with features like the Steam-Away (see page 30), or with reverse osmosis (page 22). Patriot pans come complete with all draw-off valves, float systems, syrup pan to flue pan connections, plugs, and a ceramic pan gasket.

Our Cross Flow pans offer you the most flexibility in cross-flow technology. The U-shaped compartment construction offers greater strength and flexibility. Full-seam welded end panels for all compartments limits unwanted mixing. Draw-off boxes are seamless, with bottom outlets, offering superior draining. The Revolution Evaporator brings "Right Sizing" to the maple industry. It has the exact same draw-off point all the time, so that barrels, filtering, and workspace can be set and not need to change. Excess steam creates a humid environment that can wreak havoc with sensitive electronics, while also creating an environment for bacteria and mold to thrive. Leader hoods can be mounted directly on top of pans for complete steam elimination, or suspended above a syrup pan. Leader hoods have a built-in channel drain for condensation, with outlets on both sides Hoods up to 6' feature full-access doors for complete access to interior of the flue pan or syrup pan. Hoods longer than 7 feet come standard with four doors to access the pan interior. All hoods are equipped with brackets for hanging over syrup pans or for lifting hoods for pan changes.

Sprague's Maple Farms from the air.
IF YOU ARE DRIVING ALONG Interstate 86 in western New York, or even nearby route 417, the two-lane road that runs through Portville, don’t expect to see billboards or road signs for Sprague’s Maple Farms, which is located less than a mile from the center of town. It is an unusual marketing posture for a major tourist attraction. Yet it works. The large restaurant with gift shop, adjoining evaporator room, sugarbush and sugar house is a wildly popular year-round destination that relies almost entirely on word of mouth. “You can go out and do all kinds of media,” says owner Randy Sprague, “but when you get a family in here of 8, 10, 12 people, if they have a great time, they're going to go and tell a hundred
people. And that just rolls out into a tremendous form of advertising.” It’s all about playing the long game. “I was, I think, 10, 12 years old,” Sprague says, “and throughout this area at the time almost every dairy farm in the area had a sugaring operation. And I was fortunate enough to grow up with kids my age and would visit their farms on the weekends, watch their fathers make syrup. And obviously making syrup is such a tradition that is handed down from family to family and generation to generation. So I was able to able to be part of that and I thought it looked like a lot of fun. “One day when I was probably 11 years old, I went and grabbed a couple of coffee cans and headed down my driveway and tapped my first taps. And
that's how Sprague’s Maple Farms got its start. I pretty much never looked back. It started out as a hobby.” Today, Sprague’s – overseen by Randy and his wife Toni – is not just a superb family restaurant open seven days a week. It also sits on 90 acres, with free nature trails and wagon rides, Easter egg hunts for 6-700 kids in the spring, visits with Santa Claus in winter, and sugar on snow in season. “The weeks after Columbus Day are basically our prime foliage times here for colors,” Sprague says. “And a lot of people come and enjoy that. We bring the tractor rides up... We do the maple cake donuts, the wine tasting, and people just love to travel through the woods when the colors are at their peak. And as we get into the fall, we

have the turkey farm... we get real busy around Thanksgiving time.” Sprague’s may be about maple first, but turkey is a close second. Randy leads us on a short drive to the other side of town where an 4,000-square-foot barn teems with turkey poults. They arrived just a few weeks before and are barely the size of our fists. By fall, they will be fattening up outdoors full time, a rippling white wave of future dinners free-ranging across several acres of grassland. None of the 2,000 turkeys are sold off property. All are served up at Sprague’s, which opened its doors 20 years ago, on February 21, 2001. “Part of what we've been able to do with this facility is it's a very family-oriented type of adventure for people. People can come here not just to the restaurant for a quick breakfast or something, but they can come out into the woods and see what we do here. Any time a year. It's a lot of

fun. Of course, there's a lot of activity around sugaring season, but the tradition of making syrup has originated as a family tradition from forever. It's been passed on from family to family, generation to generation, and still very much so is today. That's a big part of that. And we are able to put it in front of other groups that come in,
and families, especially those that can bring their kids. “And many of them have never seen a maple operation. They have no idea where syrup comes from or how it's processed. And that's been a real enjoyable part of what we do here: to explain that to so many people that have never witnessed or had a part of

maple sugar. It's a labor of love, without a doubt. And it's been an exciting part of what we do here.” Needless to say, COVID was a trial. Sprague’s had to shutter for three months. “It's been a real challenge,” Sprague says. “It's a very challenging business. Every day you are open, you're being judged by the public, how good you are, how nice your facility is. Every person that walks in is judge and jury to how you run your business. And that takes a lot of work to keep your operation where you'd like to present a very favorable impression to the public… And right now, because of the environment with the workforce, we're
pushed hard, but the people I have here are so dedicated, they give their heart and soul to helping us stay in operation right now.” Diversification also helps. Sprague’s was a Leader dealer for two decades before the restaurant complex ever came to be. It’s a relationship Randy values. Leader is “an outstanding company,” he says. “Their staff is what the company is all about. They've just got some amazing people there that will just go above and beyond what it takes to help out if somebody is in a pinch with who knows what… Their support teams are just superior to anything we've ever run into. They're just so good. I mean, they'll make trips
hours away to help somebody out. And they have saved the day basically, because we all know that when we're in the middle of a big sap run… if we have any issues with our equipment and it's down for any length of time, we just basically fold up our season until something's fixed, because there's no backup. Leader is amazing at coming down and helping you out of a spot… to get you back on the road again, to full production.” And if anyone knows what it means to dig in where needed to get the job done, it’s Sprague. “I spend as much time in the kitchen flipping pancakes,” he says, “as I do outside tapping trees. And that's a lot of hours in both directions. So I enjoy it all. Some people say they come to work every day. I haven't come to work a day in my life, cause I just truly enjoy what we do here. And, uh, I'm blessed with that.” He gets a bit choked up just talking about it. “It's just been a great,” he continues, “a great thing to enjoy with the people that we've worked with, and to enjoy the maple operation... I’m not saying every day is easy by any means, cause it certainly is not. But at the end of the day, we can really look back and see that we've accomplished something special.”
