A Taste of Southern Illinois by Paul Seibert It happens in cities and towns all across the nation. And, this month, it’s happening here for the first time. The First Annual Taste of Southern Illinois occurs on September 27 and 28 in beautiful Horner Park at Lebanon, Illinois.
evening will find The SOR filling the stage. A regional jazz and funk favorite, The SOR members include Kendall Hoffman, John Farrar, Darryl Mixon, and Jay Dover. Sounds begin at 5pm. Saturday’s lineup starts with Leslie Anne and the Big Muddy
According to the Longman Dictionary of Contemporary English, a “tasting” is “an event that is organized so that you can try different foods or drinks to see if you like them.” And so is the Taste of Southern Illinois. Some 20-25 regional restaurants will offer visitors a sampling of their favorite fare under the tents and pavilions of beautiful Horner Park at Lebanon, Illinois. Each restaurant will operate its own tented kitchen. Each visitor will choose their “tastes” from the broad array of menu items available at this extraordinary festival. Truly a celebration of the diverse foods available in this region, visitors will be treated to smells and flavors that only such a gathering can generate. Be sure to come hungry. Beverage tents will offer a wide selection of your favorite soft drinks, beers, wines and specialty drinks. A full array of Budweiser products from Gray Eagle Distributing will include Lime-ARitas and Strawber-Ritas. A selection of craft beers from local brewer Excel Bottling Company of Breese will offer a complement to the variety of available standards; plus Excel Bottling soft drinks – also locally produced. Present also will be Gray Eagle’s” Build-A-Bar”, a high-tech mobile beverage unit that folds out of a truck to create a bar unit, complete with widescreen TV and all the other amenities typically only found indoors. And, speaking of complements, wouldn’t music be perfect with such a gustatory event? But of course. And Taste of Southern Illinois will provide visitors with an excellent variety of musical side dishes. Friday
Blues Band. That sound can be heard beginning at 11:30am. Midday melodies will be provided by Slow Down Scarlet with a repertoire identified as Jambalaya Rock with smooth tones, spicy vocals, groovin’ bass, jammin’ drums, and just a hint of some gritty southern twang. Catch Scarlet beginning at 2pm. Evening entertainment will be the remarkable sounds of Rogers and Nienhuas. Internationally known, Scott Rogers and Terry Nienhaus are one of the region’s most popular music ensembles. Both former members of the Byrds, Rogers and Nienhaus are noted for their pristine harmonies and searing instrumentation. They are principal members of Younger Than Yesterday (a Byrds Tribute band) and 4&20 (Tribute band for Crosby Stills Nash and Young). A European tour is in the making so catch them here while you can. And opening for Rogers and Nienhaus will be the Voodoo Lounge Lizards. This versatile and energetic duo flies in from Dallas, Texas, just to be part of the TSI entertainment package. Bring your lawnchairs because you’re going to want to stay for the entire menu of dinner, drink and song. Voodoo Lounge Lizards will take the stage at 5pm. And all this transpires on the rolling meadows of beautiful Horner Park of Lebanon, Illinois. Horner Park is 58 acres of pristine green space just north of the Lebanon city limits. Amenities include picnic areas, pavilions, hiking trails, 5-acre fishing lake, children’s playground, tennis courts,

September 2013
Marching to the Beat of a Local Drummer by Brenton Ebersole Few Metro East drummers have shown such a diversified musical background and a seemingly universal sense of rhythm as Belleville native and 15 year St. Louis area musician, Zagk Gibbons. Zagk first started playing snare drum when he was 11, drum kit training started in high school with jazz band and he also participated in drum line at Belleville East High School. Zagk said it “was just like military for music training, just beating it into you.” He learned to keep more technical rhythms, so drumming became like second nature. “It’s intense like, oh, you messed up, now do pushups. So every time you mess up, you’re going to drop and give me 10 and that will really teach you to play correctly.”
After learning the rudimentary of drums, he went on to expand his art creatively in independent bands while still in high school. “I’ve played in bands ever since. I mean there’s no way I could list all the bands.” The two most notable in Belleville were Horshack and Emerson. In the present, Gibbons still continues his training with music, going to school now for audio engineering and production at Vatterott’s ‘EI’ (ex’treme Institute) by Nelly. Zagk said, “It’s awesome; I’m hoping to get out of there and be an engineer in a studio and have a day job in music that can support me doing all of this.” By pouring all of his time 6
Str8Up Magazine
and energy into music, he hopes to one day be fully supported by what he loves most and be able to further support the musical community that gave him his start. He’s been working a second part time job as well, running the sound board at shows in St Louis venues. Zagk said, “It started back in the old days with setting up shows at (local) VFW halls and you have to bring your own PA and kind of figure it out. Doing that for years and years just kind of translated into me figuring out what I was doing each day and now Photoisbyhelping Madisontie Thorn school up those loose ends.” Zagk said, “All of the things I do are so varied. I will go from working with a hip-hop artist to playing old country, to playing hard rock, to playing indie rock, to mixing a reggae band at a venue and trying to do R&B vocals at school or something like that; every step of my day is like a different music outlet.” Currently setting the tempo in a diverse group of bands, Zagk plays for The Leopard, a heavy rock group that blends in the eclecticism of indie rock. Recently, this allowed Zagk to add a major tally to his stage career. He explained, “We got to open for Story of the Year at a sold out show at The Pageant, a St. Louis lifetime dream come true, ya know? It’s a goal you set, you never see yourself actually achieving it, until one day it’s like ‘oh, I’ve got to go do this right now!’ It’s really humbling, I’ll tell you that.” The Leopard just released their second album this year, entitled ‘June’. Zagk Gibbons also performs in a self-titled solo act, performing live in accompaniment of mixed-loop material he also composed. Previously, he released an album called ‘Exact Zagk As Ax Act’ and currently is finalizing a new album which will be called ‘Nothing with the Letter V’. Explaining the new record, Zagk said, “it’s actually a concept album that chronicles a 7-8 month period of my life and the drastic changes I went through in that period of time. It means a lot to me and is a pretty personal album. Its production came so organically, I couldn’t stop from writing these songs and putting this out, it was my outlet and it kind of just formed itself to be a concept album rather than me intending on putting it out to become any specific thing.” Zagk is also drummer for the band Old Capital Square Dance Club. The band’s name was derived from the founding members’ hometown of Vandalia, the state capitol of Illinois from 1820 – 1837. Their sound could be described best as modern blend of classic rock and folk, building a unique sound that holds ties with their many influences including Neil Young and the older feel of The Rolling Stones. “Old Capital tends to play in the altcountry music scene of St. Louis, with Molly Simms, Rum Drum Ramblers and The Doc Ellis Band. We share members with a few of the other bands as well, so we wind up playing shows with them. Tim [piano] plays in Doc Ellis, and Drew [vocals, acoustic, harmonica, or harp] plays in the Barn Mice.”

“Since joining this band, I’ve been introduced more to the singer-songwriter side of music, [where] a song can be simplistically written but be full of amazing parts, [such as] lyrical content and chord progression. Just heartfelt music, just people that have their heart and mind in one thing, that’s what I can really respond to.” Being a band spawned from Southern Illinois, Zagk is confident that Old Capital would be well received in the Metro East. Zagk said, “People of the area want to hear Old Capital. When I go out to bars and I hear the kind of music that people are getting into, we’re fitting into that realm. The bands I hear at Oktoberfest and the Chili Cook Off, I feel like that’s us!” Old Capital released their first album about a year ago called ‘Long White Ride’, and already have most of the tracking done for the next one. “We’re getting ready to head to the mix down stage.” In reference to the band’s new project, Zagk explained that the local music fans will get their hand in its development. Zagk said, “We’re having a contest to name it, people can suggest a name and we’ll have a list that they can pick through for the album.” Then people can get their followers to Like their choice on the Facebook post and whoever gets the most Likes will be picked and Old Capital will use it to name the album. Zagk said, “You’ll be battling the members of the band and in fact we will be battling ourselves. It will be a fun little [on-going] rivalry, like who’s got the most Likes today?” One of the things Zagk is most passionate about is extending his love of music back to his native region, the Metro East. “Everybody’s gotten into eating local and shopping local and all that; I don’t know why that shouldn’t convey to music and arts as well.” Zagk Gibbons and Old Capital Square Dance Club will be performing at Pitchers Pub for a Straight Up Magazine Presents benefit concert on September 11th along with regional favorites EarthSol and Miss Molly
Simms. Explaining his vision for the show Zagk said “My biggest hope, and I’m using the word hope very strongly, is that we would inspire somebody, because that was always the biggest thing for me going and seeing local bands. I thought they were great and I was really inspired to go and write more music.” Zagk hopes to pass on his love of music by inspiring the people in the city he was born in to get out and support local music and maybe compose some of their own passions into art or musical expression. Old Capital Square Dance Club, EarthSol and Miss Molly Simms and the Bible Belt Sinners. Wednesday, September 11th. NineEleven – A Wounded Warrior Benefit Concert. Produced by Straight Up Magazine. Sponsored by Pitchers Pub, Wirtz Beverage Group, and Triple Jam Productions. Admission is free. Donations for the Wounded Warrior Project will be requested. All donation proceeds will go to the Wounded Warrior Project. Concert starts at 7pm.

Anticipating Autumn by Brenton Ebersole As this unusually cool summer comes to a close, the general concern may be that there isn’t any more time to grow your own food in the garden. Even if you have yet to attempt a fall garden, rest assured there is plenty of time to still grow a bumper crop of edibles in your home’s own yard. The average first frost in the Metro East is around the middle of October, yet in recent years we have gone into the first week of November before it dropped below freezing low enough to be classified as a killing frost. Many crops are cold tolerant or have a short life cycle prior to being edible, so they can survive even later in the year than these projections; closer to Thanksgiving. So if you desire the freshest possible vegetables, know that there are plenty of options possible still for this year. Vegetables in the brassica family have wonderful cold tolerance. These crops include kale, kohlrabi, broccoli, brussel sprouts and cabbage. Brussels, cabbage and broccoli are longer season crops with an average harvest time of 90-100 days after planting so they might not be able to be planted this late. But if there are any still in the garden, they will survive many frosts and continue producing even under the cover of early snows. Some brussel sprouts and kale at Alma Terra have shown their cold tolerance and survived since their planting in February of 2012. They are producing what appears to be new plants or sprouts on their secondyear growth that previously went to seed this May, making one plant produce the same as up to a dozen plants on a brussel or kale ‘tree’. All members of the brassica family are regarded highly for their amazing nutritional content and have been found to be highly effective in aiding with heart conditions, blood pressure issues and preventing free radicals in the blood. For example, kale has an astounding 684% the daily value of vitamin K, 206% vitamin A, 104% vitamin C as well as 10 minerals and is a great source of omega-3 and 6 fatty acids in a one cup serving that contains only 33 calories! Kohlrabi are a much shorter season crop, producing curious tuberous stems that are peeled and cooked like potatoes or shredded raw on a salad. They are usually of harvest size at about 40-50 days after seed germination, and even when the leaves die back, the stems will survive and stay fresh. The flavor is a unique taste, slightly spicy yet with the crispness of a carrot when raw. Lettuces and spinach benefit from the cold season in both sweeter 24

tasting foliage and more abundant growth from the less intense and short duration of daylight. The best greens of any species of either are generally grown in fall conditions. They tend to not develop their bitterness because of these conditions. Spinach is a wonderful source of vitamins A, K and C, with 11 minerals and even more amino acids and omegas than kale. Mustard greens, such as arugula and mesculin, are short season crops and have the added benefit of not hurrying to seed as they might in spring plantings. Their flavor will be milder and more palatable when grown in the fall as well, allowing more people to enjoy their addition to any dish. Radishes and turnips are also a shorter run to harvest, radishes developing rapidly and may even be harvested 3-4 weeks after planting. Both crops are closely related to mustard greens and have the familiar spice to their greens and are wonderful when shredded and cooked. The tubers are best cut fine or shredded on a salad or cooked similar to potatoes in any dish. Onions and garlic are members of the allium family and are traditionally recommended to be planted by seed or set in the month of September. They will grow vigorously until the cold kills back their foliage. The greens of both are all edible and are prepared similar to chives. They make for a sweet yet spicy addition to any salad, sandwich, soup or stir fry. Garlic can be started from seed, divided from starter bulbs from a garden center or, for a more frugal yet equally successful option, from cloves divided from organic bulbs from any market or grocery store. The cloves, when divided, are planted skinny side up about an inch under the soil - the wider section is where the roots develop. By the end of next spring, when the heat withers the greens, the cloves will have turned into 8-15 separate equallysized pieces within the newly formed bulb! Onions will follow the same life cycle and develop into a good sized bulb by the end of next spring. The flavor of either is wonderfully more intense than store-bought alliums, and they will keep perfectly in the soil until dug up, saving storage space in the kitchen and guaranteeing they will be the freshest possible source each time they are gathered. Whether you’re starting fresh or are replacing some fading warm season crops in a previously existing garden, there is plenty of time left to make the most of our region’s long cool season after summer has faded. Starting alliums this fall guarantees there will be a nice start to next spring’s garden and, in fact, will help hold onto a section of the garden from adventitious plants arrival. Also, they are a great forecast marker for when to plant next year. Once their greens have popped up, it’s generally safe to start greens and brassicas again! Good luck and bountiful harvests!

September 2013 Nicole Fry recently graduated with a Bachelor of Fine Arts degree in Drawing, with an emphasis in Contemporary Art History, from Southern Illinois University Edwardsville. Careen: A sculpture series on view at the Southern Illinois University Edwardsville Campus, near the Metcalf Theater and Science Building. Bicycles are woven into the fabric of campus life. They are a common sight at SIUE. The bicycle itself provides both a reliable source of transportation, as well as a fun recreational activity. The bike is an intricate form that completes a simple task – movement. When installed as sculptural elements, the bikes are elevated from domestic items into the realm of art objects, causing the viewer to pause and reflect on their own modes of transportation.

The Refinery Series: An exploration of more traditional fine arts materials and applications. The subject itself, the Wood River Refinery Complex, provides a multitude of striking, intricate visuals. The refinery is a complex and emotionally stirring topic in its surrounding community.
