HH&CO BACKSTAGE

Head behind the scenes of the Hartnett Holder & Co kitchen with HH&Co Backstage – the cookery school! Drawing on Angela and Luke’s fresh, confident approach to cooking and eating and their signature home-cooked style, HH&Co Backstage offers a unique, fun and informal way of learning how to cook delicious food. Suitable for everyone from complete beginners to budding masterchefs, our hands-on, relaxed style aims to improve your culinary skills and give you bags of inspiration to go home and get cooking. Your Backstage experience will let you in on the tricks of the trade and some of the secrets to Angela and Luke’s signature style, all in our brand new purpose-built cookery school kitchen. We are not ones to take ourselves too seriously, so the aim is to get stuck in and have fun whatever your ability but.... your home cooking will probably never be quite the same again!

MEAT

GET THE MOST FROM YOUR MEAT Master the art of getting the most from your meat! You will learn to work with the basic cuts of meat, using the best locally sourced organic meat from the HH&Co suppliers, including lamb, pork and beef. We will then guide you through the process for the perfect roast, a great one-pot family dish and also how to get the best from the cheaper cuts of meat, including braised beef and stuffed lambs shoulder.




GAME The perfect introduction to the art of game cookery! You will learn quick and easy ways of preparing a pheasant, partridge or venison, and incorporating them into some crowd pleasing game dishes. We will then show you the techniques to make the most of the trimmings, including game terrine and game sausages.


THE WHOLE HOG Nothing will be wasted and everything celebrated with this snout-to-tail course. You will learn to cook with the lesser-used cuts of pork meat as well as gaining an insight into the artisan craft of curing and smoking! We will show you the basics of pork butchery and how to turn your meat into mouth-watering pork dishes.




CHARCUTERIE We will take you through the basics of producing your own charcuterie! We are fortunate enough to have our own Smoke House, where our team have been experimenting with recipes over the years. The day will give you a flavour of how we smoke and preserve our dry cured ham and salamis and learn about the journey from pig to plate.


PARTIES

SEASONAL ENTERTAINING Relax and enjoy your parties as much as your guests! You will learn to prepare a 3 course seasonal lunch or dinner, perfect for wowing friends and family and ensuring you won’t spend the evening in the kitchen! Using the freshest, local and seasonal ingredients you will learn to prepare 3 courses from scratch, with canapÊs and wine pairings for each course. SUMMER

The focus will be on alfresco dining, where sharing is everything. Think simple salads and fruity puds! WINTER

Hunker down and get stuck in with hearty dishes and large roasts. Think rich meat mains, roasted vegetable sides and squidgy puddings.




COOKING WITH FIRE Ready, Set, Grill! We will get to grips with great BBQing, from your favourite cuts of meat to delicious veg dishes, marinades to baked puds. The focus will be on alfresco dining, where sharing is everything think big simple salads and fruity puds! You will also learn the basics of low and slow cooking on one of our favourite pieces of BBQ technology, the Big Green Egg.



CHRISTMAS MADE EASY! Let us help you make your next Christmas the easiest and most stress free yet! From the classic mince pies and canapÊs needed in the run up to the big day, to the main event itself – the Roast Turkey; we will show you how a bit of preparation and some careful planning can help you enjoy your day even more! You will also prepare a starter to accompany your Christmas Lunch, an alternative Christmas main, a vegetarian option and the best roast potatoes ever tasted!


CANAPES & WINE Learn to make some mouth-watering canapĂŠs that will get any party started and then enjoy the fruits of your labour whilst our resident Sommelier guides you through some of the finest and most interesting wines on the HH&Co wine list. This will include wine pairing and wine notes.

COCKTAILS & CANAPES Mix it and then match it, with our Cocktails and CanapĂŠs evening! You will learn the secrets to mixing up some of our renowned house concoctions and then match them to some mouth-watering nibbles!






CAKES & PUDS

CAKES & CUPPAS This course is essential for those who want to master the art of great baking; perfect to serve up for Afternoon Tea, as elevenses dunked in a cuppa and even as a midnight feast! You will be making everything from cookies to cakes and all the gooey chocolate brownies inbetween.


SWEET TOOTH Learn how to make the perfect macaroon, simple chocolate truffles, and biscotti. Perfect as an accompaniment to Afternoon Tea, after dinner, as pressies for your friends or just eaten all in one go, as soon as you have made them!




PASTRY & PUDS The perfect end to any meal – the dish that we are all working towards; pud! Learn the clever techniques of the HH&Co kitchen for whipping up the best Tart Tatin, Panacotta, pastry and a sumptuous Soufflé!


CREATING CLASSICS

PASTA & RISOTTO You will learn to make authentic Italian pasta and risotto like mama makes (if she’s Italian!). From the basics of fresh pasta preparation, to the key to knocking up great gnocchi and the secrets behind the best pasta sauces, as well as learning to make one of HH&Co’s signature agnolotti dishes.




FISH & SHELLFISH Being within casting distance of the sea at Hartnett Holder & Co, we have an abundance of local suppliers. Prepare the catch of the day using seasonal and fresh ingredients, as well as learn how to knock up ceviche and a whole salt baked fish. Shellfish is a real favourite but the preparation and flavours can often be tricky to master! We will be using the freshest seasonal shellfish to show you the basics of preparing crab, scallops and a show stopping lobster dish!


BEGINNERS BREAD You will never ‘knead’ to buy another sliced loaf of bread again! Learn how to make a basic bread recipe and how you can go on to adapt it as you get more advanced. You will master the recipes for sourdough, a classic pizza base and some Italian breads such as grissini and focaccia.




VEG

VEGETARIAN Spend a day getting in your five-a-day! Move away from the predictable risottos and learn to embrace all things bright and colourful with this Vegetarian course. You will learn to create dishes that everyone can tuck into using fresh seasonal vegetables including meatless mains and winter salads.


WINTER VEGETABLES Celebrate cool-season crops with our Winter Veg course. You will learn to make some incredibly satisfying dishes staring the best of the cold-weather vegetables. You will be preparing rustic vegetable stews, warming winter bakes and some great veg side dishes.




PRESERVING & PICKLING Preserve all the taste and pack in the flavour with our Preserving and Pickling day. We will make the most of what’s on offer in the garden to produce a seasonal preserve or jam, marmalade and a sweet chutney – perfect to accompany cheese! You will also learn to pickle veg so that you can enjoy them long after their harvest.


FEEL-GOOD FOOD Creating dishes that are good for the body and for the soul! Whether you are dealing with intolerances, wanting to kick-start a new nutritional plan or simply wanting to take care of yourself a bit more, this is a good place to start. You will learn how to cook good seasonal food from scratch, free of additives, refined sugars and wheat flour.




NIPPERS

LITTLE NIPPERS All Little Nippers will need to bring an adult with them. A great way to get the little nippers excited about cooking from scratch! They will learn how to get stuck in and make their own delicious and nutritious treats in a basic and approachable way.


GUEST CHEF POP UPS We have invited our friends to shed a little light on life in their kitchens! Spend some time in the HH&Co Backstage kitchen with us and a guest chef who will cook up some of their renowned dishes with you, which you will then get to enjoy for lunch!
