Sacred to the Hindus, the Ganges flows 2,500km from the Himalayas to the Bay of Bengal, taking in the sleepy hamlet of Raichak, a 90-minute drive from Kolkata, as it goes. Watch the passing boats from tranquil Ganga Kutir, which has an infinity pool, a bar and spa, and Premium rooms with Jacuzzi baths right on the banks of the River Ganges.

The Dylan Amsterdam has much else to recommend it – immaculate, glamorous rooms, a charming courtyard garden, a Michelin-starred restaurant – but its location on Keizersgracht, one of the city’s main canals, is one of its high points. The charm is palpable, the current buzz compelling: there can rarely have been a better time to visit Sri Lanka. Since the island’s 25-year civil war ended in 2009, Sri Lanka’s fortunes have been ever soaring. For travellers it’s a halcyon package of golden beaches, temples and tea estates, intriguing remnants of fabulously ancient kingdoms and jungle where wild elephant and leopard roam. What’s more, for the moment at least, it is very affordable and much of it remains wonderfully uncrowded. Just a little smaller than Ireland, the island is traditionally described as a teardrop or pearl off the southern tip of India. Of course the gem image is the most apposite in the bright new world of Sri Lanka today. The island is ringed by glorious sandy shores: step off the plane and you can head straight to the beach. The golden coast of Negombo is just north of the international airport, while Wadduwa is a short drive south. Part of the joy of travel here is that distances are not great. So from these western shores you can happily twist south to the Dutch colonial fort-city of Galle, lined with atmospheric, time-worn buildings.

For glorious Sri Lankan culture make for the interior and the historic heartland of the ‘Cultural Triangle’, which contains a mind-numbing array of ancient sites with impossible-looking names. Highlights include Anuradhapura and Polonnaruwa, respectively capitals from the 3rd century BC and the 11th century AD, and Sigiriya, a 1,500-year-old citadel built into a stupendous rock, its caverns adorned with frescoes of big-breasted women. To the east are areas reopened to visitors. Some of the island’s best surfing and whale watching is offered from the long beaches near this region’s harbour city of Trincomalee. There’s also a growing choice of outstanding accommodation. A number of sublimely stylish hotels have been brilliantly refurbished; particularly striking are those originally designed by Geoffrey Bawa, Sri Lanka’s renowned architect who died in 2003. There’s a great sense of innovation too, with several newly built hotels sensitively devised as luxury eco-retreats.

But water in spas is as in vogue as it ever was. The San Montano Resort & Spa Ischia, Italy, offers every type of water therapy imaginable, including treatments that harness the healing properties of the island’s 100 thermal springs. High on the rocks with panoramic views of the sea and Mount Vesuvius, the spa is set around fumaroles used in the treatment of aches and pains since the 16th century. The new H2O Wellness Panorama includes seven pools and a natural grotto, all in a garden scented with lemon trees, jasmine and lavender – and all overlooking the sea, which is only a shuttle ride away. The restaurant offers tailored menus for those on a detox and treatments range from reflexology to mud therapy; after lying in 10cm of 47°C volcanic mud for 20 minutes, you’ll look and feel brand new. This 19th-century grande dame sits among trees in the magnificent alpine region of Flims-Laax and offers winter skiing, summer hiking and a striking modern spa fed by spring water from Flims. Relax in the interconnected indoor and outdoor massage pools, have an outdoor earth sauna followed by a dip in an ice hole, and try a signature ritual incorporating a mud pack. Hot springs are abundant in Taiwan’s Yilan hills – rich in sodium bicarbonate, they are famous for treating skin problems and gastric complaints. All-suite spa sanctuary Hotel Royal Chiao Hsi is set around four of them, in an architecturally stunning indooroutdoor complex complete with children’s waterfall pool and an aromatic spring house scented with lavender, rose, lemongrass, rosemary, basil, chamomile, eucalyptus and cinnamon for private bathing. There’s also a stunning infinity pool overlooking the Lanyang Plains and a range of treatments including Taiwanese acupressure massages, stone therapy, Ayurveda facials, body polishes and wraps. Everything is soothing here, from the minimalist Japanese rooms with their views of the hills to the softly lit gardens with their herbal pools and wooden walkways. Hike to the Wufongqi Falls, then return for dinner in the View Western Restaurant with its floor-toceiling vistas.

Elemental stuff A new sister to The Emperor Beijing, The Emperor Qianmen is on Beijing’s pedestrianised Qianmen Street, a short walk from the Palace Museum and National Centre for the Performing Arts. PUSH THE BOAT OUT Tempting as it is to relax by the pool, several hotels are perfectly positioned for a nautical jaunt by lake or sea. All aboard, says Stephanie Plentl. The name says it all at Fragrant Nature Hotel & Resort Kollam, poised on serene Lake Mala in Kerala. Every room has a lake view and you can cruise, punt, speed and pedal-boat your way through its waters – or even try fishing them. The sunset backwater cruise from Kollam (known for its cashew nuts) to Alappuzha is sublime. Follow with dinner, an Ayurvedic spa treatment or a cultural show in the resort’s amphitheatre. Things are somewhat faster-paced at the Grand Hotel Majestic on Lake Maggiore in Italy, where, guests can set off from the private beach or jetty to canoe alongside Olympic gold medallist Benjamino Bonomi. Alternatively, a sedate sailboat trip to San Giovanni Island – where acclaimed conductor Toscanini spent many summers – offers a glorious perspective on the recently renovated Belle Epoque hotel, with its balcony-tiered façade, English gardens and stunning mountain backdrop. Greece is littered with archaeological and mythical marvels including the island of Delos, which guests at the Ostraco Suites in Mykonos can visit by rib or sailboat (with a gourmet picnic or lunch). ESSENTIAL INGREDIENTS – ITALY Piedmont in northern Italy is a famous foodie region, known for its truffles, fine Barolo wine and vitello tonnato (cold sliced veal covered in creamy, tunaflavoured sauce). At Palazzo Righini in the old quarter of Fossano, chef Flavio Ghigo delves into the detail of the region’s traditional cuisine. Try his award-winning Risotto mantecato al Fondo Bruno in the hotel’s vaulted restaurant or pick up tricks, tips and techniques in Ghigo's cooking workshop. Veneto may also be in the north but the region’s dishes are utterly distinct from its neighbour's. In the medieval village of Asolo, sisters Elena and Silvia De Checchi focus on local recipes in their demonstrations at the Albergo Al Sole, housed in a 16th-century villa. A typical cooking class might produce plates of eggplant parmigiana or polenta and finish with a deliciously decadent tiramisu – with all the recipes collated in a handy book for guests to reference at home. Tuscany has it all: olive groves, premier vineyards, an undulating emerald landscape, and the handsome Villa Mangiacane. Guests can eat in the herb and rose garden in summer, taste estate wine and olive oil and absorb Tuscan culture through cooking classes and restaurant dishes: think spaghettoni with tomatoes and basil plucked from the garden or a Bistecca alla Fiorentina T-bone steak. On the Tuscan coast, every room at Hotel Byron has stunning views of the Tyrrhenian Sea or Apuan Alps and the restaurant, La Magnolia, comes with a Michelin star. Chef Andrea Mattei is only too happy to reveal the

secrets of his locally inspired dishes such as Lamb di Zeri or Shrimps agnoletti. After feasting on the fruits of your labour, borrow a hotel bike and explore the pretty avenues of Forte dei Marmi. In contrast to Tuscany, understated Umbria has an untamed beauty. Perched on a hilltop in the historic centre of Perugia, Hotel Brufani Palace – new to SLH and the only five-star hotel in the region – has plenty of old-world charm. Its restaurant, The Collins, showcases famously rustic Umbrian flavours in dishes such as suckling pig glazed with figs. Enjoy a post-dinner digestif in the cosy bar or sit outside on the charming piazza, gazing at the city below. Seafood, creamy mozzarella and orecchiette pasta characterise the cooking of Puglia – the region in Italy’s ‘heel’. The impressive limestone edifice of Borgobianco Resort & Spa has views across the pool to the Adriatic Sea and the hotel restaurant prides itself on using ingredients that have travelled ‘0km’: it makes its own dairy products and olive oil, and Modesto, the farmer, selects the day’s best fruit and vegetables for the table and cooking school. TALES OF THE TERROIR – FRANCE For white wine enthusiasts, the Loire Valley offers an impressive roll call of historic wine-producing villages – Sancerre, Vouvray and Pouilly Fumé among them – and plenty of stunning properties to taste the wines in. One incentive to stay at Château d’Artigny (south of Tours) is its magnificent cellar of 20,000 bottles. The splendid 18th -century castle (built by decadent French perfumer François Coty) is now a hotel brimming with attributes: sumptuous interiors, a new spa and Origan – its impeccable French restaurant.

To the east in Burgundy, red wine buffs are spoilt for choice and Château de Gilly can help to focus your palate on the very finest. Situated in the Grand Cru region, this former medieval residence of Cistercian monks has a rib-vaulted cellar, now the restaurant, linked to the hotel by a tunnel. Though tastings are not offered at the château itself, the hotel can organise a tour of a prestigious Côte de Nuits winery and a taste of its Grand Cru Pinot Noir, followed by a tutored hunt for Burgundy truffles with Elfe the dog and her owner.

For tastings in a private troglodytic cellar, wine connoisseurs should venture to Domaine de Beauvois overlooking Briffaut Lake – the cellar is hewn out of rock and some vintages are more than 100 years old. The manor itself has interiors decorated in 16th- and 17th-century style and is set in 350 acres of glorious parkland, which can be viewed in its entirety from a hot air balloon.

Further south among the rolling hills of romantic Beaujolais, Château de Bagnols is a honey-coloured 13th-century castle with a spectacular moat and drawbridge. Featuring 22 spacious apartments and an abundance of historic objets d’art, this new SLH member is perfectly positioned for exploring the area where the elite Gamay grape wines are produced. The hotel can facilitate a tour to the glorious Château La Chaize in the Brouilly appellation, where you can taste wines in a 108m cellar – the longest in Beaujolais.

The Loire Valley is also studded with medieval gems. Le Prieuré is a former 12th-century Benedictine priory that evolved over time to become a stately lodge and collection of parkland residences. Situated on the banks of the River Loire in Saumur it, too, boasts a troglodyte cellar, where a sommelier introduces guests to three notable local wines in a 40-minute tasting session. Beyond wines, the locale is famous for its river fish, mushrooms from the nearby Tufa caves and ‘Fouée’, a round puffy bread filled with paté, black pudding or cheese.

In the middle of Château Smith Haut Lafitte vineyards near Bordeaux, sits Les Sources de Caudalie, the perfect wine country escape boasting over 15,000 wine bottles in its cellar. Nestled among its own historic vineyards and lake-gardens, much here is dedicated to the “terroir” where you will also find two restaurants, a superb spa offering grape-based therapies, a cooking school and wine tasting courses.

ART & SOUL A hotel art collection can be a feast for the eyes as well as endless food for thought. Jane Anderson flags up four SLH hotels that double as galleries. Guests at Albergo Pietrasanta in Tuscany, Italy, are in for a surprise: the hotel might be housed in the converted villa and stables of a 17th-century palace, but the interiors boast a superb collection of modern art. All 19 rooms and nine suites have art on the walls, from the abstract paintings of Carla Accardi to artifacts by conceptual artist Alighiero Boetti, who used worthless materials to challenge the commercialism of Pop Art. The town itself is known as the ‘little Athens’ of the Versilia region thanks to the large numbers of artists who have put down roots there. Visitors can meander through the medieval square and find the spirit of Michelangelo alive and well in the workshops and galleries of local artisans, many of them working in marble and bronze.

Petra Hotel & Suites, Patmos

Art runs through the DNA of Petra Hotel & Suites on the Greek island of Patmos, where Saint John is believed to have written the Apocalypse. Even the room keys were created by Greek sculptor Kyriakos Rokos. Guests can admire the work of Rokos and his wife, the painter and engraver Roubina Sarelakou, in the Petra Suite, as well as paintings by their son, Stefanos Rokos, in one of the Honeymoon Suites. ith artists and designers of genius such as Capability Brown and Vita Sackville-West behind them, the gardens of England are famous all over the world. And they’re not exclusive to the milder climes of the south. At The Raithwaite Estate, a redeveloped 19th-century estate on the North Yorkshire coast, guests can picnic among an eclectic mix of seasonal and evergreen trees and shrubs, or go on a foraging mission through the 100 acres of park and woodland. Frogs, newts and toads abound in a waterfall-fed lake and stream that runs through the estate, while Castle Howard, which stood in for Brideshead in the popular 1980s TV series Brideshead Revisited, is nearby. Tylney Hall is another Victorian wonder, this time in the southern English county of Hampshire, with huge windows overlooking avenues lined with chestnuts, limes and giant sequoias. The 66 acres of gardens, parkland and woodland take in everything from a formal Italian Garden laid out in 1900 by Seldon Wornum to Water Gardens by Gertrude Jekyll and greenhouses designed by Robert Weir Schultz in the early 20th-century Arts and Crafts style. Across the English Channel, 18th-century Château La Chenevière, near the D-Day Landing Beaches in Normandy, has a distinctly English feel. Most rooms have a view over the two hectares of gardens and parkland, which include some 40 superb trees, from a Copper Tree and a Cedar of Lebanon to a Ginkgo Biloba. Croquet is a popular pastime here; visit the gardens of Claude Monet in Giverny on your way out. Heading south to the Loire Valley, Le Choiseul is a collection of 16th- and 18th-century residences in terraced Italianate gardens, tucked between the cliffs and river at the foot of Amboise Castle. Admire the original Italian sculptures and explore the mysterious ‘Greniers de César’, a troglodyte site in the cliffs. The International Garden Festival at the Domaine de Chaumont-sur-Loire (April to October) is also on your doorstep. Few things are more evocative of summer than the scents of Provence. A short hop south in the Roman city of Arles, Hôtel Jules César is a 17th-century former stone convent with cloistered galleries and tranquil views over the lavender gardens, which surround an outdoor heated swimming pool. Visit Les Alyscamps, the poplar-lined Roman cemetery famously painted by Van Gogh and Gauguin, then drive to the Camargue wetlands, a magical water world of grasses, rushes and sea lavender, wild bulls, white horses and flamingos. A few degrees to the south, but way out west in the Atlantic Ocean, is the lush tropical island of Madeira and one of the most spectacular gardens in the entire SLH portfolio. DESIGN Hotel de Orangerie, Bruges

15th century From the 12th to the 15th century, the Belgian city of Bruges was one of the most prosperous trading centres in the world, with thriving markets in cloth, wool, grain, wine and spices. When the Zwin channel, which linked Bruges to the North Sea, silted over, however, the city’s fortunes declined – until the 20th century, when its medieval heritage put the ‘Venice of the North’ on the map as a tourist destination. Visit the 13th-century Belfry and outstanding Groeninge Museum from Hotel de Orangerie: the former 15thcentury convent is right on the Den Dyver Canal, and the rooms come with the original wood panelling and ancient fireplaces, old paintings and antiques.

17th century Milan isn’t perhaps as readily associated with historic architecture and art as Venice, Florence or Rome, but the economic and design capital of Italy has a wealth of ancient treasures, from the monumental Cathedral, whose architecture spans an impressive six centuries, to the Pinacoteca di Brera, which celebrates art from much the same period. Origan restaurant boasts wood panelling, gold-leaf reliefs and fluted columns with Corinthian capitals, while the vaulted cellars harbour a superb new spa and an extensive wine collection. For 18thcentury architecture, head to Château La Chenevière, a gracious manor house in Port-en-Bessin, Normandy; period details such as half-tester beds and marble fireplaces enhance the warm, modern ambience. 16th century When Christopher Columbus first sailed across the Atlantic in 1492, one of his first ports of call was the Caribbean island of Hispaniola; Santo Domingo, now the capital of the Dominican Republic, lays claim to the first cathedral, hospital, customs house and university in the New World. The three 16th-century houses that make up the newly opened Casas del XVI include Casa de los Mapas, adorned with vintage maps from the colony’s early days, and Casa de los Barcos, originally owned by one Pilot Alonso Perez Roldan, who travelled with Columbus; depictions of galleons from the voyages were discovered beneath the plaster and paint during the conservation process.

Château d’Artigny, Loire

19th century – palatial The Grand Hotel in Eastbourne, UK, dates from 1875, when the upper classes decamped to the seaside for months at a time, sometimes taking their entire retinues with them. Recently renovated and now boasting an exclusive spa, ‘The White Palace’ has an impressive 400-foot frontage overlooking the Channel and cliffs of Beachy Head. Guests have been equally grand, including Winston Churchill, Charlie Chaplin and Claude Debussy, who completed ‘La Mer’ symphony in Suite 200 in 1905.

The Leopold Hotel, Sheffield

19th century – educational The Leopold Hotel overlooking Sheffield’s fashionable Leopold Square is another legacy of Victorian England. Built as a boys’ grammar school, it still has the original high arched ceilings and large windows, creating a wonderful sense of light and space. Black-and-white photographs of former pupils add to the historic charm, while contemporary interiors in lush red and green and a terrace place the hotel firmly in the present.

20th century – colonial Overlooking the Strait of Malacca, the Malaysian city of Malacca was once the centre of the spice trade, frequented by Arab, Tamil and Chinese merchants and ruled in turn by the Portuguese, Dutch and British. Narrow alleyways, Dutch colonial buildings and old shophouses selling genuine relics and antiques are all part of its legacy, as is The Majestic Malacca. Housed in a serene 1920s riverfront mansion and a new build that mirrors the original Straits-neoclassical architecture, it combines original porcelain flooring and antiques with spa and restaurant menus that draw on the local Peranakan (Chinese/Malay) culture. 20th century – ART DECO Art Deco is a popular architectural style and it’s hard not to like the kind of grand façade, soaring windows, geometric lines, wrought-iron balconies and period lettering found at The Excelsior Hotel in Thessaloniki, Greece. Inside, a marble staircase sweeps up to chic contemporary rooms and cocktails on the rooftop; Aristotelous Square and several empires’ worth of architectural and archaeological treasures are nearby.

The glamour of the 1930s is even more palpable at the Juana’s sister property, Hôtel BellesRives, also in Juan-les-Pins. The former home of Scott Fitzgerald and his wife, Zelda, this bold Art Deco mansion is replete with 1930s detailing, from period furniture in the bedrooms to frescoes in the seafront restaurant, La Passagère, the hotel lobby and the fabulous piano bar, the latter depicting a map of the 1930s Riviera, from the Cap d’Antibes to Sainte-Maxime. The hotel also has its own private beach and jetty; the Château Grimaldi in Antibes, where Picasso lived and worked in 1946, is a boat ride away.

The Majestic Malacca, Malacca The Excelsior Hotel, Thessaloniki

Built a decade later, Hôtel Juana in Juanles-Pins is another Art Deco gem with chic contemporary interiors, overlooking a stunning pool on the French Riviera. Period features include a staircase with intricate wrought-iron detailing, wood-framed glass doors, and a myriad of tiered chandeliers, while the new Bistrot Terrasse offers live jazz among the palm trees.

19th century – industrial On the other side of the Pond, the Industrial Age was also full steam ahead: most of the 11 historic houses that make up The Inn At Montchanin Village & Spa outside Wilmington in Delaware were once cottages inhabited by workers at the DuPont (gun) powder mills, while the hotel’s highly reputed Krazy Kats Restaurant was originally a blacksmith’s shop. Things are somewhat quieter in the Brandywine Valley today, with a focus on gentle strolls past beautifully tended gardens, and visits to wineries and art galleries.

How long have you been a mystery inspector for SLH and how many SLH hotels have you stayed at? Fourteen years and about 60 hotels. Why did you become a hotel inspector? I retired from an airline after 30 years and enjoyed travelling worldwide. What makes you a suitable candidate? I was involved in hotel assessment at the airline. How many SLH hotels do you stay at per year? As required, but usually between three and six. Which SLH hotel did you stay at most recently? The Grand Hotel in Eastbourne, UK. Which has been your overall favourite SLH hotel? Baros Maldives: great facilities, superb wining and dining, and excellent service, all in paradise.

What’s the most exciting country you’ve visited through SLH? Kenya – the game safari from Larsens Camp in Samburu was superb. At which SLH hotel did you have your best meal? Hôtel Belles-Rives in Juan-les-Pins, France. Excellent quality, superb preparation and service and an ‘exploding bomb’ for desert!

What do you look for in a hotel? Luxury at all levels – location, accommodation, cuisine and service.

Which SLH hotel had the best view? San Antonio on Santorini, Greece – looking over azure sea, the extinct volcano and incredible sunsets.

What’s the most exciting city you’ve visited through SLH? Cape Town and its environs while staying in the heart of the Cape Winelands at the Grande Roche Hotel.

Where were you most impressed by the staff? At J.K. Place Capri in Italy. Absolutely nothing was too much trouble. I even got a superb birthday cake as a surprise!
