Spectacular settings There are few more otherworldly places than the moonscapes of Cappadocia in Turkey, with their volcanic rock cones, cave churches and underground cities. Blissful beaches Those unfamiliar with Japan might be surprised by the white-powder beaches of Miyakojima, a Pacific island midway between Okinawa and Taiwan. In the accessible northwest corner are the beautiful Mayan citadel of Copán, the Pico Bonito National Park and the Caribbean resorts. Offshore, Roatán continues to be popular and La Ceiba is the country’s official party town, but Pico Bonito, with The Lodge at Pico Bonito at its heart, is the place to see tropical flora and fauna, especially birds. Avid twitchers can set off on hikes, or spend the day in the lodge’s luxuriant gardens, watching hummingbirds, flycatchers, tanagers and toucans as well as the Montezuma Oropendola, which has a call even more remarkable than its name.
NICARAGUA Nicaragua’s Emerald Coast – at the southern end of its Pacific seaboard – is the place to be right now for both holidaymakers and property-savvy expats. Close to historically rich Granada and Lake Nicaragua, the bays and coves here are idyllic, with densely forested slopes still intact above many of the best beaches. The accent here is on R & R, and luxury is the norm, but Mukul Beach, Golf & Spa on Playa Manzanillo is the most sophisticated resort. Not that the fine dining and cocktails need detract from the wilderness experience: monkeys and exotic birds such as aracari are seen daily, while offshore are protected habitats for rare olive ridley and leatherback sea turtles.
BELIZE Belize is best known for its stunning reef and offshore cayes, but the mainland is equally absorbing, rich in history and biodiversity. Sandy beaches run the length of the country and towns like Dangriga and Hopkins preserve the unique Garifuna culture. Further inland the vegetation changes from swamp and fruit plantations to wild, rugged mountain country, broken only by Mayan sites, wildlife reserves and secluded luxury properties such as the Ka’ana Boutique Resort & Spa in San Ignacio, one of Belize’s most established adventure travel bases. Combine hiking, biking, birding, canoeing and kayaking with a trip to the impressive Caracol Mayan site.
GUATEMALA With its famous craft market at Chichicastenango, beguiling Lake Atitlán and active volcanoes, Guatemala is exhilarating. Antigua, the former capital and a Unesco-listed colonial city, is the ideal base from which to explore the highlands as well as the country’s history. Sophisticated art galleries, great coffee on the Plaza Mayor, ever-improving wine and gastronomy and a chocolate museum provide urban diversions, while active travellers can head up the Agua and Fuego volcanoes that loom over the city. A suitably atmospheric and luxurious home from home is the El Convento Boutique Hotel, on a quiet cobblestone street across from the Capuchin Convent.
COSTA RICA Small but dramatically formed, Costa Rica crams a lot into its mountainous topography, including towering volcanoes, Pacific and Caribbean seaboards, rainforests, ranches and coffee estates, along with teeming, easy-to-spot wildlife. La Fortuna is the base for visiting Arenal, an active stratovolcano and exploring waterfalls, lakes, lava flows and wildlife, on foot or on mountain bike. Wind down with a dip in a thermal spring and stay at the elegant Nayara Hotel, Spa & Gardens, which has a sublime spa, a sushi restaurant and a tapas bar. The popular Monteverde cloudforest, makes a great side trip. At box-fresh the Quin, which combines art by Patrick Graham, artisanal seafood with intuitive high-tech fittings and a fleet of concierge ‘attachés’, the Penthouse is a breathtaking triplex overlooking Central Park with a private balcony, professional-grade kitchen and dining room for 12. There are more knockout views of Central Park – and Times Square to boot – at the Art Deco-inspired WestHouse Hotel New York in Midtown Manhattan, where the 1,500ft Presidential Suite has a drawing room, entertainment ‘area' and terrace. Across the Atlantic in London, Dukes London combines a glamorous cocktail bar and top-notch restaurant with a veritable platter of luxury suites. The jewel in the crown is The Duke of Clarence Penthouse Suite, featuring a collection of porcelain and china by Thomas Goode of Mayfair. It has its own private terrace and overlooks Clarence House and Green Park. Rome is probably the European city most readily associated with sensational suites and the Penthouse at The Inn and The View at the Spanish Steps does not disappoint. The prime offering at this 17thcentury aristocrat's home is a four-bedroom, butler-serviced recently refurbished suite swathed in rich fabrics in a palette of deep pink, burnt orange and chocolate brown; balcony views over the Piazza di Spagna are equally extravagant.
Still on the continent, the 160m2 Presidential Suite at Hôtel de Vendôme in Paris has a private terrace and sequestered living spaces that include a dining room for 10. Chandeliers, Art Deco elements, original art and Second Empire furniture smack of elegant breeding throughout the hotel, while an enviable address on Place Vendôme, a beautiful Dior-grey and lilac restaurant presided over by Josselin Marie and a cosily chic bar complete the picture. In Madrid, Hotel De las Letras is one of the city’s new breed of hotels, with the elegantly high ceilings of a 1917 Belle Epoque building on Gran Via, modish interiors, a funky new restaurant, Al Trapo, and a buzzing rooftop bar, Ático de Letras. The top suite is the two-floor Suite Duplex, which has two terraces, one with a Jacuzzi.
Super suites are just as spectacular further east. The Raj Palace in Jaipur, India is an 18th-century Maharaja's palace conversion that combines the highly decorative antiques, rugs and vintage fabrics of its previous incarnation with a a bijou cinema, spa, three restaurants and a pool. The planet-like, four-bedroom Presidential Suite sprawls over four floors and 16,0000ft2. In Thailand, the ultra-contemporary Hansar Bangkok occupies a chrome-and-glass tower with two restaurants, a rooftop function space, an infinity-edge pool and a spa. If that’s not super enough, book the Loft Suite, which comes with floor-to-ceiling bookcases filled with Thai-focused books, a dining area and a vast entertainment zone with stunning views.
Not surprisingly, the hotels of hip ‘new’ Istanbul are in on the act. Hôtel Les Ottomans is an aristocratic mansion on the Bosphorus with a vinotherapy spa and 10 gloriously maximalist suites, all gold leaf, Iznik tiling and velvet. The top suite is celebrity-favourite the Hurrem Sultan, which comes with a kitchen, study, dining room, living room and marbled Jacuzzi bathroom, an outdoor pool and a panoramic view over the Bosphorus. Similarly bridging the worlds of west and east, but with a striking contemporary aesthetic, new boutique hotel The Norman Tel Aviv is housed in two painstakingly restored 1920s heritage mansions with 30 rooms and 20 suites, and has a gorgeous rooftop, a brasserie, a Japanese tapas restaurant and an infinity pool. The vast 200m2 Penthouse Duplex Suite hogs two floors, its living room opening onto a 40m2 al fresco terrace with hot tub.

With 400km of cycle paths and allegedly more bikes than residents, Amsterdam regularly tops lists of the world’s most cycle-friendly cities. Book interconnecting Great Rooms at Canal House, overlooking the Keizersgracht canal, and ask the hotel to organise hire of dapper Dutch bikes, tandems and children’s cycles. Then explore the city’s narrow 17th-century streets or venture to Vondelpark for a picnic. The ‘Boris’ bike-hire scheme and car-free routes have helped to make London more cyclist-friendly. At Mayfair hotel Dukes London, families can book a Mini Dukes and Duchesses break and get the second room free of charge, or a Bespoke Concierge Family package, in which every detail is tailored to their specific needs. The old days of hotel dining – when everyone sat down together at six o’clock precisely and ate a three-course meal on starched linen while a white-gloved waiter danced attendance – are gone. Today, you can increasingly dine when you want, where you want and in the company you choose. Le Grand Bellevue in Gstaad, Switzerland, illustrates this beautifully. Michelinstarred executive chef Urs Gschwend has introduced relaxed brasserie food, covering everything from kids’ spaghetti carbonara to bouillabaisse marseillaise. Private dining venues include a vaulted wine cellar for 14, rustic hut Le Petit Chalet, which serves Swiss-inspired fondue to parties of up to 16 and a room at the Gstaad Yacht Club. Another magical ‘hut’ – Mooslehenalm Alpine Lodge – is available on an exclusiveuse basis to guests at Grossarler Hof in Austria. Up in the mountains with epic views over the Grossarl Valley, the lodge offers a wide menu of Austrian specialities – homemade bread with fresh mountain butter and cheese, traditional Brettljause (a wooden platter of meats and garnishes), hot bilberry dumplings – all overseen by an award-winning chef and served in a pinepanelled dining room or ye-olde kitchen with copper stove. At Le M de Megève, also in the Alps, guests are spoiled for choice after a hard day’s skiing. Choose the Dining Room, where Chef Stéphane Thoreton cooks exquisite French cuisine or, for something
simpler, enjoy a bite in the Bistro. Try a cocktail in the bar with a beautiful selection of finger food specifically paired with your chosen tipple or eat in front of the cheese cellar, enjoying your choice of cheese and sausage meats with a beautiful red wine.
Grande Roche Hotel in the Cape Winelands, meanwhile, has a private dining room for 16, showcasing the talents of Michelin-trained chef Roland Gorgosilich, who interprets French and Austrian cuisine using the freshest South African produce.
Hotel Die Hirschgasse Heidelberg in Germany offers guests a veritable food marathon, culminating in the intimate, Michelin-starred, 25-seat Le Gourmet. Overseen by chef Mario Sauer, the Hirschgasse Gourmet Tour is available to small groups of four to six people and begins in the kitchen with a Champagne aperitif and chef’s starter, followed by a second course and wine tasting in the cellar. Further courses take place in a Salon Suite, an Oriental tent, the historic Mensurstube – which seats just six people – and finally Le Gourmet.
There are more culinary treats on the Greek island of Rhodes, where Rodos Park Suites & Spa toasts the sunset with Greek wines, creative cocktails and finger foods in its Galaxy Roof Lounge with views to the medieval city. Private dinners for two to 12 are also offered here, or head to Il Parco restaurant for Greek-Mediterranean fusion cuisine from chef Michalis Rappos.
Foodies are equally spoilt further south. At Fellah Hotel outside Marrakech, chef Lilian Hirigoyen-Montreuil creates international cuisine with a Moroccan twist, applying modern techniques to Moroccan dishes or using local produce from the on-site kitchen gardens in traditional Western recipes. Dining venues are many and varied: guests can take over a villa for the night (they sleep up to ten and seat up to 120), opt for a private dinner on the terrace of their room, picnic anywhere in the 14-acre grounds, or take over Touco’s Place, where husbandand-wife team Touco and Bahija cater for parties of 10 to 15 people.
In Thessaloniki, meanwhile, Hotel Nikopolis has created a nook for 12 diners in its Da Vinci Italian restaurant, which fuses Italian, Greek, and wider Mediterranean influences in light seafood plates, pastas and substantial meat dishes. And at Sivory Punta Cana Boutique Hotel in the Dominican Republic, you can cut loose from the three gourmet restaurants – including Francophile Gourmond which combines Caribbean ingredients with Mediterranean techniques – and opt for a fire-lit table for two on the beach, a Thai supper in the garden, or a five-course dinner with wine pairing in the resort’s astonishing 8,000 bottle-strong wine cellar.

Named L’AND Vineyards Resort to signal its connection to the land ‘and something more’, the low-rise angular building outside the whitewashed town of Montemor-oNovo is part of a whole that also takes in 130 apartments and villas, clustered over 66 hectares. The overall effect is one of quiet drama. Outside, the white walls stand in stark contrast to emerald-green lawns and a sharp, rectangular pool, while wide, rectangular windows let light flood in over understated interiors featuring eucalyptus panelling, slate flooring, bespoke creations and vintage pieces. At night, the magical Alentejan sky is revealed both through retractable roofs in the hotel’s 10 Sky Suites, and above the fire-lit rooftop patio – the ideal place to sip L’AND wines after visiting the UNESCO World Heritage site of Évora. Spirited Away Tasting the local elixir is part of the fun of travel and it rarely tastes better than back on home ground
Belgium is world-famous for its beers but its national spirit is genever, a 35-38% ABV, juniper-flavoured, gin-like spirit made from alcohol and malt wine (grain mash). Popular in the USA from the 1800s until Prohibition, it is historically bottled in handcrafted clay jugs that are still being recovered from shipwrecks. Try it on the terrace of Die Swaene, overlooking the Groenerei Canal in Bruges, or in the 18th-century lounge, a former Guild of Tailors meeting room with an elaborate painted ceiling. Despite Spain being best known for its tapas and sangria, there is another very popular drink among locals: Tinto de Verano (a summer red wine). This is a cold wine, similar to sangria and usually made with table red wine and gaseosa (fizz!). It comes best served with a lemon slice and over ice – the perfect summer refreshment. Enjoy it on a terrace of one of the many bars in central Madrid, easily walkable from Urso Hotel & Spa, a modernist’s dream set in an imposing neo-classical building in the centre of the city. Anyone who has holidayed in Greece or Cyprus will be familiar with ouzo, an anise-flavoured, 37.5-42.5% ABV aperitif originally created by 14th century monks on Mount Athos, which gained popularity in the 19th and 20th centuries, particularly when absinthe fell from grace. Traditionally mixed with water and ice it is served in a small glass with meze of fried fish, fries, olives and feta cheese. Try it by one of the pools at Rimondi Boutique Hotel, two historic buildings surrounded by the Renaissance Venetian architecture of Rethymnon Old Town on Crete. Or opt for a glass of tsikoudia (Cretan raki), produced from the must-residue of the wine press. Port is typically a sweet red dessert wine fortified with aguardente. Made from grapes grown in Portugal’s Douro Valley, it got its name in the 17th century from the seafront city that exported it. Try it after an alfresco dinner at the ornate Infante Sagres in Porto, or compare and contrast with the local vinho verde during a gourmet picnic dinner in the vineyard at the glamorous Carmo’s Boutique Hotel, 40 minutes’ drive from Porto in Ponte de Lima. The Italian region of Tuscany is better known for its Chianti wines, but in Pisa, the beverage du jour is Liquore Pisa, flavoured with crushed hazelnut, almond and pistachio. Created in the 1990s, the beautifully packaged, cocktail-friendly liqueur is now available in the USA. Try it before or after dinner on the terrace at Relais dell’Orologio, a 14th-century fortified tower house hotel steps from Piazza dei Miracoli. In Bologna, meanwhile, the excellent restaurant at I Portici Hotel di Bologna is the ideal place to taste spumanti (sparkling wines) from Franciacorta and Trento; ask sommelier Nicola Cuccato to advise. Europe doesn’t have the monopoly on intoxicating preparations, of course; take the Japanese spirits of saké, made from fermented rice, and shochu, a vodkalike 25% ABV distilled spirit used in cocktails. Try it in the Shochu bar at L’Hotel du Lac in Nagahama City, an airy villa hotel with an outdoor pool on Lake Biwa; leading Japanese sommelier Shinya Tasaki also creates the original French cuisine in the restaurant.

wildlife The ultimate wildlife destination, of course, is the Galápagos, an Ecuadorian archipelago of volcanic islands in the Pacific, whose endemic wildlife, famously studied by Charles Darwin during the voyage of HMS Beagle, inspired the naturalist’s theory of evolution by natural selection. Visiting the islands is like opening an ancient tome of illustrations exotic and strange: seabirds with sky-blue feet, 400kg tortoises, iguanas that swim in the sea, albatrosses that live in the tropics. These and other curiosities are accessible from Pikaia Lodge, a carbon-neutral, alternative energy-efficient hotel with its own giant tortoise reserve on central Santa Cruz Island. The lodge is set on an extinct volcanic crater, with rooms and villas overlooking mountains, forests, volcanoes and the ocean; after an outing on the lodge’s yacht in search of sea lions, lava lizards and Darwin’s finches, guests can lounge on a day bed by the infinity pool, or relax in the Zen spa and whirlpool.

WHALE WATCH As wildlife encounters go, witnessing a whale blow and breach must be among the most thrilling. At the heart of the spa is a temazcal (Mesoamerican sweat lodge) offering aromatherapy baths scented with rosemary, lemon, noni, orange and basil, and detox steams with coffee and cacao. Opportunities for adventure include surfing, horse riding, zip wiring through the forest canopy and birdwatching in Bahia de las Aguilas. What’s the most exciting thing you’ve done on a trip?
And long-haul?
What is your earliest holiday memory? Waking up in the mountains in Austria.
What is your favourite city? Buenos Aires. I went there some years ago after crossing the Rio de la Plata from Uruguay. It is so vibrant and alive – imposing with its wide boulevards and colonial architecture and very atmospheric in some of the side streets. It was amazing to see people still crying at the tomb of Eva Perón and still knowing how to have a good time after such a major economic crisis.
Sri Lanka. I like to go to the north where tourists are few because the area was so wartorn until recently. The people are so charming and friendly and the landscape is wonderfully varied, with numerous historical sights such as Ritigala monastery that you have almost to yourself. Add to this two very good SLH hotels, the stunning Ulagalla in the centre and the unusual Jungle Beach on the east coast – only one tree was felled in its making.
Watching the sun rise over the dunes in the Empty Quarter while camping in the deserts of Oman with my wife, a 4x4 and a small tent. Or skiing off-piste in La Grave, France.
Have you mastered the art of travelling light? That you learn to do very quickly when you cycle up mountains. Fortunately, most other countries have shops too.

What essentials do you take on board when flying? The essentials I cannot replace, in case my hold luggage doesn’t arrive at my end destination with me. So: my iPad and small attaché case if I’m on business, and a change of clothes.

What advice do you have for surviving the airport experience? Allow yourself plenty of time, take several deep breaths and head straight for a good lounge.
What is your favourite airport?
What is your favourite winter destination? That has to be Zermatt. It has everything from magnificent scenery and easy skiing to steep shoots and gullies and lots of challenging off-piste runs (I have skied all my life and still like to test myself). It also has great small restaurants in mountain huts that ooze atmosphere as well as excellent firstclass hotels and après-ski spas in which to ease away the aches and pains of the day. I'm thrilled to hear that SLH has added a hotel here: Hotel Firefly and can't wait to try it!
Where do you like to go in the summer?
Carcassone: it’s very small, with hardly any flights and a good restaurant.
I’ve been going to Greece for 25 years. My wife and I take our bicycles and panniers and just head off either on the islands or the mainland, stopping when we are tired and find somewhere good to stay, preferably near the sea so we can swim.
What’s the best journey you’ve ever done? We once flew first-class on one of Emirates’ double deckers. The personal space was superb, dinner in the lounge in Dubai was outstanding, and we boarded straight from the lounge. I will never enjoy business class again.
What’s the most delicious thing you’ve eaten on your travels?
Who is your favourite travelling companion?
Fresh and juicy tuna, steak and jumbo prawns with salad at Jungle Beach in Sri Lanka. Immaculate ingredients, cooked to perfection and served in a truly beautiful location.
I’d better say my wife. I don’t want to go home and find my suits shredded on the lawn!
