New Attitude by Karen Herrema 2010 – a new year, a new decade… Is it time for a new look? Have you been wearing the same outfits, in the same order? Has your hair and make-up regimen remained unchanged for the last decade? Reinventing your look can give you a new attitude! Every woman has her own individual style. Your clothes say a lot about who you are. We are drawn to certain pieces because of our lifestyle, personal taste, body types and even comfort. It is not easy to change your personal style overnight. It is something that evolves. Start out by making some small tweaks. Observe well dressed women and cut out photos from magazines. Note what you want to duplicate, but then make it your own. You don’t need to get rid of everything in your closet, and you don’t need to spend a fortune. While you should do some weeding, a few simple updates will go a long way.

Shop your Closet. If your budget is tight, take a few pieces you love and find another way to wear them by mixing 10

looks up and considering new combinations. The easiest separate to start with is a top that has lots of colors and can be layered. On the opposite page you can see the same shirt paired with three different jackets and accessories in several different color schemes.

Clearance Sales I’m a big fan of clearance sales. Over the years, I have found some incredible bargains. These sales are not for the “faint of heart” shopper. Sometimes you have to dig, “fight” other shoppers and play the coupon game. Call me crazy, but I love it! When working with clients, I teach women how to shop discount stores such as TJ Maxx and Nordstrom Rack which can be overwhelming. These techniques help save money, and they learn how to make wise choices with future purchases. If you venture out on your own, strive for wise choices. The following tips should help you think carefully before being enticed by the price!

Karen’s Top 5 Questions to Ask Before a Sale Purchase: 1. Make sure you absolutely LOVE it. Will you rip the tag off and wear this right away? If you don’t love it in the store, you won’t love it at home. Many women buy things because they are bargain priced. It is NOT a bargain, even at $10, if it sits in your closet unworn.

Accessorize It! Accessories make an ordinary outfit extraordinary! If your budget allows you to purchase some items, start with some inexpensive accessories. The boyfriend cardigan shown would be a pretty dull outfit if paired with jeans and a black tee. Scarves, belts, jewelry, shoes/ boots, patterned tights and handbags update an outfit quickly. Choose neutral colored sweaters and jackets in your closet that need some new life and shop for accessories. Look for different patterns and textures. Must-Haves by Lisa Taylor I have scoured the magazines, researched the runways and kept my eye on the street to bring you a list of must haves for Spring 2010. Of course we are all dreaming of springs sunlight and we cant wait to bare those legs in some sexy skirts, but unless you are going on a vacation, we all have to come to grips with the fact that it’s still cold outside. So here we are, we’re all bundled up in our bulky coats dreaming of spring. The good news? It’s time to start stocking your wardrobe with the things you will need for spring. Stores have just put out their spring goods, so now is the time to get the best selection. You won’t have to wait long to sport your

latest wares because many of springs trends are hot paired with your cold weather items. When the layers come off we will all be waiting to see what you have on under that coat and ruffles, floral patterns and nudes are in! Here’s your shopping list for Spring 2010.

If you are more adventurous mix a floral with a tribal print. Make sure that the prints have colors in common. Mimic the primary color from both patterns in your accessories and keep it all in the same tone

What are you most proud of accomplishing with your business? “I am most proud of the standards we set for service and professional integrity. Clients and staff benefit from our straightforward and honest approach … even when it hurts.” When did you first consider it was time to consider closing shop? “Two or three years ago I began researching how to exit my business for future planning and organization. Unfortunately, I thought I had much more time than I actually had. The economy soured, and we began suffering serious losses month after month. In September 2009, Joe anticipated it would come to this end; by October 2009 it was certain.” What helped you make the decision? “Joe, my wonderful husband helped me to see the necessity of letting go. He has been such a steadfast supporter all these years and has sacrificed so much to help me realize my dream.” What was your greatest regret? “I regretted that we found it necessary to close at just the point when our team seemed most galvanized. I often called them my ‘Dream Team’. They were well trained, efficient, sought after and mature. I surrounded myself with the best technicians in Vancouver. We all felt like family. At first thought, winter might not conjure up words like spicy, bold or sunny. It should, though, at least when it comes to the inside of your home. According to the American Heart Association, coronary heart disease is the leading cause of death for both men and women in the United States, causing about 1.5 million heart attacks each year. Since we all know the statistics, instead of living in fear, let’s ask ourselves: What causes heart disease and how do we prevent it? Let’s start with the simple act of breathing. Normally we use only 1/3 of our lung capacity when we breathe, if we are breathing at all. When we slow, rhythmic breathe we allow the body’s systems to function properly. Breathing slowly and rhythmically increases circulation, lowers blood pressure, lowers the heart rate and tells the brain that everything is working perfectly in the body. Conscious breathing takes us away from “flight or flight” mode and brings us to a state of calm awareness. Breath control not only improves circulatory and respiratory function but is also a key component in mind control. We all experience stress regardless of gender, age and socioeconomic status. It’s how we perceive or respond to that stress that is important. If we can breathe when we are uncomfortable, anxious or stressed, we reduce stress and make decisions on how to react or not react with much more clarity and less emotion. What inspired you to become a chocolatier? “As a writer, I worked in restaurants a lot, but kept thinking I needed to get a real job. And yet the food world kept pulling at me. It started with viewing chocolate as an intense, peak experience, like sex or religion, sin and redemption, mixing the playful and pleasurable. The history, the nuances of fine chocolate making really intrigued me. I became obsessed. I kept writing ideas down, putting them in drawer. I got this notion to create religious icons with chocolate, as gold-leafed reliquaries. Finally, my husband gave me the encouragement I needed to give it a try.” What type of chocolate(s) do you make? “Really chocolate-driven chocolates, usually single source and dark. While I use lots of interesting infusions, I still make sure the chocolate stands out. My chocolates push towards more savory, unusual flavors, with natural herbs you wouldn’t expect, like smoked paprika.” What are your most popular? “We sell twice as much salted caramel as any42

thing else. The salted lavender caramel is our best seller, followed closely by the habanero caramel. Also popular is the Thai peanut butter cup, which was invented for a New York chocolate competition, and won the rising star award. It’s salty/sweet rather than garlicky. The first layer is Valrhona’s Jivarra milk chocolate blended with OG peanut butter and grey sea salt. The second layer is a coconut puree infused with ginger, Thai chili and lime, blended with Jivarra, surrounded with a Venezuelan dark (73%) chocolate cup, and topped with Hawaiian Red Alinea volcanic salt.” What are your favorites? “I don’t ever get tired of the creamy/melty habanero caramel; the habanero makes its dark chocolate flavors more intense. Push beyond desert wines like ice wines, and consider Prosecco with salted lavender caramel. Add goat cheese chocolate to your cheese and fruit platter. While traditionally chocolate is good with coffee after dinner, it’s good anytime, even at breakfast. Don’t refrigerate; enjoy them at room temperature.” What makes a particular chocolate sublime? “It’s all about balance … mouth feel, the flavors all working in harmony, the beauty/aesthetics of it, slowing down, and letting it melt on your tongue. The beauty of gourmet chocolate is that you’re going to be satisfied with a really small amount, so you don’t have to go overboard.” What other attractions does your neighborhood hold for potential customers? “It’s a great place to get a hot cocoa and wander. There’s lots of little gift shops, great restaurants, clothing boutiques and Laurelhurst movie theater.”

“I (Aubrey) attended pastry school in Seattle and worked at Fran’s Chocolates there, for ten years. Whenever we (Aubrey and Jesse) were fortunate enough to travel we would seek out chocolate shops and makers eagerly. We were (of course) particularly inspired by Parisian chocolate shops and the appreciation Europeans have for chocolate. We were aware of a burgeoning movement of small chocolate manufacturers emerging in both the US and internationally. Given that traditional chocolate shops carry only their own branded products, it was difficult to find bars made and distributed directly from the chocolate maker, ie. Domori, Amedei, Cluizel, etc. Occasionally you could find one or two in a specialty food store or gift shop, but often the bars were not supported with any product knowledge about them or what they were. The product turnover was slow, resulting in old chocolate. What inspired you to become a chocolatier? “We’re not chocolatiers, we’re sellers, much like a wine seller bottle shop, of exotic salts, chocolates and more. We offer 350+ bars from all over the world. They’re organized by vintages, regions, makers, single plantation or not. We do tinker a little bit; the chocolates we make explore chocolate through the mineral lens of salt. Salt enhances the flavor of nearly everything, and chocolate is no exception.” How do you decide what to carry? “We’re interested in how bars give access to this natural product, cacao. Chocolate speaks on so many levels. We find some customers may simply want a snack, others to eat in dark room alone, others are more adventurous, some seek something akin to a classic novel … some need a gift for the unfamiliar mother-in-law. jobs, a breakup might prompt an urge. We listen to what they want, and use our expertise to guide them. Our selection ranges from to a variety of exceptional little tastes for less than $1 to a 3 ½ oz. bar of the very rare Bonnat Porcelana, akin to a the best-ever Bordeaux wine, for around $20.” What are your most popular? “Our local chocolates derived from salted caramels are especially desired … Sahagún … Xoxolatl de David. DePaula’s more classic European-style chocolates are also popular. His fresh Oregon hazelnut with pistachios, currant and orange is pretty damned deadly, as is his milk chocolate salted sunflower seed bar. Sahagún’s Palomitapapa with exploded corn is another big seller.” What are your favorites? “This is cliché, but it’s like asking what’s my favorite child? I love them all. They have such beautiful personalities, quirks charm …. Ok, for example, the Rogue Hispaniola … It’s a beauty. It feels like the chocolate maker totally got out of the way of the chocolate’s natural flavor. It’s like chocolate with afterburners, raw and elegant.” What is your most unusual? “Among our salted chocolates, with 75% cacao, we make one called Moshio Seaweed Salt with an evaporated seaweed, mineral-y dusting … Eating it is a mind-bending taste experience.”

Elizabeth Montes, Sahagún What inspired you to become a chocolatier? “I started making chocolates nearly fifteen years ago as gifts. When I casually dropped by the 1998 Chocolate Show in New York; I couldn’t believe people made chocolates for a living! When I saw the decorative chocolate work of the artist-turned-chocolatier John Down (and I’m a decorative painter myself) I went to work in his studio in the Bowery. At the same time, I attended FCI’s series of chocolate seminars given by the pastry chef, Steve Klc, and then attended the chocolate technology course at Richardson Researches in Hayward, California. Fascinated by pre-Columbian cultures, in my reading I encountered Fray Bernardino de Sahagún, a Spanish missionary to what is now Mexico. In the 16th-century, Fray compiled a collection of manuscript volumes in which Aztec elders relate Mexican life and customs, including the early uses for cacao and chocolate. Thus Sahagún, his birthplace, became the inspiration for my branded chocolate when I began at last selling my own chocolate in Portland. The Pacific Northwest is a fresh foods paradise for chocolatiers. A few ingredients I combine with my chocolates are: Sundance Farm’s Hidcote lavender, marion berries from Sauvie Island, sour cherries from the Willamette Valley, Oregon La Mancha Orchard filberts and Stumptown’s coffees. The Oregon Kiss is pretty popular, too. Everyone seems to have their own favorite bark.” What are your favorites? “The salt peanuts bark and the Oregon Kiss, which is made up of organic Oregon hazelnuts, Valrhona milk chocolate and a smidgen of fleur de sel piped into a bittersweet cup.” What is your most unusual? “Sun Drops. They’re little bittersweet spheres gushing with sunflower seed butter and raw blackberry honey.” What suggestions do you have on how to eat your chocolate? “Don’t eat it right out the refrigerator. Instead eat it at room temperature. Our caramels … try the whole thing at once …. Pop it into your mouth so it “explodes”.” What makes a particular chocolate sublime? “Not too sweet … a tasty element, salty but not too salty. Texture is important, a nice crunch. Really great-tasting chocolate has its own personality. For example, Santa Dominguez chocolate has woodsy overtones to it, which I just love.” 55

What inspired you to become a chocolatier? “It was unintentional, really. I was working as a cook on the dinner shift at Park Kitchen (PK) here in Portland and had my mornings and early afternoons free. Once a week or so I would experiment in my own kitchen with various things and chocolate was one of them. I really liked it, and started experimenting more and more. Then I gave away chocolates as Christmas gifts. Scott Dolich at PK was just as surprised as I was on how well they came out. He encouraged me to try and sell them to a few people. That got things started. Everything just built from there.” What type of chocolate(s) do you make? “I might call myself a non-traditional traditionalist. I like to use ingredients that I know, and that I would like to eat with chocolate, i.e. chevre, bacon, pimenton, various sea salts, rhubarb & other seasonal fruits and vegetables. I am not trained in pastry so I do not know “traditional” pastry items, nor do I really care for them. I also have some fruit and chocolate preserves that I make during the summer months when Oregon fruits and berries are at their peak. It is basically a savory fruit spread with a nice finish of chocolate. I experiment all the time with different things. Some results are good and some are bad.” What are your most popular? “It used to be my salted caramels, but then I created the Raleigh Bar – a layer of chocolate pecan nougat with a layer of salted caramel. There is also a bacon caramel version as well. I cannot make them fast enough.” What are your favorites? “My Orange Cardamom chocolate is my all-time favorite confection. It was one of the first that I made. Of my newer things, the Almond and Pimenton bar is something I cannot stop eating.”

What is your most unusual? “The bacon items, but the bacon thing has been over played the last few years. So instead, the fruit and chocolate preserves are my most unusual, especially the rhubarb one, which is the best. The reason? People don’t necessarily know what to do with it.” What suggestions do you have on how to eat your chocolate? “Some have layered flavors, some are more simple, but just take a bite and enjoy it for what it is.” What makes a particular chocolate sublime? “It is all about the

quality of chocolate. Whether it is a single origin bar or a confection made by someone like me, the best tasting chocolates always start with high quality cacao beans/ chocolate.” What other attractions does your neighborhood hold for potential customers? “First, get a sandwich at Meat Cheese Bread, where my workshop is located. John Stewart, the owner, and I used to cook at Park Kitchen together. He’s making some of the best sandwiches around right now. Since we’re in central eastside Portland, you can quickly get to the shops, restaurants, and bars in the lower Burnside area, NE 28th Ave, and Belmont St.”

Other than online where else can your chocolates be found (particularly in the Portland metro area)? “Meat Cheese and Bread, Cacao, The Meadow, Steve’s Cheese, Foster & Dobbs, Cork, Pine State Biscuits, and on the dessert menus at Park Kitchen and Ned Ludd.” What else would you like our Snapshot readers to know? “I worked at Park Kitchen for 4 1/2 years, 2 of those as Sous chef. When I moved here in 2004, the Portland food scene was on the rise, and Park Kitchen was at the center of that. I think it was a pretty unique time because everything was so young. I was able to work with a lot of great produce and products that I had never used before, I became trained in butchery, and worked with, and met, a lot of great people. All of it definitely helped shape the path that I have taken with chocolate. Basically had I not gone to work at Park Kitchen, I would not be working in chocolate.”

Annual Fundraiser for World Forestry Center Makes Dentists Cringe As It Expands to Include an Extra Evening (Portland, Oregon) For the 5th year in a row, the World Forestry Center will present ChocolateFest, the Pacific Northwest’s biggest and best celebration of the food we all love so well. The event is Friday, January 29 from 6:00 -9:00pm. and Saturday January 30 and Sunday January 31 from 10am -5pm. Pre-sale tickets are available at www.worldforestry.org. Ticket prices are $8 for adults, $7 for seniors (62+) and $5 for children (3-18). This celebration of sweet has become so popular the World Forestry Center is expanding the hours to include Friday night. This evening will be extra special as chocolate-lovers will be treated to a sneak preview of the Center’s newest exhibit The Chocolate Story which opens January 30 and is on view through April 25. The exhibit explore the history, production and consumption of chocolate - a food which is derived from the cacao tree that grows in the tropics. Visitors will also be able to vote for their favorite chocolatier and products. Categories to be voted on are: Best Truffle Category Best Confection Category Most Innovative Ingredient Combination Category Best Organic or Fair Trade Products Category Best in Show Category As is typical of ChocolateFest, some of the finest chocolatiers in the Pacific Northwest, and beyond, will tempt visitors with luscious truffles, decadent brownies, heavenly fudge, and more. Demonstrations, presentations as well as a few wine, beer and coffee vendors will be on hand to explore all the pairing possibilities of chocolate. Vendors include: multi-award winning Lillebelle Farms based out of Central Point, Oregon - maker of the smokey blue cheese truffle; Two Brothers Foods showcasing their decedent chocolate sauce; award-winning Coastal Mist Fine Chocolates and Desserts based in Bandon, Oregon; Brownies from Heaven with offerings such as Raspberry brownies and Peppermint brownies; and the very popular Pearl District eatery, Cupcake Jones. January is National Soup Month, and what better time to discover just how simple it can be to make sensational homemade soups? Whether serving soup as part of an entertaining menu or an easy weeknight meal, making soup from scratch does not have to require hours in the kitchen. Shortcuts, like starting with ingredients such as 100% natural Swanson chicken broth, which provides an ideal blend of stock, vegetables, herbs and seasonings, make it easy to create the perfect foundation for every soup recipe. 62

Twice-Baked Potato Soup Ingredients 6 large potatoes 2 tablespoons butter 1 small sweet onion, finely chopped 5 cups Swanson Chicken Broth 1/4 cup light cream 1 tablespoon chopped fresh chives Toppers Directions: Heat the oven to 425 F. Prick the potatoes with a fork. Bake for 30 minutes or until the potatoes are tender. Remove the potatoes to a bowl and cover the bowl. Let the potatoes stand for 10 minutes. Remove the skin from the potatoes and mash the pulp. Heat the butter in a 3-quart saucepan. Add the onion and cook until it’s tender. Stir in the broth and 5 cups potato pulp. Place 1/3 of the broth mixture into a blender or food processor. Cover and blend until smooth. Pour the mixture into a medium bowl. Repeat the blending process twice more with the remaining broth mixture. Return all of the puréed mixture to the saucepan. Stir in the cream and chives and cook for 5 minutes or until the mixture is hot. Season as desired. Spoon 1/4 cup remaining potato pulp into each of 8 serving bowls. Divide the broth mixture among the bowls. Serve with one or more Assorted Toppers. Assorted Toppers: Cooked crumbled bacon, shredded Cheddar cheese and/or sour cream. Time-Saving Tip: Microwave the potatoes on HIGH for 10 to 12 minutes or until they’re fork-tender. Serving Suggestion: Serve with endive and sliced pear salad with lemon mustard vinaigrette sprinkled with crumbled blue cheese.

Savory Vegetable Beef Soup Ingredients 1 3/4 cups Swanson Beef Broth 2 medium potatoes, cut into cubes 1 cup cubed cooked beef 3 cups V8 100% Vegetable Juice 1 can (about 8 oz) whole peeled tomato, cut up 1 bag (16 oz) frozen mixed vegetables 1/4 teaspoon dried thyme leaves, crushed 1/8 teaspoon ground black pepper Directions: Place the broth and potatoes in a 4-quart saucepan and heat to a boil over mediumhigh heat. Reduce the heat to low. Cover and cook for 5 minutes or until the potatoes are tender. Stir the beef, vegetable juice, tomatoes, vegetables, thyme and black pepper in the saucepan. Cover and cook for 15 minutes or until the vegetables are tender. Serving Suggestion: Serve with a tossed salad and Ranch salad dressing. For dessert serve dark chocolate cookies with vanilla cream filling. 63

In warmer climates it becomes an evening shawl or wards off the chill in an overly air conditioned restaurant or theater. Fold it flat and store it in a large zip lock bag to keep it clean and fresh in your handbag. It hardly takes any space. Kids Success Foundation

“Watch them grow”

The Journey At 16 years old my son struggled his entire life with learning problems, mainly dyslexia. As a Mom my heart ached every time I would see him spending countless hours to finish his homework when all the other kids would get it done in less than 1 hour. His struggles were so much to bear and there were many, many, tear full days with parent teacher conferences and looking at report cards. It seems as if Cory was falling farther and farther behind. Year after year my heart ached for a solution; something to help him. So we tried different tutors, different learning institutions to help bring his reading skills even up to grade level. While they all seemed to help some what, the underlining issues were still there and making the struggles even worse with keeping caught up in school for Cory. 70

I at one point even thought Cory was not “trying hard enough.” Guilt overwhelmed me after having him tested at Dynamic Learning Services and finding out that all of his struggles were not from a lack of trying; it most definitely was a brain problem. After the first consult with Janele and Tom, I realized I needed to put Cory into their brain therapy program. They were new to the area and didn’t have the local testimonials but my gut told me to move forward with putting Cory in their program. The program was almost $4,000, so as you can imagine, we were very nervous but still going on faith, that this was the answer for our son. Well, I am here to tell you that it WORKED. Our son went from D’s and F’s struggling in school and wanting to DROP OUT at the age of 16 to now a 3.2 grade average and it still keeps getting better. He NO longer struggles, he has made new friends, starting dating, etc. We have noticed so many changes in him that it would be hard for me to list them all out. At one point the school system wanted me to put him on drugs and move him into the Special Ed classes. I refused to and I am SO glad I did. His brain was retrained with of all things … sound frequency... can you believe that? Yep, sound frequency, specially programmed to fit his specific needs. Cory’s dyslexia stemmed from genetic as well as chronic ear infections as a baby. All I can say is thank God for this program!

My Passion So here is what my passion is ­– to help other children who can not afford the program for their child. I want to provide them financial aid to change their live like Cory’s life has changed. He will never suffer the embarrassment of feeling stupid from his dyslexia again. This is a life change and I want to change some children’s lives. Are you with me?

The goal with all of these upcoming events is to put at least 3 children through this life changing program by raising at least $20,000.

How can you help? Send a child my way that needs some drug free support with their learning disorder. I so appreciate your support and love and together we can make a difference in a child’s life. I look forward to working together.

Purpose of the Foundation Education. One of the principal purposes

of the Foundation is to focus on educating the general public. While auditory disorders are quite common, few people have much knowledge about them, or have not learned about the causes and the remedies. ADVERTISING INFORMATION AT WWW.SNAPSHOTEMAGAZINE.COM

Regrettably, there is a stigma attached to this disorder: if someone has auditory disorders, then the child must be retarded in some way. This is simply not the case. These children are very bright and intelligent. The Foundation wants to assist families to deal with the embarrassment– whether it is perceived or real–when they are faced when their child is in public places. It is the goal of the Kids Success Foundation to see some support groups in every local community across the nation to educate, assist, and support families who are faced with this challenge and who simply do not know what to do. To have parents come together and share their successes and sadness with other families so that no one has to feel alone. That these suffering parents know that they’re really are others who feel just as they do.

The Future The Kids Success Foundation hopes that within the next ten years it would be able to continue such assistance as cited above but on a greater scale. Officers of the Kids Success Foundation will hold seminars and other events and speak about personal experiences with auditory disorders. Local Fundraiser Mexico Mission Trip 2010 A team from Epikos Church will travel to Mexico March 20-27 to build a home for a family in need. The team will consist of high school students and adult volunteers. They will take a road trip down the West Coast from Vancouver to Baja and build a house from scratch, ending each day with laughter, stories, music, and prayer around the campfire. The project is sponsored by Amor Ministries, an interdenominational group that works with local pastors in Mexico to identify hardworking families who don’t have adequate housing. (Some families of five live in 5’x5’ tool sheds.) 72

Work-Ordered Day The work-ordered day is the basic structure of the Clubhouse program. The opportunities to contribute are many and varied, and members can assume various levels of responsibility according to their desires and interests. Working in the Clubhouse helps members achieve a feeling of belonging, increased self-esteem, new skills, and greater levels of social land vocational adjustment.
