editor’s note ’ve always had a lovehate relationship with Ja n u a r y . Pa r t o f m e finds the hush after the holiday rush to be slightly melancholy. Decorations are put away, vacations come to a halt, bank accounts are bleak, and it seems there’s little to look forward to. To make
matters worse, according to the Centers for Disease Control and Prevention, “most of the time flu activity peaks between December and February” (ahem, January), the air is still bonechilling cold, and maybe it’s just me, but the glow of winter seems to lose a little of its gleam. The “love” side of me, however, sees it as a month of newness—a chance to wipe the slate clean, reflect on the previous 365 days (what worked, what didn’t) and take a moment to set some goals and put energy toward what I hope the coming year will bring. Whether you loathe or love January, we’re here to help. In this month’s feature, “Chill Out: 50+ Ways to Beat the Winter Blues” (page 49), Sharon Penny presents fun ways to turn that postChristmas frown upside down. From “pretending it’s summer” by eating ice cream and swimming in a (heated) pool; to going somewhere sunny (our picks might just have you packing your bags before you finish reading); warming up with hot soup, a stiff

cocktail or mug of cocoa; embracing the outdoors courtesy of a hike, bike ride or trip to the slopes; and chasing the (natural) light at one of our region’s sun-soaked museums or restaurants, you might find yourself loving winter just a little more. To ensure you don’t fall sick, we even have tips from medical pros on how to boost your immunity (Hint: Get seven to eight hours of sleep every night). Consider it your guide to help you survive, and thrive, this month—and the rest of 2018. Speaking of staying healthy, in Swag (page 40), Sabrina Gonzalez helps you gear up with “16 Workout Essentials,” because we all know that looking fit helps inspire us to get fit; in The 10 Spot (page 20), Tara Mendanha gives us a rundown of her favorite figure-friendly (but still flavor-packed) foods from area eateries, so you can dine out and still stick to that diet; and, finally, flip to The Hot List (page 72) for the top salad bars in town, because who doesn’t love being in charge of what gets put on their plate? In writing this month’s note, I learned a fun fact about January—the name is thought to have originated from Janus, the Roman god of new beginnings and endings, who was usually depicted with two faces, one looking into the past and the other looking toward the future. As you welcome 2018, I hope you hold the memories from 2017 dear to your heart, and face the new year with compassion, hope, and happiness. Cheers!

F
olsom resident Candy Miller first became interested in history after a trip she and her late husband, Robert, took to New England in the ’70s. “[Going to]
places I read about in history books was incredible,” she recalls. After moving to Folsom in 1985, she became increasingly involved with the Folsom Historical Society (FHS) and soon discovered a passion for preserving the region’s past. With the help of her team at the FHS, Miller was part of a committee appointed by the city council to recommend a new ordinance to protect historic homes from being razed to the ground by developers, and

establish design guidelines for Folsom’s Historic District. She also oversaw dramatic improvements to the Folsom History Museum, a way for people to see regional history come to life through interactive exhibits. In addition, Miller sits on the board of the Murer House Foundation, a nonprofit that offers Italian culture, history, and cooking classes at the Murer House and Learning Center. For all her efforts over the years, Miller was recently awarded the first-ever Folsom History Hero Award. Yet for her, the greatest reward is being able to see the fruits of her labor, every time she walks through the Historic District. “The history of Folsom is extremely unique, and we have a lot here to be proud of,” she enthuses. —Amber Foster

olsom Parks and Recreation offers a variety of dance, fitness, and sports programs for all ages, from preschoolers to seniors.

OUTDOOR WORKOUTS The city’s 45-mile network of scenic, paved recreational trails provides convenient access for walking, running, or bicycling. Trails can be accessed within most neighborhoods and near businesses and retail centers. A map of the trails can be found on the city’s website.
PRESCHOOL (AGES 3-6) Build coordination and motor skills while having fun by signing your kiddos up for swim lessons, soccer, tennis, taekwondo, basketball, and dance. Note: Many of the programs require parent participation.
YOUTH AND TEENS (AGES 5-18) Classes for youth and teens introduce fundamental skills and rules of play, teach the principles of teamwork and sportsmanship, and are a great way to have fun while engaging in physical exercise. Selections include dance, soccer, tennis, football, wrestling, archery, swimming and more.
ADULTS (18+) Adult fitness programs are a great way to try out a new activity or build on existing skills, relieve stress, and meet new people. Selections include yoga, tai chi, tennis, lap swim, aquacise, and team sports; some are ongoing and allow drop-in participation.

s the season of giving comes to a close, we often get back into the swing of things without thinking that help is still needed in a big way. When it comes to giving blood, donations typically drop at the start of a new year, hence why January is National Blood Donor Month. “Every two seconds, someone needs blood, and there is no artificial substitute—only another person can give this gift,” explains BloodSource Communications Manager Vicki Wolfe. “Blood is a perishable product with a shelf life of only 42 days, so the blood supply must constantly be replenished to help meet the needs of patients,” adds Christine Welch, communications manager for American Red Cross California Blood Services Region. If you’re hesitant to give blood, keep in mind that even the possibility of saving lives is worth a slight pinch. Bring along a book or music, and relax—donor center volunteers are there to help you feel comfortable. You can also consider donating to StemExpress in Folsom, which utilizes blood donations for biomedical research and offers compensation. “Researchers around the world always need blood samples for their projects. The faster they get samples, the faster they can complete their research, and the faster new treatment technologies can reach patient care—[ultimately] saving lives!” says Director of Procurement Operations at StemExpress, Megan Barr. —Emily Peter

MYLAPORE offers light, healthy South Indian
Welcome back, Sierra and Pinyon! These two majestic golden eagles were off exhibit for a period of time, due to construction on the zoo’s sewer line, but are happy to be back home where they can spread their wings and enjoy seeing all their friends. Sierra is a female golden eagle who came to the sanctuary after being rescued by Lake Tahoe Wildlife Care where she was found “down.” She can by Guy Easterling fly, but chooses not to for some reason, and is able to use her large size to get her way. Her male counterpart, Pinyon, was found starving on Latrobe Road by a construction crew. He suffered from an arthritic left wing from an old injury and has been at the zoo since 2011. CORE Contemporary Dance Movement Matters

ORE, a non-profit contemporary dance company that serves threeyear-olds to adults, began 11 years ago with the mission to inspire, educate and entertain, as well as promote the expression of the human experience through movement. Artistic Director Kelli Leighton, whose greatest passions are being an educator, teaching and creating, opened her studio, Leighton Dance Project, which now houses CORE, in 2013. Alongside their innovative full-length numbers, it’s the stellar outreach programs—from “student nights” at their concerts, to free adaptive classes every Friday for children with special needs along with their siblings, and after-school dance clubs—that CORE counts as their biggest accomplishment.

HLB: TELL US MORE ABOUT CORE’S BEGINNING. KL: CORE started as a group of dancers looking to continue dancing and moving. At the time, Sacramento Ballet was the [only other professional company] in the area. [Since its inception], CORE has produced full-length works in various theaters and venues around the Greater Sacramento area, including the Harris Center, as well as in Brooklyn, Salt Lake City, and Pittsburgh. We’ve also developed strong outreach programs, including high school master classes with Emmy award-winning So You Think You Can Dance choreographer Mia Michaels. HLB: HOW DOES CORE ACHIEVE ITS MISSION? KL: The work CORE produces is inspired by the human condition, the struggles and triumphs that we all experience in our dayto-day life and as a society. Our audiences are left feeling something; no matter if they love it or hate it, we want them to leave a performance having an experience and be deep in thought. We also like to entertain our audiences and keep them wanting more. CORE loves the element of surprise. HLB: IN WHAT WAYS IS CORE DIFFERENT FROM OTHER DANCE COMPANIES? KL: We’re the only dance company in the area with extensive outreach programs [who also creates] new full-length shows each season. Together, we explore our differences in the creative process and celebrate what makes us similar, [which] inspires the work. As a choreographer, I’m extremely inspired by my dancers. I use journaling in the process, allowing the dancers to express their views and feelings on certain subjects, [which] we discuss and let guide the creative process. It’s most definitely a collaborative effort. HLB: HOW DO YOU COMMUNICATE TO AUDIENCES THROUGH DANCE? KL: We’re all more similar than we sometimes like or want to believe. At the end of the day, we all want the same thing: to be loved and accepted. Dance can be a vessel to bring an audience together for a couple hours and unite us in a thoughtprovoking way. I’ve always felt a good choreographer can get their point across in a non-literal way, leaving the door open for all ages and backgrounds to interpret what they need out of a performance and draw their own conclusions. It should always be a great conversation starter, and that’s what brings us together; communication is how we educate each other on concepts and develop understanding for each other, but it also opens the door to new ideas and appreciation for our common human experiences. corecontemporarydance.org

succulent crustaceans is reported to be plentiful, and so—based on our survey—are the fund-raisers that feature them. Dungeness crabs are caught in California from November to June, but local calendars fill up in January and February with crab feeds benefiting various causes. Most events offer similar menus: all-you-can-eat crab, pasta, salad, bread, and dessert, with a few adding second entrées, and many featuring auctions or entertainment. very kitchen has countertops, yet oftentimes, not much thought goes into the vast array of materials available. As the workhorses

When making a selection, it’s important to consider the different characteristics of each material, how you’ll be using them in your own kitchen, how durable they need to be, and if you’re OK with a natural patina. To determine which countertop best suits you and your needs, weigh the pros and cons of these options.

QUARTZ Quartz countertops are created from a compound to your exact specifications, using a resin and particles of very finely ground quartz, and can be polished to a high shine and mimic the look of marble. Since it’s manufactured, you can get any color, pattern, texture, and finish imaginable. It’s also very durable; is resistant to scratches, chips, and breaks; won’t need to be sealed; and is non-porous, so it’s stainand bacteria-resistant. Keep in mind, however, that quartz tends to be more expensive, and is not as heat-resistant as Granite
granite, tile, or concrete. Price: $$$

GRANITE Granite is a natural stone that’s quarried from all over the world. It goes through an extensive polishing process to get shiny but can also be honed for a matte finish, and is considered one of the most beautiful countertop materials. Available in limited colors and natural patterns, you’ll likely search for the perfect slab to fit your home. Granite is eco-friendly—since it’s naturally harvested— has excellent durability, and is heat- and stain-resistant (if you take proper care of it). The major con is the sealing needed to maintain it. If it’s improperly sealed or you don’t reseal it when needed, it can become porous, which can lead to staining, bacteria, and possibly breaking. The maintenance is similar to that of marble, which also tends to be just as expensive as granite. Price: $$$$

WOOD Butcher block is the most common and popular form of wood countertops, and is sometimes mixed with quartz or granite throughout the kitchen, like on the prep island or near the oven. Wood countertops can be made from reclaimed wood or bamboo for an eco-friendly option, add a warm and beautiful touch to any kitchen, and work well for those who enjoy baking and will be doing a lot of food preparation. You can also count on it being one of the least expensive countertop options. Wood tops do have to be sealed quite often to keep water out, as it can warp and pull apart the wood as well as hold bacteria in and stain. Price: $$

CONCRETE Usually one thinks of concrete as being heavy and cumbersome, but new materials make it a light yet durable and trendy choice. Durability is, in fact, one of the biggest pros of concrete, as well as shape and size customization. You can also etch, stain, or press tiles into it. SOLID SURFACE Solid surface countertops are becoming extremely popular. Made from a synthetic material, like acrylic, you can get them in nearly any color, so they remain the most versatile and durable product out there. They can be patterned to mimic granite or quartz and yet don’t need the maintenance of those materials. They’re not porous and therefore won’t stain or hold bacteria; plus, they’re more affordable than their stone counterparts. You may find they’re not as heat-resistant as quartz and may scratch occasionally, but that can be fixed easily. While they don’t provide the same high shine and luxe look as stone, they do fit in well with a modern or

I Eggplant Delight
remember dining at Thai Paradise several years ago, but things have changed. The previously small, quiet restaurant has morphed into a bigger, bustling success story. The food was excellent back then, but had not reached the level of popularity it now enjoys. One of my all-time favorite appetizers is Angel Wings. Thai Paradise has them, and they’re fantastic. I'm not sure what they charge for the labor-intensive (I’ve made them at home and can attest!) flavor bombs, but whatever it is, they’re worth every penny. A whole wing is deboned, then stuffed with ground chicken, noodles, garlic, and ginger, before being battered, deep-fried, and accompanied by a special honey plum sauce. If you like wings, these are a must. Next was the Eggplant Delight. I know eggplant is one of those polarizing foods people either love or hate, but count Angel Wings me in the love-it camp. This version featured delicate pieces of aubergine with red bell peppers, onions, garlic, basil, and jalapeños in a dark, slightly sweet sauce, and a pronounced piquant flavor from the latter ingredient. I ordered it with beef, which was thinly sliced and perfect alongside the Thai aromatics. My favorite entrée of the day was the Spicy Curry Noodles (ordered with shrimp). Though all the curries and sauces are made in-house—which is not the case in many establishments—this brilliant yellow curry has apparently been a family treasure for generations…at least that’s my romanticized presumption. Served with flat rice noodles, red bell peppers, onions, snow peas, bamboo shoots, green beans, bean sprouts, basil, and roasted onions in a soul-soothing sauce, it’s quintessential Thai adapted for American tastes. Order it spicy or mild, as with all their dishes, to suit your taste. I was joined by family just as I was deliberating the wisdom of dessert, deducing that I now could cut the calories by 1/4 if I ordered three extra spoons. With no debate from the group, the decision was made. Which Wich Superior Sandwiches
// As I entered one of Folsom’s newest quick-serve eateries, Which Wich, I couldn't
help but notice the inviting atmosphere. Modern, with bright colors and a minimalistic style, it's the perfect setting for a midday meal. Instead of ordering directly on the sandwich line and adding toppings as you go down, Which Wich has customers begin by filling out a sandwich bag that corresponds with their chosen sub—allowing patrons to specify the style, size, toppings, temperature (hotwich or coldwich), sauces, spices, and any special requests they may have. Though slightly overwhelmed by all the options, the employees sensed my indecisiveness and convinced me to order their signature sandwich: the Wicked. The name really speaks for itself and feeds the need no matter what you’re craving. Piled high with turkey, ham, roast beef, pepperoni, bacon, plus your choice of three cheeses (I opted for pepper jack, American, and cheddar) and any additional toppings you want. I'm a total veg head so had mine stuffed with all the fresh fixings (lettuce, tomatoes, black olives, red onions, cucumbers, pickles, etc.). The sammie did not disappoint; every ingredient was perfectly stacked, making for a mouthwatering, fulfilling (and filling!) lunch. FOR THE BARS: 1/2 cup granulated sugar 1 cup packed brown sugar 1/2 cup unsalted butter 2 eggs 1 tsp. vanilla extract *1 tsp. butter extract 1 tsp. baking powder 1/2 tsp. salt 2 cups flour 1/2 cup sprinkles FROSTING: 1/2 cup unsalted butter 1 1/2 cups powdered sugar 1 tsp. vanilla extract 1 tsp. milk Sprinkles, for garnish

Preheat oven to 350°F. Line a 9x13” pan with foil and spray with cooking spray.

Press into prepared pan (dough is sticky; spray your hands with cooking spray to avoid it sticking to your hands). Bake for about 22-24 minutes. They’ll be slightly golden, but still have the slightest jiggle in the center, and will set as they cool. Cool completely before frosting.

To make the frosting, beat the butter until smooth. Slowly mix in powdered sugar, vanilla extract, and milk. Frost bars. Sprinkle with additional sprinkles and cut. Yields 24 bars. *You can find butter extract at most grocery stores in the baking aisle.

Real estate has always been my passion; in 2009, I was fortunate to be able to start my business, after nearly 20 years working in high tech.
My lifelong love of cooking brought me to start The Hidden Table, a catering and personal chef service. I’ve always enjoyed preparing gourmet meals and been passionate about great food. Although I have perfected many recipes (some of which are on my website) and have 25 years of restaurant and catering experience, I really like preparing dishes that match my clients' tastes. I trained in St. Helena, Europe, and South America focusing on elegant peasant foods; although I graduated from the California Culinary Academy and had a nine-month stint at the Culinary Institute of America, I’m most proud to be a graduate of the "CAML (Cooking All My Life) Culinary School." After catering for years as an occasional side job, I decided it was time to dive into the food industry full-time and start The Hidden Table. It seemed to be the perfect match for my desire to have a small, intimate business that focuses on organic farmto-fork food, health, and nutrition. I believe the most delicious and attractive foods are made using a variety of fresh produce, herbs, meats, fish, and whole (not processed) foods.
What life accomplishments are you most proud of? Raising two wonderful, engaging children who have grown to be strong and confident adults.
What’s your hidden talent? I can clean anything. I may ruin it in the process, but it will be clean!
What’s your biggest job perk? Flexibility to run errands during the day, meet clients for lunch, or conduct business at a local winery. I love being out and about during the weekday.
What’s your favorite place to eat out locally? Wally’s Pizza Bar. They have great hummus, and the pizzas are wonderful and unique; best of all, the folks who work there are all so nice.
What’s your favorite local business other than your own? Massage Envy.
If you could be in any other profession, what would it be?
Why is your staff the best in the business? All of our staff is highly skilled in food, beverage, and event planning. They love the work we do and being part of joyous events every weekend.
What life accomplishments are you most proud of? My kids and grandkids.
I love real estate. Like many realtors, I got into it later, but I love the flexibility and customer satisfaction. We work with happy people during an exciting time in their lives.
