argain hunting has been in my blood since birth. I’m not sure when, where, or why it all began, but saving money and discovering deals—whether on clothes, gas, groceries, food, or flights—has always given me a rush like no other. A big bonding moment for my husband and me was when we realized our shared passion for penny-pinching. Confession: Some of our earliest dinner dates were determined by where we could steal a deal at (the now-shuttered Fresh Choice was a favorite, since they offered 10-percent off with a AAA card). I like to say it was love at first bite. While some people

might be embarrassed to pull out a BOGO coupon when a bill comes, I’ve never felt any shame. Why pay full price when you can pay half? I guess it’s no wonder

then that this month’s feature, “Bargain Bites: 25+ Great Eats For $10 & Under” (page 57), is particularly near and dear to my heart. It’s proof that you can dine out—and not just at fast food establishments or ordering off kids’ menus— without going into debt. From morning till noon and into night, we have over two dozen mouthwatering dishes that will fill you up without emptying your wallet. I was honestly surprised to learn about some of the specials and even asked our fact-checker to triple check a few just to make sure. We also have a rundown of the happiest hours in town, because it’s always five o’ clock somewhere, right? If we missed one of your favorite dishes (and it’s under $10) or you know of a Happy Hour that’s guaranteed to put a grin on our faces, please tell me—I’d love to add it to my personal list of must-try plates. Affordable eats aside, there’s plenty more in store this in Local Matters (page 19), Tara Mendanha serves up a list of local Easter brunches in The 10 Spot (page 20), and Sabrina Gonzalez presents the best “green things” available around town in Swag (page 52). As always, we highlight a notable nonprofit in Cause & Effect (page 38) and a local creative in The Arts (page 30) and provide a lengthy list of free (one of my favorite words) and charitable events in the Calendar (page 22). Whether you’re a saver or a spender, or somewhere in between, I hope that when you do pull out those bills it’s at a local business. After all, it’s the small companies that make our community so rich. Cheers!

// Congrats to McKenzie Forbes from the Folsom High School girls’ basketball team for making the McDonald’s All American Girls Team. Players were nominated by their high school coaches, athletic directors, principals, and members of the McDonald’s All American Games Selection Committee on the basis that they’re the country’s most talented players. Forbes was selected out of 700 nominees from all over the nation and will play at the All American Games, which benefit Ronald McDonald House Charities, on March 28 at Phillips Arena in Atlanta.

favorites tephan Hogan still remembers the first time someone told him he couldn’t be a musician.

He was in high school and did a presentation on what he wanted to be when he grew up: a country a r t i s t . Th e t e a c h e r wa s n ’t impressed, and he got a failing grade. Rather than be discouraged, however, Hogan was even more motivated to pursue his dream. In 2016, Guitar Center selected him out of thousands of applicants to play on stage with Vince Gill. Last year, one of his songs appeared on a Grammy ballot for “Best Country Song” and “Best Country Album” (Dangerous Love). He continues to write and perform throughout the region, and recently launched his own online

guitar lesson business, Tone King Guitar Instruction, after having taught privately for 14 years. Yet Hogan also does what he can to give back. A portion of proceeds from his business go to VH1 Save The Music Foundation, a nonprofit that brings music education back into schools. Hogan can also be found performing for services at Rolling Hills Christian Church in El Dorado Hills, where he’s the creative media associate. He’s passionate about teaching kids the value of music education, which, he says, improves cognitive function and problemsolving skills. “Music can help kids find their identity,” he shares. “I teach guitar because watching this instrument impact the lives of my students for the past 14 years has been inspiring.” —Amber Foster

Folsom Parks and Recreation’s summer day camps provide a supervised, positive, and inclusive environment with trained and caring staff. Camp sessions begin in June; times vary from a few hours to all day with extended care options. VACATION ZONE; AGES 5-10 Weeklong sessions include theme days, outdoor games, arts and crafts, swimming, various field trips, a region-wide “CampA-Palooza” competition, and more. Campers are divided into groups for ages 5-7 and 8-10, ensuring activities are age-appropriate. Times are from 9 a.m.-4 p.m. Monday-Friday, with early drop-off and late pick-up options available for an additional fee.

SUMMER CAVE; GRADES 6-8 Camp is held Monday-Friday from 8 a.m.-6 p.m. and includes sports, organized games and activities, walking excursions, and field trips to enjoy hiking, professional sports games, theme parks, and more.

FOLSOM CITY ZOO SANCTUARY; AGES 4-7, 8-11, & 12-15 Campers get to meet some of the zoo’s outreach animals and learn more about the creatures through songs, crafts, and stories. t. Patrick’s Day began as a celebration of the life of St. Patrick, one of the patron saints of Ireland. What started out as a day of prayer, family, and feast has evolved into, well, mostly just feast. Luckily, the annual celebration lands on a Saturday this year, giving you a day of recovery with no questions The Purple Place asked. If food and beer is your thing, head to 36 Handles where they’ll host a three-day celebration (March 16-18) featuring live music, an Irish buffet, raffle prizes, and plenty of Guinness and Jameson. The party will flow into the parking lot where there will be a beer truck and macaroni and cheese tasting. The Purple Place might not turn green for the day, but they will be celebrating on Saturday with corned beef and cabbage, deals on drinks, Irish Car Bomb cupcakes, and live music starting at 9 p.m. For those who prefer a more relaxed evening, the Harris Center is presenting St. Patrick’s Day in Ireland on March 15 at 7:30 p.m., featuring dancer Connor Reider and music from Kerry Voice Squad and Traditional Band who, together, will provide an evening of authentic Irish celebration for the whole family. R

ealism artist Erick Ortega grew up playing sports and admiring moments of competition—moments he now captures in his vibrant paintings. Using mainly oils, his biggest influences include historical greats like Salvador Dali, Michelangelo, and Stanley Kubrick. As a member of the Folsom Arts Association, Ortega finds much of his inspiration being around other creatives and viewing their work. ”Every day is focused on being better than the next. As I finish more [pieces], I plan to spread my work out to more galleries and shows,” he says. Currently featured at the Sutter Street Artists Gallery, Ortega is also working on still life pieces and recently had the opportunity to collaborate with a Mexican eatery in Rocklin—where he got to develop a specific and unique theme. HLB: WHAT HAVE BEEN YOUR BIGGEST INFLUENCES? EO: I drew inspiration for my art as a child, while watching my father doodle cartoon characters for my brothers and me. Sometimes he would draw characters of us, which we would use to make fun of each other. Art then became the perfect tool to lampoon someone. Growing up, I played trumpet in the school band and [was the kid] in the back of class always doodling. I later studied music, video, and audio recording. The urge to create has been with me since childhood. HLB: WHAT ARE SOME COMMON THEMES THAT SHOW UP IN YOUR WORK? EO: I like to paint sports, movie scenes, and still life with a focus on realism. Since I grew up playing football and basketball and doing martial arts, I’ve always admired the hard work and dedication athletes put into their training. Because of this, I’ve learned to never give up on your passions and dreams. I also grew up watching a lot of movies and studied film in college. HLB: WHY IS ART SO MEANINGFUL? EO: I believe art can show people how to see the world in a different perspective. It can also be used as a tool to teach. Being able to send a message without words leaves me speechless. HLB: AT WHAT POINT DID YOU BEGIN CONSIDERING YOURSELF A PROFESSIONAL ARTIST? EO: When I left my job to pursue art full-time. I learned a lot about myself and what it means to sacrifice everything for something you love so much. Having a family that depended on me was the biggest challenge, but having faith to push through the noise of doubt was the hardest. I surrounded myself with positive people and trained in jujitsu with friends to help push through tough times.

Team Celebrate Making Birthdays Brighter

izzie Allison likes to say she has two full-time jobs. She’s

a sophomore at St. Francis Catholic High School and the president of Team Celebrate, a nonprofit that makes birthdays happy for foster kids. Yes, when she’s not in class, this 16-year-old El Dorado Hills resident runs a business. The desire to help foster kids germinated a few years ago when Allison played an orphan in the musical Little Orphan Annie. As a child of a close, loving family, she wanted to help kids who don’t have parents. After delving into research, she was alarmed to find that most trafficking victims are former foster kids, and half of girls in foster care become pregnant by age 19. She knew she couldn’t make an impact on these larger issues—at least not yet—but one smaller bit of information struck her: Foster children often don’t get birthday parties. Shelby Le Marquand, Lizzie Allison, and Jena Brasil “These kids deserve a special party, one day of joy they may remember the rest of their lives,” she says. “I thought this was a meaningful way I could help.” With support from her parents, Allison set up Team Celebrate in April 2017, as a nonprofit governed by a teen board and an adult advisory Lizzie Allison, Clark Allison, Lexie Allison, board. The organization and Paula Allison serves children in foster care in El Dorado, Placer, and Sacramento Counties, and through the teen board they inspire their peers to give Piper Butler, Charlotte Arthur, and back to the community. Allison does Presley Butler all of the planning and outreach, including talking to groups about her mission. One selling point is that modest donations can bring Avery Pellicano and Aidan Andrews a big smile to a child. In just nine months, the group has distributed 300 birthday boxes. In November, Allison received the Youth in Philanthropy Award from the Association of Fundraising Professionals California Capital Chapter.

Germ-Zapping Robot Aims to Stop Infections

T

he strains of bacteria that cause infections like C-Diff and MRSA are as resistant as they are unforgiving. No matter how carefully housekeeping staff work to eliminate the bacteria that cause these and other Hospital Acquired Infections (HAIs), nationwide 750,000 patients are infected and 75,000 die at acute care hospitals each year. To reduce the incidents of HAIs, Marshall Hospital recently acquired the Xenex Lightstrike robot, which employees named “Flash” for the bright pulses of UV-C light it emits to kill the superbugs. “On top of the meticulous cleaning our housekeepers do every day, we

now have this germ-zapping robot as an added layer of protection for the health and well-being of our patients,” Housekeeping Director Kelli Williams said.

“It gives us peace of mind to know we are doing everything possible to care for our patients.” The robot has a 99.9 percent success rate eliminating the superbugs that encounter its germ-zapping rays. “The robot levels the playing field. Our number one goal is to stop the pain and suffering caused by these infections,” added Nina Deatherage, Marshall’s Lead Infection Preventionist.

e have a tradition. On Christmas Eve, my now adult children receive autographed copies of the books I have published during the year. I then read the stories, often about them, aloud. Last Christmas eve I read a very moving story about Kurtis. The story took place at Marshall Hospital about 39 years ago. The events changed my life‌FOREVER!


Why, indeed, would someone adopt the most severely abused child to survive in the United States at the time of his placement? Kurtis had been abandoned by his birth parents; adopted by a biological aunt and uncle, where he was hit over the head with a chair, placed naked on hot stove burners and dipped in scalding water. Kurtis was 23 months

old when he moved into my heart on January 16, 1978. He was 15 months old when the abuse took place. There are so many answers to Kurtis’ question — all might be legitimate on any given day: naiveté, arrogance, desperation, fear, compassion, love, but Kurtis wanted facts. I explained the process of county adoptions in the 70’s. It wasn’t catalogue shopping, as it tends to be today; how we went through the process, then trusted God to give us the child He had planned. In spite of my nursing background, Kurtis’ physical disabilities overwhelmed me at first. The requirements for home teachers,

You see, Dr. Dixon saw me and Kurtis right then — a weeping mother and her physically and developmentally disabled child. Did I fill out paperwork? No! Did I pay a bill? No! Did anyone ever ask? No! This kind of compassion carried over to the care we received at Marshall Hospital during Kurtis’ many stays there. We were consistently treated with empathy and understanding. While we did ask to have our employer provided insurance billed first, Kurtis also had MediCal. No one ever treated us like we were lesser, questioning our use of services. There was never any hassle over charges, copays, deductibles or fees. Sacramento friends suggested I take Kurtis to a big name hospital in the valley for his surgery. They could not possibly know the trust and faith we had in Marshall. Marshall knew Kurtis, his story and loved him. It showed. My circumstances have changed. I am now in a position to give back. Kurtis

and I have discussed what should be done with my estate after it provides for me and continues to provide for him until the end of his life. We hope this one million dollar gift to the Marshall Foundation will allow Marshall Hospital to continue their tradition of compassion and hope.

hilanthropy is defined as “the love of humankind.” In 1986, President Ronald Reagan first proclaimed a National Philanthropy Day® and communities across the globe have celebrated by hosting events to recognize those engaged in giving to others. Recently, National Philanthropy Day® was celebrated for the first time in El Dorado County in order to celebrate individuals who make our community stronger. El Dorado County recognized and paid tribute to outstanding achievements by individuals, corporations, and youth whose generosity created significant impact on the quality of life in El Dorado County. The Youth in Philanthropy award was presented to Taylor Smith, a sophomore at Oak Ridge High School. Taylor has been an active volunteer with Hands4Hope, where she has worked to provide clothing, toiletries and food for the homeless; hand made blankets for foster children, and toys for needy children. The Outstanding Corporation in Philanthropy went to the Shingle Springs Band of Miwok Indians. The Tribe makes a meaningful difference in the lives of its members, employees and the citizens of El Dorado County through financial contributions, volunteerism and community involvement.

Battling Opioid Abuse in El Dorado County

Community Organizations Get an Assist of counseling for those at high risk. Another grant went to El Dorado High School to continue facilitating the Brief Intervention Program that addresses the gap between treatment need and treatment availability. The program supports the students to stay in school, and on average reduces drug use by 64% while increasing academic performance by 75%. With this grant, all El Dorado High School students are served through assemblies and other high school activities about drug and alcohol treatment prevention.

Now declared as a national public health emergency, in El Dorado County about a dozen people die of opioid overdose each year, while many others continue to seek emergency care and require hospitalization. Sadly, the epidemic of addiction makes a vivid anguishing impact on families and communities. Dealing with a

public health emergency also requires resources and money. It will call for laser-like business execution to be effective. That’s the passion that drives the leaders of Marshall Foundation to make an impact by taking the necessary actions to save lives. The good news is recent Community Health Grants from the Foundation provided substance abuse education totaling over $32,000 to local organizations seeking to make a difference. Help went to grass roots organizations like Bipolar Insights for classes addressing self-medication, illegal drugs and problems with drug addiction. The dual diagnosis of mental health and substance abuse is a challenging one. This grant will provide needed resources for one year

In El Dorado County, numerous agencies and individuals are working, together and independently, to raise awareness and resources to handle this tsunami of addiction. From the owners of Ella and OBO, Selland’s Market-Café now has three locations, including one on Broadway and their flagship in East Sacramento. The El Dorado Hills spot, which is tucked inside Town Center, is the perfect brunch destination during a day of shopping or before catching a matinee at the nearby Regal Theaters. The brioche sandwiches are always divine, as the bread is warm, buttery, and fluffy on the inside with a golden crust. My favorite is the bacon, egg, and cheese variety with peppered bacon, fluffy scrambled eggs, cheddar cheese, fresh tomatoes, and green onions. With an amazing combo deal for lunch, you might just want to stop in after the movie, too; for $9.50, pick your choice of any two items: a cup of soup or chili, 1/2 cold sandwich, cold side, or variety of small side salads.

Savory Crêpe

Here is the ultimate test of willpower: Order one of Julian’s exquisite savory crêpes, perhaps the Early Bird with bacon, melty mozzarella, and scrambled eggs; or the Turkey and Pesto with roasted turkey breast, fresh tomatoes, and pesto sauce. All of them are “served with a side of fruit salad until 10:30 a.m. Afterwards served with mixed greens salad with feta cheese and housemade balsamic vinaigrette.” Following your last bite, but before the final sip of coffee, tell yourself you’re not going to order and devour one of their glorious pastries gleaming at you from just a few feet away. It can’t be done…by me at least.

A Folsom tradition for over 25 years, Coffee Republic is a down-to-earth, family-owned and operated eatery serving sandwiches, salads, unique sweet teas, and espresso drinks. They also serve some of the best (and most budget-friendly) breakfasts in town. Offering a plethora of freshly baked bagel subs, including pesto pizza, feta, and jam; and (my favorite) egg, tomato, avocado, and mushroom, with your choice of bagel (I recommend bacon Swiss, spinach Parmesan, or garlic Havarti). Not a fan of mushrooms? Try the spicy sausage, pepper jack, and avocado sammie, or the turkey, brie, and onion variety. With cozy seating both indoor and out, the patio is my personal preference, with its large umbrellas and fun checkerboard tabletops.

Breakfast features fan favorites like egg bennies, pancakes, French toast, and signature omelets. Try their three-egg omelet with farm-fresh eggs, diced Cajun sausage, cheddar cheese, hearty seasoned country potatoes, and your choice of toast. Pets are welcome here, too, so be sure to check out their “Purple Pooch” menu for your furry friend!

I love a good torta as much as I love a good portmanteau (one is a Mexican sandwich, the other a new word formed by joining two others; i.e., Mex-quite). I actually like the torta better, in this instance. Barbecued pulled pork on house torta bread (bolillos) with a house salad or French fries are included in this under $10 fiesta. The bolillos are what makes the torta so popular—crusty outside with a soft, sweet, white bread inside. Stuffing that with the perfectly prepared pork completes the TexMex union. Stop on by…you don’t have to take my word for it.

During the week, the restaurant serves up several screaming lunch specials for under $7. Their carnitas plate is especially exceptional and features slow-cooked pork alongside rice and refried beans, sour cream, guacamole, and pico de gallo, with your choice of flour or corn tortillas. You could also choose chicken or cheese enchiladas, chicken tacos, and a burrito or burrito bowl. Did we already mention the balcony? From the dark interior, dart boards, and “Pub Fare Menu,” the feeling that you’re sitting in a strip mall in El Dorado Hills evaporates as fast as the bubbles in your beer…unless it’s a dark Irish stout. The “Lunch Portion Menu” features Irish pub favorites like bangers and mash, The 36 Reuben, and Mary’s Chicken and Brie sandwich; all include soup, salad, or fries— and all are only $8.95. The bacon-wrapped meatloaf caught my eye immediately—possibly because of its bacon and beef bathed in Guinness gravy…and I’ll take my Guinness any way you serve it!

Pad Thai

The most famous Thai dish would probably have to be pad Thai. It’s almost every American’s first exposure to Thai food, and yet few of us know much, if anything, about what’s in it other than noodles, meat and/or tofu, bean sprouts, peanuts, and some kind of sauce. It’s the sauce that sets good pad Thai apart for me. The combination of fish sauce, palm sugar, tamarind paste, water, and salt create the definitive, authentic pad Thai. Paradise Thai has mastered its version, garnering praise across social media sites and local food blogs. And if that isn’t testimonial enough for you, my octogenarian mother loves it.

Visconti’s offers four veramente buono (“really good”) paninis for lunch: mortadella and provolone; salami and provolone; eggplant, red bell peppers, provolone, and pesto (my favorite); and marinara with mozzarella. If you don’t already own your own panini press, save the $200 and let Visconti’s make you a bellissimo one.

Among the available offerings is their house-made pork shu mei—five, bag-shaped wonton dumplings (representing good luck gifts, I’m told) stuffed with ground pork, ginger, garlic, and chopped scallions, then steamed and served in the customary bamboo basket. A soy-brown sugar dipping sauce complements the savory dumplings. This is an excellent starter by itself or as part of the complete “dim sum basket,” which also features crab rangoon and chicken pot stickers.

Mix and match to your palate’s content. Everything tastes fresh, is cooked in-house, and is of restaurant quality. Pay at the register then dine inside or out on the patio to enjoy your meal and engage in a little people-watching!

Pasta! Pasta! Pasta! My little grandson Nolan is known to shout that at the top of his lungs whenever I ask what he would like to eat. That’s fine with me, especially if we’re at Strings in Folsom where a pasta lunch with minestrone soup or a salad starts at $8.99. We both like the tortellini alla panna (he calls them “little pillows”), which are filled with meat in a marsala garlic cream sauce alongside mushrooms and smoked ham. If Nolan could scream “deliciosa,” I’m sure he would, but his mom won’t let me teach him that one.

On rainy days, there’s nothing like a big bowl of steaming soup at lunch to leave you warm and fuzzy, and Sunny Garden serves a delicious and generous helping of it with their house special noodle soup. Starting with a heap of lo mein noodles in a light broth, the chef adds succulent shrimp, white meat chicken, and pork, along with carrots, zucchini, mushrooms, snap peas, bok choy, and white and green onions. Bring the heat with a little sriracha, and you’ll be satisfied well into dinner. Sunny Garden also offers amazing lunch specials Monday through Saturday that are all under $10 and include either a crab cheese puff or egg roll, with your choice of chow mein or rice (fried or steamed white or brown). With entrées like Thai spicy basil beef, Malaysian curry chicken, and dry braised string beans with tofu and spicy scallions—you’ll have a hard time choosing just one!

Too bad I didn’t go to college in Folsom; I would’ve minored in bowling and pizza. Did I mention there’s also a casino? Pizza and Texas hold'em anyone?

Prohibition Wine Lounge has the remedy with their $9 “shareable” Jezebel baked brie. It pairs with almost any variety, no matter the color or complexity. Smoky bacon, a hint of maple syrup and coffee, with a balsamic shallot jam finish over the warm, creamy brie stand up as well to a young Amador Sangiovese as a fragrant Napa Pinot Grigio. Don’t stay home because you’re afraid to bust the budget; there’s a Jezebel waiting in Prohibition.

Combining their two family-owned restaurants, El Dorado Saloon and Sauce’d Pizza and Cocktail House, the owners recently unveiled the reinvented El Dorado Saloon and Grill. Gone is the mechanical bull in the bar, but the same great service, local live music, and mouthwatering mules are here to stay. They’ve also introduced an exciting new menu that runs the gamut from Italian, traditional Southern, American fusion, and Mexican influences. For lunch or dinner, a hearty bowl of their house chili is a welcome change from the traditional burger with fries and features certified Angus ground beef and chunks of grilled tri-tip with chili beans, all topped with onions, cheddar cheese, and a dollop of sour cream. With plenty of cozy seating inside, El Dorado Saloon and Grill also boasts a pet-friendly patio in case you want to bring your favorite furry friend and enjoy your lunch in the sunshine.

Whenever available, I start every meal out with angel wings— part wing, part tempura-fried Thai chicken sausage, with a convenient built-in handle. Boneless except for the wing tip, they’re stuffed with ground chicken, ginger, garlic, carrots, and rice noodles. They’re ridiculously labor-intensive to make, and a rare, if not vanishing commodity in most Thai restaurants. I made them for a wing cook-off once and was almost disqualified at my own contest (it’s a long and hotly disputed narrative). Chantara serves them with a honey plum sauce that’s unarguably delicious. Factoring the labor involved plus the flavor element, they’re a steal!

I remember my last time eating at Hisui Sushi and how impressive the chef’s knife skills and food presentation were. As I sat and perused the menu this time, I saw more evidence of the same. Steady hands and laser-eye precision— no wonder I write about food. As the chef deftly assembled my Big Bang Roll (deep-fried shrimp, spicy tuna, crab, avocado, and tempura flakes), I was in awe of the evolution of the simple California Roll to the techniques and flavor combinations on display here. Crunchy tempura, perfect vinegar rice, creamy avocado, and fiery tuna; OK, enough reflection, let's get it in the soy sauce and wasabi!

The 10-inch tandoori chicken is indeed unique—with a basil pesto sauce, mozzarella, grilled chicken, red and green onions, garlic, cilantro, a drizzle of tandoori sauce (a secret family recipe), and fresh squeeze of lemon juice. With a nice, thin crust that’s chewy yet crisp, your mouth will fill with delicious Indian spice and tons of glorious garlic. For even more heavenly heat, be sure to ask for a side of their spicy ranch for dipping. For milder palates, try their BBQ Hawaiian, or their namesake SacPizzaCo with traditional marinara, mozzarella, pepperoni, sausage, olives, mushrooms, green peppers, and freshly cut tomatoes (both $8.49).

Pad Kra Praw is a stalwart of Thai restaurants. It’s a piquant stir-fry dish with an intense bouquet of fragrant basil from Thailand, mixed with onions, garlic, and bell peppers with a coating of fish sauce over your choice of chicken, beef, pork, tofu, or vegetables. It has that mouth appeal derived from wok-frying garlic, chilis, and shallots in oil over high heat. River Thai adds the amount of heat you like, so be sure to let them know ahead of your order. Generally speaking, it’s served over white or brown rice, but it’s equally fantastic over noodles.

We’re fortunate here in Northern California to have access to quality pears, which makes us even more privileged to have those delicious, crisp slices grilled in a salad with creamy goat cheese, candied walnuts, and mixed greens. Chicago Fire’s house-made balsamic dressing is the perfect pairing and provides a tangy punch to a refreshing meal or a satisfying starter. I’ve eaten here multiple times, and the grilled pear salad is always the first item to hit the table. (True story: I’ve even DoorDashed it.) It comes with their garlic foccacia bread but I recommend ordering extra ($6.95) for a complete meal.

or those who believe like I do, that there’s more to Japanese food than rolled rice cylinders covered in four different sauces—I’ve got a place for you. I feel like I should keep it a secret, but it’s much too late for that. Aji Japanese Bistro in El Dorado Hills is local Chef/Restauranteur Russell Okubo’s jewel, and his offerings shine like a polished pearl. The moment you enter Aji, there’s a depth and warmth you don’t experience in an average sushi house or most other establishments for that matter—other than possibly a fine dining steakhouse. Appointed in dark hues and accented by white birch, with scenic outdoor vistas, it’s a perfect venue for an intimate dinner or lunch with friends.

Chef Okubo’s seasonal menu immediately captivated me with headings like “Trust,” “Street Food,” and “Tacos and Sliders.” I sampled the panko, asparagus, and garlic veggie tacos from the latter list, and was presented with a creative vegetarian take Street Tacos on its Mexican cousin. The panko-coated asparagus, pickled cucumber and red onion slaw topped with sesame seeds, chopped green onions, and a citrusy, creamy emulsion of garlic miso sauce in a corn tortilla was a great starter. Next, I wanted to try the chef’s take on ramen—Spicy Garlic Chicken Ramen to be exact. One day later as I’m writing this, my nose begins to run, and my mouth becomes a sauna anticipating the leftovers I covertly stashed away from companions. I don’t know what to start with here—the fiery sriracha-infused broth or the grilled, slightly charred thighs. I’ll just say this: If you’re a lover of all things ramen and spicy, Aji’s got what you need in one beautiful bowl. OK, in the parlance of one of America’s great linguists Lawrence Peter Berra (aka “Yogi” Berra), “When you come to a fork in the road, take it.” Thus, when given the choice of braised short ribs with sweet chili, Thai basil, and panko eggplant; or Chilean sea bass grilled in misoyaki with garlic wild mushrooms and asparagus...I said “Yes.” And so should you given a choice. The beef ribs—four to a serving—were large, tenderly braised, and presented in a sweet

chili sauce atop a surprisingly delicate panko-fried eggplant plank. The Chilean sea bass was another of my favorites owing to the mildly sweet yellow miso glaze (misoyaki) and the amazingly fresh, wild mushrooms in garlic anointing the delicate fish. Of course, Aji also does craft cocktails, sushi, sashimi, and maki rolls, too (quite well, thank you!). // For the last few months, co-owners Juan Carlos and Nubia Galdamez of Nuby’s Café have been keeping the neighborhood

content and full with a unique mixture of homemade Mexican and Salvadorian dishes. Tucked away in one of Folsom’s strip malls, the cafe is truly a hidden gem. But despite its newbie status, Nuby’s is quickly becoming famous for their authentic pupusas. With this in mind, I knew I had to indulge in them. After much deliberation over which variety to order (they have six to choose from!), the friendly chef finally coerced me into getting the Mixed Pupusa, featuring a thick, griddled corn cake stuffed with a blend of savory pork, melty cheese, and beans. The traditional Salvadorian dish definitely lived up to the hype, but with so many other options on the menu—tacos, quesadillas, burritos, tortas, and more—I also had to try the Carne Asada Fries. Dripping with homemade queso and loaded with juicy steak, fresh tomatoes, onions, sour cream, and cilantro, one bite was all it took to know I made the right choice. I washed all the deliciousness down with the fresh flavors of a Piña Agua Fresca and couldn't help but anticipate my order for next time. Seasonal Recipe and Beer Pairing BEEF AND GUINNESS STEW 2 tbsp. all-purpose flour Salt and freshly ground black pepper 1 lb. 2 oz. stewing steak, cut in 2-inch chunks 2 tbsp. canola oil, plus extra as needed An Irish Country Cookbook by Patrick Taylor and Dorothy Tinman (Forge Books, 2017, $32.99)

2 large onions, chopped 2 large carrots, peeled and chopped 1 parsnip, peeled and chopped 8 oz. Guinness 34 oz. beef stock 1 small bunch fresh thyme

Season the flour well with salt and pepper and coat the steak with the seasoned flour. Heat the oil in a Dutch oven or pan with a lid over medium-hot. Gradually add the meat to the hot oil and brown on all sides. Don’t add too much at a time. When all the meat has been browned, remove it from the Dutch oven to a plate.Add the onions, carrots, and parsnip and a little oil, if necessary, to the pan. Don’t worry about the brown caramelized remains of the meat, as this all adds to the flavor. Stir the vegetables around for a few minutes and then return the meat to the pan. Add the Guinness and cook, stirring to scrape the remains from the bottom. Add the stock and the thyme and simmer slowly for

2-3 hours. Remove the lid and the thyme stalks and cook for a further 30 minutes or so (until the liquid has reduced by about half). Serve with Yorkshire pudding and colcannon (for the recipes, visit stylergbr.com). Serves 4. Author’s Note: I like to make the stew the previous day, because I think it improves the flavor.

Red Door was not the first escape room in the business, but we took bits and pieces from all the best escape rooms and crafted our own style. We’re the only Christian escape room in the U.S. and believe in people over profit. Our episodes stand out for being fun and immersive, not scary or frustrating. We have multiple rooms in each episode and strive to bring a sense of accomplishment to everyone who comes through our doors.

I have many years of experience as a professional risk manager. For over 15 years, I was vice president and director of insurance for ABM Industries, Inc. After retiring from that position, I relocated to the Folsom area and decided to start an insurance agency so I could give locals and small business owners access to the same professional expertise normally available only to major corporations.

How are you involved with both the community and your customer?

What was the first job you ever had, and what did you learn from the experience?

Our business is all about creativity. We believe that everyone is creative and try to bring that out in customers when they come play. To that end, we creatively partner with local businesses, organizations, and nonprofits and have hosted blood drives, non-profit events, bible studies, and many proposals and prom requests.

I worked at a mink ranch and learned that hard work is always fun.

Why is your staff the best in the business? Our staff truly sets us apart. We pride ourselves on our culture rooted in people, growth, truth, servant leadership, and joy.

What’s your biggest job perk?

How are you involved with both the community and your customer? I’m involved with Hope Presbyterian Church, Rotary International, and numerous other charitable organizations.

What life accomplishments are you most proud of? I flew hundreds of combat missions in Vietnam and was awarded three Air Medals and the Presidential Unit Citation.

Watching grown men celebrate when they escape our episodes. We sometimes just sit and listen to the laughter and cheering as people escape—that’s what keeps us going through the tough times.

Where do you go when the going gets tough?

What’s your favorite place to eat out locally?

I speak Vietnamese.

We love our neighbors—Fort Rock Brewing for drinks and The Old Spaghetti Factory for food. We also love to eat at Karen’s Bakery and Café or Samuel Horne’s Tavern.

If you could meet someone living or dead, who would it be and why? Thomas Edison or Elon Musk—mostly to pick their brain around awesome puzzle ideas.

God is always there if you seek his guidance.

What’s your hidden talent?

What’s your biggest job perk? Meeting a lot of really great people.

What’s your favorite place to eat out locally? Pho ABC.
