According to a Harris Poll, pizza is America’s favorite comfort food (take that, mac & cheese). Not that this news should surprise us; after all, isn’t pizza most people’s go-to grub for just about every occasion—be it game day, a sleepover, end-ofyear sports party, evening of imbibing, or simply an “I don’t feel like cooking” night? I know my relationship with pizza has always been pretty passionate. From the elementary school days of cheese “rectangles” (where I always asked, ahem begged, the lunch ladies “You better cut for an extra piece), to my experience living in Iceland the pizza in four when I did as the Icelanders pieces because do and dipped my cream I’m not hungry cheese-covered creation enough to eat six.” into jam (the sweet-savory —Yogi Berra combo was actually quite scrumptious) and that one time in Alaska I ate pizza with reindeer sausage (when in Alaska…right?)—the truth is, any way you slice, or top it, pizza is a perennial pleaser. In this month’s feature, “The Slice is Right” (page 41), we present you with 20 of the region’s most praiseworthy pies—everything from the classic to the obscure, and the “healthy” to the hefty—along with deals, discounts and other “in the know” tips for each place. I suggest making it your mission to try all 20, and then reporting back with your favorites. Local food blogger Bella Karragiannidis (@ful.filled) also shares her recipe to make an almost-too-pretty-to-eat offering with pea pesto, ricotta, shaved asparagus and basil that you’ll love to pizzas. Though a slice a day may keep the sad away, don’t forget that an apple a day keeps the doctor away. Luckily, most of Apple Hill’s bakeshops and farms open Labor Day weekend and—from my personal experience—September is the prime time to visit (before the crowds become unbearable and the weather is still golden and delicious). For a taste of our favorite things to see, do and eat, flip to page 14. Finally, if you need a vacation from your vacation this summer, I suggest checking out Health & Wellness to read about Nor Cal wellness retreats (page 24). From a silent stay in Vacaville, to healing hot springs, and safari tents perched on the Pacific, a visit to one (or all) of our suggestions is sure to recharge your batteries. As Anna Quindlen said, “Ideas are like pizza dough, made to be tossed around,” so when Tom ofTom’sTake (page 66) announced that this month would be his final column, we sobbed, then put our heads together to brainstorm what’s next. A
s their name suggests, Simple Creation started organically, with brothers Travis Olmos on drums/vocals and Zach Olmos on guitar/ vocals; they later added Alex Giranis on bass and Brett Duewel on keyboard. As a noteworthy addition to the region’s reggae scene, they’ve shared the stage with prominent bands like The Green and Inner Circle, and delight in
performing live for fans. “Having all grown up in the area, it’s an amazing feeling to be able to sell out venues full of local fans,” says the band. Since beginning in 2008, the guys have dropped three recordings—their EP Blue Dream and two full-length albums (Reign on the Mountain Top and Just Another Pirate), both self-recorded. This month, keep an eye out for the release of their fourth album Golden Roots. HLB: WHO OR WHAT HAVE BEEN THE MAJOR INFLUENCES ON YOUR SOUND? SC: We play modern-day roots and reggae with touches of dub. Some of our biggest influences include Bob Marley, Don Carlos, Akae Beka, Kevin Kinsella and Gregory Issacs, among others. HLB: WHAT DO YOU ENJOY MOST ABOUT THE LOCAL MUSIC SCENE, AND WHERE ARE YOU ITCHING TO PERFORM? SC: Being able to see so many different walks of life come together, enjoying the good vibes, and unifying them through reggae music. We love to jam at Powerhouse Pub in Folsom, as well as Country Club Saloon in Loomis. We had the privilege of playing at the California Roots Music and Arts Festival in 2013, and we’d love to be back there, [in addition to] Red Rocks Amphitheater in Colorado, [where] all the big reggae bands play. HLB: WHAT’S YOUR MOTTO AS A BAND? SC: Kyle McDonald from Slightly Stoopid told us, “just make sure you’re always having a good time.” It really speaks true to the nature of our band and us as musicians. We strive to always provide a positive message and use our music to bring good-natured enjoyment to all. HLB: WHAT’S IN STORE FOR THE FUTURE? SC: We would love to go on a national tour soon, and perform at more out-of-state festivals. We were recently in Montana and would love to make our way to the East Coast. oseville is cool. Literally. More than 20 years ago, the city started a shade tree program to expand its leaf
canopy —the spread of treetops across
the landscape. Through the program, its administrator, the Roseville Urban Forest Foundation (RUFF), has added more than 16,000 trees to the municipality’s yards, parks, urban areas and open spaces. According to the Environmental Protection Agency, that’s definitely cool, as trees can lower the surface temperatures under them by as much as 45 degrees. Funded by a contract with Roseville Electric, along with grants and donations, the nonprofit RUFF operates with one parttime staff member, active board members and a lot of dedicated volunteers, many of whom have expertise in some aspect of arboriculture and tree care. “Mostly, though” says Katie Palatinus, a retired science teacher and RUFF’s treasurer for the past 20 years, “we all have a passion to want to continue to increase and maintain the health of Roseville’s tree canopy.” And a healthy tree canopy means a healthy city, Palatinus says. She cites research that supports a slew of benefits beyond the cooler environment: improved mood from a meditative effect of green spaces, higher grades on tree-covered campuses, a lower crime rate, increased property values, reduced runoff, lower cooling and heating costs, and improved

The later of which, according to Palatinus, occurs because trees produce oxygen, and remove carbon dioxide and other major air pollutants from the atmosphere. “Every time we cut down a tree or burn a tree, the result is exponential,” she says. The centerpiece of RUFF’s mission is to not only improve the tree canopy in Roseville, but also demonstrate the value of trees and how to grow them. For the shade tree program, a RUFF volunteer visits homes, either in person or virtually, and recommends species and planting locations for yard trees. The homeowner buys the trees and can apply for a rebate up to $50 of the cost. The organization also helps care for the trees with education and site visits, if necessary. A lot of trees suffered during the drought, Palatinus says, but after the wet winter and RUFF’s encouragement to have homeowners add water-conserving drip lines

or soakers, many failing trees are now returning to health. In the city’s open spaces, RUFF works with Roseville’s urban forester to restore some of the oak woodland that once thrived there with mass plantings of appropriate species—primarily valley, blue and live oaks—and stewardship. The organization also educates the community by conducting pruning and irrigation clinics, and involves youngsters by purchasing tree-related library books and recruiting volunteers to read them to elementary schoolers. Create a Hermès-Inspired Suite by KERRIE L. KELLY, ASID

I
n a recent project, we were tasked with crafting a space inspired by the client’s favorite fashion designer: Hermès. Thrilled at the chance to use
an elevated motif filled with rich colors, classic patterns and an ode to French fashion, our team got to work creating scenes that the couple would be inspired by, as well as spaces that were family-friendly and fashionably functional. In the downstairs portion of the home, we worked with the floor plan to create separate quarters between the entry, living room, dining room and kitchen. Inspired by the designer, we incorporated tones of chocolate brown and bright orange to add dimension and a luxe feel, and balanced the bold palette with metallic details like brushed gold and polished mirror finishes. To make the space feel more livable, our team used a layering effect with area rugs—a large natural fiber rug as the base, and a rich hide rug on top. This doubled-up design balanced the plush details of the space via the hide, with the more approachable aspects like the natural fiber. The master suite and guest spaces were kept neutral with hints of the Hermès-inspired color palette of orange, brown, cream and gold. Artful details like a metallic framed mirror, bright orange leather chair, and artwork featuring different depictions of horses added some personal touches. Our favorite part about designing these areas were the added thoughtful elements—piles of cozy pillows on top of the bed, lamps shaped like trophies, and beautifully crafted wainscoting acting as a beautiful yet simple backdrop. THE ORIGIN OF PIZZA Kids ask the darndest things, but when it comes to “Where does pizza come from?” it’s easy to assume you know the answer. According to wonderopolis. org, an educational resource created by the National Center for Families Learning, the truth depends on a number of factors. For starters, how do we define pizza? The preparation of oven-cooked Queen Margherita flatbreads dates back to ancient times in the Middle East, while ancient Greeks and Romans popularized the use of toppings like olive oil and spices. The invention of pizza as we know it today—a combination of tomato sauce, cheese and toppings—is attributed to Raffaele Esposito of Naples, although historians have noted street vendors were selling flatbreads with toppings years prior to his creation of the Margherita in 1889. It was that year when Esporito famously prepared a pizza with fresh tomatoes, mozzarella cheese and basil for King Umberto I and Queen—you guessed it (!)—Margherita of Italy.

PEA PESTO PIZZA WITH RICOTTA, SHAVED ASPARAGUS AND BASIL
Recipe submitted by Bella Karragiannidis of ful-filled.com; @ful. filled FOR THE PEA PESTO: • 16 oz. (1 lb.) fresh peas (or thawed if using frozen) • 1/4 cup roasted unsalted pistachios, shelled • 1/3 cup olive oil • 1/4 cup fresh mint leaves • 1 clove of garlic, roughly chopped • 1 tsp. lemon zest • Juice of 1/2 lemon • 1/4 cup Parmesan (or omit to make dairyfree) • Salt and pepper, to taste Begin by blanching the peas in boiling water for 2 minutes and then move them to an ice bath to chill. Remove the peas from the water once chilled. Add the chilled peas, mint, olive oil, lemon zest and Parmesan (if omitting Parmesan add a generous pinch of salt). Pulse in a food processor until ingredients are well combined, but not smooth—you want the pesto to have a bit of texture. Taste the pesto for seasoning; add salt to taste as necessary. Cover and chill in the refrigerator until you’re ready to serve. Pea pesto will keep in the refrigerator for up to 5 days. FOR THE PIZZA: • 16 oz. (1 lb.) pizza dough + flour for dusting • Pea pesto (see above) • 16 oz. ricotta cheese • 1 bunch of asparagus, shaved and chilled in an ice bath • Extra virgin olive oil • Parmesan cheese • Lemon zest • Red crushed pepper • Fresh basil Preheat oven to 500°F (if you have a pizza stone, preheat the oven with the pizza stone in the top 1/3 of the oven). Shape pizza dough into 1 large round or 2 small rounds, flouring your surface as needed to keep the dough from sticking. Transfer shaped dough to a sheet of parchment paper. Spread dough with
pea pesto, leaving about 1 1/2 inch of dough at the edges bare. Dollop ricotta over the top of the pesto. Place pizza with parchment paper on top of a pizza peel and slide it into the oven onto the pizza stone (if not using a pizza stone, place pizza with parchment onto a baking sheet). Bake pizza for 7-10 minutes until crust is golden and bubbly. Remove pizza from the oven and top with shaved asparagus (drain asparagus from the ice water first) followed by a drizzle of olive oil, Parmesan, chili flakes, lemon zest and fresh basil. Slice and serve.

hat do you do for an encore when you own a successful solar business that includes a new showroom next to Studio Movie Grill in Rocklin? Why not open a gastropub right next
door and make the wall—not a door, the wall—between the two spaces swivel open to allow more room for the brew pub’s patrons on busy nights? Well, that’s exactly what The Brass Tap’s owners— Ed and Chad Fralick and Chad’s wife, Jackie—decided to do, despite not having previous restaurant or bar experience. “It was something we’ve wanted to do for a long time,” Jackie told me over a flight of beer. Coming in under the franchise umbrella gave the construction-oriented partners a leg up on things like menu selection. I tested a few of the offerings, starting with their popular prime rib nachos. Made with beer cheese (more of a dip or spread), plus s h r e d d e d c h e d d a r, scallions, Peppadew peppers and jalapeños, with sour cream and salsa on the side, it was remniscent of a Philly cheesesteak on tortilla chips, which is hard to go wrong with— especially when paired alongside one of their Tater Tots cold local brews (they have 48 rotating taps) in your free hand. Of course, I had to try their version of a brewhouse staple: house-made tater HOURS: 11:30 a.m.midnight (daily) tots. Opting for the “loaded” version means they’ll come topped with crispy TRY THIS: Pub Burger, Pretzels with Jalapeño Beer bacon, beer cheese, Peppadew peppers, Cheese, Prime Rib Nachos, cilantro and onions. Saffronn Hut // Saffronn Hut is an Indo-Mediterranean restaurant that offers a wide range of tantalizing Middle Eastern and South Indian
fare. My recent visit began with a serving of steaming masala chai that wasn’t overpowering yet bold enough to kick things off. I moved on to some flaky, crisp flatbread called paratha and a bowl of piping hot chicken curry. It was Indian-style comfort food at its finest. The curry was a delicate stew from the Indian
state of Kerala that’s made for large special occasions and cozy family dinners alike. It contained fragrant spices, thick coconut milk, potatoes, and chicken that was cooked low and slow in order to make it melt-in-your-mouth tender. The rich meal was accompanied by a fresh green salad that cut through the richness of the gravy and a lime and date Indian-style pickle that was sweet, tart and mildly spicy all at once. To go with this array of flavors, I ordered an aromatic iced rose milk that was topped with chia seeds and turned out to be a cooling interlude in between spoonsful of savory stew. Aside from the authentic South Indian cuisine, Saffronn also serves mouthwatering shawarma, grilled chicken, and a variety of sweets that are sure to give you a sugar high. If you’re looking for a culinary adventure, I suggest you pay Saffronn Hut a visit and introduce your taste buds to a whole new world of beautiful, enticing flavors. CHOCOLATE KILLER COOKIES These are called killer cookies because they’re so tasty you could eat them until you pop; hence, murder by chocolate. But you won’t die, because the fire from the cayenne pepper will restart your heart, so fire up the oven and bake these cookies. They would make the Grim Reaper envious. 2 oz. unsweetened chocolate 1/2 cup butter (1 stick), softened 1 cup sugar 1 tsp. pure vanilla extract 1/2 tsp. ground cayenne pepper 1/2 tsp. salt 1/2 tsp. baking powder Biker Billy’s Freeway-a-Fire Cookbook by Bill Hufnagle (Alright Productions, 2000, $19.95)
1 extra-large egg, beaten 1 1/4 cups all-purpose flour 1 cup white chocolate chips 1 cup chopped nuts (optional) Canola oil or butter-flavored cooking spray
Preheat the oven to 375°F, and grease two cookie sheets. Fill the bottom half of a double broiler (not quite halfway) with boiling water and place over medium heat. Every so often, check the water level to ensure the pot doesn’t boil dry. Keep another pot of water boiling on the stove so you can add water if necessary. Heat the unsweetened chocolate in the top of the double broiler. When the chocolate has melted, remove the pot from the heat (the chocolate will stay melted over the hot water until needed). *If you’re preparing the cookies by hand, in a large bowl, mix the butter and sugar together with a wooden spoon until creamy.
Add the vanilla, cayenne pepper, salt and baking powder, and mix together well. Add the melted chocolate and stir together until well blended. Add the egg and blend until smooth. Add the flour, 1/4 cup at a time, mixing well with each addition, until a dough has formed. Add the white chocolate chips and the nuts, if using, and mix until they’re evenly distributed throughout the dough. Form a piece of dough into a 1-inch ball, flatten it between your palms, and place on the cookie sheet. Continue with the remaining dough and arrange on the sheets, with a 1/2-inch space between them. Bake 8-10 minutes for chewy cookies, and 10-12 minutes for crispier cookies. I specialize in doing hair and makeup for momentous events. When I was in cosmetology school, I was one of only a few students who loved when girls came in to get glammed up for prom. I found I loved styling hair and doing makeup a lot more than cutting and coloring; after I graduated, it became my specialty. I started my own company and went full-time almost 10 years ago. I feel so blessed to do what I love.
CycleBar is a premium indoor cycling studio that offers intense 50-minute classes led by high-energy instructors. We provide the shoes, towels, water bottles and tons of amenities—all you need to bring is your workout clothes! It's not only a full-body workout, but the instructors’ playlists allow you to ride to the rhythm of the music and forget your worries. My dad and I found this business together when looking at franchise opportunities, and it was something I was already passionate about after going to similar indoor cycling classes in Los Angeles.
Where do you go when the going gets tough? If I can get out of town for a weekend, I love being near water and turning my phone off. If it's just a mini-getaway, meeting up with friends or family for a bite to eat always helps.
What’s your biggest job perk? I get to do what I love for a living and build my schedule around my family; plus, everyone is always happy to see me and even happier when they leave. I always come home from work with a huge smile on my face.
How are you involved with both the community and your customer? We have a platform called CycleGiving where a nonprofit can invite their network to the studio to experience a class, and all the proceeds go to their organization. We’ve also hosted pop-up rides outside at Westfield Galleria. In addition, we sponsor various community events like Run Rocklin and Run4Roseville.
Why is your staff the best in the business?
Yard House for Happy Hour, Mikuni for sushi, and Chando's Tacos for street tacos.
We took our time hiring genuine people who truly fit the CycleBar brand and are passionate about what they do. I spent six months recruiting the best instructors around and pride our studio on having the most accommodating front desk staff.
What’s your favorite local business other than your own?
What’s your hidden talent?
Pressed Juicery. I love stopping by to get a juice or coffee, or taking my daughter there for frozen yogurt.
I wouldn't call it a talent, but I love playing guitar and attempting to sing.
And finally, customer service is…?
Jack's Urban Eats has been my obsession since high school. The Urban Fries? I'll take five to go, please.
What’s your favorite place to eat out locally?
Without my clients, BGorgeous wouldn’t exist. When they’re in my chair, I want them to feel relaxed and important, and know I have listened and will try my absolute hardest to achieve the look they want. Nothing makes me feel better than when a client tells me how gorgeous they feel when I’m done.
What’s your favorite place to eat out locally?
And finally, customer service is…? The most important part of our studio. Customers are paying quite a bit to come in and spend time sweating with us; the least we can do is treat them well. We offer so many amenities that if someone ever forgets something, it's likely we have it (hair ties, water bottles, towels, cycling shoes, etc.).

ell, it’s time to call it a day for Tom’s Take.
Nearly every month since 2007, Style has been kind enough to let me fill these pages with my thoughts, at (roughly) 600 words at a time for a ridiculously generous monthly retainer—which, yes, explains the summer home in Tahiti. Kidding. I still shop at Sears. Regardless, while I’ve generally tried to bring a little humor to this page, the most rewarding months were always about people in our community who deserved a spotlight…people like Brittany Gaines, who hasn’t let a little thing like blindness and cerebral palsy keep her
from graduating high school and pursuing her college degree. Or Jennifer Donchenko, whose Sweet Dreams Foundation adds imagination and fantasy to the bedrooms of children with lifethreatening illnesses who are often homebound. Or Jason Harper, the founder of Character Combine, who believes youth sports are the perfect place to encourage our kids to be not just better athletes but better people. There are thousands more like them too, working and living next to us. They all deserve a spotlight and to me, that’s something to keep in mind: There are far more good people brushing shoulders with us than we realize. People who give their time, creativity, passion (and compassion) to make this region an incredibly special place to raise our families and spend our lives. I wish I would’ve featured more of them. Once I have something, I have a tough time letting go (and if you don’t believe that just check the shirts in my closet). I’m not a very good quitter, so this decision has not been easy. But it’s time to give someone else a turn. You’ve put up with/indulged me more than enough as I’ve prattled on about my life, my family, my pets—my duck. I’m the first to acknowledge that I have a long way to go before I can call myself a decent writer but despite that, I hope some of what I shared hit the sweet spot and made you laugh. I also hope some of it connected emotionally. I know it helped me through some tough times, including the passing of my parents and a childhood friend. And although I’m not a wise person by any stretch, if doing this column has given me any wisdom that I can pass along, it’s this: Embrace life, all of it—the good, the bad, the crazy. Learn from mistakes, hold onto the funny, and never let go of the stuff that touches your heart. Appreciate all of it. It’s a cliché. But it’s still true. And do it now. Because every month I tried to find a quiet eddy in my life where I could wrestle my ADHD into temporary submission and write this piece. And after several years of such, um, forced reflection, it finally hit me just how incredibly fast it all goes by. Hey, I’m a slow learner. But dammit, kids grow. Parents get older. Triumph and failure tag team into and out of our lives. If all we do is stand by waiting for circumstances to improve or our kids to graduate or our lives to get more fulfilling, guess what? We’re gonna miss it all. I still hope to write the occasional freelance piece for Style (especially—hint—about local beer) so I won’t be gone from these pages entirely. Writing is still an itch I’m going to occasionally need to scratch. Or maybe it’s more like a rash. Either way, that’s it. I’m off to Tahiti! Kidding. Sears has a great sale on pants.
