T
he past 10 days I ’ve been on a strict seafood diet. My family is traveling down the Oregon Coast, which means we’re determined to devour as much clam chowder and fish & chips as we can. Is it just me, or do road trips beckon you to eat more (a lot more) and worry less? So far, our favorite spot was in Newport at an unassuming establishment on Highway 101 called South Beach Fish Market. Luckily, the line out the door moved fairly fast, and the place proved to be busy for a reason. Their chowder was thick, perfectly seasoned, and packed to the gills with fresh-caught clams; while the light, crispy coating on the firm, flaky fish paired perfectly with our Rogue Colossal Claude Imperial IPAs. Based on the fact that our twoyear-old inhaled almost half the chips—she’s a French fry fanatic—those clearly were a win, too. Besides the lighthouses, stunning scenery, and cool coastal air, the seafood around these parts is reason enough to return. Luckily, going on an Oregon vacay isn’t necessary to snag an award-winning bowl of chowdah or fresh-caught crab with all the fixin’s. Our region has plenty of mouthwatering fish dishes—inspired from all cuisines and corners of the globe—that are sure to have you hooked. Hands4Hope Youth Board—a group of determined leaders from seven local high schools in El Dorado and Sacramento Counties—organized Miles4Smiles, a virtual walk, run, and/or hike fundraiser whose goal was to bring awareness to domestic violence and raise funds to help those affected by it. In total, the group raised $1,877 for The Center for Violence-Free Relationships’ Second-Generation Program and the Hands4Hope Education Program. According to a recently released article by U.S. News & World Report, Placer County ranks 35th (the highest in California) and El Dorado County 284th on a list of the “500 Healthiest Communities” nationwide. The rankings were based on factors like public health, equity, education, and infrastructure.

Amid the excitement of back-to-school month, we’re taking a moment to cheer the champions of classrooms: teachers. Here are some of the most hard-working, dedicated, and creative among them.
A
business major in college, Daniela Solley struggled to find macroeconomics and taxation interesting. That’s when a friend suggested she change her major to education. “I instantly loved my new classes and when placed in a classroom for field work, I knew I was in the right place,” she says. Armed with a Master of Education in Curriculum and Instruction from Portland State University, Solley moved to the Western Placer Unified School District in 2003 and has worn many hats since— from elementary and middle school teacher to assistant principal and principal. She currently serves on the Leadership Team, Positive Behavioral Intervention and Supports Committee, as the English Department Curriculum Lead, Confidence Club Advisor, and as the newest girls’ golf coach at Lincoln High School. She’s also been an Area 3 Writing Project teacher consultant since 2007 and devised the two-sided writer’s notebook, which has helped countless teachers and students. What’s more, Solley was selected as the 2021 Placer County Teacher of the Year, Middle School Teacher of the Year, and Western Placer Unified K-8 Teacher of the Year. Describe yourself and your teaching style. I’m focused, organized, and flexible with a heart of empathy and patience. My teaching style is student-centered. As soon as students enter the door they are warmly welcomed, seen, heard, and respected.

What are your hopes for your students? I hope they see their strengths, develop confidence in their abilities, and are willing to take chances to learn from mistakes/failures. Along with selfadvocacy, I hope students leave with a few golden nuggets to carry with them in the years to come. What's the biggest lesson you've learned so far? Balance. As educators, we tend to try and be all things to all people, which is unrealistic and unhealthy. I remind myself I can only do the best I can with the time and resources I have and accept that it is good enough.

W
hen Rachel Stewart got a fullride scholarship for basketball to UC Berkeley, her goal was to become a child psychologist. So, what changed? In her final semester, she became a teacher’s assistant for an adaptive PE teacher and got to work with a student with spina bifida. “I loved seeing his infectious smile as he let his body float carefree in the pool. He was my first experience working with students with disabilities and I loved every minute,” she shares. After graduating, Stewart moved back to Roseville and became a substitute teacher for students with disabilities. “I saw the light in their eyes as they attempted to make connections and thought, ‘How lucky am I to be in their lives?’ That thought…motivates me daily. I am beyond blessed,” she says. Eventually, Stewart became a basketball coach and special education teacher. She currently teaches transition-age special education students and helps coordinate Unified Sports. As of this past year, she’s also assistant athletic director at Woodcreek High School. Describe yourself and your teaching style. I teach independence and
What are your hopes for your students? My students’ motto is “Our potential is LIM ITLESS,” and it is this motto that drives my vision for teaching and maintaining high expectations academically, socially, behaviorally, and emotionally. What's the biggest lesson you've learned so far? When I first started teaching students with emotional disturbances, I quickly learned valuable lessons. I learned how to sit still, listen, and allow for silence and emotional release no matter how hard it was.

s a child, Valerie Owens spent hours in her room lining up dolls and “teaching” them how to read and spell. It’s no wonder then that she got her master’s degree in teaching with a specialization in early childhood education.
“What inspires me most are the conversations we have as a class throughout the year where you see students learning life lessons—like honesty, empathy, and kindness—and putting them into action in class, at lunch, or on the playground,” she says.
Owens is now the team leader of Theodore Judah's Positive Behavioral Interventions and Supports team; GLEE Choir Director at Theodore Judah Elementary School; on the FCUSD Equity Task Force & Teaching Inclusion Diversity and Equity committee; and a Folsom's Hope Board Member.
Describe yourself and your teaching style. My teaching style is largely filtered through the lens of: "How would I want my own child to experience this lesson?"—whether it be academic or otherwise. I’m a huge believer in Gardner's Theory of Multiple Intelligences—the belief that
each human has their own unique learning strengths and styles, and that as a teacher, it is my goal to build a relationship with each student and learn how they each learn best. What are your hopes for your students? I want each of them to leave my classroom knowing they are worthy and loved just as they are; that being kind is always more important than being right; and that the brain and bravery are muscles—the more you use them, the stronger they become! What's the biggest lesson you've learned so far? From my students, I’ve learned that family is more than just who we’re related to. I love my students deeply and unconditionally. I’ve also learned that children learn best when they know they’re loved and valued. From my coworkers, I’ve learned that we are best when we work together.

L
arry Bryant first dabbled in marketing and distribution for a pet food company after getting his degree in biology from UC Santa Cruz. Upon hiring young college students, Bryant opened his office after hours to enable them to finish their schoolwork on office computers. “I liked helping them and realized I enjoyed teaching and missed science, so I went back to school and got my teaching credential,” he says. Ever since, Bryant’s focus has been on the youth. He’s even taken classes in youth development, neurology, trauma informed teaching, and adverse childhood experiences—all of which he employs as advisor at the Peer Advocate Program where student advocates help other students resolve problems, manage conflict, and deal with stress and emotions.
Teaching tool/resource: I love sharing my wildlife, astronomy, and geology photos for science lessons. It creates a personal connection to concepts beyond the classroom. What's the biggest lesson you've learned so far? That everyone has a story and if you take the time to listen, you’ll find many amazing people. When it comes to beer and wine, what’s on the inside really counts, but there’s no denying eye-catching labels are what initially lure you in. A few local visionaries create packaging that’s not only informational but artistic, too—think bold lettering, distinct designs, and prett y pictures with soulful stories. Keep reading for a look behind six labels we love.
James Pinot Meunier, for example, was made with organic fruit sourced in Sonoma County by Eric’s brother James. For their Zinfandel, Emily and Eric chose to feature their nephew, Zander, because they enjoyed the alliteration of Zander Zinfandel. Eric’s favorite portrait, however, is his grandmother gracing the Dolores Pinot Noir. “I think it really captures not only her image but also her personality,” he says. Once Eric has decided what family member to paint for a bottle, he starts his artistic process by browsing old photo albums and digital artwork to create a vision. Next comes Eric’s greatest hurdle—starting to paint. But once he does, it becomes a form of meditation to him. “It helps me release my creative energy,” he says. Eric exclusively paints his label portraits using oils on wine barrel caps, except for some of the original labels that came from older paintings using mixed media. Once the painting is complete, it’s photographed and handed off to Emily, who designs a coordinating back-of-bottle label complying with TTB (Alcohol and Tobacco Tax and Trade Bureau) guidelines and sends it off to their label printer. Chateau Davell’s family and friends gather quarterly to hand-bottle every wine—lovingly filling, corking, and waxing each one. Their final step is adhering the portraits to them. According to Eric, “Emily likes to complain about how tedious these days are, but she secretly loves spending a day laughing and catching up with our loved ones.”

Chateau Davell The labels of Chateau Davell’s wines are a physical representation of their guiding principle: family. In fact, owners Emily and Eric Hays chose to name their inaugural wine after their firstborn child Charlotte. When she was born, Eric painted her newborn portrait on a wine barrel cap. When it came time to create a label for Charlotte’s Cuvée, they chose to feature her portrait as a loving tribute. Since then, every label has been adorned with one of Eric’s paintings. “There’s usually a correlation between a wine and the family member on the label,” says Eric. The

A vineyard owned by a family of artists is bound to forgo bland labels and produce exquisite works of art for their wines. Pamela, the matriarch of the Findleton family, is the artist responsible for the stunning labels that adorn her namesake winery’s bottles. Working with watercolors, she creates a custom piece for every bottle. “Each painting tells a story and has a relationship with the varietal we pair it with,” Pamela says. Her personal favorite, 20 years and 36 varietals later, still remains the Carignon label—“a spiritual collaboration” with her late grandmother who was also an artist. While cleaning out her artist studio, Pamela found an old painting created by her grandmother, only to have it crumble in her hands when she picked it up. “Saddened at the loss, I immediately glued it to a canvas and started painting using water media.” This piece, still featuring her grandmother’s signature beside her own, now adorns the Findleton Carignon. The paintings featured on our labels set us apart from other wineries; club members often come into our tasting room to purchase the artwork they fell in love with on the label,” says Jeanetta.

Loomis Basin Brewing Company The original labels that graced Loomis Basin’s bottles emulated fruit packaging labels—a nod to the city’s history as an orchard town. As the brewery has grown and switched to cans, however, they’ve updated their labels, holding tight to their roots by keeping the frame border, reminiscent of fruit crate labels from the turn of the century. Having worked with a variety of designers over the years, the brewery recently decided to try their hand at original designs with a collaboration between brewers Ben Allgood and Brady Jones and taproom manager Clancy McCrory. The process has been an adventure for these first-time designers, requiring them to test their creative juices and pick up new skills like Photoshop and Illustrator. They have enjoyed digging into original designs and revamping them for current use, as well as coming up with new puns for the bottom row of text found on every bottle. Something else the design team considers a must-have for every bottle? Color. “We like our labels to be bright, bold, and illustrated!” says Clancy. Loomis Basin designs their labels by first selecting a central focus feature, such as the throwback ’90s shapes found on their Allgood IPA. In some cases, Clancy even draws her own central feature, such as the sword-wielding woman on the Nemesis Imperial IPA. Next, they decide on a coordinating background. For Clancy, “It’s really incredible to see a sketched-out design come to life.”

Charles Spinetta Winery Charles Spinetta has always enjoyed wildlife art. After meeting accomplished wildlife artist and graphic designer Joe Garcia on a hunting trip, he commissioned Garcia to create the winery’s first art labels, which also became the first full-color wine labels in the U.S. Each label, either designed by Joe Garcia (joegarcia. com) or Sherrie Russell Meline (wingbeat.com), features wildlife in a different setting unique to Northern California wildlands. “Our labels evoke memories of enjoying wild spaces, and each painting shows an appreciation for wildlife,” says Charles’ son Anthony. The artists begin their process with a sketch and then paint the animal—its pose, gaze, and the setting— with their choice of colors and technique, but it’s Charles who chooses which image belongs on which wine label. The artist’s images are then handed off to Paragon Label, who have won numerous printing awards for said labels. Charles Spinetta’s labels are works of art in muted

Lone Buffalo Vineyards When Phil Maddux told his wife Jill that he was launching his passion for winemaking into a micro-brewery and that she was responsible for naming the wines, she was excited to bring their story to life. Jill told Phil they weren’t going to have “boring” names that only stated what the wine was, but instead names that would reflect the vineyard, buffalo, and the wine itself. This determination to tell a story is embedded in all that Lone Buffalo Vineyards does, especially their labels. The original Lone Buffalo labels boasted a modern design, but 10 years into the vineyard’s success, the Madduxes decided they needed new labels more representative of the vineyard. In collaboration with designer Darcey Self (galfridaycreative. com), who stayed with the family to get a feel for what they’re all about, they chose to keep their buffalo logo and bring Native American inspiration to the labels. Nicknamed “Buffalo” for his burly build and collection of buffalo art, Phil visited a Santa Fe art gallery with Jill at the start of their venture and were stopped in their tracks by artwork featuring a buffalo walking “backwards” (from left to right), striking Jill as a symbol of holding back time. Jill knew then that this buffalo was the perfect logo for their vineyard—especially considering
Phil’s love for history, traditional winemaking techniques, and naturalist lifestyle, and Jill’s studies in cultural anthropology. Every bottle of Lone Buffalo’s wine has three components: their trademark buffalo, a unique name, and a Native American symbol. For example, their signature wine, a Rhône blend, is named Where the Buffalo Roam and features a lodge. The lodge symbol, which looks like a wagon wheel, stands for “permanent home” in Native American culture. The Madduxes found it fitting for their signature blend, because they had uprooted the vineyard from South Auburn in 2013. Settling in North Auburn, where they had more land to expand their operations, Lone Buffalo Vineyards found its permanent home.

New Glory Craft Brewery
What steers New Glory Craft Brewery’s design and marketing team when creating fresh labels is the company’s fun and lighthearted culture. Within their designs, they achieve this through bright colors and abstract patterns. One of the team’s design goals is to create labels that catch the customer’s eye when perusing shelves of beer. “We want our cans to be Instagramable and expressive,” says marketing manager Stephanie Lewis. The hope is that each can is easily recognizable as a New Glory brew. The team is careful to avoid customer confusion amongst the bold designs though; the last thing they want are labels that force customers to hunt for information about what is within the can, says Stephanie. By keeping a few key design elements—like logo placement, color blocking, and type size—consistent across all designs, they achieve both clarity and branding. To create new labels, the design and marketing team meets with the brewery’s production team to understand the brew’s flavor profiles, special processes, and the brewing team’s inspiration. With this information in hand, they can create labels that accurately represent the beer. Since 2016, they’ve collaboratively created 300 labels, with many more in the works.

Due to their popularity, the Spinetta family have also screened the paintings onto T-shirts. “We’ve [also] issued a limited-edition print for each of our wine labels, and they seem to pop up everywhere. Walking into a restaurant, office, or lodge and seeing one of our label prints on the wall is always a treat,” says Anthony.

ue the cheers. California schools are finally opening. And with the good news, pandemic-weary students and their parents welcome a return to normal. But don’t breathe a sigh of relief just yet. More challenges lie ahead. The new normal won’t look like the old, and the changes, even if for the better, may be stressful, too. After a year and a half of adapting to distance learning and missing friends, students will need to readjust once more. Consider: The time of Covid was more than 20% of a seven-year-old’s life and 10% of a 15-yearolds. Most students look different now and may have lost confidence in their social skills or worry they’ve fallen behind academically. Akkshey Vikram Raj, a Folsom 12-year-old, missed sixth grade, the year he would have transitioned to a new school with multiple classes. "I’m going to be lost all over the place," he says, adding that seeing his friends again

Lily Beach, 13, entering eighth grade in Roseville, is an honors math student who worries distance learning wasn’t rigorous enough “to let me stay in advanced classes.” The pandemic caught us by surprise, but this time parents can plan. These tips from local therapists and educators may help. Encourage your child to talk about concerns then listen reflectively, urges Lauren Simas, a licensed marriage and family therapist in Folsom. Respond with statements that show you understand your child’s emotions—"So you feel …" or "You’re wondering if …"—without adding your own perspective. Reflective listening offers empathy without judgment and helps your child clarify conflicting feelings. 1
Reassure your child she is safe. Young people are least likely to catch the virus. With precautions, like masks, which are still required in school buildings, and measures to combat the virus—powerful disinfectants, air filtration, hand sanitizers, distancing—the chance your child will become sick at school is very low. The good news is there is almost no risk out of doors so masks aren’t needed at recess. 2

"We see a high degree of achievement with acceleration rather than pausing for remedial instruction," says Placer County Superintendent of Schools Gayle Garbolino-Mojica. "We will make sure we are able to bridge any gap the pandemic may have created." 3

Also, with parents and children both working from home, children have gotten used to being with their parents and they like it, even if they pretend they don’t, Ryan says. Continuing family time is valuable as the kids readjust. Be alert to signs of anxiety. Watch for isolation, irritability, difficulty sleeping, lack of motivation, and concerns about safety. To help ease stress, Ryan suggests boxbreathing: Breathe in for four counts, hold four counts, breathe out four counts, then hold again for four counts. Repeat five times. Older students may be helped by visualizing a beach or field of flowers. 5
“There is great excitement in the school community to resume ‘normal’ operation,” says Garbolino-Mojica. “We are working hard this summer to make sure we do just that.”

says. “The house sold for more than a home down the street that was 1,000 square feet larger.” For this flip, the kitchen was fully renovated. And with such a big project, problems are likely to occur. “The most challenging issue that arose was moving plumbing in the concrete slab so we could put the sink and dishwasher in the island,” Sinor says. “It cost around $6,000, but it was money well spent to achieve the layout.” As a solution to save money elsewhere, they used the existing kitchen cabinets and repurposed them. Additional projects included renovating the bathroom finishes and adding faux beams in the great room. All new wood flooring, window treatments, and fresh paint and texture were also added throughout the house. While this was an in-house project for Ironhorse Interior Design, the team was very happy with the outcome and finished

Exploring Edinburgh 5 ESSENTIAL EXPERIENCES by TOM MAILEY
It was February, pre-pandemic, and we didn’t know what to expect in Edinburgh, Scotland. To be honest, we picked this city (pronounced ED-in-burrah) as our first place ever to visit abroad because, well, an acquaintance owns a flat there and offered it at an off-season price we couldn’t refuse. Thus, winter weather kept us ducking in and out of doorways all week. Snow, wind, cloudbursts…we were hit by all of it, often all within minutes. But there is no bad weather, just bad gear, right? So, we came prepared, and the upside was crowds were light, lines were nil, and the pubs all felt that much warmer when we stepped inside.

ur flat was in the “new town” part of Edinburgh (meaning it was built a mere two and half centuries ago, after the “old town” became impossibly overcrowded (more on that later). But we found both sections to be vibrant and incredibly walkable for anyone in reasonably good shape; we crushed our 10,000 Fitbit steps every day we were there. Part of our pre-planning was to sketch out a game plan, and we were glad we did, especially since we were only there a week. We arrived with a good basic idea of Edinburgh (I’m a dork for history so did a pretty deep dive into the city’s rich and storied past; my wife researched shopping, dining, and modern points

Or the day that, on a whim, we caught a train two hours north to the beautiful riverside village of Pitlochry at the doorstep of the Cairngorm mountains. Our take away (which is also what they call “take out,” fyi)…? Our brief visit was a fulfilling first glimpse of a friendly, thriving city and country we cannot wait to go back to and explore more deeply. These highlights were part of our basic outline.

VISIT EDINBURGH CASTLE
Edinburgh’s past is present, always and often literally, starting with this ancient fortress built atop the plug of an extinct volcano. It can be seen from nearly everywhere in the city and is impossible to ignore. In fact, it’s where the city began. That Mary Queen of Scots gave birth to her only heir here is just one of its many fascinating stories. In summer, lines can be long, so buy your pass ahead of time—or do like we did and visit in a snowstorm.

the city, distant hills, the bay (called the Firth of Forth). It’s a steep little hike but well worth it. Plus, it’s dotted with several time-worn monuments, including a tower that looks like a telescope and an old jail that looks like a castle.

Of course, it too is steeped in royal history but also features changing exhibitions; we took in a visiting collection of original drawings from Leonardo Da Vinci (he was pretty good).

Travel writer Rick Steves describes this street as “one of Europe’s best sightseeing walks” and, indeed, it is packed with pubs, shops, five-star restaurants, pubs, ancient churches, tearooms, pubs, whisky tasting, hotels and, did I mention pubs? But don’t just eat, drink, and shop; take time to learn the

street’s backstory. We hired a guide and were glad we did: At one time Edinburgh was one of the most densely packed cities in the world, with tens of thousands living along this one stretch of commerce. That overcrowding led to the building of some of the world’s first high-rise buildings, many of which became, over time, squalid tenements for the poorest residents. It’s fascinating and reminds you that while royals may have done some high living here, the bulk of the residents who helped create this beautiful city did not. It seems more and more of us are looking to make our dining experience simpler and more comfortable—hence the popularity of comfort food.

Michael Sanson, restauranteur and owner of Historic Folsom’s newest eatery, Plank Craft Kitchen + Bar, has acknowledged and embraced that concept. His remodel of the building at 608 Sutter Street is a relaxed atmosphere of wood and warmth, including the bar that he painstakingly refinished by hand. I sat at said bar and sampled a few items from the lunch menu. First, I went

Buttermilk-Baked Chicken Sandwich
Southern comfort—as in Nashville hot chicken wings. Having sweated my way through the original (reputedly) at Prince’s in Nashville, I was hoping these were a bit tamer. They were even possibly a bit too tame for chicken bearing the “Nashville hot” moniker. Plank bakes their wings (fine with me), unlike the deep-fried version doused with cayenne that Prince’s lover served him the morning after he cheated on her in the 1930s. The rest is chicken history. Next up, a tasty rendition of one of my favorites: roasted beet salad. Spring mix, roasted beets, toasted walnuts, green onions, and goat cheese with honey dijon vinaigrette combined for a refreshing, healthy starter—or an entrée with the addition of one of five available proteins. Either way, you can’t go wrong if you like roasted beets. Burgers are a mainstay at Plank, and they do them well. I got the Dre’s BBQ burger at the risk of being redundant, because that’s what I like on a burger. A 1/3 pound of beef, lettuce, tomatoes, cheddar cheese, zesty BBQ sauce, applewood smoked bacon, and a crunchy, fat, onion ring on brioche proved to be as good as it looked. There’s a new sandwich shop in town, and if you’re a fan of quality subs or sarnies or sangwiches or hoagies (whatever you call them), then Timmy Ginger’s is the place to try. Located on the corner of Pleasant Grove and Foothills Boulevard, TG’s serves up 32 specialty sandwiches (16 meat and 16 vegan), as well as build-your-own options, salads, sides, and a kids’ menu. It was nice to see a line of folks ordering (including some first responders) and dining both inside and out on the patio. I ordered a #2: brisket with creamy horseradish, coleslaw, bacon, and house dressing on a sweet roll (they offer seven bread options). I sat indoors and watched my beloved San Francisco Giants on the TV while uptempo music played over their sound system. The brisket was lean and flavorful, and the house-made coleslaw added a freshness to the meaty behemoth. The next day, I returned for another round, this time opting for one of the intriguing vegan options, the #18 , with a decidedly un-vegan name: Hot Chicken. The menu lists it with hot chicken, bacon, avocado, provolone, Tell us about house slaw, and “kicken sauce” —all of which are plant-based and decidedly your experience and what you liked by delicious…easily one of the better vegan sandwiches I’ve had. Ingredients vary in flavor depending on the season, ripeness, or (if not fresh) brand. Tasting your food as you go ensures you can adjust for all these variables every time.
LEARN THE “WHY”. We often get tripped up by thinking that if we’re missing an ingredient for a recipe, we can’t move forward, which is almost never the case! Learning why an ingredient is there and what it’s adding (sweet, salty, umami, leavening) can open you up to a world of substitutions (like when making chimichurri). When in doubt? Chimichurri 1 cup fresh flat-leaf parsley (about 1 bunch) 1 cup fresh cilantro (about 1 bunch) 1/2 cup red onion, diced (sub: 1 shallot) 3 tbsp. fresh oregano (sub: leave out) 3-5 cloves of garlic, peeled 2 tbsp. fresh lemon or lime juice (sub: orange juice with an extra splash of vinegar) 2 tbsp. red wine vinegar (sub: champagne or apple cider vinegar) ¼ tsp. salt (or more to taste) ¼ tsp. freshly ground black pepper 1 jalapeño, stems and seeds removed to reduce spice, as desired (sub: red pepper flake or a few dashes of your favorite hot sauce) 1/2-3/4 cup high-quality olive oil

Add all ingredients except the olive oil to a food processor; pulse a few times until chopped. Slowly stream in the olive oil, while pulsing the mixture a few more times until the olive oil is combined, stopping to scrape down the sides of the food processor if needed. Add olive oil until sauce reaches desired consistency. Serve immediately or refrigerate in a sealed container for up to 3 days. Wondering what to do with leftover chimichurri sauce? Get creative! Try stirring it into soups, pasta dishes, dolloped on top of a baked potato, or over your morning eggs to add a bright, fresh, and flavorful punch.

DON’T BE AFRAID OF HIGH HEAT. Seems obvious but so much flavor comes from searing and sautéing at those high temperatures. You may have been burned in the past by high heat, but with the right cookware for the task at hand, those high temperatures are the key to building flavor without overcooking your ingredients.
PREPARATION IS KEY. Keep a bowl of salt and pepper blend on your counter for basic seasoning needs. Instead of grabbing the salt and pepper separately, it’ll save you time and a step. USE SQUIRT BOTTLES FOR YOUR OILS. Forget messing with a lid—just grab and squirt! I cook mostly with avocado oil and olive oil, so those two are always on my countertop.

BUY A GOOD CHEF'S KNIFE AND KEEP IT SHARP. My favorite one is the Wusthof Grand Prix (Hollow Edge Santoku), which you can sharpen with a stone soaked in water.
Cranberry, Pistachio, & Honey Energy Bites

Quick Pickled Veggies 4-6 tbsp. sugar 2 tbsp. kosher salt 2 cups hot water 2 cups vinegar (rice wine or apple cider) Veggies of choice (cauliflower, radishes, carrots, green beans, etc.), cut into 1-inch pieces Optional ingredients to add additional flavor: rosemary, thyme, red pepper flakes, or peppercorns Dissolve sugar and salt in hot water; add vinegar and stir. Prep veggies and add them to a glass jar. Pour liquid mixture into the jar, ensuring it covers the top of the vegetables and none float past the surface. Place the lid on top and allow it to cool before refrigerating. They taste best after about 2 days and will keep up to 1 month in your fridge.

You may need to rotate the pan under the broiler to achieve this. Move peppers to a bowl and cover with plastic wrap. Wait 10 minutes and remove the skin from their flesh. Core the tomatoes and cut into large pieces. In a large pot, heat olive oil, and add the chopped tomatoes, salt, and pepper. Cook over medium heat until the tomatoes start to break down. Add the peppers, onions, and garlic into the tomatoes and cook for 1015 minutes. Add the mixture to a blender. Add butter and basil. Blend to combine and then turn speed to purée. Pour sauce into glass jars or freezer containers, if storing, and use with your favorite recipe.

August 1, Saturn at Opposition During this once-a-year event, Saturn will be closer to Earth and its face fully illuminated by the sun, making it appear about 40% larger than usual. A medium-sized (or larger) telescope will allow you to see the planet’s rings and a few of its brightest moons. August 8, New Moon The first phase of the lunar calendar, new moons occur when the sun and moon are aligned—making the moon invisible from Earth and creating the darkest sky of the month. This is the prime time to observe star clusters and see the Milky Way. August 11-13, Perseids Meteor Shower Regarded as one of the best meteor showers of the year, you can witness up to 60 shooting stars per hour (that’s one per minute!). To maximize the number of meteors you see, try watching after midnight but before dawn. August 19, Jupiter at Opposition During this once-a-year event, Jupiter and the sun are in opposite directions, meaning the planet is closer to Earth and appears about 70% larger than usual. A medium-sized telescope will allow you to see some of the details in Jupiter's cloud bands, while a good pair of binoculars should allow you to see its four largest moons (appearing as bright dots on either side of the planet).
