uch of my daughter’s first three months were spent swaying, s wadd l i n g , s w i n g i n g , a nd shushing her. But when the sobbing wouldn’t stop, and even the best baby whisperers didn’t know what to do, our saving grace was, and still is, the great outdoors. The moment that first rush of fresh air touches her chubby cheeks, an immediate sense of calm overcomes her. Eight months later and not much has changed. She still prefers sunshine over screens and birds over blocks. The apple doesn’t fall far from the tree, I suppose. Whenever I get into a “funk” and can’t figure out why, nature is my antidote. Whether it’s going for a hike, bike ride, or simply sitting outside, there’s no better, or more immediate, mood booster. Luckily, this month’s magazine focuses on myriad ways to soak up the springtime sunshine. Freelance writer, photographer, and former wilderness guide, Ryan Martinez, takes us through some of his favorite alfresco activities— mountain biking, backpacking, bouldering, etc.—in our cover story, “Your (Local) Guide to the Great Outdoors” (page 43), with some top spots to try each adventure, “know before you go” tips, must-have apps, and more. After perusing the incredible pictures and reading his recommendations, I definitely feel inspired and more prepared to explore more. All that activity means hunger is bound to hit. In “Eat & Drink,” we share a plethora of places you can post up pre- or post-outing, including a new Oaxacan eatery in Folsom (page 80) and a woodfired pizzeria in Roseville that makes both classic and creatively crafted pies (page 82). And if you’re wanting to dine out of doors, fret not. Starting on page 83, we share all the gear, gadgets, and grub you need for “A Perfect Picnic,” including portable recipes that even rookie cooks can create, six stellar sandwiches available at area eateries, the best places to post up, and other must-pack provisions (like canned wine, of course!). One downside of spring in our area is allergies. But don’t let itchy eyes keep you cooped up. In Health & Wellness (page 66), learn why hay fever strikes and ways to ease the sneeze; then turn to Editor’s Picks (page 60) for “11 Allergy Season Essentials,” including locally made honey, essential oils, and a treatment at Serenity Spa | Soul Yoga that promises to help heal your sinuses. According to a study last summer by Scientific Reports, “spending at least 120 minutes a week in nature is associated with good health and well-being,” so put —Lorraine Anderson down your phone, turn off the TV, and reap the rewards. Reset: Café By Day is open at 727 Sutter Street, Suite B, in Historic Folsom. The family-owned and operated business maintains a café feel throughout the day then “resets” at 4 p.m. into a nighttime venue with beer, wine, and live acoustic music on weekends. J Wild’s Livery and Feed, a smoked barbecue joint that will also serve thin-crust, tavern-style pizzas and a full bar, is slated to open soon in Historic Folsom at 614 Sutter Street. Stick House Mongolian BBQ, featuring a fun Asian-fusion twist, is opening soon at the El Dorado Hills Town Center (2023 Vine Street). Fahrenheit 250 BBQ opened their doors at 390 North Sunrise Avenue in Roseville. The stylish bar and eatery serves slow-smoked, premium meats, plus made-from-scratch salads, sandwiches, burgers, and more. Mario’s Early Toast is opening soon at 1950 Douglas Boulevard in Roseville. The beloved brunch spot, with an existing location, features a vast menu full of both healthy and hearty dishes, fresh-squeezed orange juice, and over 30 mimosas. House of Oliver in Roseville is expanding into the adjacent, 1,000-square-foot space (previously occupied by Cookie Connection) and will operate as House of Oliver Bistro. The French-style café plans to serve items including coffee, baked goods, breakfast paninis, and grab-and-go bites. The owners of Bricks Eats & Drinks, Cascada, and California Kitchen in Placerville are opening a new restaurant, Main Street Tap House, at 209 Main Street. Soroptimist of Loomis Basin recognized those who are improving lives in our community through education at their annual awards ceremony where nearly $7,000 was distributed as student awards, teacher grants, and support for community projects. This year’s recipients included Carol Mason (Ruby Award), Rachel Mcguigan (SI Live Your Dream Award), and Katelyn Wright (Community Service Award). The Sacramento Region Community Foundation GABY (Grants Advisory Board for Youth) Board selected Hands4Hope—a nonprofit whose mission is to inspire and empower youth in leadership and service—as the recipient of this year’s GABY grant. The funds ($750) will be used to create a sensory garden at Montessori Autism Programs and Services (MAPS) in El Dorado Hills. Three ninjas from THE STUDIO Martial Arts & Fitness—Francisco Barajas, Jose Gomez, and Brian Montagnese— were selected out of 70,000 applicants to be on season 12 of the popular show American Ninja Warrior. El Dorado County Older Adult Services is currently seeking volunteer drivers for its Senior Shuttle program. Drivers generally help once a month, picking up seniors and delivering them to designated locations in the area, including shopping centers and other places of interest. Those interested are invited to download an application at edcgov. us/government/humanservices/pages/volunteer_opportunities.aspx. Clint Herndon, CPA, CFE, of Next Peak CPA in Folsom, recently launched The Next Peak Podcast, where he interviews people to discuss what success means to them and how to redefine goals. In this year’s roundup of youthful visionaries, we spotlight some of the region’s best, brightest, and most inspiring students. In no particular order…
What accomplishment are you most proud of and why? Raising $1,500 for my school music program to use for purchasing new instruments, sheet music, and equipment. Over the course of more than a year, I prepared the 10 hardest pieces I’d learned throughout my piano career and successfully performed them for an audience of over 100 in October 2019. What are your hobbies and involvements in school? I’m the president and current team captain of the Science Bowl Club at Vista, and I coach the Science Bowl Team at Folsom Middle School. I also help run the Computer Science Club at Vista, which my friends and I founded this year; and I’m co-president of Vista’s Robotics Club. I participated in orchestra last year as a pianist and violinist and still help out. I also play varsity tennis on the school team. If you could travel anywhere, where would you go? Japan. It has such a different culture from the U.S., along with a unique history and is one of the leading countries in terms of developing cutting-edge technology.

What are your hobbies and involvements in school? E-sports league, working out, and doing yard work. I’ve also been involved in our school’s student government program for all four years, where I’m able to make a difference on our campus with events and fundraisers.

I’ve been on the varsity volleyball team since my freshman year and was selected as a co-captain and given all-league honors during my sophomore and junior years. Aside from volleyball, I serve as one of our editors-in-chief, head of sports, and the social media manager for the Oakmont student media publication, Norse Notes.
What’s one thing that not many people know about you? I’m generally a quiet person but enjoy hanging out with large groups, which is why I like student government so much.

What accomplishment are you most proud of and why? Winning third place at the Vegas Acro Cup, an international competition. I trained in gymnastics for 13 years and standing on the podium made all the blood, sweat, and tears I poured into the sport worth it.
What accomplishment are you most proud of and why? Being recruited by Columbia University, along with winning the Gold Medal in fencing at the Junior Olympics.
What accomplishment are you most proud of and why? Being the youth volunteer director for El Dorado County’s Empty Bowls fundraiser last year, where I was recruited to provide training, organization, and leadership to 100 volunteer students. The event raised $37,000 to reduce hunger and malnutrition in our community and throughout the world. I’m also proud of being asked to attend the March for Our Lives in Washington, D.C.—a lifechanging event that led me to become a strong advocate for stricter gun regulations.
What are your hobbies and involvements in school? Lifting weights, guitar, and trap shooting.
What are your hobbies and involvements in school? I’m heavily involved in aquatic athletics and participate in swim, dive, and water polo. I’m also in the French Club and the American Red Cross Club.

I’ll never forget the look on my mom’s face when I told her. My parents made a lot of sacrifices leaving their home country of Mexico to give their children a better education. When I told my mom I got the scholarship, she cried, hugged me, and said: “Everything has been worth it.”

Our team entered the race unknown and ended up beating several nationally ranked teams. Also, qualifying for the 2019 Footlocker Cross Country Nationals (only 40 girls across the U.S. qualify). What are your hobbies and involvements in school? Skiing, baking, traveling, and running. At school, I enjoy challenging myself academically (I have a 4.3 GPA) and am a member of two clubs and the California Scholarship Federation.
What are your hobbies and involvements in school? This will be my third year as a member of the California Scholarship Federation, where I currently serve as a public relations officer in my school’s chapter; and my fourth year as part of the Campus Light Club where Christians gather every Monday at lunch.
Who is your role model? My teammate: Izzy Fauria. She’s not only an accomplished runner but is also very inspirational, positive, and incredibly supportive of everyone on our team. She was my mentor prior to arriving at St. Francis and is an amazing training partner who keeps me motivated.

Not OK Project T
he Not OK Project has a message for first responders who experience trauma in the line of duty: It’s OK to not be OK. These heroic men and women, who may be injured physically or psychologically as they aid disaster victims, are often timid when reaching out for help due to the stigma surrounding it and the fear of appearing weak, says the project’s founder and president, Eric Meier. Their bravado is a mask, Meier says, and the fallout could be tragic. First responders—police, firefighters, correctional officers, 9-1-1 dispatchers, EMTs, anyone dealing with suffering—commit suicide at higher rates than the general population; the data is likely under-reported, but one survey estimates as much as 10 times higher. That shouldn’t be the case, Meier says. First responders face repeated danger and witness trauma over the course of long careers. “The effect is cumulative,” Meier says. “The stress keeps piling on and may not be realized for a few years. There has to be a release somewhere.” And that release sometimes leads to suicide. The Not OK Project strives to prevent these suicides by “bringing first responders out of the dark” through shared activities like fishing, camping, music, sports, even yoga—done outdoors whenever possible. According to studies, Meier says, outdoor and, even better,

wilderness activity helps traumatized people reconnect with their sense of well-being more effectively than medication alone. To that end, the group, formed a year ago, is planning its first three-day retreat at Hume Lake, deep in the Sequoia National Forest, for the weekend of November 13. “It’s completely off the map up there,” Meier says, “a complete disconnection. It’s a time to forget about everything, focus on themselves and each other, and have a blast.” Participants will attend sessions dealing with trauma and get physical with activities like fishing, hiking, archery, and even axe throwing. In an earlier outing on August 2, the group will attend a River Cats game honoring first responders. The idea to form the Not OK Project arose from Meier’s own experiences with trauma. A deputy with the Sacramento County Sheriff’s Department for 10 years, he lost friends to shootings, was involved in the traumatic shootout involving Sacramento police officer, Tara O’Sullivan, had to be hospitalized “a few times” and, worst of all, was not able to save a days-old baby on whom he performed CPR. “I would continually tell my wife ‘I’m OK,’” he says, “but I was not OK.” Meier formed the Not OK Project after the shooting death of a law-enforcement colleague “sent me to a dark place,” he says. There are other organizations that help first responders but so far as he knows, the project, which partners with licensed professionals and local businesses, is the only organization in California offering hands-on help for this vulnerable population and their families, providing them with specific activities to tackle PTSD and stress. M
ultifaceted artist Dawn Blanchfield has lived in Lincoln the past 15 years, loving the trees and green open spaces that remind her of childhood in Michigan–where she first began painting, drawing, and taking classes. The quintessential creative, Blanchfield works in a variety of mediums: pen and ink, printmaking, acrylics, collage, encaustic, watercolor, ceramics, fiber, and digital art—most recently adding sewing and jewelry to her arsenal. “I may look like a mild-mannered mom from the suburbs, but at heart I’m an old punk rocker from Detroit,” shares Blanchfield. “I love The Clash, David Bowie, all things gritty and dark, bold black and white graphics of woodcuts, religious iconography, symbolism, folklore, graphic novels, etc.” Narrative in nature, the honest, authentic artist expresses her emotions and experiences into her diverse works— whose themes range from skeletons and skulls, to ravens, wolves, life, death, mythology, and more. HLN: YOU’RE A SELF-PROFESSED "TECHNIQUES ADDICT." HOW SO? DB: My friends started teasing and calling me the “Techniques Queen,” because I’m always taking workshops and classes. I have a bit of a monkey mind and really do jump from medium to medium. I love learning new things and have often said I could easily be a lifelong university student. New skills are just more tools. Of course, that also means I have many actual toolboxes full of various art supplies. I’d say I could stop anytime, but that would be a lie.

HLN: WHAT WOULD YOU TELL YOUR YOUNGER SELF? DB: Don’t be so quick to say no to things you think you can’t do. I dismissed the idea of going into commercial/ graphic art in college, because I didn’t think I could work with deadlines or someone else’s idea—yet I’ve found that I work really well with a challenge or when forced out of my comfort zone. I might complain a lot while I’m doing it but am usually happy with the end result. HLN: WHAT ARE YOUR FUTURE 5 GOALS? DB: I’ve spent the last year working on getting my Etsy shop up and running. I’d like to grow that while continuing to show work in galleries throughout the area. In the “dream big or go home” department, I hope to get my own printing press someday. Maybe I’ll also learn how to weld.

HLN: WHAT INSPIRES YOU? DB: I tend to live in the moment, so what I’m creating is often influenced by what’s happening in my life. After some oral surgery last year, I made a graphic ink drawing of a skull with long teeth. A character from a video game has shown up in another drawing and a watercolor. The music I’m listening to also influences what I’m doing. Lyrics show up in paintings or titles all the time. I also love going to museums and galleries to see the work of other artists. When I’m stuck, I always go back to pencil on paper and draw faces or hands.

Blisters: Prevention is key. Place moleskin on any “hot spot” before the blister forms, and feel that ohso-sweet relief prior to feeling the pain! In a bind? Use athletic tape, Band-Aids, or even a piece of duct tape because, well…duct tape fixes everything. Rattlesnake Bites: We know they’reout there, and there are a lot of myths as to what to do. Sorry Billy Crystal, the old “cut and suck” method is a no go. According to the National Outdoor Leadership School (NOLS), this is what to do: 1. Check the Scene. Don’t create more victims by getting all riled up. Look around and make sure it’s safe to stop to administer first-aid. 2. Stay Calm. Sometimes a rattlesnake bite is “dry” and may not mean envenomation. At least remind yourself of that to help calm you down, because the calmer you are the lower your heart rate will be, meaning you will slow down the flow of the venom. 3. Immobilize the limb. Avoid compressing or restricting blood flow. The old Boy Scout tourniquet is a big no! Remove any jewelry or restrictive clothing to allow maximum blood flow and keep the limb immobile, if possible. 4. Get to a hospital. If you need to hike out, do so calmly. Remember: Keep that heart rate low. Don’t get hasty and add a twisted ankle to the dilemma. 5. Document the progression of symptoms. The clearer you are about the succession of events, the better your physician will be able to provide health care.

HOW TO REPAIR A FLAT (AFTER REMOVING TIRE)
1. Remove all the air from your tire’s tube 2. Place tire lever between your tire and the rim 3. Push lever down and attach to one of the spokes 4. Use other lever to slide around the tire to remove only one bead from the rim 5. Remove tube and keep in place, carefully slide hand through the inside of the tire to identify debris/ cause of the leak 6. Replace tube; patch if necessary 7. Inflate tire tube enough for tube to take shape 8. Place tube inside tire above rim, ensuring it’s properly seated 9. Replace the removed bead on the rim and ensure it’s properly seated 10. Inflate tube slowly to ensure proper seating of the bead 11. Continue riding

CLIMBING VS. BOULDERING While climbing requires the use of ropes and belay devices for safety, bouldering is done without the use of ropes at much lower heights with thick pads beneath you, allowing you to forfeit the need for a belay device, rope, and harness. You only need you and some shoes to boulder (that chalk we recommended earlier; definitely still recommended) and a “spotter” to help protect you on the falls. While the technique is very similar to climbing, bouldering tends to be more about power where climbing is geared more toward endurance. Both are amazing and worth doing to become a well-rounded climber. GRADES OF DIFFICULTY Climbing routes in the U.S. are symbolized by “5.”something (e.g., 5.5 all the way up to 5.15). 5.6 is going to be much easier than 5.10. For your first time out, play around between the 5.6-5.9 range.
ASCENDING IS TRENDING
Bouldering “problems” are symbolized with a “V”something. V-easy is the easiest going all the way up to V16. Play in the V-easy to V2 range for a first-time outing.
While climbing isn’t without its moments of fear, it provides one of the deepest feelings of accomplishment you can possibly feel. Though an inherently dangerous sport, using proper safety measures and creating redundant safety checks and backups can largely eliminate some of them. Always seek proper instruction before heading out and either start at an indoor climbing gym to meet experienced climbers (more on that below), hire an AMGA-certified climbing guide, or take a course (our local REI stores offer them) where you’ll learn proper technique and safety tools.

Auburn Quarry
Situated a short 40-minute hike from Highway 49 and the North Fork of the American River, this is a great place for a beginning lead climber to practice their lead climbing skills. There are plenty of easy to moderate routes with good protection. We recommend starting out on the first wall you see on your left side as you approach the crag, known as “scale wall.” It can also be accessed from the top to easily set up a top rope. Favorite climbs on the “scale wall:” M+M (5.8), Scooby Snacks (5.9), and Scale Wall (5.10)

TOP TIPS
1. Use your feet. The key to becoming good at climbing is trusting your feet and your legs to push you up the wall, while only using your arms to keep you on the wall. 2. Straighten your arms. By keeping your arms straight and relaxed when possible, you’ll save much-needed energy to get you to the top. 3. Keep your hips close. This will help keep your center of gravity close to the wall and, more importantly, over your feet where you should have most of your weight (see “Tip #1). 4. Climb smarter, not harder. Climbing is as much a mental activity as it is physical. If something is feeling really hard, sit back for a few minutes and think about the best way to climb up. It’s more like solving a puzzle than it is about brute strength.
Sitting just across Highway 50 in Kyburz, Sugarloaf offers traditional and sport climbing routes on smooth, 350-foot-tall granite. Park on the south side of Highway 50 and start across the street toward the phone company building. A steep approach leads you to Sugarloaf, the most prominent formation on the hillside. You can’t miss it.

With the cliffs rising up to 600 feet, to say that this is a bold adventure is understating it. There are very few “sport” routes, mostly above 5.10+. If you’re new to trad climbing, start on “Hog’s Back,” which has routes from 5.5 for you to learn to place gear and become comfortable with the systems. For those who are already comfortable leading traditional routes, some of the classics are “Bear’s Reach” (5.7), “Corrugation Corner” (5.7), “Haystack” (5.8), and “The Line” (5.9).

easonal hay fever, or allergic rhinitis, is extremely common in the U.S., affecting approximately 10-15% of the population. “That is somewhere around 30-40 million people,” says Matthew S. Bowdish, MD, FAAAAI, FACAAI, allergist and immunologist at The Allergy Center at Sacramento ENT. Allergic rhinitis is inflammation in the nose when an immune system overreacts to allergens in the air, explains Binita Mandal, MD, allergist and immunologist at Dignity Health Mercy Medical Group. Yet, seasonal hay fever is just one type of allergy affecting us. “There are several types of allergies, including environmental, drug, stinging insect (bees, venoms), foods, and chemicals causing dermatologic reactions. The most common of these is seasonal allergies; in the Sacramento area, tree and grass pollen season can stretch from February through June or longer.” What are the allergic agents around you? Jennifer Niemeyer, DAOM, LAc, of The Root Wellness, says, “People [are allergic to a] variety of things, including grasses, dust, mold, flower pollen, and tree pollen.” According to Ali Amirzadeh, MD, allergist and immunologist at Dignity Health Mercy Medical Group, common symptoms of a seasonal allergy attack include a runny and stuffy nose, sneezing, itchy and red eyes, and breathing problems such as wheezing, shortness of breath, and chest tightness, while skin symptoms can include hives and swelling.
Jamie Brinkley, ND, at Revolutions Naturopathic, further explains why the body responds with these reactions. “Our immune system interacts with the environment on a daily basis assessing if something is ‘self’ or ‘other’ and ‘threat’ or ‘not a threat,’” she says. “We get allergies when that system has decided this particle is harmful and an inflammatory response is warranted.” As allergy season is officially upon us, sufferers can do their part to help remedy their symptoms. Dr. Bowdish recommends checking local pollen counts for your specific area. “Just Google the term ‘pollen count’ with your city name, and you should be able to get a general idea of what pollens are most active at that time,” he says. “Some allergy practices will also hand count pollens throughout the season, which can be the most accurate pollen counts since they’ll be individualized for your area rather than based upon weather patterns.” Troy Scribner, MD, an allergy specialist in the Department of Allergy & Immunology at Kaiser Permanente Roseville, says the primary treatments for allergies tend to be medication that can be obtained easily, including oral antihistamines, such as diphenhydramine, cetirizine, fexofenadine, and loratadine. “For individuals who have moderate to severe symptoms or persistent symptoms, the use of a steroid nasal spray tends to be the most effective treatment,” he says. “Steroid nasal sprays help to prevent the inflammation that leads to allergy symptoms and work best when used consistently. Both the steroid nasal sprays and the antihistamines can be used together for better results.” Dr. Brinkley suggests eating a low-histamine diet during the worst of your allergy season, which “includes a diet rich in fresh meat and freshly caught fish; non-citrus fruits; eggs; glutenfree grains, such as quinoa and rice; dairy substitutes, such as coconut milk and almond milk; fresh vegetables (except tomatoes, avocados, spinach, and eggplant); and cooking oils, such as olive oil,” she says. “There are many herbs and supplements that can be helpful during allergy season, too. My current favorite is freezedried stinging nettle leaf.” She also suggests allergy sufferers use a HEPA air filter in their bedroom when they sleep; shower at night so that outdoor pollen is removed before it can deposit into your bed; and use a daily sinus rinses or neti pot with saline to help remove allergens from nasal passages and keep sinuses clear. Another way to treat allergies is with allergenspecific immunotherapy (SIT), Dr. Bowdish says. “Immunotherapy changes the body’s immune system by toning down the allergic response over time and better controlling the overactive inflammatory pathways,” he says. “Immunotherapy can be given either via a subcutaneous injection or with sublingual tablets or drops. The limitation with immunotherapy is that it takes several months before the treatment protocol kicks in.” If you require multiple treatments to get relief, there may be additional treatment options, including some that are more long-term. “Talk to your doctor to discuss a plan that will work best for you,” Dr. Scribner says. hose of us who have been fans of Rocklin’s Mezcalito knew it wouldn’t be long until the best little Oaxacan restaurant in our area expanded. Fortunately for Folsomites, you’re about to find out what Placer County residents have been trying (unsuccessfully) to keep secret. Last November, owners Ruben and Francisco opened a second, much larger location in Folsom. The menu retains many of the same dishes diners at the Rocklin locale love, with a few more welcome additions (including cochinita pibil, pollo a la crema, and a prawn picante buritto). I started with chips and fresh salsa and then fortified my appetizer craving with their queso fundido. Soft, gooey, melted Monterey Jack cheese with slices of roasted pasilla pepper, caramelized onions, and the kicker: chorizo. My companion commented (and I was already
sizing it up) how you could put it in a tortilla, add an egg, and call it breakfast (with a Michelada, too...maybe?). Since I’ve previously reviewed portions of their menu, I strayed from my go-to items and tested the chicken chili relleno. I’m not usually a fan of things fried in egg batter, but this was a pleasant surprise. Lightly battered mild pasilla pepper, shredded chicken, and some surprise additions of raisins and almonds (Oaxacan-style) in a tomato broth resulted in a definite upgrade to the typical chili-cheese rendition and was good enough to make an egg batter convert out of me. I just happened to be craving a savory bowl of soup when I spotted the sopa Puerto Escondido heading out to another diner’s table. In a matter of minutes, I had my own steaming vessel of “hidden harbor soup” in front of me with all its seaworthy mates—tender cod, mussels, wild prawns, salmon, and vegetables—in a chipotle-plum, tomatobased broth. Slightly spicy and hearty but not too heavy—like it’s French or Italian cousins can be—it hit the mark. Finally came the dessert round, and once again, I eschewed my favorites (churros and ice cream) and opted for something I hadn’t tried before, the Kahlúa cake—a decadent, pyramidshaped sphere of chocolate ganache blanketing a velvety treasure of Kahlúainfused mousse with an espresso dulce de leche drizzle. “Two forks please,” I said to my server, “I can’t do this alone!” Well Folsom, the secret’s out—now go out and try it for yourself.

// Pizza is one of the most perfect, mouthwatering meals. But when a chef travels to Italy to learn from the finest, then opens a catering service and subsequently a restaurant in Roseville, you know you’re getting the best of the best. Flour Dust Pizza makes their delicious pies with imported “OO” flour and San Marzano tomatoes from Italy, which adds to their authenticity (and deliciousness). I went with the Terri, which didn’t actually have tomatoes, but didn’t need them either. Smoked salmon, smoked Gouda, shaved Parmesan, arugula, oven-charred lemons, roasted leeks, and pesto made this pizza original and very, very good. The flavors complemented each other perfectly, and it was a nice variation from your run-of-the-mill pepperoni. My husband went with the Kami, featuring spicy feta sauce, fresh mozzarella, house-made Italian sausage, red onion shavings, Parmesan cheese, and a drizzle of Calabrian pepper purée. They have several other unique pizzas that all sound scrumptious and also serve a Caesar salad (and a spicy variation of it with fried salami crisps!), a shaved apple salad, and a beet salad, as well as hand-pulled mozzarella, made with caramelized onions and sweet peppers. No meal is complete without dessert, right? Choose from cannoli, affogato (ice cream, pistachios, and a shot of espresso) or the magnificent and impressive s’more calzone. Impress your pals by making one (or all!) of the following recipes that are portable, easy to prepare, and best served with sunshine.
Pasta Salad Recipe by Sonya Keister of The Rustic Fork, Folsom, therusticfork.com • 8 oz. (2 cups) elbow macaroni
• 2 cloves garlic, diced
• ½ cup mayonnaise
• 1, 5 oz. package diced pancetta
• 1/3 cup Parmesan cheese, grated • *1 small Fresno pepper, diced • 1 tsp. Dijon mustard
• 2 tbsp. olive oil
• ½ tsp. sea salt
• 1 cup fava beans** (shelled and blanched) or edamame
Cook the pasta according to package instructions. While cooking, whisk the mayonnaise, cheese, mustard, and salt together in a large bowl. Once the pasta is cooked to al dente, drain and immediately toss with the mayonnaise mixture. (The noodles will soak up the mixture better if they’re hot.) In a medium sauté pan over medium heat, add the olive oil for about 30 seconds. Add the pancetta and cook low and slow until crisp and all the fat is rendered. Add in the pepper and garlic, and cook for 30-60 seconds. Remove from heat and pour mixture, including the oil, over the pasta. Fold in the fava beans or edamame and taste for seasoning. Refrigerate until ready to serve. Note: Salad can be made up to one day ahead of time to let flavors meld. *Can be substituted with a pinch of crushed red pepper flakes. **About 1 lb. of fresh fava beans. Remove from their pods then blanch in simmering water. Drain, cool, and remove the beans from their shells.

Mix with a wooden spoon, taking care not to over stir. Season to taste with salt and pepper. Cut the French roll and put the lettuce on the bottom half, followed by the tomatoes and crab salad. Cover with top of French roll. Cut in half and keep cold until reaching your picnic locale.
