L
et ’s rewind for a minute to early March. Before life as we knew it came to a screeching halt. I was a distracted mom, driver, wife, and worker who was religious about my routine, took things like haircuts and hugs for granted, and had big plans to see the world this summer. Then, COVID-19. Need I say no more. For anyone who likes to be in control and is a creature of habit, it was the ultimate lesson in letting go and realizing that the only thing we truly have control over is our attitude. Despite the challenging moments, the tears, and the fears that my own family faced, the situation ultimately brought us, and our community, closer. It was a time—a lot of time—of reset, reflection, and, yes, reruns. I embraced the multiple months at home by learning a few new skills (baking sourdough bread and bagels), savoring every second with my daughter who’s growing way too fast, planting a pretty—and pretty prosperous— garden, and gaining a new appreciation for my neighborhood and the people and places that make it thrive. Another positive thing to come out of quarantine? The rates of pet adoption and fostering significantly spiked. As touch between humans became taboo and people started spending endless hours in the comfort of their crib, owning an animal became even more enticing. Just turn to this month’s feature, “Incredible Pets,” on page 53 to read about two lucky pups who were adopted amid the pandemic (Daphne and Lady), plus other fourlegged friends who live, and are loved, locally. We also share a lengthy list of area animal rescues, tips for summer pet safety, easy ways to pamper your pet, and furry friends to follow on Instagram. It’s a feel-good feature you won’t want to miss. As lockdowns continue to lighten and warm summer nights are upon us, it’s a prime time to pack up the car and cruise to a close-by campground or lake for a date with nature—and the star-filled skies that ensue once the sun sets. Contributor Ryan Martinez shares fun facts about the complexities of the cosmos and tells us his top spots for gazing in “Starry Nights” (page 22). Curious about the tasty-looking tacos on our cover (where to find them and what’s in them)? Turn to Eat & Drink on page 70 to read about some of our region’s top tortilla-filled delights, plus must-try mezcals, and boozy beverages made with summer’s favorite spirit: tequila. None of us may be traveling to Mexico this month, but you’ll certainly get your fill of the country’s cuisine after —Buddha reading these palatable pages. As life slowly returns to (a new) normal, I hope we continue to be more present, spend ample time outside— and in the kitchen—and, maybe most importantly, support the small businesses that support us on a daily basis. Cheers! — Megan // megan@stylemg.com @meggoeggowaffle

Q&A
How Donation Saves Lives • One person can save eight lives and enhance 75 others through organ, eye, and tissue donation. • On average, 150 people are added to the nation’s organ transplant waiting list each day—one every 10 minutes. • An average of 22 patients die every day while waiting, simply because the organ they needed was not donated in time.
What comes to you naturally? Lisa: Talking to people and putting myself in their shoes. Dan: Planning, organizing, and getting things done. What’s your biggest pet peeve? Lisa: Lying. Dan: Messes. What are you most proud of? Lisa: My family and ability to overcome hardships without becoming hard myself.
• Approximately 98 organ transplants take place every day in the United States. • A living donor can provide a kidney or a portion of their liver, lung, pancreas, or intestine to someone in need. SOURCE: Donate Life California, donatelifecalifornia.org. REGISTER TO BE A DONOR AT DONATELIFE.NET.

Best words of wisdom you’ve received? Lisa: “We’ve all got meanness in us, but we all have good in us too, and the only thing worth living for is the good. That’s why we’ve got to make sure we pass it on.”—Where the Heart Is Dan: Travel internationally often when you’re young, as waiting to do it till later results in either never doing it, or seeing it all in bifocals from a bus, which sucks.

Placer County “transplants” Lisa and Dan Summers’ compatibility extends beyond matters of the heart. After meeting on eHarmony, falling in love, and marrying, Dan learned he would need dialysis and a donated kidney. Lisa hoped she would be a match, but the odds were stacked against her. According to Dan’s doctors, the chances of a spouse being a near-perfect match are one in 100,000. But after completing the extensive testing process, she was able to tell Dan: “We’re a match! I get to give you a kidney!” They want to share with the world that a live donor establishes a much better outcome for recipients rather than a cadaver organ. “A cadaver kidney is only expected to last three to five years, while a live matched donor kidney [can] last 10-20,” Dan says. Additionally, becoming a live donor causes very little inconvenience and impact to your everyday life. “Less than one percent of live donors regret the decision, and after doing so, your remaking kidney grows and functions at a higher percentage,” Lisa shares. “I wish I had more kidneys to give, because I’d do it every month if I could.” —Susan Wallace

You can see up to 3,000 stars at night with the naked eye, and you may be able to see them all at Wrights Lake in Desolation Wilderness, Round Lake in Meiss Meadows, or Winnemucca Lake in Mokelumne Wilderness. Away from the light pollution of cities and high in the crisp mountain air, they’re ideal locales to contemplate the deepest mysteries of our existence: the cosmos. Don’t miss the annual “Perseids” meteor shower with incredible clarity on August 11-12. Go with camp chairs, a blanket, hot chocolate, and maybe even a splash of Baileys or whiskey to lighten the mood. Solving these universal mysteries is the greatest catalyst for technological advancement. Answering the questions of how the universe works has pioneered everyday things like cell phone cameras, wireless headphones, smoke detectors, and even baby formula. In Placerville, you have the opportunity to experience one of the first tools ever invented for this purpose: the telescope. The Placerville Community Observatory (communityobservatory.com) offers free astronomical observations every Friday, Saturday, and Sunday night. Eldorado National Forest
Tahoe National Forest
Winnemucca Lake in Mokelumne Wilderness
Observing the night sky with the naked eye obviously predates our most basic technologies. All cultures have developed “sky maps” for navigation, drawing shapes, or constellations. The Greeks were responsible for the shapes we all know, like Ursa Major, home of the Big Dipper, which is easily seen from local spots like Beals Point and Negro Bar at Folsom Lake.
CURBSIDE PICK-UP AND TO-GO OPTIONS AVAILABLE!
People used these “maps” to navigate the world’s oceans and deserts remiss of any landmarks for navigation. In the Northern Hemisphere, we use the North Star (Polaris), which marks the spot directly over the North Pole. All the other stars seemingly rotate around this star, but it’s really Earth that is rotating. When visiting Salmon Falls Bridge, use Star View Lite or Sky Map to locate the North Star and more. But what about that huge river of stars across the sky? We now know that the Milky Way is not a splash of milk from the breast of Hera, as the Greeks believed; rather, it’s actually one of the rotating “arms” of our spiral galaxy. When you go to Finnon Lake in Placerville, look up and know that 23,000 light-years away there’s a black hole at the center of our galaxy around which everything is rotating. The constellations aren’t the only way to connect with ancient history. Stars can be millions of light-years away, meaning you’re looking at light that can be hundreds of thousands of years old! In fact, some of the stars you’re seeing have already fizzled out, and you’re actually seeing stars from the past! The two-million-year-old shore of Lake Tahoe is a great place to contemplate both time and space. The aforementioned lakes aren’t the only spots where you can see the stars reflected by pristine, still water, however. Jenkinson Lake, sited in the heart of the Eldorado National Forest, may be closer to home and equally gratifying. Deer Creek Hills Preserve in Rancho Murieta also checks the box for low light pollution, making it another great place to see the stars, which don’t twinkle, as the song may otherwise indicate. As light enters into our atmosphere, the gases that make up the atmosphere itself cause the light to bounce slightly, creating the illusion that stars twinkle. Twinkling aside, the best places to see the stars are away from cities at higher elevations on clear nights. That’s why places like Cronan Ranch and Foresthill—both in Tahoe National Forest—are primo places for a date night with the stars. JULY 2020 |

elebrating their 25th anniversary in April, the Folsom Concert Association’s (FCA) mission has remained constant: to plan and schedule affordably priced, annual musical performances for our region’s residents. The nonprofit also aims to foster, recognize, and encourage participation in music for all ages. “I get a great sense of pride when I see smiles on the faces of patrons who come to our concerts,” shares FCA President Craig Burnett. “No matter what ills are affecting their lives, they’re able to forget their problems and enjoy outstanding performances—seeing patrons happy makes me happy!” Though their 20/21 concert season was canceled due to COVID-19, you can still support the group’s mission by donating to their various outreach programs. Additionally, they’re sharing past performer’s videos on their website, including one from Daniel Rodriguez and his wife, Marla, who were set to perform on April 5. HLN: TELL US ABOUT THE FOLSOM CONCERT ASSOCIATION’S INCEPTION. CB: In 1994, a group of Folsom residents headed by [the late] Dick Merz met around his kitchen table to discuss putting together affordable concerts for the city and surrounding communities. In the spring of 1995, FCA incorporated as a 501(c) (3) nonprofit. Community concert associations (CCAs), as a whole, started in the ’20s, so people who lived in small [towns] and couldn't get to large cities had an opportunity to go to the theater and see live musical performances. Today, there are approximately 200 CCAs across the U.S.

HLN: HOW DOES FCA REACH OUT TO THE LOCAL YOUTH? CB: We send professional musicians to local schools to introduce students to various forms of music and performers. In addition, since 2011, we’ve given out 25 scholarships valued at $38,000 to graduating high school seniors from our community who will be attending college to study music or theatrical performing arts. New Chordettes
HLN: DO YOU HELP THE COMMUNITY’S SENIOR POPULATION, TOO? CB: As part of our outreach, we’ve coordinated with the Sunshine for Seniors Club at Ponderosa High School and have hand-delivered over 50 individually customized, preprogrammed headsets to residents and staff at assisted living and memory care facilities. Repeatedly, we’ve witnessed that music in these facilities means more than entertainment. It often reaches into their minds and brings back wonderful memories of their past. We’ve seen how residents who have stopped talking start to sing along with the music. HLN: WHAT ARE FCA’S FUTURE GOALS? CB: Our challenge is that the number of seniors who reside in assisted living and memory care facilities is growing rapidly. Many of them find it difficult or impossible to get to live concerts. We need to find more professional musicians who will serve these seniors. We’ll also continue to update and expand our efforts to provide music to shut-in seniors by expanding our headset and personalized music program to even more senior residences throughout the region.

Listen Up! 7 Facts About Hearing Loss
Photo ©Krakenimages.com - stock.adobe.com.
by KOURTNEY JASON
Hearing loss is a common chronic condition, especially as we age. Approximately 48 million Americans have significant hearing loss, says Roselynn Young, AuD, owner of Roseville Dianostic Hearing Center. Dawn Alden, ND, at Revolutions Naturopathic says nearly half of people aged 75 years and older have trouble hearing. “While loud noise is one of the most common causes of hearing loss, it can also stem from earwax blockage, certain diseases, trauma to the head and/or ear, frequent ear infections, aging, medications, or [genetics],” Dr. Alden says. It can be hard to recognize age-related hearing loss, as the loss is a gradual process. You may have a problem and not know it. Read on to learn more about the signs of hearing loss and how it can impact your overall health.
1
Watch for Warning Signs
2
Impaired Cognitive Health
Hearing loss often goes unrecognized due to slow progression. “In an article published in the American Academy of Family Physicians, the authors report 80% of patients 65 and older with moderate to profound hearing loss did not perceive themselves as hearing impaired,” says L. Mark Payne, AuD, and Director of Audiology at Marshall ENT and Hearing Center. Dr. Alden suggests speaking with your doctor if you have any of the following signs of hearing loss: trouble hearing over the telephone, difficulty following conversations, regularly asking people to repeat what they’re saying, turning up the volume on your TV so loud that others complain, having a problem hearing because of background noise, thinking that others mumble in conversations, and/ or not understanding women and children when they speak to you.
Hearing loss can be one of the first signs of a greater cognitive disorder, such as dementia or Alzheimer’s. Cognitive decline creates cognitive overload, which is the inability to process the information you’re being told, says William Forrest, owner of Cognitive Hearing Centers. “If you have hearing loss and can’t hear people around you, especially in noise, this is cognitive overload. When we can’t understand 50% of the conversation, we tend to check out.” When left untreated, hearing loss accelerates cognitive decline and cerebral atrophy (or brain shrinkage) and increases the risk of social isolation. “There are now over 26 scientific studies connecting cognitive decline to untreated hearing loss, which in fact is a precursor to Alzheimer’s,” Forrest shares. Hearing loss is also linked to an increased risk of falls in seniors, which oftentimes can be life-threatening. Dr. Payne says researchers at John Hopkins University, in coordination with the National Institute on Aging, concluded that those with hearing loss—even mild hearing loss—were significantly more likely to fall than those without hearing loss. “They also concluded that the greater the hearing loss, the greater the risk—from three times greater for mild loss to seven times greater for severe loss,” he says. Hearing loss that initiated cognitive overload would impact balance through a decreased awareness of surroundings, which could lead to the damaging falls. “Researchers at Washington University School of Medicine concluded that hearing aids appear to improve balance in older adults,” he says.
Dr. Payne says diagnosis and treatment of hearing loss can lead to a better quality of life and overall improved health. “Like heart disease and diabetes, the longer hearing loss is unaddressed, the greater the impact on a person’s health.” Studies show that those with hearing loss are more likely to suffer psychosocial disorders such as depression, anxiety, fear, anger, paranoia, withdrawal, and isolation. Relationships with friends and loved ones will also suffer, as those with difficulty hearing may become more isolated out of embarrassment of being unable to hear or understand, Dr. Alden says.

Not treating your hearing loss might cost you more in the long run, especially if additional health conditions develop. “Hearing loss can increase the risk of developing dementia by 200-500%, and statistics show that the average family will spend approximately $57,000 per year to cover health care costs and manage the care of a loved one with dementia,” Forrest says.
It’s never too late to protect your ears. “Hearing loss due to noise is preventable, so it’s imperative to be aware of how loud you’re listening to music and personal listening devices. Keep the volume down and make sure to wear ear protectors when working with loud power tools and equipment,” Dr. Young says. According to Dr. Alden, “Common chronic health conditions, such as diabetes and elevated blood pressure, can affect your ears...[also], let your doctor know if you start to experience hearing issues with your medication,” she says. Maintain regular check-ups with your primary care doctor once a year. “If you suspect hearing difficulty, a simple and quick office hearing test can be performed,” she says.
Forrest, an Army veteran who was exposed to explosives, was diagnosed with hearing loss and tinnitus (ringing in the ears). “The medical treatment of hearing loss also helps relieve tinnitus,” he says. “It has really improved my quality of life and minimized the ringing.” Dr. Payne says improved hearing is improved health and quality of life. “If you have any concerns or if loved ones and friends complain about your hearing, have this discussion with your family doctor. Your issues may be as simple as wax occlusion or as significant as progressive ear disease process,” he says. | JULY 2020

Wrights Lake to Grouse Lake by RYAN MARTINEZ
LOCATION: Near Kyburz. Google “Wrights Lake to Grouse Lake.” DISTANCE: Four miles out and back. DIFFICULTY LEVEL: Intermediate/difficult. Moderately trafficked. 1,210 feet elevation gain. KNOW BEFORE YOU GO: Check with the Eldorado National Forest before going to ensure the trail is open (916-500-4712). Lots of mosquitos. Dogs are allowed on a leash. FUEL UP: Check out Sweetie Pie’s in Placerville (577 Main Street) for a quick but delicious breakfast before heading out; posthike, try Wally’s Pizza Bar (4079 Cameron Park Drive) in Cameron Park for eclectic pies in a casual setting.
WHY WE LOVE IT: Beautiful lakes and abundant waterfalls. Perfect for overnight camping and stargazing. TRAIL NOTES: Bring bug spray, plenty of water, and consider a water filter. There is cell coverage in Desolation Wilderness, but go with phones fully charged in case of emergency. Practice “leave no trace” ethics; if you pack it in, pack it out. Respect signs. Q: WHAT'S THE BEST TIME TO WALK MY DOG DURING THE SUMMER TO AVOID OVERHEATING? A: It’s best to go early in the morning or
later in the evening when the sun is down and the temperatures drop below 80 degrees. If we’re experiencing abnormally high temps (100+ degrees) then waiting until after 8 p.m. may be best. Be careful with walking on hot asphalt, as all dogs’ feet are susceptible to blistering since the temperature of asphalt and other heat-absorbing surfaces can reach 140-160 degrees! Make sure to have access to cool water for the dog to drink and consider bringing a thermal bottle with ice water and a towel (you can put the cold water on it to wipe down your dog if they're exposed to excessively high temps).

Q: IS IT BETTER TO RUN YOUR POOL PUMP DURING THE DAY OR AT NIGHT? A: It's always better to run your pump
during the day. Algae grows in the sun, and the circulation of water makes it harder for the algae to begin growing. Depending on the pump you have, you should set the timer for at least one to one-and-a-half turnovers per day. With proper filtration, circulation, and water balance, your pool will be crystal clear and perfect for swimming. —Mike Tilson The Pool Place Placerville 4480 Missouri Flat Road, Placerville, 530622-5386, thepoolplaceplacerville.com

t's 2020, and modern design is en vogue—so it's reasonable to think that owners may be passing over country décor in favor of more contemporary elements. But it takes just a peek at the photos from this modern farmhouse-inspired renovation to know that the combination of country chic and clean-brushed metals creates a stunning look well-suited to modern California living.
At the helm of the project were Jake and Dan Oliver, a father-son duo and coowners of general contracting firm Terra Inc. Construction (terrainc.net). With an approximately $150,000 budget and impressively short six-week timeframe, the company flipped the 2,735-square-foot home from a relatively monotone and generic space into an inviting and modern country escape. "We went for a combination of traditional and country farmhouse design on the interior with the large, dark blue island in the kitchen and blue vanities," says Jake, "as well as a farmhouse sink and a combination of brushed gold and matte black finishes throughout." The blue, cream, and pure white color scheme was carried into the master bathroom, where the Olivers opted to replace a deck-mounted, step-up bathtub with a freestanding and modern bright white soaking tub. The double vanity was replaced with blue cabinets and gold hardware, with gold-framed round mirrors, and above-counter sinks to mirror the bathtub's gentle curves. The resulting final product is a bright and attractive escape that feels much more open and intentional than the original space. Terra Inc. Construction executes approximate 15 home flip projects a year and has been in business for over 40 years, so they've learned what homes make for the best projects. "The house was a good candidate for a flip, because it had good bones and a nice open-concept floor plan in a good

| home & garden | AFTER location," says Jake. For the project, Terra Inc. Construction focused on the kitchen and bathrooms, though the entire home got a facelift. According to Jake, remodeling your kitchen increases your home's resale value more than any other room, followed by bathrooms— especially master baths. This advice mirrors a 2019 study from popular décor and renovation company houzz.com, which found that approximately 30% of home renovation projects were kitchen remodels. Despite being the most expensive room to address—the same study reported a $14,000 average price tag per project—the returns are high. Remodeling Magazine's 2020 Cost vs. Value Report found that homeowners in the Sacramento area recouped anywhere from 49-74% of the renovation cost in increased home value when it came time to sell. Jake recommends homeowners try to save money on their remodels by shopping around for contractors—but cautions against making the decision based entirely on price. "Get multiple bids from licensed contractors who have insurance—

both general liability and workers comp—to protect you as the homeowner from liability." He also suggests homeowners consider remodeling based on craftsman, country farmhouse, or modern aesthetics, all three of which are currently popular with homebuyers. That said, there's no need to renovate your home in a style that doesn't speak to you. Fortunately, there are professionals who can help style your home to make it as aesthetically pleasing as possible to potential buyers when it's time to sell: home stagers. Stagers may rearrange your furniture and décor, display new art, or help to declutter your home so potential buyers can better imagine themselves in your space. Jake says hiring a

home stager upon completion of their renovation made a huge difference in their bottom line. "We partnered with Danielle Miller with Studio D Staging & Redesign (studiodstaging.com) in El Dorado Hills and got five offers—all above list price—and went to escrow in five days," he says. In total, the entire project went from start to sold in just 10 weeks. While the crisp colors and high-end finishes in this modern farmhouse home may inspire major renovation envy, remember that not every home renovation needs to be in the six figures to be impactful. In their 2019 Remodeling Impact Report, the National Association of Realtors polled homeowners on the impacts of painting a single interior room—one of the most affordable home improvement projects homeowners can do without hiring a skilled professional. Sixty-one percent of survey respondents said that painting a room increased their sense of enjoyment when at home, and 75% reported feeling a sense of accomplishment when looking back on the project. According to Jake, homeowners can take on other small projects themselves, too, if they have a bit of extra time and budget. "Some flooring can be done by a homeowner with some practice," he cautions, "but expect it to take longer and be more expensive than what you anticipate!”

Although she doesn’t play with any toys, she enjoys sunning herself (until it gets too hot), wrestling, playing with our garden cat (they’re best buddies), chasing turkeys out of the yard, and scaring deer when they get close to the fence. She loves the country life.”—Lorraine Burgess

kids. All were rescued and fill our hearts. Our bulldog, Bruce, will shake your hand, roll over, play dead, and say I love you. Olivia, the black pug, runs our house and keeps the pack in line. They all love walks and playing ball and are huge fans of people and attention.” —James Bockmann
BRIAR ROSE (ROSIE) & MOWGLI “Nine-year-old Mowgli likes anything made of meat or cheese, is still learning to tolerate Rosie, and thinks sleeping on the tall bed that Rosie can’t jump on is fantastic. Mowgli guards the dog food he refuses to eat and bites toes or ankles that get too close! Rosie was born on February 1 and is still growing into her ears and paws. She thinks Mowgli’s tail would be a fun chew toy, wants toys as large as her, and was rescued at 14 weeks from Itsie Bitsie Rescue.”—Brittany Short
CAB “Cab, a new mom who was left with all her kittens in the back alley behind our home, was really scared when she first came into our life. She’s now a lovable, kind, and protective cat who is very sociable.”—Jennifer Corrigan
CHARLEY “Charley is a seven-month-old Australian shepherd mini who’s very playful. He lives for having his belly rubbed and enjoys napping, kids, going on long hikes, and fetching his toys. 7 TIPS FOR SUMMER PET SAFETY
1
Keep your pet home and out of the car. The easiest way to keep your pets safe this summer is to leave them at home when running errands! On just a 90-degree day, it takes less than 10 minutes for a car’s interior to reach 160 degrees. Leaving your pet in the car—even for a short time— can lead to heatstroke, irreversible organ damage, or death.
2
Exercise when it’s coolest. Avoid exercising your pet on hot days–except earlier in the morning or later in the evening. Always have plenty of water available and remember that asphalt and concrete can get very hot in the summer sun. A good way to see if the ground is too hot for your pet is to place your hand on the sidewalk or asphalt. If it hurts you, it’s too hot for their paws!
JETER & JESSIE “Jeter is an 11-year-old chocolate Lab and Jessie is her eightyear-old black Lab daughter. Jeter is your typical neurotic chocolate Lab who is constantly on the go, while Jessie is the laziest Lab in the world, who only really likes to go on walks because she knows she'll get a treat afterwards. Both love the ocean, mountains, and their grandparent's pool.” —Laura & Steve Aguirre
3
Beware of mosquitoes. Heartworm—a parasite that can be fatal for dogs and cats—is transmitted by mosquitoes, which are a common summer pest. Check with your vet to see if your pet should be taking heartworm medication and clean outdoor water bowls often to prevent the hatching of mosquito larva.
4
Watch out for pesticides. Plant food, fertilizers, and insecticides in backyards and public spaces are more widely used during the warmer months. These chemicals can be fatal if ingested by dogs or cats, so ensure you follow pet safety guidelines when using them in your own yard and watch your pets in outdoor spaces.
5
Protect them from the sun. Provide plenty of shade and water for your pet at all times, and remember that pets can get sunburned, too. Use sunscreen on pets with short coats, light-colored noses, or fur on their ears.
6
Continue social distancing with your pet. Consider leaving your pets behind when you know there will be a lot of stimulation. Loud noises, lights, and larger numbers of people can be very overwhelming for animals. Water can also be in short supply at events, often leading to dehydration.
7
Track your pet. Make sure your pet has an identification tag and microchip. These give you the best chance of reuniting with your pet if they get lost. Microchips are available at the Placer SPCA’s Companion Animal Care Center. Tips courtesy of Placer SPCA

The kabobs also come with naan bread (another favorite) and a refreshing tomato salad. I also ordered the bolani, a thin, almost tortilla-like bread grilled to a crisp and filled with seasoned potatoes and green onions. If, like me, you’re not familiar with bolani, I recommend giving it a try. It’s lighter than pizza and more flavorful than a tortilla. The serving was enough to feed at least two to three, and probably four, which didn’t deter me from trying to finish it all. The entrées came with fresh yogurt and cilantro chutney, which were both excellent on the bolani. The restaurant is spacious enough for large parties, and the staff was very accommodating and helpful. Khyber Restaurant is a welcome new addition to my culinary travels—make it one of yours, too! They’re small(ish), they’re messy, and they’re downright delicious. We’re talking everyone’s favorite food: tacos. Forget Taco Tuesdays, we’ll take tacos any day of the week—especially if they’re one of the following.
Mashed potatoes on a taco, anyone? If you answered “yes, please” then try the Tacos Sinaloenses at Mexquite in Folsom. Crispy corn tortillas are filled with mash and their classic shredded chicken or beef; topped with a zigzag of sour cream, queso fresco, lettuce, and marinated red onions; and served with Mexican rice and refried beans. We love a tried-and-true taco. We also love those with a twist. So, when we saw Crisped Corned Beef Tacos on the menu at Goose Port Public House in Roseville, we had to put them to the test. Contrary to what you might think, these tacos are anything but dry and exude flavor—especially when paired with Cotija cheese, salsa, and lime. Taco ’bout tasty! gooseport.com
Folsom’s Rock-N-Fire might be famed for their pizzas, burgers, and wings, but did you know they serve tacos, too? The Carnitas Tacos—which boast delicately tender braised pork that’s seasoned to perfection, Colby-Monterey Jack cheese, and pico de gallo on soft corn tortillas—are particularly praiseworthy. Understated, yet undeniably tasty, these are worth a try. rocknfirerestaurants.com

There’s no wrong order at Nixtaco in Roseville (even their vegan tacos are topnotch), but the Pork Belly Taco is our current go-to.
