I
’ve always been a morning person. Something about the dawn of a new day—sitting in stillness while consuming a cup (OK, cups) of freshbrewed coffee as the sun slowly rises—fills me with peace and positivity. But my favorite part of waking up has always been breakfast. Though some people are satisfied with a smoothie or skipping it altogether, I can’t imagine starting the day any other way. Whether it’s waffles piled high with peanut butter, a stack of syrupdrenched pancakes, overnight oats swirled with cinnamon, or a protein-packed burrito, I don’t discriminate—so long as it’s hot, hearty, and (mostly) healthy. This month ’s feature, “Rise & Dine,” is a tribute to the morning meal. Turn to page 53 to read about over 30 of our favorite breakfast locales with recommendations on what to eat and drink at each. From sweet to savory, and the classics done right to more obscure offerings like Angel Food French Toast that’s as heavenly as it sounds, there’s something everyone will want to dig into. We also share the secret to making fluffy flapjacks and perfect scrambled eggs in “Ask a Chef,” and 7 breakfast in bed must-haves so you can create a memorable meal at home. And though I fully support sipping on a mimosa or Bloody Mary before noon, I’m also all about bending the rules—like enjoying a coffee-infused beer for breakfast. Check out Sip on This (page 88) for 5 recommendations that are really good...and really strong, including French Press, a dark, malty ale from Hillenbrand Farmhaus Brewery that’s made using Sacramento-based Chocolate Fish coffee. In other food news, have you hopped on the charcuterie, aka grazing board, bandwagon yet? They’re all over the Internet and have become particularly popular since —Jeff Lindsay the pandemic. These wondrous works of edible art are typically styled with an array of cheeses, cured meats, pickled veg, fresh or dried fruit, and other accoutrements; and are perfect for a picnic in the park, date night, or girls’ gathering. For 7 local companies crafting them, turn to “Say Cheese!” on page 78. Finally, march into spring with “Super Blooms” on page 22, where we highlight 10 flower fields awash with color that are open and available for your viewing and, in one case, u-pick pleasure. It’s a cheery way to welcome the season and all the beauty it brings. Another reason to smile this month? Behind the Cellar Door—a wine-filled weekend in Amador County featuring tastings, food pairings, and educational opportunities—is back! Find more details on page 15. Just remember: Wine tasting on an empty stomach never ends well (trust me), so be sure to fuel up with a big breakfast beforehand. Cheers!
“I know family comes first but doesn’t that mean after breakfast?”

4 Wonder Women March 8 marks International Women’s Day—a global day celebrating the social, economic, cultural, and political achievements of females. Kimberly Marie Morphis Folsom, Realtor & Business Advocate
Kimberly Morphis rose to small-town fame when she devised 95630 BINGO— an innovative game that benefited Twin Lakes Food Bank and 24 small businesses in Folsom. Patrons who made donations to the food bank received a bingo card that encouraged them to shop at local restaurants and retailers. Whoever checked off all 25 squares first would win $1,000. It was a novel ideal, intended to highlight the plight of struggling small businesses and rally a community together—a community that ultimately didn’t disappoint. In the end, money went to the food bank and businesses, but the cherry on top was when generous winner, Evangeline Scott, donated her entire earnings back to the community. It was a complete “winwin-win,” says Morphis, proud of the place she calls home. Folsom has been “home” to Morphis

for 23 years. She grew up with a strong mother who taught her and her sister the importance of hard work, positive thinking, gratitude, and giving back. From babysitting to running a mobile bartending business, she’s come a long way, and credits her strong work ethic and family bonds for giving her the confidence to get through life. “While bartending one night, I told my first employer in commercial real estate that he was going to hire me, even though I had no clue [about the industry],” she says. Seven years later and she’s a successful realtor, championing the cause of small businesses. “Being responsive, knowledgeable of my markets, and having a very firm handshake have all helped get me to where I am today!”
Q&A WHAT MOTIVATES YOU?
I’m the proud mother to an amazing son, Kamden James, and am motivated to show him that hard work, determination, and being of service will reward him with a fulfilling life. WHAT IS YOUR ULTIMATE GOAL?
To create a life for my son and myself where we can have a loving and structured home, be able to travel the world, learn something new each day, and give back to those in need. WHAT MANTRA/MOTTO DO YOU LIVE BY?
Keep moving forward.

Republic and at NFL halftime shows. The bubbly dancer now owns Theory Dance (theorydance.org) in Folsom and teaches hip hop to kids, in the hope that they— especially young girls—will build their confidence while learning some moves. “I’m proud of following my dream and showing these kids that anything they set their mind to can become a reality with hard work and consistency. Taking that first step is key!” she says. Always in step with her goals, Williams found herself in a tough place when the pandemic hit. Amidst preparing to teach at Russell Ranch Elementary School and planning her dream wedding, life came to a screeching halt. “I had a choice: I could wait and see what the world would do, and be sad that all my hard work went in the trash, or I could adapt to the current state of the world,” she says, choosing the latter and moving her whole dance program online in just two days. “Trying to bring joy to these kids who had everything taken away from them was my motivation.” Williams has made great strides since opening her studio in 2018. Today, she teaches 70 kids locally and even more on TikTok (her “Laffy Taffy” dance went viral last summer). Now, she’s working toward a big Covid-friendly video production. “I figured it gives the kids something to work toward.”
Q&A WHAT MOTIVATES YOU?
I love seeing the dancers accomplish their goals and getting over their fears. I want to create a safe environment for kids and teens [where they can] support each other when they don't believe in themselves. WHAT MANTRA/MOTTO DO YOU LIVE BY?
Just keep moving and stop stressing over the

Emmy and Edward R. Murrow awardwinning journalist and local celebrity, Cristina Mendonsa, has many feathers in her cap. Not only is she a veteran television and radio journalist, and host of KFBK Morning News (kfbk. iheart.com/featured/the-morning-news), but she’s also a female and minority business owner of Mendonsa Media (cristinamendonsa.com). The talented storyteller has contributed to the world of journalism for the past 25 years and has garnered a reputation for being as direct as she is warm. Illustrious professional career aside, she’s also been an advocate for community initiatives on mental health, cancer research, and veteran services, thereby significantly impacting the community. Always the goal-getter, she’s ticked them all off one by one. “When I started my broadcast career, my goal was to be a top 20 market anchor and I’ve spent three decades doing that. My next goal was to finish my master’s degree and I did that,” she says nonchalantly. As effortless as she makes it sound, it wasn’t always smooth sailing. “It took me a long time

without its challenges, and I made note of those challenges along the way.” Enter Single Mom Strong (singlemomstrong.org), a nonprofit Taylor started after her daughter left for college with the mission to empower single mothers and their children through enrichment, encouragement, and educational programs. Taylor insists that this at-risk population needs more done for them. “Despite mothers’ best efforts, statistics show that these children suffer in a variety of ways from educational deficiencies to having lower occupational status and income as adults. Single mothers are also plagued by feelings of guilt and inadequacy and are often living in poverty,” she says, stating that a single mother can be a professional success and a great parent, and not be limited by circumstances. To date, the organization has served over 800 local single mothers and children, and Taylor’s been the recipient of many local awards and accolades, including special congressional recognition and community service awards. Now, she wants to duplicate her efforts in other cities. “Being a single parent is difficult and lonely but having others in similar situations to share concerns and celebrate wins with is powerful.”

Getting divorced at a young age lit a fire in Tara Taylor. “I vowed to ensure that my daughter had the same opportunities as a child from a two-parent home,” she says. Masters of Light by EMILY PETER-COREY
Plein air painting encourages artists to step into nature and utilize the beauty they observe amongst the landscape’s ever-changing light. The technique has been around for centuries but was made famous by French impressionists and the invention of transportable paint tubes and box easels. Those innovations, along with the desire to paint changing light, allowed people to paint en plein air, the French expression for “in the open air.” Here, we introduce you to four of our region’s finest plein air painters.
Victoria Brooks
Mendocino Cove
Loomis, vbrooks.com
What attracts you to plein air painting? It’s a way to connect directly with nature. When I’m inspired to paint a scene, I try to capture the emotional aspects I’m feeling and share those with the viewer. The challenge of “chasing the light” is exhilarating; you usually only have about two hours before your light has changed. How did you develop your artistic skills? Growing up in Portland, Oregon, there were many rainy days. My parents bought art supplies to keep [my siblings and me] busy, and I always loved to draw and paint. I went to college in Portland, received my degree in graphic design, and then had a 14-year career as a graphic designer and art director in television. I went back to school at the California Art Institute in Los Angeles and studied painting for an additional four years and have been painting full-time ever since. What is your most notable achievement? In 2005, I won first place in a show called “Plein Air Painting in Sherwood Forest” in Chico. I’ve also achieved signature status in the American Impressionist Society (AIS) and the National Oil and Acrylic Painter of America (NOAPS).

What advice do you have for someone just starting out? Draw and paint as much as possible and take workshops from artists you admire. I learned discipline as a graphic designer, which I apply now. I never ask myself if I’m “in the mood to paint”; it’s my job, so I just do it. Where is your favorite spot to paint? Auburn at the confluence, all of Gold Country, Lake Tahoe, Hope Valley, wine country, and the Monterey Peninsula. Where can your art be found? By appointment at my Loomis studio; the Patris Studio and Art Gallery in Sacramento; Fairweather House & Gallery in Seaside, Oregon; and Wild Moon Gallery in Tillamook, Oregon.

What attracts you to plein air painting? I was attracted to plein air painting while living in Irvine and taking a community college course with artist Jeff Horn. Also Drawing on the Right Side of the Brain had become my favorite book and I wanted to practice the medium as much as possible. I developed a sketchbook habit and then was introduced to Urban Sketchers. Plein air drawing and painting really clears and focuses your mind and makes you more sensitive to your surroundings. How did you develop your artistic skills? For many years I painted outdoors in oil, but the equipment became too heavy for me. Now I go out with a light sketchbook, micron pen, watercolor set, camera, and folding chair. I relax and enjoy the scene and complete oil paintings in my studio from my sketches and photos. What is your most notable achievement? Nine months of the year, I sketch once a month with the Yolo Art & Ag Project, which schedules artist visits at private ranches in Yolo County. At their annual Harvest Festival, I won the Farmers Pick Award as well as numerous top 10 recognitions. What advice do you have for someone just starting out? Develop a sketchbook habit and watch your skills grow! Where is your favorite spot to paint? I love to sketch the Napa Valley and while on European vacations. Where can your art be found? Online at dailypaintworks.com

| arts & culture | Barbie Smith What attracts you to plein Orangevale, air painting? Painting barbiesmithstudio.com outside helps train my eyes to observe the effect of sunlight on a landscape. As I observe the scene and quickly work to mix the colors as they appear, the result is a harmonious painting. Because the light changes quickly, I’m forced to stay focused, work quickly, and trust my instincts. Being surrounded by nature also allows me to experience a scene with all my senses. I especially enjoy locations that are quiet and peaceful—except for the sound of birds singing or leaves rustling. Mornings are my favorite time because the day is fresh and new; evenings are also nice because the sun casts a beautiful warm glow over the landscape; even gray days can produce a beautiful scene where colors appear more saturated in the [dreary] atmosphere.

How did you develop your artistic skills? Through instruction, consistent practice, and a desire to grow as an artist. I’ve studied under a number of professional artists, taken advantage of many videos and blogs available, and have a growing collection of books that teach and inspire. These resources— along with the practice of daily painting—have helped me to increase my abilities as an artist.
Mission Reflections
Mike Bagdonas Tung Barn
What attracts you to plein air painting? My love of the great outdoors, specifically our fantastic National Parks and breathtaking Western landscape. I’ve always enjoyed travelling and hiking, and plein air painting gives me an outlet during my travels to record the beauty I’ve seen through my own eyes and painting ability.
What advice do you have for someone just starting out? Find a group of painters who organize regular paint outs in your area. Beyond the Rocks Plan ahead and have your gear loaded the night before so you’re not scrambling for materials at the last minute and wasting precious morning light. Don’t pressure yourself to produce a finished work of art; you can use your study back in the studio to develop another painting at a later time. Also, the glaring light makes it difficult to judge color correctly, so I find it helpful to use an umbrella or stand in a shaded area.
How did you develop your artistic skills? From a lot of hard work and perseverance, including practice and study with numerous master artists. What is your most notable achievement? Having an article written about my plein air paintings using a palette knife in Plein Air magazine in 2013 and being selected to show my plein air paintings in numerous prestigious galleries, art museums, and other special venues throughout the U.S., such as the Kolb Studio on the South rim of the Grand Canyon. What advice do you have for someone just starting out? Study, study, study and remember that artistic endeavors aren’t necessarily achieved by God-given talent but by hard work, perseverance, and your own desire to record a tiny bit of human history!

Where is your favorite spot to paint? The Sierra Nevada Mountains south of Lake Tahoe and the California coast above Big Sur. Where can your art be found? My art is currently being shown exclusively at the New Masters Gallery in Carmel.

What is your most notable achievement? Several years ago, I applied to participate in a [prestigious] Los Gatos plein air event and was honored to be included alongside nationally known artists from all over the U.S. It was both challenging and rewarding, but I’m glad that I didn’t let fear hold me back.

Often, before we can verbalize what we’re feeling, our body beats us to the punch by reacting physically to our emotions. You might notice that your jaw is more clenched or you have a pit in your stomach when you're feeling anxious. Perhaps you feel tightness in your chest or heaviness in your shoulders when you're feeling sad. Breathe and lean into the feeling in your body for a few moments to see if you can identify what is happening emotionally.—Yasmine Binghalib, LMFT, therapywithyasmine.com
What three things went well today? So many times, we have a long list of things to do in a day, which are often unrealistic. At the end of the day, it’s easy to get frustrated with yourself or anxious about getting to them the next day. Another reason we often look back at the end of our day with discouragement is if we received bad

is one of the greatest gifts you can give yourself, because no one else can do it for you.—Yasmine Binghalib, LMFT, therapywithyasmine.com
What self-care activity will I schedule in my day today?
We often start our day jumping out of bed to the alarm, grabbing coffee, and checking emails. We forget to center ourselves and become mindful of planning our day versus letting it control us. Try to start with just a few minutes of contemplation before email, social media, or the news. Ask yourself where in your day you can fit in a 10-minute meditation, a walk outside, a phone call to a friend, or planning something to look forward to over the weekend. If you're spiritual, start the morning with a centering prayer. Watch your mood lift.— Nancy Ryan, MA, LMFT, therelationshiptherapycenter.com
Am I actively engaging negative thoughts and what emotions are those creating?
What impact does social media have on my life?
As more people watch The Social Dilemma it becomes apparent how social media controls our thoughts and sucks up time that could be better spent engaging in self-care activities and strengthening relationships. Do the math. Look at your daily time spent on social media and multiply it by 365 to see how much time every year you give to technology. Now, imagine replacing that time with a hobby you’re passionate about and think how much you’d improve at it by the year’s end.—Christopher Taylor, MFT, christaylormft.com

How am I taking care of my mind? Check in on the "landscape upstairs." Are you tuning out? Overly glued to the news, social media, or something else? Regular investment in mindful practices like meditation can help keep an eye on mental burnout and distraction. Taking up some "growth" practices—reading about new things, enrolling in an online class, or learning a language, art form, or musical instrument—can make fruitful use of tough times.—Greg Sazima, MD, gregsazimamd.com
Do I really need to say "yes" to this?
We often have many things in our lives that we have to do, and because of this we often lump everything into the "necessary" pile without assessing it first. Before you say "yes" on autopilot to a commitment or action, check in with yourself and determine if it's necessary. If it's not, ask yourself: “Do I want to say yes?” Learning to protect your time and boundaries

How am I taking care of my connections to the world?
We often overlook—especially in times like a pandemic—the care and feeding of our connections to the world and relationships outside of us: family, friends, community, and beyond. Tuning regularly into whether you’re staying connected, even if virtually, will help you overcome loneliness, isolation, and helplessness. Especially potent is finding some ways to be of compassionate help: make phone calls to those in need, send letters to relatives, and Zoom into volunteer groups and meetings.—Greg Sazima, MD, gregsazimamd.com

news: Your child is failing a class; the car repair is twice as much as expected. Rather than ending your day with "all that's wrong," make it a habit to focus on what went right. If you can list three things, your mood will shift to be more positive.— Nancy Ryan, MA, LMFT, therelationshiptherapycenter.com
Cognitive behavioral therapy is the gold standard in treating almost every psychological ailment, no matter how big or small. The first step is awareness of what your actual thoughts are and how they feed negative emotions. Once awareness is gained then you can create replacement thoughts, which, over time, will create more automatic positive thought patterns.— Christopher Taylor, MFT, christaylormft.com

heavily trafficked, so be prepared to share the trail. FUEL UP: Stop at Diego’s (diegosrestaurant.com) for a Chilean-inspired South American meal made with locally sourced ingredients in eclectic environs. Favorites include the fish tacos on hand-pressed corn tortillas, Santiago
Sampler (cheese empanada, stuffed jalapeño, black bean pupusa with cheese, fresh guac, pico de gallo), and honey sriracha shrimp. WHY WE LOVE IT: Getting a dose of nature, a splash of wildflowers, and a snapshot of California’s mining history makes this hike a wonderful way to connect to the great outdoors and California’s past. What’s more, there are options to add mileage and it’s close to the quaint, historic hamlet of Grass Valley. TRAIL NOTES: Ideal for the whole family. The greatest mass movement in the Western Hemisphere took root right here. Bringing over 300,000 people into California, the discovery of gold stimulated massive growth and spurred the development of ports, roads, and churches. Indigenous peoples in the area suffered greatly, however, from displacement, famine, and what later became known as the California genocide when authorities encouraged attacks on native peoples. At Empire Mine State Historic Park, there’s an opportunity to step back into the past and imagine life in the Gold Rush at what was once the most profitable gold mine in the state.

Kids that play music get better grades in school. Q: HOW DOES GUT HEALTH AFFECT OTHER PARTS OF THE BODY? A: Approximately 80% of your immune system is located in your gut, so if your gut bacteria are properly balanced then your immune system will most likely function properly and help ward off illnesses. The gut is often referred to as “the second brain,” because it’s where the production of neurotransmitters, like serotonin— chemicals responsible for regulating sleep, appetite, and mood—are located. There’s a growing amount of research suggesting your gut bacteria actually influences food cravings, metabolism, and how many calories your body absorbs from the food you eat. So what foods should you eat? Plant fibers and complex carbohydrates are a good place to start. These are the preferred sources of fuel the bacteria in your gut like to munch on, and they help prevent inflammation and gut wall damage. Eating a variety of produce and unprocessed or minimally processed foods creates a good environment for gut health. —Pamela Connor, Functional Nutritionist Connor Wellness Clinic, 1891 East Roseville Parkway, Suite 170, Roseville, 916-404-0886, connorwellnessclinic.com

The New Norm 8 Hot Home Trends by KERRIE L. KELLY, FASID, NKBA, CAPS
We’ve all been there—interrupted Zoom meetings, daydreaming of our next home renovation, and shamelessly posting our latest culinary creation. Last year changed the way we live in and outside our homes. As we rethink our home's functionality, features we never knew we needed—such as a home gym or notouch appliances—are becoming more important than ever. The trends that follow won’t only add comfort but extra value to your home, too. 48

HOMECATION AMENITIES
As people continue to receive more clarity from their employers about the ability to telecommute long-term, it’s triggering a move to homes with more space. And, as people tire of working from a kitchen table, they want a more permanent— and quiet—solution for their at-home office.
With lots of time and nowhere to go, homeowners are coming up with creative solutions to create vacation vibes at home. While pools are top of discussion, homeowners are also seeking big and small ways to create a luxury experience from the comfort of their crib, including upgrading bathroom furnishings to include spa-like soaking tubs or relaxing rain showers.

& SAFE TECH 5 It’SMART s more vital than ever that our homes
stay as germ-free as possible, and smart-home technology has come to save the day, with products like touchless appliances, selfcleaning toilets, and bidets. And while a lot of these products are niche right now, they will evolve to become the standard in home design. As homeowners can start welcoming guests back inside, they’ll increasingly seek out creative solutions to keep their spaces as sanitary as possible by including voice-activated faucets, robotic vacuums, and electronic-assistant controlled lights. These features update the traditional tasks of cooking and cleaning by incorporating thoughtful innovation into home products. HEALTH & WELLNESS 6 People across the country quickly
adapted to rapidly changing restrictions, creating fitness clubs and even massage rooms in their homes. But it’s not just physical health homeowners are prioritizing. The isolation from social activities and loved ones has increased the need for more— think “feng shui” areas—private spaces for reflection and meditation to stay mentally fit, as well.
7 Gourmet Kitchens
Gourmet Kitchens and Health & Wellness photos by Lindsey King Photography.
GOURMET KITCHENS 3 The pandemic inspired people to break out of their old
baking habits and start new hobbies in the kitchen, and in 2021, homeowners want to level-up from their sourdough obsession to create other mouthwatering masterpieces. Requests for gourmet kitchens with bigger cabinets, island additions, and "dirty" pantries that house functional items all offer the space needed to cook gourmet meals.
4
BACKYARD OASIS
Safe and functional yards have taken on renewed importance, especially with social distancing recommendations. Fire pits, outdoor kitchens, and alfresco lighting are all easy upgrades that make backyards a relaxing oasis the whole family can enjoy.
PET-FRIENDLY LIVING
The flexibility of remote work has given many people the opportunity to be home all day, and in turn, made it easier to add a new best friend to their family. As people welcome more furry family members, there will be a continued demand for performance fabrics, indoor-outdoor rugs, and alfresco lounge areas.
NEW CONSTRUCTION 8 Traffic for new construction homes has
increased significantly, signaling an uptick of shoppers interested in personalizing their home’s features and living in a new, clean space. Buyers considering a newly constructed home are doing so to customize features, while others are choosing to do so to ensure everything in the home is brand new.

Breakfast may be the most important—and dare we say delicious—meal of the day. But it’s also one of the most social. Something about sitting around a table savoring fluffy flapjacks smothered in syrup with your nearest and dearest makes for a memorable morning. Next time you find yourself awake and hungry for something off the beaten breakfast path, turn to this list for our top picks of where to go and what to order.
Mexquite offers both American and south-of-the-border creations, and their version of eggs benedict, Molletes, is a satisfying option for those who can’t choose. Sourdough toast is topped with refried beans, cheese, over-medium eggs, pico de gallo, green onions, queso fresco, and Molletes sour cream. But if you’re in need of something simple, nothing screams breakfast like Pancakes. Go full stack with three (or short with two); whichever you choose, they’re served with fruit and sweet maple syrup. Accompany your meal with a Mimosa and you’ll be satisfied till supper. 25095 Blue Ravine Road, Folsom, 916-9848607, mexquite.com Milestone in El Dorado Hills knows their stuff. They deliver creative offerings and exceptional quality. Everything is made inhouse, too, particularly their silky, delicate lemon hollandaise that brightens up their Classic Benedict. If you’re looking for something less traditional, we suggest exploring the Chorizo Rice (spicy chorizo, Spanish rice, scrambled eggs, Cubano sauce, and pico de gallo) and seasonal Pozole (spiced pork broth, braised pork shoulder, hominy, and fixings). Whatever you do, don’t skip their over-the-top Grilled Prawn Bloody Mary that’s as good as an entire meal! 4359 Town Center Boulevard, Suite 116, El Dorado Hills, 916-934-0790, milestoneedh.com

Bennett’s Kitchen Bar Market has certainly made a name for itself in its relatively short time in business and for good reason: their brunch menu is a popular weekend treat. We suggest Corned Beef Hash—house-braised corned beef, smashed potatoes, red bell peppers, and onions with poached eggs. If you have a morning sweet tooth, go for the Stuffed French Toast—filled with decadent orange marmalade and cream cheese. Either option pairs well with their Ramos Fizz: a hand-shaken gin cocktail with egg whites and sweetened cream. Prepare for a full (and happy) stomach. 1595 Eureka Road, Roseville, 916-750-5150, bennettskitchen.com Escape to Mario’s Early Toast and pretend you’re waking up surf-side with an order of their Maui French Toast. For
those hungry for something healthier, the Crossfit Skillet promises to please without weighing you down (pun intended). Wash it all down with one of their myriad mimosas— our favorite is the Gummy Worm featuring mango purée and fruit punch. 8425 Sierra College Boulevard, Roseville, 916-771-2173, mariosearlytoast.com A new and welcome addition to Folsom is Chocolate Fish Coffee Roasters. The beloved Sacramento-based café serves up a variety of espresso drinks (we recommend the White Mocha, though the hard-tofind Flat White is tasty too), fresh-roasted coffee beans, tea, and specialty toasts. The Almond Butter Toast (ask for it with “The Works”) features sourdough toast loaded with almond butter, cocoa nibs, bananas, and honey; and the Smashed Avo Toast (also with “The Works”) comes with avocado, lemon, radish, sprouts and nut dukkah on sourdough. Karen’s Bakery & Café has served our area for over 20 years with high-quality, hearty meals like the KBC Breakfast Biscuit. Pork loin, a sunny-side-up egg, tomatoes, arugula, and browned-butter aioli top a whole grain chive biscuit—and top our list as a favorite breakfast sammy. Another great option is The Sunny Tart: a puff pastry with Gruyere cheese and crème fraîche, a sunny-side-up egg, bacon, and fresh chives. How can I take advantage of leftover bacon fat?
Keep a ceramic bowl next to your stovetop to collect it. I like the little bacon bits in it, but you can strain them out if you want it to last longer (refrigerating it also extends the shelf life). Use it when cooking eggs or sautéing vegetables (either alone or when starting a stew or soup) and meats like pork chops. It adds a delicious layer of flavor to just about everything! —Stephanie Hibbert, Chef, Founder, Consultant chef-stephanie.com, @chefstephanieh
Do you have any tips and tricks to making perfect scrambled eggs?
The trick to perfect scrambled eggs is to whip them thoroughly before cooking and not to add salt, as it will toughen them. You can also add a teaspoon of milk per egg. Cook them in a Teflon pan with a little butter over medium heat, and stir them constantly; it incorporates air and creates a nice curd. Cook till 3/4 done and remove from heat (they will keep cooking). Lastly, stir in a dollop of grassfed butter and sprinkle with a touch of kosher salt and black pepper if desired. —Syd Bailey, Chef, Dinner Parties, Group Classes, Private Lessons chefsydbailey.com, @chefsydbailey
What’s the secret to fluffy flapjacks?
The secret is simple! Separate your egg whites from the rest of the mixture. Whisk the egg whites until stiff peaks form. Gently fold the egg whites into the rest of the mixture as your last step before dropping them onto the skillet. This tip works great for both pancake and waffle batter. —Spencer Shapton, Chef Silver Spork Events & Catering, silversporkevents.com, @silversporkevents

Croque Madame, Breakfast Skillet, and Pear Bellini
You don’t have to travel to France to try authentic French cuisine. La Provence Restaurant & Terrace offers a brunch menu filled with French-inspired cooking, like a classic Croque Madame where ham, melted brie, and Mornay sauce fill toasted brioche with a fried egg on top (you can also go sans egg and order the Croque Monsieur). If an American breakfast is more your speed, go for the Breakfast Skillet, which includes your choice of bacon, pork sausage or ham, two eggs any style, breakfast potatoes, and cheese. For that sweet balance, sip on a Pear Bellini…or three. 110 Diamond Creek Place, Roseville, 916-789-2002, laprovenceroseville.com Great crêpes (and croissants…and cookies!) await at Julian’s Pâtisserie and Café. On the savory side, try the Crêpe California featuring chicken, bacon, mozzarella, avocado, and tomato. If a sweet treat is calling, the Crêpe Forest Berries—stuffed with vanilla pastry cream, blackberries, blueberries, and raspberries—can’t be missed. Both pair well with a Latte (hot or iced) and while you’re at it, grab a few fresh pastries for the road; their Almond Croissant is always a crowd-pleaser. 6610 Folsom-Auburn Road, Suite 7, Folsom, 916-9364735, julianscafe.com
What are some hardboiled egg hacks?
Start with room temperature eggs and a pot of water with 1-2 tbsp. (or a heavy splash) of white vinegar. Bring the water to a simmer and gently lower in each egg, one at a time. Once in the pot, the water should just cover the eggs and continue to simmer (but not boil) as to avoid any egg-knocking or cracking. Set your timer for desired doneness (8-12 minutes). Once time is up, drain your eggs and place directly into an ice water bath. When the eggs have cooled completely, begin peeling. Chilling the eggs will make peeling a breeze so the colder they get, the easier it will be! —Megan Kessenich, Recipe Creator, Private Dinners, Cooking Demos Making Meggs, makingmeggs.com, @makingmeggs

DID YOU KNOW
To Get Vaccinated or Not To Get Vaccinated? Experts believe that getting a vaccine is one of the most significant ways to control the COVID-19 pandemic. Peter Barba, MD, Medical Director of Marshall Medical Foundation, oversees the distribution of COVID-19 vaccines at Marshall facilities. Here, he shares answers to questions he’s received. Q: Why should I get the COVID-19 vaccine? A: Two reasons: First, getting vaccinated lowers your chances of getting severely ill from the virus, which spreads very easily. While we don’t yet know all of the lasting and secondary effects of COVID-19, we have seen that it can cause heart and brain damage and long-term fatigue. Secondly, getting vaccinated helps protect mankind. Let’s do everything we can to prevent COVID-19 from spreading to others—including your grandmother or someone you don’t even realize you’ve spread it to. When enough people have been vaccinated, the virus will stop spreading so quickly. We can get back to a normal life sooner, but only if enough people get the vaccine. Q: Do I still need the vaccine if I’ve had COVID-19? A: Yes. While people who get COVID-19 develop antibodies that may provide some protection, it’s not known how long antibodies last after a person recovers. You can get COVID-19 more than once. The CDC recommends getting vaccinated even after you’ve had COVID-19 to protect yourself from getting it again and to help prevent the spread. Q: Can I get COVID-19 from the vaccine? A: Absolutely not. The vaccine does not contain actual live virus. It gives our body the instructions on how to fight off the virus, but not the virus itself. There may be mild side effects a day or two after getting the vaccine. This doesn’t mean you’re sick, it just means the vaccine is working to build your immune system. Q: Once I get the vaccine, can I stop social distancing and wearing a mask? A: Not yet. For the time being, it’s important to continue social distancing, wearing a mask in public and washing your hands often. The first dose of the vaccine offers about 50-80 percent protection after a couple of weeks. The second dose offers 95 percent protection about two weeks after being administered. So we’ll need to slow the spread with other methods until more people are vaccinated and the virus is less widespread.

High Cholesterol? Lower it with Easy Lifestyle Changes Is this the year you’ve vowed to lower those cholesterol levels that have been creeping up on you? The good news is that you can control your cholesterol by making lifestyle changes— and thereby lessen your risk of heart disease and stroke. The American Heart Association recommends you: • Check your cholesterol numbers and assess your risk. • Change your diet and lifestyle to improve your levels. • Control your cholesterol with help from your doctor if needed.
What is cholesterol? While cholesterol occurs naturally in the body, it’s also introduced by foods that are high in saturated and trans fats: red meat, whole-milk dairy products, fried and processed foods, for example. There are two types of cholesterol: LDL (bad cholesterol) and HDL (good cholesterol). Too much of the bad kind, or not enough of the good, can lead to cholesterol building up on the inner walls of the arteries that feed the heart and brain. As the amount of cholesterol in your blood increases, so does your risk of cardiovascular diseases.
Lifestyle can control risks “Heart disease is the leading cause of death in the United States, and high cholesterol is a major, but controllable, risk factor,” says Marshall Cardiologist Stanley Henjum, MD. “The earlier you start lowering your cholesterol level, the better.” Dr. Henjum recommends starting with lifestyle changes. “A healthy diet and exercise are the cornerstone of any treatment program. Lifestyle
choices can either increase or decrease our cholesterol levels by as much as 20-50 percent,” he says. A heart-healthy diet emphasizes fruits, vegetables, whole grains, poultry and fish, and limits foods high in saturated and trans fats. Adding an exercise program can maximize the effects of such a diet by lowering your cholesterol and high blood pressure and it often leads to beneficial weight loss. Quitting smoking also helps cholesterol levels.
Medication can help If lifestyle changes don’t get your numbers in line, your doctor may prescribe medication. “Medications are often needed to treat patients with known coronary artery disease or multiple risk factors and bring their cholesterol to acceptable levels,” says Dr. Henjum. “I’ve seen a huge, positive impact on people’s lives who’ve used statins for 30 or more years.”
Know your numbers Getting screened for high cholesterol can help you and your doctor determine the best steps to lower your levels and prevent heart disease. Knowing your risks and taking preventive steps—including lifestyle changes or medication—can be the keys to your good health.

COVER STORY
Sweet Success with Type 2 Diabetes W
hile one in four Americans over the age of 65 has type 2 diabetes—which means their body doesn’t use insulin properly—this serious disease and its related complications can be prevented and controlled, according to experts. One way to gain control is to work with a healthcare professional to personalize a plan that helps you lower your blood sugar levels and stay on track for a healthy life.
What you can do—and why When asked about her best advice as a Diabetes and Nutrition Educator, Marshall’s AJ Kenworthy, RN, says, “While the longterm complications of type 2 diabetes are life threatening, it’s important to know that these threats can be avoided by managing your blood sugar levels. You can live a long, healthy life with well-controlled diabetes.”
SPECIAL AD SECTION
Tactics for maintaining healthy blood sugar levels include making changes to your diet, increasing physical activity and losing weight.

“It’s never too late to start,” Kenworthy says. |

“Weight loss is a very effective way to lower your risk for type 2 diabetes,” says Kenworthy. “Losing just 10-15 pounds can make a big difference in lowering glucose levels.” Studies have shown that losing just 7% of your body weight (15 pounds if you weigh 200 pounds) can lower your risk of diabetes by nearly 60 percent. The bonus: Weight loss also lowers your risk for heart disease and stroke and is beneficial for your blood pressure and cholesterol levels. (See stories in this issue about cholesterol control and the advantages of bariatric surgery for weight loss.) Taran Kaur, MD, a family medicine physician who specializes in diet and nutrition at Marshall Medical Center, agrees. “I encourage patients who are at risk or who have recently been diagnosed with type 2 diabetes to begin making lifestyle changes and losing weight. These are ways to slow the progression of the disease,” she says, adding, “It’s important to catch it early.” Type 2 diabetes is easier to deal with at its earliest stages, according to Dr. Kaur. Early diagnosis and treatment can also help decrease the risk of developing complications related to the disease, including skin infections, kidney disease, neuropathy (nerve damage), eye complications, high blood pressure and stroke.
Watch for symptoms Some people only have mild symptoms of type 2 diabetes, so
It’s important to catch it early. they go unnoticed. According to the American Diabetes Association, common symptoms include: • Urinating often • Feeling very thirsty • Feeling very hungry—even though you are eating • Extreme fatigue • Blurry vision • Cuts/bruises that are slow to heal • Tingling, pain, or numbness in the hands/feet
Risks associated with type 2 diabetes • Age: The older you are, the higher your risk • Family history: A parent, brother or sister with diabetes • Those with high blood pressure • People who are physically inactive • Race: Black, Hispanic/Latino, American Indian, Asian American or Pacific Islander • Overweight: Higher Body Mass Index (BMI) means higher risk • Diagnosed with gestational diabetes Source: American Diabetes Association
Diagnosing diabetes Diabetes is typically diagnosed with a fasting plasma glucose test—which measures blood sugar levels after eight hours of fasting—or with a nonfasting A1C test—which measures your average blood sugar for the past two to three months. If results show that your blood sugar levels are higher than normal, your doctor will prescribe a treatment program to keep them as close to normal as possible.
A test may also indicate prediabetes, where your blood sugar levels are higher than normal, but not high enough to be called diabetes. This condition puts you at risk for type 2 diabetes and cardiovascular disease, so it’s important to take steps to lower your blood sugar levels.
Managing the disease “People sometimes say that living with diabetes means you have to give up the good stuff. That’s simply not true.” says Kenworthy. “But it does mean cutting back on sugars and starches and eating more high-fiber, complex carbohydrates.” Sometimes, in addition to a healthy diet and an active lifestyle, your doctor may prescribe pills and/or insulin to help manage your blood sugar. “Medications are important for reducing insulin resistance in the body and slowing down the progression of diabetes,” says Dr. Kaur. “Diabetes is a chronic disease. Sticking with a treatment plan and lifestyle changes needs to be lifelong commitment,” Dr. Kaur says.
Your next step Work with a healthcare professional who can help you manage your health. This is where the Community Care Network helps. CCN was developed to assist people with health care coordination and management. Various services are offered depending on needs and a patient’s desired level of involvement. Marshall Foundation for Community Health is grateful to people like Faye. “Without donors, we wouldn’t be able to provide the funds that support important health programs. “We’re constantly working to maintain a safe environment,” says Michelle Norris-Even, RN, the Executive Director of Quality and Education at Marshall. “Our safety culture starts at the top and involves everyone at Marshall, not just those who directly care for our patients.” When it comes to preventing the spread of any infection, NorrisEven says, “We follow the Center for Disease Control guidelines—which changed continuously when COVID-19 hit—to make sure we are upto-date on everything.” Examples included implementing strict health screening protocols for anyone entering any of Marshall Medical Center’s facilities, and quickly providing PPE training and COVID-19 testing for hospital staff during the pandemic’s heightened sense of urgency.
It’s also critical to keep the hospital’s environment clean and safe. While Marshall uses a germ-zapping robot in patient rooms to ensure the highest level of cleaning in between patient stays, Norris-Even says it’s the housekeeping staff that deserves the credit for maintaining high environmental standards in the hospital. During the past year, Marshall demonstrated its commitment to safety by introducing a program that encouraged staff to be on the lookout for potential safety issues. “Staff observations gave us an opportunity to identify areas for improvement,” says Norris-Even. ”In six months we saw a tremendous jump in ways our staff became involved in providing more excellent care to patients. If something needed to be adjusted, we made rapid improvements.” Marshall has received state and national recognition for its commitment to quality care and safety. “These awards show the commitment, hard work and patient-centered focus that Marshall demonstrates 24 hours a day,” says Norris-Even.
MARSHALL RECOGNIZED FOR ITS HEALTH AND SAFETY COMMITMENT Marshall Medical Center recently received two honors for its extraordinary measures to ensure the health and safety of its staff and patients. • Marshall earned an “A” in the Fall 2020 Hospital Safety Grade program from The Leapfrog Group. In its nationwide evaluation of 2,600 hospitals, Leapfrog recognized Marshall’s hospital providers and staff for demonstrating “a continued commitment to patient safety and the reduction of avoidable harm.” • The California Department of Public Health recognized Marshall with a bronze designation as a top performer in its HealthcareAssociated Infections Program. Marshall’s participation in the CDPH antimicrobial stewardship program is part of the hospital’s commitment to improving patient outcomes while monitoring the use of antibiotics.

Bariatric Surgery Offers a Path to Weight Loss

eight loss can be life changing. But sometimes, even with diet and exercise, it can be an elusive milestone.
For those who are severely overweight and dealing with the negative health effects of obesity, weight loss surgery—known as bariatric surgery—may provide the path to good health. “Bariatric surgery can help patients achieve long-term weight loss, improve their quality of life and live longer,” says Ryan Lussenden, MD, a board certified surgeon and director of Marshall Medical Center’s Bariatric Surgery Program. “People come to us wanting to live healthier, more active lives and enjoy their children and grandchildren. It’s a happy day when they begin enjoying their new life.” What are the health benefits? The many health benefits associated with weight loss following bariatric surgery include improvements in type 2 diabetes, cardiovascular disease, high blood pressure, sleep apnea, arthritis and depression.
SPECIAL AD SECTION
How does bariatric surgery work? One of the most common bariatric procedures is sleeve gastrectomy, where 75-80 percent of the stomach is removed laparoscopically through small incisions in the abdominal wall. The reduction of stomach volume causes the patient to feel full faster and reduces the secretion of hunger hormones. Gastric bypass is another common type of bariatric surgery. It alters the stomach, creating a small pouch that is directly connected to the small intestine.
8
Both procedures surgically limit the amount of food a patient can eat and change the way the body absorbs nutrients. The result: Patients can lose an average of 50-80 percent of their excess body weight two years after surgery, depending on the type of surgery performed and the patient’s level of commitment to a post-surgical diet and exercise regime. |

Am I a candidate? Bariatric surgery candidates typically are more than 100 pounds overweight. They may have a Body Mass Index (BMI) of 40 or greater, or a BMI of 35-39 along with one or more medical conditions such as diabetes or hypertension that would significantly improve with weight loss. How Marshall can help “We want patients to succeed with their permanent weight loss goals and we’re here to support their commitment to diet, exercise and behavioral changes before and after surgery,” Dr. Lussenden says. Marshall’s team includes a board certified psychiatrist and a physician who specializes in diet and nutrition, as well as an certified nutritionist from Marshall’s Diabetes and Nutrition Education. If you’re significantly overweight and ready to commit to a new path to good health, talk with your primary care doctor or call Marshall Medical Center’s Bariatric Surgery Program at 530-642-7546 (SLIM).

A Golden State of Mind
Northern vs. Southern California BY DEBRA LINN
California has 900 miles of coastline, and there’s definitely a different vibe between the beaches found in the Northern and Southern part of the state. I spent a weekend in each, pre-pandemic, and both have their own charm.
Mendocino Coast Botanical Gardens
Though there are a plethora of local bed & breakfasts, as well as resorts and quaint inns, choosing the Little River Inn (littleriverinn. com) as home base was a perfect pick! This more than 80-yearold inn sits on a cliff across the legendary Pacific Coast Highway from the thundering surf. It was cold and rainy during my visit, so the wood-burning Mendocino Headlands fireplace and soaking tub were a welcome amenity. The views from the rooms are spectacular with large decks and rocking chairs to sit and listen to the sound of the sea. The food at the Mendocino: The “Cool” Coast Calls inn’s restaurant was fresh and amazing, This quintessential small beach town about too—don’t miss the Fresh Steamed Clam 160 miles north of San Francisco reminds Chowder and any of the specials, such me of an East Coast fishing village but with as Braised Short Ribs, along with a glass hippies. The coastline here is wild and craggy and beautiful. Though there aren’t too many actual beaches to stroll on, a visit to Glass Beach in Fort Bragg, just north of Mendocino, is worth the visit. The sea glass created from garbage being dumped at the north end of town years ago has become quite the beloved attraction; sadly, too many tourists have taken a piece of the beach with them, so the amount of glass is getting smaller. The town of Mendocino is filled with galleries,

restaurants, and shops carrying work from local artisans. Take time to walk the Mendocino Headlands Trail, which winds around Mendocino Bay and offers views of the ocean that will give you chills (if the wind doesn’t do it for you)! Visit the Mendocino Coast Botanical Gardens in the spring, the music festivals in the summer, and the wineries any time of year! This lovely part of California will definitely cause one to slow down and savor the scenery, food, wine, and groovy ambiance that I don’t think has changed in 100 years.

the deck at the Veranda Restaurant in front of the hotel, you can enjoy some fantastic people-watching while indulging in the typical So Cal cuisine of tapas, craft cocktails, and their famous Stuffed French Toast! I could write pages on shopping in Santa Monica, but suffice to say it’s upscale, kitschy, and elegant—all at the same time. A favorite for any stay in Santa Monica is to take a (long) walk from Santa Monica to Venice Beach, past the surfers, buff dudes on Muscle Beach, and street vendors hawking everything you just discovered you can’t live without (this included someone selling an iguana). While Northern California has the hippy vibe, the aroma along the boardwalk takes one to a “higher” level!
Muscle Beach Veranda Restaurant
The beaches here are wide, sandy, and warm—perfect for relaxing, sunbathing, and again, people-watching. Although my visit was the same time of year as the weekend in Northern California, it seemed we were in different seasons. The weather couldn’t have been more different—warm and sunny Los Angeles, cool and rainy North Coast. Quiet, cool, laid-back Northern California; or fast, loud, and sunny Southern California where you feel like you’re in a movie wherever you go? Your choice. You can’t go wrong with either. Enjoy, dude (that’s so California!).

Oki Sushi “Y BY LORN RANDALL // PHOTOS BY DANTE FONTANA
ou’re either that crazy or that good.” My first thought when Rachel Batbayar told me they opened Oki Sushi in September of 2020. As it turns out, Rachel’s husband Jay, the sushi chef and co-owner, purchased the building in January of 2020—prior to the news of a business-killing outbreak. With all of the remodeling and shutdowns, by September Oki Sushi was ready and the virus was slowing (somewhat). So they’re not “that crazy”—just confident and optimistic. After consulting with Rachel, I placed my order over the phone and stopped by 30 minutes later to pick it up. (Dining restrictions were still in place at the time of this writing.) Even when feasting at home, I still eat my to-go orders as I would in a restaurant—appetizer first. In this instance, it was the pepper fin, featuring slices of albacore shingled across a bed of beet strings and topped with jalapeños, sesame oil, ponzu sauce, and a “spicy sauce.” Beautifully presented—even in a to-go container—and light on the palate, with a slight heat from the thinly sliced jalapeños and sauce, it made for a welcome start to the meal. The next box to open was the salad course, of course! Oki Sushi’s sunomono— sliced cucumbers in a mild vinaigrette with sesame seeds—was a refreshing palate cleanser, especially considering I went a little heavy on the wasabi and sriracha earlier. Every sushi house has its most popular roll; for Oki, it might be the Savage Roll—a deep-fried masterpiece containing spicy crab, cream cheese, red snapper, and salmon that’s torched, then topped with spicy mayo, unagi sauce, masago, and scallions. Definitely a mouthful, both literally and culinarily. On to box numbers 4, 5, 6, and 7 (it was like sushi Christmas). Box 4 was an order of the small sashimi featuring sake (salmon), hamachi (yellowtail), maguro (red tuna), and

The miso was passable (it was cold when I got to it—my fault), as was the salad, but both were pleasant and unexpected additions. The sashimi was almost as fresh as if someone had caught it that day, and Chef Jay’s knife work was impeccable. Congratulations to Jay and Rachel! 7 Gorgeous Grazing Boards
Charcuterie, or grazing boards, are as beautiful as they are bountiful. Treat yourself to savory meats, sinful cheeses, sweet fruit, and so much more with these locally crafted works of art.
BY TARA MENDANHA
Grazing Gouda in Sacramento offers luxury boards and tables that include locally sourced artisan cheeses, premium meats, and fresh, seasonal fruit. Their medium round board serves 8-10 and includes four cheeses, three meats, fresh and dried fruit, crackers, nuts, chocolates, honey, jam, olives, and other enticing accoutrements. We especially love the decorative fruit and flower elements in this pleasing platter. @grazinggouda PRO TIP: Don't be intimidated to try new cheeses and have fun while making your board. Include items you love and get creative by using fresh flowers or garnishes like rosemary or sage!
Delicious Delights by The Dancer’s Pantry in Gold River creates thoughtfully curated and artistically designed dairy and plant-based cheese grazing experiences. Their boxes, boards, and grazing tables are filled with artisanal cheeses, crackers, jams, homemade spreads, pickles, nuts, and seasonal fruit and veg. Their medium harvest board (feeds 8-12) is particularly delightful, with custom-made pumpkin hummus and beets pickled in brown sugar, rosemary, and apple cider. thedancerspantry.com PRO TIP: Add texture. We eat with our eyes first. A variety of colors and flavors makes any board look appetizing and taste amazing. Charcutebrie in Roseville curbs those cheese cravings with deli boxes and platters that can even be custom-made. Their grand deli platter serves 8 and boasts delectable artisan cheeses, freshly cut meats, fruits, olives, nuts, honey, and a specialty jam, all served on a sustainable bamboo platter. charcutebrie.com PRO TIP: Always experiment. Combine types of cheeses that you like or haven’t tried before with prosciutto, salami, or jámon. Add dried fruits, nuts, different types of crackers, and bread. Don’t forget a nice jam and honey. When setting up your board, start with the biggest items to the smallest.

Cellar Door Platters in Sacramento is a long-time cheesemonger who knows their stuff. Their assortment of platter boxes and grazing tables come with rotating cheeses, signature salami roses, local honey, and seasonal accoutrements. Best part? They also offer tasting and pairing notes for their platter boxes, which have been a favorite during the pandemic. cellardoorplatters.com PRO TIP: Have variety and have fun! Cheese is fun food; it doesn't have to be so serious. Mix up types and textures of cheese—cow, goat, sheep's milk, soft, firm, and everything in between. The Grazing Grouse in Placerville creates platters, boxes, and lush grazing tables that artfully combine food and floristry, resulting in a decadent spread that’s a feast for the senses. Brimming with fresh-smoked salmon, honey-crusted oranges, stuffed brie, compote, local chocolate, and California cheeses and olives, these spreads definitely impress. thegrazinggrouse.com PRO TIP: Choose your favorites, then pick a wild card—something you’ve never tried before. Style tables and boards by starting out with focal food placement. What do you want to stand out the most? Cluster those foods together for the most visible impact. Sierra Charcuterie Co. in El Dorado Hills delivers a farm-to-fork experience by highlighting locally sourced cheeses, cured meats, olives, nuts, and honey in their tablescapes, platters, boxes, and appetizer cones and cups. Their innovative seasonal medium board incorporates local, fresh, and dried fruit; crudites; and unique accoutrements bursting with freshness and flavor. sierracharcuterie-co.business.site PRO TIP: There are no rules! Explore cheeses in hard, semi-hard, and soft varieties. Shop local farmers’ markets for seasonal pairings like fruits, crudites, nuts, honey, and olives, and finish off with fresh breads. Mom & Pop Chicken Shop // Do you ever find yourself craving the crunchy, carnivorous comfort of fried chicken but don’t want to drive through the commercialized KFC? I do. Truth be told, I’ve been on somewhat of a fried chicken sandwich mission as of late and finally found the perfect place to satiate those cravings: Mom & Pop Chicken Shop in the El Dorado Hills Town Center. I popped in on a late Sunday afternoon expecting the shop to be a little less busy, but to the contrary, folks were lined up for nuggets, sandwiches, and wings like meat bees at a picnic. Owner Nick Dedier (the guy riding the chicken on their window) shared with me that they’ve “sold 66,000 nuggets since opening in mid-November.” By the time this article comes out, those numbers could double. All of their chicken is brined, hand-cut, and breaded and fried to order—ensuring your meal is as fresh as possible. Early in the shop’s first few weeks of operation, they ran out of brined chicken pieces; Nick closed for the rest of the day. “I could have served unbrined chicken, but that’s not how I want you to try our food,” he told me. Now that’s quality control. The “Back to Basics” Chicken Sandwich was everything I’d been craving (including some delicious house-made spicy pickles), and the CHXSHP Nuggets were meaty and massive. Try some of their other offerings, too, like the fries, burgers, salads, chowder bread bowls, and donuts. 4355 Town Center Boulevard, Suite 114, El Dorado Hills, 916-673-9563, chxshp.com, @chxshp—Lorn Randall

DID YOU KNOW?
Beer was known as the breakfast drink in England prior to the early 1800s. Why? Water was usually contaminated, and coffee, tea, and hot cocoa weren’t widely available; plus, beer delivered the carbs needed to power through the day.
