W
hile most kids request pizza, pancakes, or French fries for their birthday feast, I was the outlier asking for my mom’s spinach casserole. Call me crazy (don’t worry, I never said I was normal!), but from childhood and into adolescence a heaping helping of this home-cooked meal—followed by ice cream cake—was my only birthday wish. Loaded with plenty of cheesy, creamy, spinachy goodness, it’s still one of my comfort food favorites. Find the recipe in this month’s Taste department, “From Our Family to Yours” (page 76), along with seven other culturally, carb rich dishes from Style staffers, including an easy butter chicken, hearty Hungarian goulash, and simple-to-make but hard-to-say lokshen kugel. If you’re in the market for some new meals to try outside of the home, then you’ll want to check out our feature, “Where the Chefs Eat.” We asked 12 of the region’s most talented, passionate cooks where they go when hunger hits and they’re off the clock. I must say, after reading about all their favorite foodie finds, I’m inspired to expand my own list of dining out destinations. The next time you’re faced with the question “What’s for dinner (or breakfast…or lunch)?” turn to page 51 and take notes. November also marks National Gratitude Month—a fitting time given it’s the (unofficial) start of the holiday season. Personally, I have so much to be grateful for, but on days when I’m overwhelmed and mentally running on empty, it can be hard to tap into a place of positivity. Luckily, contributor Linda Holderness shares a 30 day gratitude challenge in “Count Your Blessings” (page 32) with easy prompts to help you slow down, savor the small things, and bring more joy into your life. Congrats to Lexi Boeger— artist, author, winemaker, and Placerville native— for being awarded the 2021 Carpenter Award, which is presented annually by Arts and Culture El Dorado (artsandcultureeldorado. org) in honor of culture and creativity. Guests from around the region are invited to gather and honor Boeger on November 4 at her namesake Boeger Winery for music, locally sourced hors d’oeuvres by Table Nectar, regional wines, and to preview plans for the new Center for Arts and Agriculture. Roseville’s Nixtaco (nixta.co) was one of only 45 restaurants in California to be awarded a special Michelin designation—a Bib Gourmand Award, which honors "good quality, good value restaurants.” The locally owned taqueria, which creates comfort food designed to take you a bit out of your comfort zone, is known for their eclectic tacos and house-made blue corn tortillas, which are made from landrace Oaxacan corn and cooked and ground in-house every day.
Western Slope Health Center (westernslopehealthcenter.com), a Medicarecertified, short-term rehabilitation and skilled nursing facility, promoted Suzanne Schroeder, RN, BSN, to Director of Nursing. She possesses more than 30 years of health care experience—including 11 years in skilled nursing facilities—and previously served as the center’s RN supervisor. Volunteers are needed to help local kids learn to read through United Way California Capital Region’s STARS program, which pairs volunteers and students for online literacy tutoring. No prior tutoring knowledge is needed (training is provided), and volunteers must commit to at least one hour each week split into two 30-minute sessions for three months. A bronze Peace Officers Memorial— designed and created by local artist Terrie Bennett (terriebennett. com)— was dedicated by the City of Rancho Cordova at the Rancho Cordova Police Department. The sculpture was commissioned by the city to honor the life of RCPD’s first fallen officer Mark Stasyuk who was tragically killed in the line of duty. The Roseville Area Chamber of Commerce unanimously appointed Rana Ghadban as their new CEO. Ghadban has served as CEO/president of the Hollywood, Simi Valley, and Calabasas Chambers of Commerce and replaces long-time CEO Wendy Gerig who will retire December 1 after 28 years at the helm. Says Ghadban: “My top priority during the first few months [is to] meet with the community, businesses, and key chamber partners to develop a greater understanding of our region.”

The El Dorado Hills Library opened its newly renovated Early Literacy Play Center—a dedicated space specially designed for children (from babies to early readers) to play and learn together through a buildable LEGO wall, make-believe farmers’ market, light table, and cozy nook. The Stockton-based eatery opened its third brick and mortar at 2770 East Bidwell Street, Suite 400, in Folsom and serves everything from hot chicken sandwiches to crinkle-cut fries and a hot chicken breakfast burrito (the “Nashrito”) with coleslaw, mac & cheese, eggs, fries, and special sauce.

Honestly, my sobriety is very important to me. I make good decisions when I am of sober mind and body. So, my hopes and dreams for today and every day consist of staying sober one more day. If I do that, then the sky is the limit. DO YOU HAVE ANY ADVICE FOR SOMEONE

elle grew up in a “normal” family with a younger sister and parents who’ve been married for 42 years. Life was good until she turned 16. That’s when Kelle made a foreign exchange trip to England and was introduced to alcohol. “I loved the way it made me feel,” she recalls. “When I returned to the states, I was outraged that the legal drinking age here was 21. In another country's eyes I was responsible enough to drink but in my own country I wasn't,” she says. After a sexual assault in high school, Kelle’s drinking pattern quickly escalated in college and she drank to forget her trauma. “Obviously, that isn't a healthy way to deal with your emotions and I know that now,” she says. Kelle drank till she was 35 at which point an interaction with a relative made her realize she was being Dr. Jekyll and Ms. hiding-her-problems. “I could tell I was causing them pain,” she says. “They helped me realize what I had become, and I was deeply ashamed of that person. The next day I took myself to my first AA meeting and my path to recovery began.” That pivotal day was April 17, 2017.

I’m now an illustrator (@thesoberillustrator), the cofounder of a mental health guidebook, “If Lost, Start Here” (@ifloststarthere), and a mental health writer for an app designed to help people cut back on alcohol. I’m even more present with my children. Every day, I’m moving closer to the person I always imagined I would be. WHAT HOPES AND DREAMS DO YOU HAVE FOR THE FUTURE?
My only goal is to understand more deeply who I am and how I can best move through the world with intention and kindness. Yes, I’d also like to publish a book, run a marathon, and receive some sort of confirmation that I’m not doing it all wrong, but I understand that this isn’t how life works. lifelong entrepreneur, George made the decision early on to create his own destiny, having built four different companies in four different industries from the ground up. But his story doesn’t begin there. In college, he found that substances eased his anxiety, which had developed from childhood. With addiction looming large in his family, George was also genetically predisposed to it and by the time he hit 40, he was on cocaine, pain pills, and alcohol. Needless to say, it took a toll on his home and work life. At 50, substance use had completely taken over and was controlling him. “In the end, it was a 24-hour use cycle. I had to keep using in order for my body not to immediately go into withdrawals,” he shares. “My wife was imploring me to get help but as addicts do, we try and find any other way to manage it. Ultimately, I knew there was no other way, except to die,” admits George. “So, I agreed to seek help.”
HOW HAS YOUR LIFE CHANGED SINCE?
To the extent that anyone has control over their life, I have control over my life again. I’m at peace and have been given the gift of serenity. My relationships are much better and people like and respect me more. The thought [to use] might occasionally pop into my head but that’s just the addict in me seeking an opportunity to take control again. Addiction is sneaky and powerful. WHAT HOPES AND DREAMS DO YOU HAVE FOR THE FUTURE?
I’ve dedicated my life to ReThink (rethinkicecream.us)—a healthy, tummyfriendly ice cream—out of a desire to help others. In recovery, addicts are advised to pursue a life of giving and helping others. The idea is this becomes our new high. My dream is to build resources to help people on a large scale. Causes that are important to me are addiction, animal rights, and children. DO YOU HAVE ANY ADVICE FOR SOMEONE FACING SIMILAR STRUGGLES?
The bottom line is this: There is a better way to live life than mired in addiction. Each addict has their own bottom, where enough is enough and they’re willing to seek help. The sooner we all get to that point, the better for everyone. There is help if you want it. I attended a few rehabs and entered AA and without the help I received, I would be a dead man.

But in college, after a series of traumatic events, Amanda says the anxieties that lived at the back of her mind were suddenly amplified. “Alcohol was an easy way to suspend these feelings and access a version of myself I was more accustomed to—someone fun, outgoing, brave, and up for adventure,” she shares. Having children young seemed to slow things a bit for at 22, she stopped drinking in preparation for pregnancy. By 23 she had her first child and at 27, her second. But when Amanda’s body started becoming her own again, the mental issues she’d ignored for over a decade became too serious to ignore and she fell into her old ways. Over time, Amanda’s altered self became more of an effort to sustain, and she started to value that person less. Finally ready to make a change, she underwent years of therapy and life-changing diagnoses that led her to stop self-medicating and embrace who she was. “Life is filled with ups and downs and it’s my job to move through those periods with as much grace and as little judgement as possible,” she says.

Just Eat It Fighting Food Waste by TARA MENDANHA
he next time you throw away food, pause for a second and consider the impact of that small, seemingly insignificant action. Did you know that 40% of our food is wasted in the U.S.? (And one-third of food produced across the world.) That’s over 133 billion pounds or 31% of overall food supply wasted every year—much of it perfectly edible and nutritious.
Food Loss vs. Food Waste Now, food is wasted for several reasons and there’s often a distinction made between food loss and food waste. The U.S. Department of Agriculture’s (USDA) Economic Research Service defines food loss as “the edible amount of food, post-harvest, available for human consumption but not consumed for any reason.” Before food even reaches the grocery store, it can be lost due to bad weather, processing problems, overproduction, insects, etc. Food waste, on the other hand, includes the food left on your plate at a restaurant, scraps from preparing a meal at home, and the expired foods you toss. Overbuying, poor planning, and not paying attention to labels also contribute to our food waste habits. All this comes at a hefty price tag of over $200 billion a year, which is over $1,866 per household. Imagine tossing thousands of dollars in the trash!

Impact and Intervention Food waste, according to the World Wide Fund for Nature, also has an environmental impact, where we waste all the energy and water it takes to grow, harvest, transport, and package food. When all that food goes into landfills, it rots and produces methane—a greenhouse gas more potent than carbon dioxide. There’s much to be gained by consuming our food consciously. According to the Environmental Protection Agency (EPA), redirecting excess food to people, animals, or energy production provide immediate benefits to public health and the environment, including: • Reducing methane emissions from landfills. • Saving money through thoughtful planning, shopping, and storage. • Supporting your community by donating untouched food that would have otherwise gone to waste. • Conserving energy and resources by preventing pollution involved in the growing, manufacturing, transporting, and selling of food.

GIVING BACK At Home
Current California state law requires businesses and multi-family communities to recycle organic waste. In 2022, additional regulations will become effective, requiring all Californians to recycle organic waste. Our cities are doing whatever they can to mitigate some of the damage by having various processes in place. "We already have a successful program to capture food waste from commercial customers. Now, we are working on a program that complies with state mandates to recycle organic waste into compostable material from residential customers and work to address food insecurity by recovering otherwise discarded fresh food,” says Devin Whittington, waste services utility manager for the City of Roseville. Folsom is designing a city-wide food scraps recycling program to be launched in 2022 that will drastically reduce landfilled food and greenhouse gas emissions. The food scraps will be made into compost and used in local parks, gardens, and farms. “The most exciting thing about this program is that we will be able to see a tangible difference in our air quality and soil quality as we reduce greenhouse gas emission from the local landfill,” says Sarah Moe, recycling supervisor at the City of Folsom. In other efforts, the El Dorado County Environmental Management Department and CalRecycle have teamed up with the Food Bank of El Dorado County to create a surplus food program to keep it out of the landfill. Rescued food from restaurants and food distributors is brought to the Food Bank of El Dorado County where it’s sorted through and distributed to nonprofits that provide emergency food assistance. Unsalvageable foodstuffs are donated to local farmers as livestock feed. So, what can you do? Here are some easy ways to reduce your own food waste.

Outside the Home • At restaurants, order only what you think you can finish. Allot room for the appetizers, main course, and dessert. • Take any leftovers home. • When you buy packaged foods, know that “best if used by” labels indicate quality—meaning they are still edible, just not at their peak quality; and “expires on” labels indicate safety levels. • Shop locally at the farmers’ market, co-op, CSA, etc. Doing so reduces the phases fresh foods go through on their way to spoilage. As a bonus, you reduce packaging waste, too. • Pick the bruised or odd-shaped produce that’s edible but might otherwise get thrown away. • Avoid buying too many fresh herbs, as they’re the most tossed items.
During the Holidays • Plan your menu and choose recipes that use the same ingredients. • Resist impulse purchases and holiday discounts. • Use smaller dishes and serving spoons so guests don’t over-serve. • Reinvent leftovers by looking up recipes online and freeze the rest—don’t forget to label containers with dates and names. • Send your guests home with leftovers. • Donate excess food to food banks or homeless shelters.

Local Efforts
• Meal plan before grocery shopping. Decide on recipes, check your existing supplies, and determine what quantities you need. • Prep and store produce as soon as you bring it home. Look online for storage methods for different produce and freeze what you can. • Use what you have before buying more. Websites and apps like BigOven, SuperCook, and MyFridgeFood allow you to search for recipes based on ingredients already in your kitchen. You can also use apps like Epicurious and Allrecipes. • Use overripe fruits in baked goods and breakfasts and overripe vegetables in soups and casseroles. • Save onion skins, celery and garlic ends, carrot peels, potato skins, and parsley stems to make a vegetable stock that you can freeze in ice trays. • Have a designated “leftovers” dinner night every week. • Perform a weekly audit of your fridge supplies and a monthly audit of pantry supplies. • Use see-through storage containers so you know what’s in your fridge and pantry. • Reconstitute dehydrated vegetables by immersing them in warm water for 15 minutes. • Compost food scraps like vegetable and fruit waste, eggshells, tea bags, and coffee grounds.

It helps to get their work distributed and aids the artist in growing their business. “This method not only helps fund the local economy, but it also directly funds the artist and their artistic endeavors,” she explains.

Haro adds that membership support maintains the day-today operations to help fulfill the organization’s mission, so members ultimately become the best advocates for the arts!

Remnants of the Cold War While hiking the trail, you’ll witness an important site in Cold War history: Hill 88. Serving as a radar station for the SF-88L missile launch area, Hill 88 housed all the radar equipment used to detect threats and was responsible for steering and tracking missiles launched from the site. Make sure to take note as you pass it along the trail!

ccessory Dwelling Units, also known as ADUs and sometimes called in-law apartments, casitas, or granny flats, are smaller homes located on the same lot as a primary house. They can either be attached to the home or detached as a stand-alone. “You can build a new one or convert an attached or detached garage,” Kathe Russell, chief designer at DreamBuilders Home Remodeling (ourdreambuilder.com), says. Depending on where you live, however, the exact definitions of ADUs can vary. “For example, Sacramento County doesn’t consider a detached guest house without a kitchen an ADU. Russell has an attached ADU to her primary residence, where her mother-in-law lives. “[The home] has a separate entrance from the exterior (but there’s also a connecting door that can be accessed from our house) and a parking space in our three-car garage that connects to the front porch and entrance. It’s worked out well. She has her independence, and we have our peace of mind,” Russell says. BENEFITS The benefits of having an ADU are increased property value and the potential for rental income. “We’ve seen clients who have also benefited from an ADU by being able to move an aging family member onto their property to care for them,” says Brenna Krouse, a certified interior designer at K Squared Interior Design & Remodeling (ksquaredconstruction.com). and CEO of Anchored Tiny Homes (anchoredtinyhomes.com), says they’re a cost-effective way for grown kids to move back home (without moving back into your home) and avoid buying an unaffordable house and/or paying for a rental. According to Russell, some people use them as a separate home office or rent them out through platforms like Airbnb. With that said, some areas, such as Sacramento County, don’t allow short-term rentals. PERMITS Krouse, Russell, and Paulhus all recommend working with experts if you’re interested in adding an ADU to your property. “Each jurisdiction can be a little different and each parcel can have different challenges related

to setbacks or HOAs, etc.” Krouse says. “As a general rule of thumb, ADUs can be a maximum of 1,000 square feet and must have a kitchen, bathroom, and bedroom.” There are also rules for separate exterior access, parking spaces, the height of the structure, the foundation, and setbacks, Russell shares. AVERAGE COSTS Though there are many variables when it comes to cost, Paulhus says the average cost for a one-bedroom ADU is $150K; however, his company can build a studio for $79K. Krouse continues: “Site conditions and utility costs can change the price significantly,” she says, but in general “prices vary from $250-$400 per square foot for building. What clients need to know is that a true ADU is a small residence or dwelling. We talk to many homeowners who think they can convert a shed into a living space and that isn’t necessarily an ADU, nor is it always permitted in certain jurisdictions. An ADU is meant to be an additional dwelling on your property— one that is separate from the existing home.” FINAL TIPS Krouse recommends homeowners consider the value that an ADU can add to their home. “While it is a significant investment, the value can be recouped as rental income or when the property is sold,” she says. “From a design perspective, you should consider designing the ADU so it looks similar to the existing home or so it ‘coordinates’ with your existing home.”

Paulhus recommends asking yourself the following questions: What’s the intended use? Where is it going to go? Which finance route will I take (home equity line of credit, cash-out refinance, etc.)? How soon will I need it? Russell says to be aware of the minor details as soon as you get started on the project. “Don’t overlook the planning and drawings that will be needed to get your project off the ground. Make sure you budget for this as well—about 2-5% of your build price,” she says. “This is not a project for the average do-ityourselfer.” One final word of advice for someone considering an ADU? Go for it if you can afford one. “It will increase your property value here in California and give you lots of flexibility for helping out family or gaining extra monthly income,” Russell says.

WHERE DO YOU GO FOR A GOOD CUP OF COFFEE? Cuppa Coffee & More on Placerville’s Main Street. The welcoming team and upbeat music are a perfect way to start the day. I tend to gravitate to their seasonal specials.
WHAT ABOUT A GOOD LOCAL LUNCH? The chicken & waffles from Poor Red’s Bar-B-Que. The homemade Belgium pecan waffle with orange zest is excellent on its own, but add salty bacon bits, bourbon maple syrup, toasted rosemary butter, mashed potatoes, and fried chicken to the mix, and you’re in for a real treat. Plus, they have a great patio and casual ambiance.
AND FOR DINNER? Allez! is the perfect dinner. All the entrées are made with so much love, but the paella with chicken, seafood, roasted vegetables, and saffron rice; or the garlic-crusted rack of lamb with Dijon mustard and French white beans are both at the top of my list. It’s genuine country French fare at its finest. WHAT DO YOU ADMIRE ABOUT OUR REGION’S CULINARY SCENE? AND WHEN IT COMES TO LUNCH? I love Wally's Café. Small and family-owned, the service is top-notch, and the shawarma is second to none. Plus, the lentil soup (served complimentary with your meal) has a kick and is super satisfying.
GO-TO DINNER DESTINATIONS? If my family has anything to say about it, it’s sushi! Mikuni Sushi is always a favorite, but Tang's Sushi and PK Sushi are outstanding options as well; all three places serve super fresh fish and incredible sashimi.

AND FOR LUNCH? Fish Face Poke Bar in Midtown Sacramento. You can get a meal that feels a notch above salad but is delicious and doesn't become a gut bomb. During Covid, my husband and I would go there on Sundays for lunch dates. IF YOU’RE DINING OUT FOR DINNER, YOU’RE GOING TO… Hawks or Nixtaco. The former is great because you can sit at the bar and have a casual, abovepar dinner while getting to visit and talk. When I’m craving tacos (which is often), it’s dinner at Nixtaco. I can make a meal out of their warm tortillas—they’re so delicious—and it’s even better now that they've reopened their inside dining room.
ANY SPOTS YOU’RE EAGER TO TRY? I'm really interested in going to Restaurant Josephine in Auburn. Good pedigree from the people behind it, and the space looks super cute.

Picture Perfect 8 Family Photo Tips

The vibrant autumn leaves and cooler, more cooperative temps mean it’s the prime time to schedule a family photo session—especially as the holiday season approaches. Below are some tips from local photographers to ensure a stress-free, enjoyable session.

1 | Schedule early on There’s nothing more stressful than being pressed for time. “Fall is the busiest time of year for family photo sessions,” says Amber Shoop Felts from Shoop’s Photography (shoopsphotography.com). In other words, the early bird gets the worm when planning family photo sessions. Booking early can also help in case of bad weather or the need to reschedule. As for the photos, “You will want to allow about two weeks lead time on your session delivery,” says Erica Baldwin from Erica Baldwin Photography (ericabaldwinphotography. com), which is particularly important to note if you’re planning on using any portraits for holiday cards. 2 | Choose accordingly There are plenty of photographers and

packages available and no one-size-fitsall for every family, says Felts. Before booking, do some research—what kind of style does the photographer offer? If you’re interested in someone, schedule a time to talk, and see if you feel comfortable with them. Also, be sure to “read the fine print,” says Felts. When looking over packages, note that some sessions are mini sessions, which tend to be 30 minutes max. Knowing what you’ve signed up for and with whom will help ease additional stress when planning for a session. 3 | Location, location, location Think about where you want to go, the terrain, and the critters we share our environment with. Also, take into consideration private property, required permits, and trespassing, advises Felts. It’s also not a bad idea

4 | Coordinate but don’t match Avoid matching outfits, and instead, choose one main color and “loosely fit all clothing into it—mixing patterns and solids,” says Baldwin. You can still mix patterns and solids, but make sure they match the color palette. If you’re unsure where to start with wardrobe, then here’s a tip from Audrey Perez from Audrey Perez Photography (audreyperez.com): Start with Mom’s outfit and have the rest of the family build from there. 5 | It’s all in the details After a color has been decided on, don’t forget the details. Consider “socks, clean shoes, ironed clothes, [and] neutral nail polish,” says Perez. Be thorough when putting outfits together, since the little things can make for a fantastic result. Another great idea is to use layers to your advantage. Jackets, sweaters, scarves, and hats make for more exciting, eye-catching photos. For accessories, think about fun boots with print, suspenders, bowties, hair bows, or flower wreaths for younger boys and girls. “If you have a great old quilt from Grandma—bring it!” 6 | Comfort counts Think about your location and what that entails. “When I shoot a session, we move around a lot, because it keeps children entertained and happy,” says Perez. Wear comfortable shoes, stay away from itchy clothes, and always be prepared for what the weather will be like (cold, windy, warm), advises photographer Mita Rathod from Moments by Mita (momentsbymita.com). 7 | Will smile for snacks “For the best smiles, keep [kids] comfortable,” says Reason. No one is having fun if they’re hungry, so Reason
advises eating beforehand to avoid a case of the grumps and bringing snacks. In fact, bribery never hurt anyone and has proven to be effective in a lot of shoots, encourages photographer Rathod. So, keep the kiddos happy and keep a snack on hand! 8 | Have fun This is a photo shoot—have some fun! You don’t need to aim for perfection, and in the end, candid photos can often be better than posed photos, says Felts. The kids will appreciate less fuss, and it will be much easier to get them to smile if they’re having fun. Another option to create a low-stress environment? Get the kids excited by doing one of their requested poses. For example, let them do “silly faces or a [pose] with their favorite stuffed animal,” suggests Reason. In the end, it’s all about having fun!

nce again, Placerville’s Main Street provides a golden nugget for those seeking an enjoyable dining experience. The Farm Table is a quaint little gem pumping out great food and friendly vibes. I stopped in on a Saturday evening just as they opened for dinner service and was seated near the front window with a view of Main Street passersby. Fresh-baked, olivestudded sourdough and lemon-rosemary artisan bread with whipped butter was brought out by our knowledgeable and attentive server, Elijah, while we discussed menu options. It had been a while since I’d had fresh, warm sourdough; coupled with a glass of local Pinot Noir, we were off to a great start. I followed that with burrata and grilled pears. Served on a bed of arugula dressed in extra-virgin olive oil and red wine vinegar with Marcona almonds and honey drizzle, the trick was to get as many of the ingredients on the accompanying crostini as possible for the perfect bite. Trust me: The reward was (well) worth the struggle. I wanted to see the chef ’s interpretation of panzanella salad (a seasonal special from their summer menu that's no longer available) and was pleasantly surprised. The tomatoes, cucumbers, red onions, basil, and arugula were bright and refreshing, while the croutons, shaved Parmesan, bucatini, and vinaigrette added a nice balance of richness without making it heavy—a good representation of the restaurant’s moniker. The entrées were a tough decision—too many great-looking options. I went with the house-made ravioli Bolognese and the scallop and shrimp risotto. The ricotta, smoked mozzarella, and parmesanstuffed pasta sheets—smothered in a savory beef, pork, and veal Bolognese sauce—were so fantastic I didn’t want to share any with my companion. Fortunately, she was more interested in her risotto, and after tasting the perfectly cooked Arborio rice and succulent seafood, I can’t honestly say which entrée was my favorite. The staff was incredibly friendly and eager to engage and make suggestions. One of the co-owners, David Etheridge, stopped by for a brief chat, and you could sense his team’s passion for everything—from the building to the food (he is an avowed picky eater) to the community and their good fortune finding Executive Chef Frederick Reyes. Stop in for their “seasonal local menu” or at happy hour to sample some locally sourced beers and wines.

It’s hard to believe that more people aren’t aware of Fahrenheit 250 BBQ in Roseville. They cook everything from scratch; make all their sausages, sauces, and sides in-house; and oh yes, they make some fantastic BBQ! The massive portion of delicious BBQ Nachos alone should be the talk of the Roseville BBQ scene. Is there a Roseville BBQ “scene” you ask? I can count six spots without straining my mesquite-smoked memory, so I’d say there are a lot of options. Speaking of options—once you get past the heaping pile of nachos loaded with cheese sauce, jalapeños, tomatoes, black beans, red onions, corn, sour cream, and your pick of pulled pork or chopped brisket, you can try making your way through The Trough. This BBQ behemoth comes with ribs, a ½ chicken, ¼ pound of brisket, ¼ pound of pulled pork, one sausage, and two small sides of your choice—plus white bread, house-made pickles, and onions. In other words, there’s something for every carnivore in your cave. Cornbread muffins, mac & cheese, grits, greens, beans, slaw…no less than 11 sides to choose from. Grab the kids, a few neighbors, or a local football team and drag them in (you won’t have to drag, they’ll go willingly…), because there’s too much good “Q” to go it alone!

Pineapple-Cranberry Salad
Submitted by Kathy Hurt, Accounting Manager No matter what the main course is, this salad always refreshes and is a big hit with my family. Fresh cranberries really enhance the flavor. 1 can (20 oz.) crushed pineapple (undrained) 2 pkg. (3 oz. each) Jell-O raspberry flavor gelatin 16 oz. can whole cranberry sauce or fresh cranberries 1 apple, chopped 2/3 cup chopped walnuts Fresh mint, to serve Drain pineapple, reserving juice. Remove 1 tbsp. of pineapple; set aside. Add enough cold water to juice to measure 3 cups; pour into saucepan. Bring to a boil, and then remove from heat. Add dry gelatin mixes; stir 2 minutes. Stir in cranberry sauce. Pour into large bowl. Refrigerate 1.5 hours or until slightly thickened. Stir in pineapple, apples, and walnuts. Refrigerate 4 hours or until firm. Garnish with reserved pineapple, sliced apple, and fresh mint.

Feel free to substitute with your choice of dairy/dairy-free products; the recipe can easily be doubled, too. 8 oz. dried macaroni ¼ cup margarine 3 tbsp. all-purpose flour 3 cups soy milk 2 cups dairy-free cheddar cheese, shredded Salt & pepper, to taste Cook macaroni according to package directions. Drain. In a large pot, melt margarine over medium heat. Stir in flour to make a roux. Add soy milk to roux slowly, stirring constantly. Stir in cheese and cook over low heat until cheese is melted and the sauce is a little thick. Add cooked macaroni to the cheese sauce. Stir well to combine, adding salt and pepper to taste.

Shortcut Butter Chicken Submitted by Tara Mendanha, Deputy Editor Traditionally made, butter chicken is a somewhat arduous process. I found this recipe by Nadiya Hussain (winner of ‘The Great British Bake Off’) and while she calls it an easy chicken tikka masala (fun fact: The dish has its origins in the UK not India!), I’ve tweaked it a little to make it more of a butter chicken delicacy that I turn to whenever I want a luxurious Indian meal without the hassle. FOR THE CHICKEN MARINADE
FOR THE GRAVY
1 lb. boneless chicken breasts or thighs, diced 1 tbsp. ginger and garlic (paste or minced) 1/3 cup plain yogurt 3/4 tbsp. lime/lemon juice ½ tbsp. tandoori masala/ tikka masala powder or garam masala/curry powder 1 tbsp. olive oil or vegetable oil ½ tsp. salt
3 tbsp. butter (can substitute olive oil or vegetable oil but then it’s not “butter” chicken, is it?!) 1 medium onion, finely chopped ½ tbsp. ginger and garlic (paste or minced) 1 tsp. garam masala powder/curry powder or a combination of ground cumin and ground coriander 2 cups creamy tomato soup (this must be the creamy kind; I use Pacific Foods Organic Creamy Tomato Soup) Few sprigs fresh cilantro leaves, to serve 1 tbsp. heavy cream or yogurt, to serve
Marinate the chicken in all the ingredients and keep covered in the fridge for 30 minutes or overnight. Cook chicken in a large pan until the moisture evaporates; remove from pan. Add butter or oil to the same pan. Once melted, add onions; cook on medium heat until lightly browned. Add ginger-garlic paste and stir for about a minute. Add garam masala (or curry powder) and fry for a few seconds. Add tomato soup, cover, and let cook for 8-10 minutes. Add cooked chicken, covering the pan and stirring occasionally, until the gravy starts to bubble and the oil rises to the top. Turn stove off and serve with cilantro, a drizzle of heavy cream or yogurt, and Trader Joe’s Garlic Naan or white long-grain (Basmati) rice.

Cheesy Spinach Casserole Submitted by Megan Wiskus, Editor-in-Chief If you like spinach dip and cheesy pasta, then you’ll likely be a fan of this comforting casserole. Try adding mushrooms to the mix and get creative with the types of cheeses or ground meat you use. It’s an easy, forgiving, halfway-healthy recipe that even my two-year-old adores. 1 tbsp. olive oil 1 medium onion, finely chopped 2 cloves garlic, minced 1 lb. ground beef 1 tbsp. Italian seasoning or herbs of choice Salt & pepper, to taste 1 can cream of mushroom soup 1 cup sour cream (or plain yogurt) 16 oz. package frozen spinach (no need to thaw) 3 cups cheese (I prefer Jack & cheddar), grated 16 oz. dried whole-wheat pasta (macaroni or rotini) Parmesan cheese, to top & serve Red chili flakes, to serve Preheat oven to 375F. In a large skillet or Dutch oven, combine the olive oil, onions, garlic, ground beef, and spices. Cook until meat is browned. Add remaining ingredients and stir until combined. Transfer to a 13x9 casserole dish coated with cooking spray (or keep in the Dutch oven). Top with Parmesan cheese and bake for 35-40 minutes or until the pasta is cooked (you may want to stir it after about 20 minutes).. Serve with more Parmesan and red chili flakes.

Although this recipe is not a traditional Hungarian goulash, my mom used to make it for our family all the time growing up. My dad is the one with the Hungarian lineage, but he was not the cook in the family, so Mom adapted her own version of it. The smell of the paprika (the most important ingredient!) and hearty meat, veggies, sauce, and cheese made it a staple during cold Midwest winters. 3 cups dried pasta (any short shape will do—original recipe calls for macaroni, but I use gemelli) 1 tbsp. olive oil 1 medium onion, finely chopped 4 garlic cloves, finely chopped 1 green bell pepper, chopped 2 cups mushrooms, chopped or quartered 1 lb. ground beef 32 oz. canned tomatoes
6 oz. tomato paste 1/4 cup fresh oregano, chopped 1/4 cup fresh basil, chopped 4 tbsp. Hungarian paprika 2 tsp. salt 2 tsp. pepper 1 cup cheese, shredded (any melty type works; I use a combo of Jack and sharp cheddar) 1 cup Greek yogurt, optional, to top
Cook pasta to al dente or slightly before al dente; drain and set aside. Heat large skillet with olive oil at medium heat. When hot, sauté onions, garlic, peppers, and mushrooms until onions start to turn translucent. Add ground beef and cook until slightly browned. Add tomatoes and tomato paste and mix everything together so tomato paste is completely dispersed. Add pasta and stir. Add oregano, basil, paprika, salt, and pepper. Stir. Add cheese, cover, and let simmer for 10-15 minutes or until cheese is completely melted. Stir to mix cheese in. Top with Greek yogurt.
Traditionally, a kugel is associated with Chanukah and the sabbath. It can be prepared the night before and kept in a warm oven or served at room temperature for a snack or dessert. It also reheats perfectly and makes a great breakfast. If you serve it as part of a buffet table at a party, it’ll disappear in no time at all. 16 oz. dried egg noodles 6 medium eggs 1 ½ cups milk 1 cup cottage cheese 1 cup sour cream ½ cup sugar 1 cup raisins (optional) ½ cup brown sugar ½ cup walnuts or pecans, chopped 1 tbsp. cinnamon Preheat oven to 350F. Bring a large pot of lightly salted water to a boil. Cook the noodles until just tender, then drain. While noodles are cooking, beat the eggs in a large bowl. Add milk, cottage cheese, sour cream, sugar, and raisins (if using). Beat together and then add noodles. Mix well. Pour into a buttered 10x14 pan. Mix the brown sugar, nuts, and cinnamon together. Sprinkle evenly on top and bake for 1 hour until the center is firm.

FOR THE FILLING

1 ½ cups graham cracker crumbs 1/3 cup sugar 1/3 cup melted butter
16 oz. softened cream cheese 2 eggs ¾ cup sugar ½ cup cocoa powder 1 tsp. vanilla
1 cup sour cream 2 tbsp. sugar 1 tsp. vanilla
Combine crust ingredients and press into bottom of a cheesecake pan, reserving about 2 tablespoons for topping. Preheat oven to 375F. Mix filling ingredients until creamy. Pour over crust and bake for 20 minutes. Let cool for 15 minutes. Increase oven temp to 425F. Combine frosting ingredients and spread over cooled cake. Sprinkle with reserved crust and bake for 10 minutes. Let cool and then transfer to fridge. Best served chilled.
Maltese Baked Pasta Submitted by Ray Burgess, Graphic Designer This classic Maltese recipe is a staple in my family that’s easy to make, delicious, and sized to feed— and please—a crowd. 16 oz. dried pasta (penne or rigatoni) 1 lb. ground beef 1 medium onion, finely chopped 2 cloves garlic, minced 3 cups spaghetti sauce 6 eggs, beaten 1 tsp. dried basil 4 tbsp. Parmesan cheese, shredded Salt & pepper, to taste Preheat oven to 350F. Cook beef until browned, breaking up the meat as you stir. Add onions and continue cooking until they’re soft. Add garlic and cook for about 1 minute longer. While meat is cooking, cook noodles according to package directions being careful not to overcook (you don’t want soft pasta). Run pasta under cold water and drain. In a bowl, add pasta and meat mixture. Add spaghetti sauce and carefully stir together. Grease a 13x9 casserole dish and fill it with the pasta mixture, pressing down lightly to pack it in. Combine eggs, basil, and cheese with a dash of salt and pepper; mix well. Pour evenly over the noodles, pressing down lightly to ensure the egg mixture is distributed throughout. Sprinkle more pepper on top and bake for about 30 minutes until the noodles on top start having dark edges.

Veterans Day occurs on November 11 every year in the U.S. in honor of the “eleventh hour of the eleventh day of the eleventh month" of 1918 that signaled the end of World War I, known as Armistice Day.

In 1954, President Dwight D. Eisenhower officially changed the name of the holiday from Armistice Day to Veterans Day.

In 1968, the Uniform Holidays Bill was passed by Congress, which moved the celebration of Veterans Day to the fourth Monday in October. The law went into effect in 1971, but in 1975 President Gerald Ford returned Veterans Day to November 11, due to the important historical significance of the date.
