dive in IN WITH 2013 Melissa welliver melissa@submergemag.com By the time you read this, 2012 will pretty much be a wrap. Or, perhaps you picked this issue up in 2013 since this is our annual THREE WEEK ISSUE and 2012’s dishes are already done!

Overall, I guess it’s been a pretty good year. We’ve added more distribution spots, and we are consistently around 32 pages (we were 24 when we started), but because of such growing pains, I’m not going to lie, it’s been a really hard year with things like distribution boxes getting jacked, longer hours or stupid shit like our delivery vehicle’s parts breaking.

So, I honestly am happy to say good riddance to 2012 and to welcome in 2013.

I couldn’t think of a better way to say out with 2012 and in with 2013 than to team up with the guys who put on Lipstick Weekender and the awesome crew that are opening the new restaurant and bar LowBrau (MARRS Building, 1050 20th Street, Sacramento). Submerge will be ringing in the New Year with Brooklyn electro-pop group St. Lucia as well as Sacramento’s own DJ Whores, Sam I Jam, Shaun Slaughter and Roger Carpio. And yes, you’re invited, so hurry up and buy tickets at Aceofspadessac.com. If you don’t know about St. Lucia, you can actually read more about them starting on page 12. Trust us, they are amazing, and they’re going to be huge.

In 2013, I will try to step up a few things, and if it’s in print it has to happen, right? With all this extra work this year, I’ve been slacking on making it out to the shows that I really want to see.

Yeah, yeah, realistically seeing all the shows I want remains impossible, but I want to make an extra effort in 2013 to man up and delegate more tasks to our incredible contributors in order to make time for a little bit more fun in my life. Because all work and no play…let’s just say it made for a slightly grumpier Melissa this year. With that being said, do you want to help out Submerge in any way? If so, email us! We’re always looking for new writers, help with editing, delivery hands, even people to help with sales and marketing. Keep in mind, we cover the arts, so if it is the cheddar you seek (aka hella coin), this might not be for you. The most notable show I’d really like to go out of my way to see in the New Year is K Será’s show at Midtown BarFly on Jan. 10. Over the past few years, they’ve released a couple of enjoyable EPs, but now this Sacramento band will celebrate their upcoming full-length release Collisions and Near Misses that will be out in mid-January. On page 14 you can read more about the concept of the album and a few key things that they have planned for the upcoming year.

2012 wasn’t all bad. One thing that I did work on (OK, barely) was cooking new recipes. When I have the luxury of getting a few free hours to myself, there’s nothing I enjoy more than cooking with my fiancé. My favorite new dish I learned to make in 2012 was baked spaghetti squash. Squash!? I would have never thought I would like spaghetti squash until one evening when I tried it at a Mulvaney’s family style meal a year or so ago. This fall I found a recipe online and whipped it up myself. Delish! While there’s no recipe for that dish in this issue (if you want it, email me), on page 18 Chef Patrick Mulvaney as well as a couple other extremely notable chefs in Sacramento share with Submerge some of their family recipes, including one tasty recipe from our contributor Steph Rodriguez. So in these winter months make a new resolution to try new recipes and start with the four in this very issue.

One more thing, in 2013 I’d like to splurge more on accessories and clothes for myself, but really who wouldn’t?

Working so hard on Submerge has made me realize I need to treat myself more often. We’ve recently featured Morris Terry, a local work out clothing company that has gear I’m dying to buy.

Now in this issue we’re featuring Official Crown of Laurel, who have a ton of awesome hats and beanies that I’d love to sport while I’m walking the dog on these cold winter nights, or when I shred Sierra-at-Tahoe. After tossing the idea around for years, the guys in local jam-based reggae/rock band ZuhG have finally decided to act upon their urge to throw a Dr. Dre Tribute Show on Saturday, Dec. 29 at Harlow’s! “We’re excited it’s finally happening,” Bryan Nichols, frontman of ZuhG, told Submerge.

“The Chronic 2001 is probably the most listened to album in the ZuhG van when we tour. Everyone loves The Chronic.”

Nichols and crew have assembled a sweet backing band for the show including himself and fellow ZuhG-er JR Halliday along with drummer Katayo Moore (aka Lady Rhythm) and keyboardist Chez Gonzales. Will Robinson from The Old Screen Door will be singing some of Nate Dogg’s parts, and plenty of guest MCs will take the stage throughout the night, including Task1ne, Will Robinson RIZ, Century Got Bars, Kevin (from The Hooliganz), Charleee (from ZuhG) and Ernie (from Who Cares).

“Hip-hop is a lot of fun to play with a band.

It’s different in a lot of ways compared to rock,” said Nichols, who has had plenty of experience backing up hip-hop artists (Random Abiladeze and RIZ just to name a couple).

“You have to stay in the pocket and not be too flashy. You can’t be afraid to play the same riff over and over again. The Chronic has some of the most catchy bass lines and guitar riffs, I love it.”

Century Got Look forward to hearing Bars classic songs like “The Next Episode,” “Forgot About Dre,” “Fuck You,” “Nuthin’ but a ‘G’ Thang,” and plenty of others. The show starts at 9 p.m., is 21-and-over and the cover will be $10—a small price to pay for what will surely be a super fun and memorable night. And of course, this blurb wouldn’t be complete without the obligatory Nate Dogg line, “Smoke weed everyday!”

Sacramento’s longest running reggae night, Get Down to the Champion Sound, has officially moved venues! After a healthy eight-year run on Friday nights at Capitol Garage, DJ ESEF and crew are moving their party to Midtown BarFly, located at 1119 21st Street (where Club 21 used to be).

“Champion Sound had a beautiful eight-year run at Capitol Garage,” said ESEF. “We DJ’d and worked with many internationally known reggae artists including King Yellowman, Ranking Joe, Lutan Fyah, Afrika Bambaataa, Admiral Tibet, Junior Demus, DJ Shortkut and more.”

ESEF said they simply outgrew their old venue and in order to keep booking national and international talent and keep ticket prices low, they needed a bigger room.

“The option to move Champion Sound to BarFly came up, and we jumped on it because they really are the best venue for us at this point in our reggae careers,” said ESEF. “It’s a super dope venue. It is large enough to be comfortable, but not gigantic, and definitely offers superb prices on their drinks and brews. They just had a brand new sound system installed, and the location is super easy to get to from any downtown area or suburb. Very Central.”

ESEF also said the venue has professional lighting and video DJing capabilities that they did not have before. Friday, Dec. 14 was the first night of Champion Sound at Midtown BarFly, and the crew will take Dec. 21 off due to a previously booked event. But starting on Dec. 28, and continuing every Friday night after that, you can expect ESEF and his crew— which includes Juan Love (aka skate legend John Cardiel), Selector KDK (Kevin Kinnard), Ras Matthew (Matt Pailes), Kris Ward (of Squarefield Massive) as well as others—to drop nothing but the dopest reggae sounds.

“I’m most looking forward in this new era of Champion Sound to having a bigger venue with better sound and the ability to continue to bring some of the world’s greatest reggae DJs, selectors, bands and singers to our beautiful city of Sacramento,” said ESEF. Get Down to the Champion Sound is free before 10 p.m. and $5 after.

Adrian Bellue’s New Album Draw Inspiration

Local guitarist Adrian Bellue can do things with his guitar that you didn’t think were possible. His “fingerstyle” playing is hard to describe in words; you almost need to see and hear it to believe it.

“What I do is a bit different,” he recently told Submerge.

“I devote myself to breaking the boundaries of solo instrumentation and make every attempt to see how far I can take the acoustic guitar. I utilize percussion, rhythm and melody to fuse together a small orchestrated band from my fingertips.”

Imagine a bass line, melody, harmonics and percussive elements all coming from one guy, on one acoustic guitar.

No loops, no effects pedals, just pure and raw talent. Years ago Bellue was getting way into martial arts and Buddhism, but after he sustained a major knee injury that required surgery, he had an “epiphany” about his music.

“I realized I could use all the same fundamentals from martial arts with the guitar, utilizing circular motion, empty mindedness, passing through the target, etc.

That’s when I started developing my own techniques and exploring new tunings,” Bellue said.

Bellue’s debut album Draw Inspiration, recorded and engineered over the summer here in Sacramento by Brian Lee Bender all in single live takes, is now ready for release. What makes a city great are the little things that only the locals know about. Hole-in-thewall restaurants and tiny corner boutiques are places that make a place feel uniquely like home. Especially now with the holiday season in full swing, community events are that much more spirited and fun. I spent this weekend, which will be my last in Davis for 2012, tirelessly studying for finals, but as a little study break and with camera and coffee in hand I visited the passionately talked about Davis Flea Market.

Similar to the Maker’s Mart at Bows and Arrows in Sacramento, the Davis Flea Market features local artisans selling clothes and knick-knacks. This pop-up event takes place in Davis each month in the E Street parking lot in the middle of all the downtown buzz.

With an eclectic Christmas tree at the center of the excitement, the flea was undoubtedly festive. Vendors selling holiday ensembles and stocking stuffers, some of my favorites were flannel shirts coming from clothing company Feelings. With a live jazz band playing classic Christmas tunes it was nice to have a more relaxed shopping experience. It is great to see people supporting local businesses and igniting community camaraderie.

The Optimistic Pessimist The holidays are nearly over, and let’s face it, you’ve earned some TV time. You’ve eaten your body weight in mashed potatoes, argued about religion with your brother and drank all the beer in the house. Now all you want to do is soak up a little bit of the old idiot box, but the network big wigs want you to watch re-runs.

It’s times like these that make us yearn for something new. Not to worry, though; reruns right now mean big changes are coming soon. Some of your favorite and not-so-favorite shows are going away. The new shows that trample the ashes of their predecessors are known as mid-season replacements and I thought you might like to hear about a few promising newcomers.

Jack and his dog, Mac, were partners with the NYPD and best friends. Together they had taken down some of the biggest gangsters in town, but they couldn’t catch them all. Rudy Juelz sat at the head of New York’s organized crime families. What he said was done without

question. Tired of Jack and Mac’s meddling, Juelz ordered a hit on Mac, who was killed while taking a shit in the yard.

Jack was devastated. Without Mac, Jack didn’t think he could be a cop anymore and replacing him with a new dog was out of the question. So, Jack retired from the force and got a cat named Axel. Something was odd about Jack’s new cat, though. Axel acted a lot like Mac and even knew Mac’s police training. Jack soon realized that Mac had been reincarnated as Axel, and he was back to get revenge on Juelz and his thugs!

Of course, Jack isn’t about to lose his best friend again so he comes out of retirement to go after Juelz one last time. As Axel is the only one unknown to Juelz, it will be up to him to infiltrate the family and become a made cat.

Things are gonna get pretty hairy for Axel, but Jack’s got his back. Find out if it’s going to work this February on Fox’s Pussy Hound.

Reality TV has done it all, but never all at once. ABC is hoping to change that with

its new mega reality super show. Contestants begin by speed dating to select partners to accompany them on their subsequent search to find challenges across the world. Some of the challenges faced by contestants include obstacle courses, animal organ/genital eating, shock treatments, public humiliation, castration, prolonged sensory deprivation and water boarding.

When the group is narrowed down to four couples, the remaining contestants will get married to their partners. Each couple will also sing at each other’s weddings to see who gets to go on a fantasy honeymoon. After the weddings, the couples will all move into a house together where they must remain until they either divorce or die. The last married couple standing on ABC’s For the Love of Money will be rewarded with $10 million.

If you are reading this, there is a good chance that the Mayans were defeated and the world didn’t end on Dec. 21. While this is certainly great news for us, it has created some huge programming issues for The Learning Channel.

Determined not to be stymied again, TLC has

t. Lucia’s Jean-Philip Grobler has led a wanderer’s life. The South African born singer/songwriter spent his late childhood/early adolescence traveling the world as a member of the Drakensberg Boys Choir. Though he now calls Brooklyn, N.Y., home, he continues to lead a mobile existence. Submerge caught up with Grobler in our nation’s capital, just a couple days after playing to a packed crowd in Toronto.

“We sold out the venue, our first night there,” Grobler said of his show north of the border. “The thing that kind of sucks about being on tour—it’s kind of a good and bad thing—is that you get to go to so many places you’ve never been before, but you don’t really get a chance to see them. It was great, the crowd was great and the venue was awesome, but I just wish I could have seen more of the city.”

It’s busy for the band now, but St. Lucia’s touring schedule will become even more hectic in the New Year.

The band will play dates in support of Ellie Goulding’s North American tour.

“The longest we’ve been on tour has been a month, and we had a lot of free days during that tour,” Grobler said. “But this one is going to be full on, every day, traveling at least six hours. I’m anticipating it with excitement and utter dread.”

Though singing in the choir may seem like a wildly different experience than fronting an up-and-coming electro-pop act, Grobler admitted that his life on the road with Drakensberg prepared him for what he’s doing now. Perhaps it’s not so surprising considering that this occurred during the most formative years of his life. Grobler was just 10 when he started with the choir and finished his stint with them when he was 15.

“It was this crossover period between my childhood and my adolescence,” he said.

Like most teenage boys, he was eager to rebel against the things he knew. Grobler said he was one of the first people he was in the choir with to start a band.

“I feel like I have this natural personality where I see what’s going on around me, and I just have this urge to fuck with it,” he said.

“As I started becoming older, I started getting into stuff like Radiohead, and all the choir stuff just seemed so regimented to me,” Grobler added. “I had this urge to break out of it, so I started a band. In a way, I guess that fed into what happened with this.”

As we learned through our interview, it was the same sort of against-the-grain attitude that fueled the musical direction of St. Lucia, though in a slightly different way. So far the band has released two EPs, a self-titled collection of intoxicating dream pop, which came out on Neon Gold in March 2012, and September, an EP-length single (featuring the title track and a handful of remixes of it) came out in September of the same year. A full-length is in the works, but before that, check out what Grobler had to say about life on the road and the considerable journey that brought him to the electronic music paradise that is St. Lucia.

Things are really picking up for you now. You’re on a good label with Neon Gold, and people are starting to recognize your music more. Is it like how you feel about the Ellie Goulding tour—equal parts joy and dread?

In a way it is. It’s amazing for someone like me who sat in a studio for years and years trying to figure out what the fuck I’m doing musically, and then for people to suddenly be taking notice, it’s a great feeling. But it’s a complex thing, because on the one hand, it’s amazing and exciting, but on the other, the fact that people like it puts pressure on me to make the next thing really good. You can never know if people are going to like it until they listen to it and it’s released, you know? Now my time is just so full of doing stuff other than doing music, like—um—interviews [laughs]. It’s both good and bad, but I think everything in life is like that. I think the fact that I’m doing what is my passion—music—and I’m spending all my time doing that is amazing. I couldn’t hope for anything more than that.

I saw a picture of your live setup on your Twitter feed, and it looks like a pretty traditional rock/pop setup. From what I’ve heard, your music sounds really dreamy and electronic. Is the sound live a lot different than what people are accustomed to on the recordings?

I don’t think so. I’ve heard people saying it’s very similar to the recording. We play as much of the stuff that we can live, and I’m blessed to have a lot of great musicians who play with me. I would say it’s different, but I try to take it as far away from “guy on laptop” as possible.

started emerging in my music. It was just a gradual thing where more and more of the stuff I was writing came out in that style. It wasn’t like one moment where I was like, “Yes!” or whatever.

There’s a full-length album in the works, right? I’d heard it was supposed to come out this year, but has it been pushed back?

What happened was there’d been a few mix-ups, like certain delivery dates were promised to the label, which I wasn’t privy to, but at the moment, it’s looking like the full-length will be out April/May next year. I’m working with Chris Zane, who produced the most recent Passion Pit album and the Holy Ghost album. We’re finishing up a couple details here and there and tying the whole thing together, because I think just by the nature of doing the whole thing by myself, I think it’s natural that you kind of miss things here and there. It’s good to have an outside opinion, and we’re also getting some alternate mixes on a couple of things, but it’s pretty much done. All the songs are there, all the parts are there, we’re just ironing out the creases.

Now that you’re touring and will be for a good part of next year with your band, is there any inclination to get them more involved in the creative process?

For me, I’ve been doing it for so long the way I’m doing it now, it just seems very natural for me to go to the studio and do it by myself. I have a very ironed-out process of what to do to bring something to life, but like you said, just because we are going to be on the road so much together, and everyone I play with is such a talented musician, someone is bound to play something that will spark something and something will happen. I don’t want to force it.

You’re originally from South Africa, but you traveled all over as a kid. How has that prepared you for what you’re doing now?

It’s funny, because earlier I was saying to the guys in the band that I’ve realized that the way that it feels doing this with the band is almost identical to how it felt with the boys’ choir, except now there’s alcohol involved and people can go home with other people at night. It’s very similar, and in a way, I think it gave me stamina for this, because I can easily sit through a 10-hour bus drive, squashed next to other people, and have no problem with that. I can just listen to music and not get bored. I think that’s probably the influence, and I’m also open to new experiences and trying new things.

Before you mentioned that you were sitting in your studio for years trying to figure out what to do. Did you have an “ahhah!” moment that pointed you in this direction?

I think it was a gradual dawning, I guess you could say. It took a while. The stuff I used to do was more rock-based, more overtly influenced by Radiohead, that kind of stuff. Just being in New York, and that being the epicenter of the whole indie explosion that happened over the last decade, it started to feel to me that things were getting too precious in a way. There are a lot of bands in that scene that I loved, but I think I just started to get tired of trying to be that way. I just started listening back to a lot of stuff that I was influenced by when I was a kid—stuff that my parents would listen to or would be on MTV or whatever, like Lionel Richie, Phil Collins, Michael Jackson or Earth Wind and Fire. Something about the super positive and really over-the-top, flamboyant quality of that music seemed really refreshing to me at that point when it seemed like everyone else was trying to be small and weird… which is cool! I really love a lot of those bands, but this was something else that I hadn’t explored yet that I should maybe just take a look at it because it’s so ingrained in my consciousness. Your wife Patricia Berenek is also in the band. Do you often bounce ideas off of her?

She’s definitely a very big part of the whole thing… Her opinion affects the way I see things. But she’s not always in the studio every day. I think it’s good to have that separation.

You’ll be playing New Year’s Eve in Sacramento. Do you typically enjoy New Year’s Eve? To me, I just hate it when I feel like I should be partying more than other nights on New Year’s Eve. I just want it to be a normal night, and if I get tired, then I can go home. Sometimes I hate it, but when it’s natural, and everything flows, and you’re just surrounded by good people, then I love it. It’s great.

Would that be your tip to enjoy yourself on New Year’s Eve? Just to not put any undue pressure on yourself?

For me, yeah, but some people need that pressure. Or they just need to go [roars] and go crazy!

Dream Like K Será Does

T

he last time Mike Caswell, lead singer/ guitarist and creator of the band K Será was interviewed by Submerge it was 2008.

He was the band’s lone official member and had just created his first EP with the help of other artists. Since then, Caswell’s band has grown to include three more members, who he says make the band what it is today.

K Será’s debut album, Collisions and Near Misses, is set to drop Jan. 21, and the band is already gearing up for a nationwide tour. But before they hit the road, they will be holding their album release party here in their hometown of Sacramento. On Jan. 10, the band will play songs from the new album, giving attendees a full listen before the album is released to the public. They will also be playing at South by Southwest this coming year.

Caswell described the sound of the album as “spacey,” as in galactic, infinite and atmospheric. He said it was made to be experienced as a cohesive product. Instead of a favorite song on the album, Caswell said he has “favorite moments… We view the album as a work as a whole so it’s hard to pick out one song.”

The album’s single, “Dream Like I Do,” definitely gives that floating in space type feeling, complete with subtle old school video game noises and Caswell’s melodic and heavy voice. It basically sounds like an astronomical explosion and the rock genre made a baby.

“The concept of Collisions and Near Misses is based around how life is essentially a summation of small decisions you make. You go out one night you meet that person, you stay in and you don’t…and from there, it’s an infinite realm of possibilities that follows that,” he said.

According to Caswell, many genres inspired the album, making it a mix of all types of sounds coming together in one place. His musical influences include the British band Muse, who are famous for their fusion of multiple genres and space-inspired sounds: Think of the song and album of the same name, “Black Holes and Revelations.”

But Caswell says his biggest inspiration and “half the reason” he started K Será was because of the support of Casey Crescenzo, the producer of Collisions and Near Misses. Crescenzo is also the frontman of the band The Dear Hunter, originally from Providence, R.I. Caswell named The Dear Hunter as one of his favorite bands alongside Seattle’s Forgive Durden.

“To have [Crescenzo] on board working on the record and so passionate about it was awesome,” he said.

Caswell, 25, the youngest of his twenty-something band mates, said they committed themselves to a certain amount of hours per week to write and then locked themselves in a small room to “hash it out… it was just grinding.”

He met his band mates, David Christensen (piano), Dustin Combs (drums) and Jordan McCoy (bass), through friends and Sacramento acquaintances. Caswell said he can play piano in addition to wielding a guitar and singing, but he was quick to give props to his band mates and their impressive skills.

“The guys I play with are so astronomically more talented than I am that I wouldn’t want to interfere with what they do [on stage],” he said modestly. “What’s changed in the last five years was going from a solo project to having the most talented musicians I’ve ever worked with…really took this band to the next level.”

K Será is Spanish for, “Whatever will be,” a name Caswell came up with as a way to remind himself to relinquish control of certain things and “free up the stress in my life,” he said.

Caswell said he’s been playing music since he was 13. He and a couple childhood friends created the band F.F.G., of the pop-punk

genre. His love for creating and performing music clearly never gave out and he’s still going strong: even after months of working on the album, he expressed his longing for always wanting to make more music.

“I hope people buy the album. We definitely can’t make more if people don’t buy this one… We’d love to continue doing this… The fan support is always tremendously appreciated,” he said.

He said K Será’s fans are “the nicest, most interesting people… they’re very passionate about us and what we’re doing. It’s constantly surprising.”

If you take a look at the band’s Facebook page, it’s easy to see that passion. Many excited and supportive comments flood the page: from lyric quotes to pure excitement for the album and even fans begging the band to come to their hometowns.

Caswell said K Será holds a strong fan base not only in Sacramento, but also in Seattle, Southern California and on the East Coast. Possibly the most unexpected is that their third largest fan base is from Buenos Aires, Argentina, according to the band’s Facebook stats. Attribute it to the band’s Spanish name or purely their talent, either way they undoubtedly have a far reach.

Former 58 Degrees and Holding sous chef Matt Brown just started as the head chef at the Golden Bear four months ago. Brown says anyone can whip up his mother’s recipe for Arroz con Pollo, or chicken with rice.

“I love cooking dishes at home that take a good amount of the day and end up heating the house for you.

Sear some chicken legs off in a pan, just browning the outsides. Meanwhile, in a blender, blend the peppers into a paste. In the same pan you cooked the chicken, sauté a chopped yellow onion with two cups of rice and brown the rice slightly. At that point, add your chicken stock and your chili paste. Mix in some Achiote paste into the liquid and add your chicken back into the sautéing rice. Bring it to a light simmer, put the lid on your pot and let it cook for 35 minutes, [then] turn off heat and let it sit for five minutes.”

In Roehr’s own words: “If someone finds the need to make a turkey or roast a chicken, this gravy will go really well.

This is something that was a family recipe my grandma would make. This is cool and kind of a twist on chicken and turkey gravy for the holidays.”

Put the cookies in the blender until they’re a powdery consistency. Brown the onion with some butter in a pan until soft. Once the onion cooks in the pan, add the powdered cookies with one ounce of butter. When the butter melts, add the stock and two tablespoons of apple cider vinegar. Last, add some chopped thyme and salt and pepper to taste. Roehr says any gingersnap cookies will do, whether they’re from a box or a natural food store.

“My grandma made it every holiday. We always had this ginger gravy on the table for everything. It’s good on potatoes, it’s good on the turkey, it’s good on chicken [and] it’s good on rice. It’s a very distinctive flavor. Actually, it’s been a while since I’ve had it. I’d like to have some now.”

Patrick Mulvaney grew up on the East coast, so he’s accustomed to fresh, Dungeness crab season, but there’s one tart berry that brings sweet memories of his mother, and ultimately inspired this eye-appeasing salad.

“This is a dish that my mother used to make around Thanksgiving and Christmas. My mother would leave a bowl [of extra cranberries] in the kitchen that everyone would eat. This works with romaine lettuce, arugula or chicory. The stars of the show are really the cranberries that go on top. If you do it with arugula, it kind of looks like a Christmas tree, right? You have the green, the little red balls and the white chunks of blue cheese throughout.”

For a bowl of encapsulated, sugary cranberries, use one cup cranberries, one cup granulated sugar, two egg whites and two tablespoons water. Whisk water and egg whites together until blended, but not frothy. Dip cranberries into the egg white mixture and then roll them into a bowl of sugar until fully coated. Set the cranberries on a plate or wax paper and allow to air dry for up to two hours.

If you’re feelin’ extra saucy, make the mandarin vinaigrette from scratch. Mulvaney’s tips include one part acid, three parts olive oil, one shallot, two garlic cloves, one spoonful of Dijon mustard, one mandarin, salt and pepper to taste. Vinegar is optional.

“Drizzle in the oil slowly. I usually use regular olive oil. If the mandarin’s are tart enough, you don’t need any vinegar. If they are sweet, you just use a little champagne or white vinegar to bring that acid level back up.”

14 oz veggie broth 2 8 oz cans tomato sauce 1 14 oz can diced tomatoes 2 tsp olive oil 2 tsp cumin 1 tsp chili powder 1 tsp cayenne

I love soup; especially tortilla soup. But, as a vegetarian, it’s hard to find non-chicken tortilla soup anywhere around this town. So, I forgo the restaurants and make my own with cilantro-lime baked tofu bits. It’s a hearty take on a classic recipe that can also be labeled vegan if you leave out the cheese and corn tortilla toppings.

But this writer loves cheese. Sorry vegans.

Soup: Start by roasting your onion, jalapeño and green peppers in the oven at 350 degrees for 15 to 20 minutes. Once done, throw the jalapeño and peppers into a plastic bag for five minutes so it’s easier for the skin to be peeled. Throw the onion and roasted peppers into a blender and blend until smooth. In a large pot, add your liquids over medium heat, blended chili paste and spices. Stir everything well and let the soup simmer for half an hour, watching closely. When it’s done simmering, add in the black beans, corn, half-cup cilantro, tofu bits and let the soup simmer for another 10 to 15 minutes. Lastly, fry up some corn tortilla strips, sprinkle cheese and cilantro for garnish and enjoy.

Tofu: The trick to a well-marinated tofu is pressing all the water out of your block. Squeeze the liquids out by pressing with your hands and then finish it off by squeezing the block between paper towels.

Slice long, thick rectangles and marinate for up to two hours. The marinade calls for one tablespoon olive oil; a quarter-cup lime juice; two cloves garlic, minced; two tablespoons chopped cilantro; two teaspoons chili powder; a pinch of cayenne pepper and of course; salt and pepper to taste.

Fit for a King

W

hat happens when a creative and well connected thirty-something ex-magazine publisher has a little in between time after selling his company? Does he stop working and just relax, ignoring the entrepreneurial spirit that beckons from within? Sacramentan Jason Maggio sure didn’t in 2007 when he founded a premium headwear company called Official Crown of Laurel, or Official for short.

Maggio saw a void in premium headwear with influences coming from skate, street and DIY fashions, and so Official was born. Fast forward a few years and his products have been seen worn by celebrities and tastemakers all over the world.

Retailers both big and small proudly carry his products, and much like the shoe companies that attract sneakerheads who collect as many pairs of shoes as they can, Official provides nearly endless options of stylish headwear to an audience with an insatiable appetite for dope street fashion. According to the company’s philosophy posted on its website, “Official regards its headwear as a crown, a statement, an exclamation point and sometimes a simple complement to bigger and bolder things.”

Submerge recently sat down with Maggio inside Official’s nearly 3,000 square-foot warehouse space in downtown Sacramento, which they share with another locally based skate/streetwear brand, Lurk Hard, for the following interview.

We touched upon on why he started the company, what it’s like to do business in China, how they recently signed professional skateboarder Stefan Janoski and more.

Take me back to just before Official started.

What were you up to job wise?

I was doing a magazine called Vapors. We sold it to a publisher in Los Angeles, and I stayed on for another two years just working as the art director, and I’d have to go down like every other week. I just got tired of it. I have a family, and so it was stressful.

What were you going down there for? To meet deadlines and whatnot?

Yeah, everything. All kinds of stuff, editorial, marketing, events. The magazine was in a good place with the publisher, so it wasn’t like I was ditching it or anything. They were fine. It seemed to be a good time. So I was doing some freelance design, and I did some stuff for a brand that was doing a little hat stuff.

So that’s how you got into the headware game?

Yeah, and then at some point I was like, well I’m here in Sacramento, they were in L.A., so it wasn’t optimal. Basically I decided, OK, I’m going to do this on my own. I’m going to just start doing hats. We produced in California at the beginning and made a ton of mistakes. The hats cost us a fortune for each piece, and there was no profit anywhere.

But it was a learning curve, right? Nothing happens easily and without mistakes.

It was. It was totally worth it. It’s so funny, because even at that age…let’s see, how old was I? I was 35, so you’d think that at this stage in my life, I probably shouldn’t be making these rookie mistakes. But they’re going to happen, and I guess it’s just how quickly you learn from them.

You were coming from a business background that was somewhat related, in that you may have had mutual connections and whatnot, but this was a totally different thing than publishing, right?

Yeah. In a sense I was an entrepreneur with the paper, because we started as a cut and paste ‘zine, you know, and we moved it to a full-fledged magazine. That was a process. I enjoyed the process. But then you’re starting over again with a new brand.

It was new territory. Building brands isn’t necessarily a new experience, but the production and distribution and all that, you do have to learn a lot. There was a learning curve there… So we had a really good first year at Official and we were on a good route, lots of good response. That was the idea, for me, I was looking at what was being offered, and just saying that we could do something that wasn’t being offered, and something we really liked. That was what was going to differentiate our product from what was already out there.

Why a headwear company? Why not footwear or eyewear or something else?

It was a little bit of just right place right time, and a little bit of looking at the market and seeing where I thought there were some holes. You see the thing is, with headwear, generally there are big brands like New Era. They are just slow to move on trendy things. So that’s really where we started, was moving on trends. So if we could be quick to market, and get something done in six weeks and get it out there, that’s way faster than the bigger brands that are planning a year ahead.

So early on you had the advantage of being on top of trends and what was hot. In the digital age, everyone wants everything yesterday, right?

Yeah, and by the time the stuff comes out, sometimes it’s too late.

That was really our business model. We literally had a delivery every two weeks of two or three styles, so it was just a quick to market delivery and shops loved it. Especially with the economy then, people were buying stuff like there was no tomorrow.

So you mean sort of like sneakerheads with all their different pairs of shoes, people want multiple hats?

Yup! The cool thing is that hasn’t changed too much. It’s a cheaper price point, it’s a lot cheaper than a hundred-dollar pair of shoes.

What happened with Official when the economy started to tank back in like 2008, 2009?

So the economy fell off, and we had to just become a skeleton and weather the storm. I was working out of my house. Everything we have here was in the garage, and it fit, so it wasn’t a lot. Ran it out of my house after that for three years, no offices or anything. And eventually it just started to slowly build again. My idea was, it’s going to be bad, it’ll get better, and let’s just continue doing what we’re doing and we’ll learn a lot. So, what was happening was we were producing in California and it was costing us a lot. We looked at China as an option early on and made a couple trips.

Tell me about the first time you went out to China for manufacturing research. That must have been a mindfuck.

The first time was pretty crazy because we went to a northern city called Qingdao. It’s a northeastern province and it’s so tiny, and I didn’t know anything about Chinese business culture. There’s a whole thing, you know, if you go to China to visit a factory you have to go out to dinner with them. You drink with them, and you eat really weird stuff. And they just love doing that. Sometimes I think it’s malicious [laughs], and sometimes I think they just really want to show you their culture. So that was pretty tricky.

Was it a hard decision to move your production to China?

Moving our production to China was a tough decision, because we were actually pretty proud that [the hats] were made in California.

But I think it’s a trade off. I think that moving to China, of course, we don’t get to employ manufacturing here, but I get to have a business and have other employees because I can get that product made in China more efficiently and better than we can do here.

What I mean by that is, like, we’re just not a manufacturing country anymore. Back then when I was getting a hat made here, I would have to get the silkscreen done at one place, then the lid was made at another place, so it’d take six weeks to get it shipped back over here. Then have all that applied and sewn here in a hat factory, and still the quality was not up to what we could get in China, and it was costing $11 per piece here, whereas a hat now is costing us way less. I don’t want to necessarily say the price, but it’s way less. And it’s better quality, and we can get everything done in one stop.

You’re going out to China again before this interview will even be out to source for fabrics for your Spring 2014 line. You guys are now designing for lines a year ahead of time?

Yeah, a year out. See, what we were talking about earlier, we’ve become that beast that we were able to capitalize on and take advantage of before when we could be quicker to market. Now we’re designing stuff a year out, and it’s kind of scarier…this is the first time we’ve been that far out. We’ve always aspired to be that far out but like sampling always takes a long time and you run into hiccups. Plus, when we can plan that far out, we can ship more stuff by sea and that really reduces our costs a lot.

Trends can change quickly, does that worry you?

Yeah, and there are smaller companies that can be faster to market with the trends.

What we’ve learned is we’ll still have that stuff even a year out. Our bigger retailers will say, “I’m buying for fall right now,” so we have to have fall done! But, we still will get some things quicker to market.

So you’ve found middle ground, it seems, between being too big to move on trends and being too small. Agree?

Yeah, I agree. And then on top of all that, you have to have confidence that what you’re doing is dope and it will stand on its own. You don’t have to worry about the trends. We just have to be that solid headwear brand, not somebody chasing trends. You just have to have that foundation so people can rely on us for headwear every single season and they know they’re going to get good stuff.

The 2012 winter line was released Nov. 1.

What were the inspirations behind this season’s designs?

For winter, I don’t know if I want to expose this, but we go pretty safe, because it’s the holidays. A lot of brushed wools, and then some trending things like a lot of camo and sports colorways together. So, like, the 49ers colorway but with camo—that kind of stuff.

In the campers we did some metal label stuff, which is kind of cool.

Do you have an Official skate team?

We’ve developed a program that is still in the works, but we have hired Jeff Landi as our team manager. He’s a local guy that’s a staff photographer at The Skateboard Mag. He’s amazing. He’s a good friend. I’ve known him for a long time, so it seemed pretty natural. He has good rapport with so many pros, so he’s building a team. We have a really good list of [amateurs], but right now the pro that I would like to mention that we’re launching with is Stefan Janoski.

He’s so hyped and energetic about it. All the stuff is from him, all the designs we’re doing for his line are from him.

That’s cool! To wrap things up, tell me about Official’s relationship with local hip-hop artist C-Plus, because I know you guys are pretty tight, yeah?

It’s really natural. We owe him a lot for the input he gives us. He has a really good sense of style that’s both Sacramentocentric but also a broader perspective, and that’s important. There and Back Again The Hobbit: An Unexpected Journey Rated PG-13

Peter Jackson’s Lord of the Rings trilogy turned the world on its ear. It dominated box offices, enthralled fans and critics and even garnered numerous awards show hardware. But can Jackson do it again? The director returns to Middle-Earth with the first installment of The Hobbit, a prequel to the Lord of the Rings story to be told in three parts (though the original plan was for two).

An Unexpected Journey, as the title may suggest, is a long and sprawling tale (169 minutes!), but is nevertheless worth your time investment.

There are a few challenges to adapting The Hobbit for the screen, especially in such an ambitious way. For the Lord of the Rings trilogy, Jackson and company actually had a trilogy to draw from. In the case of The Hobbit, there's only a single novel and some supplementary material thrown in for good measure. It’s a rich text to be sure—a beloved book that may be author J.R.R. Tolkien’s best and most inspiring work—but is there enough material there to fuel three movies?

Well, there is if you leave in just about every detail. If An Unexpected Journey is any indication, Jackson and his team of screenwriters (including Jackson, Fran Walsh, Philippa Boyens and Guillermo del Toro) will burrow into every nook and cranny of this novel and painstakingly bring just about every word to life.

The story opens in the familiar land of The Shire on a very familiar day. It’s the day of Bilbo Baggins’ birthday party, the day on which the events of the Lord of the Rings began. However, now we see Bilbo’s point of view (played by Ian Holm in this later stage of his life). He’s writing his memoir for Frodo (Elijiah Wood making the cameo) that recounts Bilbo’s greatest adventure.

Flashing back 60 years, we see Bilbo as a young hobbit (Martin Freeman from the BBC’s The Office). He quite likes his quiet life in The Shire, but the traveling wizard Gandalf (Ian McKellen) has other plans. The wizard unites Bilbo with a sizeable group of dwarves, led by Thorin Oakenshield (Richard Armitage),

who are on a quest to reclaim their home. Erebor, a great dwarven kingdom carved into the Lonely Mountain, had been sacked by Smaug, one of the most feared dragons in MiddleEarth. As dragons will protect their gold hordes to the death, no one has dared venture to Lonely Mountain to exploit its wealth.

But years have gone by with no sign of Smaug, and portents have led the dwarves to believe that it’s time that they return to their beloved home.

An Unexpected Journey is full of great storytelling. Its one detriment, however, is that the early part of the film is nothing but characters spinning yarns that reveal background. Though these tales can impede the progress of the plot, there is solace in the fact that these stories are vibrant and rendered in heroic scope under Jackson’s watchful eye. Once An Unexpected Journey really gets going, it has a thrillingly episodic feel. Bilbo must use his guile to save the dwarves from a group of cave trolls, the fellowship is caught in the crossfire of a stone giant fight on a treacherous mountain pass, they are taken captive by the goblin king and his impossibly large army deep underground and yes, Bilbo’s iconic battle of riddles with the creature Gollum (Andy Serkis gunning for an Oscar nod) during which the hobbit comes in possession of the Ring of Sauron.

All the while, the visuals in this film are dazzling. An Unexpected Journey was shot in 48 frames per second, not the 24 in which most movies are filmed. It’s a bit of a shock at first. It took me a little while to get used to this video-like look. But once my eyes adjusted, combined with depth of field provided by the 3-D, this technique proved to be an immersive viewing experience like I’ve never seen (the 3-D is still short of Avatar, but worth it).

Tolkien has created a fantasy world that has stood the test of time, and Jackson continues to bring it to vibrant life. It feels good to be back in Middle-Earth. With two more films to go, it’s nice to know we can kick up our fur-covered feet and stay a while.

Punk in Public NOFX

Ace of Spades, Sacramento • Monday, Dec. 10, 2012 Words Steph Rodriguez • Photos mike ibe I haven’t witnessed a local venue more packed full of music fanatics than at last Monday’s NOFX concert.

Ace of Spades on R Street hosted an endless sea of punk rock music lovers when NOFX came to town Dec. 10. Other performances were courtesy of Teenage Bottlerocket, who tipped their hats to a Groovy Ghoulies song, and the guys of Elway all the way from Fort Collins, Colo.

Many attending the show huddled shoulder to shoulder, corralled into the 21-and-over smoking section, others stood trying to get the busy bartenders’ attentions, but the majority were planting themselves near the stage, finding the perfect spot to watch NOFX’s performance.

When I first found NOFX, I was about 15 years old. I lived in Bakersfield, Calif., and I

was immediately drawn to their Neapolitancolored album, So Long and Thanks for All the Shoes. I’m not sure if it was the fast-paced percussion or the nasally sound of vocalist and bass player Fat Mike that I loved, but as I continued to listen, I appreciated the fact that the guys could actually harmonize.

Flash-forward 12 years, I’m in a different city and my CD resides somewhere in my overstuffed closet in downtown Sacramento. Still, after more than a decade, I have a soft spot for all of NOFX's music, especially songs like, “Lori Meyers,” with those raunchy female guest vocals, or the epic, 18-minute classic, “The Decline.” Even though neither tune was performed live last Monday, El Hefe, Fat Mike (who isn’t so fat anymore, by the way), Eric Melvin and their longtime drummer,

Erik Sandin killed every hit they chose to perform. If I was 15 again, and not able to legally purchase shots of Jameson and pricey beers, I would’ve been found front-row center having my ribs crushed by the safety bar. However, I do like beer. So, my boyfriend and I decided to stand on these cushioned, black seats and sing along while sipping along. Songs like “Stickin’ in My Eye,” “Eat the Meek” and “Dinosaurs Will Die” were of the most memorable of the evening for us and our ribs felt A-OK. Their latest album, Self Entitled, just released September 2012, has yet to find its way into my heart, and I don’t know if I chalk it up to being a NOFX snob, sticking to all things classic, or if I’ve become a lazy listener.

But I still think the boys have their routine

down to a T, and that can be heard throughout their 2009 album Coaster, and heavily in their song, “Orphan Year.” During the song, the widely known four-four drum beats pep up the story of a man who’s lost both his parents, a mother to cancer and an absentee father who had dementia. If you, like me, stick to the old albums like Pump Up the Valuum or Punk in Drublic, stop and give Coaster a good listen.

For a band that has performed together for almost 30 years now, and not getting much younger, the men of NOFX still put on a kick-ass show filled with raunchy jokes, stage banter and Hefe still wails on his trumpet, which I know will always be sweet music to my ears.

If you read this magazine from cover to cover, then this column is sort of the period at the end of Submerge’s bi-weekly sentence.

Fancy, huh? Since this is our last issue of 2012 (bleeding ever so slightly into 2013), I guess this column could be seen as the conclusion paragraph to our yearlong essay. It’s only natural to want to make sense of the year that was before tacking a new calendar to your office wall. Maybe it helps us get by—placing such importance on something that for the most part is meaningless. It’s just another day, another year, another number. Still, for fun, let’s look at 2012 as if we were at his wake.

Who was he? Does he owe us money?

For one thing, 2012 was long for a year. In fact, he was roughly one day longer than his predecessor, 2011, though just as long as 2008.

That’s something, I guess. Leap years only come once every four years, like the Olympics. And it just so happened that 2012 hosted the summer games (by way of London). What a games it was too! There were some great stories and accomplishments that came out of the 2012 Summer Olympics. Oscar Pistorius, the dual amputee who competed among the world’s best track and field athletes and inspired not only spectators but his fellow Olympians.

Though, come to think of it, 2008 hosted the Summer Olympics too. Remember that opening ceremony in Beijing? That was so fucking sweet.

OK, but we’re talking about 2012 here. The poor bastard is about to die, so there must be something that made him special. Oh! There was a presidential election. That was pretty cool. Many of us stayed up late into the night to get the results and witness history as an African American man was elected as President of the United States…again.

Really, the 2012 election was cool and all.

There was some drama here and there, but it would have taken another Great Depression or a White House blow job scandal to keep Barack Obama from defeating Mitt Romney. I mean, come on, Mitt Romney? There are tens of millions of republicans in the United States, and the best they could do was Mitt Romney?

I voted for Obama again in 2012, but it didn’t feel the same. Don’t get me wrong, I was happy to see him win. I think he’s a good guy and a thoughtful president, but when he won in 2008, I teared up during his victory speech.

Actual fucking tears, bro. Maybe a few sobs.

This time, after the election was called, I didn't even wait for a speech. I drank a Heineken, muttered “Thank God that’s over” and went to sleep.

So far, 2012 seems like just a wannabe trying to be as cool as 2008 was. I mean, really, who wouldn’t want to be that cool? But 2012 had something 2008 didn’t: The End of the World.

Long prophesized by soothsayers, organized religions and crazy dudes wearing sandwich signs on street corners, the world finally ended on Dec. 21, 2012. Good riddance, too, amirite?

Well, maybe it did. I’m writing this on Dec. 16, so who knows. Stranger things have happened, I suppose. I don’t really want the world to end, but it would be something to talk about if it did, huh? Like, remember that time the world ended? That was crazy. But most likely it won’t, so I guess I should hold off on blowing my entire bank account on the champagne room at the strip club on Dec. 20. I was really looking forward to that too.

But even if it doesn’t end, that prophecy was kind of neat, huh? That’s certainly something that set 2012 apart. Though, in 2010 we had a similar prophecy made by Harold Camping, and that turned out to be bogus (clearly). And I guess if you really looked into it, you’d probably find that the Mayan prophecy wasn’t really a “prophecy” so much as it was a calendar that just happened to end at a specific time made by a group of people who were extremely advanced in their understanding of the cosmos, but limited by their own technology. Give it up to them, though. We still talk about Mayans all the time. You can’t really say the same for other civilizations. Like, Prussia? That shit was whack.

So, uh, where was I. Right. 2012. Who were you? Well, you were 366 days. You marked another revolution of the Earth around the Sun, which in turn probably revolves around something else as part of the Milky Way galaxy, which is just one of however many untold galaxies that exist in this vast universe. You were also a year in our lives. So thanks, bro.

Even though you weren’t the best—or worst, or even all that notable—year, I’m glad to have had you.
