ust recently I followed a car sporting the registration FU DIY. It’s not that I condone the language but it did make me smile and the sentiment seemed to resonate with everything that we do for our clients and members here at County Concierge. It is sadly UNTRUE for most of us as we juggle with demands at work and home in the hope of finding a small window of time for our own needs! DRAKE’S DRAKE’S CELEBRATES TENTH ANNIVERSARY WITH TEN COURSE MENU - AND SOME OF OUR ‘FORGOTTEN FOODS’

o celebrate is tenth anniversary, Drake’s Restaurant in Ripley, Surrey will be serving an additional course - at no extra charge - to diners selecting its nine course Flavour Discovery tasting menu this summer - making it a ten course feast. This is part of a programme of celebratory events.

Drake’s serves modern British food, using fresh, seasonal and where possible, locally-sourced produce. Chef proprietor Steve Drake was recently made a member of Slow Food UK’s renowned Chef Alliance, in recognition of his longstanding passion for using ‘Forgotten Food’ ingredients. Other chefs in this alliance include Michel Roux Jr. at Le Gavroche, Giorgio Locatelli at Locanda Locatelli and Angela Hartnett at Murano. Commenting on his membership of the Slow Food Chef Alliance, Steve says: “‘Forgotten Foods’ are part of Britain’s regional food heritage and include Three Counties Perry (a pear ‘cider’) Kentish Cobnuts, medlars and whey butter, many of which are used in our dishes at various times of the year.” The restaurant has been receiving accolades since Steve and Serina Drake opened it back in 2004 and last September retained
its Michelin star for the tenth consecutive year. Drake’s was also judged to be in the top four restaurants in the South of England by the Observer Food Monthly Awards and it shot from 38th place to break into the top 20 at No 19 in the prestigious Sunday Times Food List, based on 80,000 reviews by 9,000 diners. Reflecting on his success, Steve Drake acknowledges how the dining public has changed over the last decade and attributes some of this to Heston Blumenthal, whose modern ideas and inventions have allowed chefs to present more progressive cooking to their customers. However, he is keen to give his customers food that is “interesting and intriguing - but nothing too alien”. The additional course will be introduced to the Flavour Discovery menu after Easter and it will be available until the Autumn menu is introduced in September. ‘What we eat can and does affect our bodies in the same way as medication does, so healthy eating is essential but it doesn’t need to be bland or boring’
I
managed to catch up with Antony Worrall Thompson during this summer’s half-term with a promise not to take up too much of his very precious ‘family time’. I started by asking him what had made him want to become a chef. It seems that necessity was the driving force behind his earliest cooking attempts, with a busy working mother and a succession of au pairs Antony realised it was something he would have to learn to do to survive. A raw bacon sandwich served up by one such au pair was the last straw and Antony launched into a life-long affair with food and cooking, starting with a butterscotch Angel Delight. He recounted his first foray into haute cuisine at the age of 6 when he and a friend attempted a ‘feathers-on’ version of duck a l’orange using orange squash! Who would have guessed that this 6 year old would become one of the world’s top chefs, winning the coveted Meilleur Ouvrier de Grande Bretagne (the chef ’s Oscar) in 1987 from the Royal Academy of Culinary Arts. He is still one of only a handful of British chefs to merit this lifelong title. Antony studied Hotel and Catering Management at Westminster College and after graduating he worked for
various establishments in Essex, much to the horror of his grandmother, who refused to write to him because she could not bring herself to write the word Essex on the envelope. Moving to London in September 1978 he started work at Brinkley’s Restaurant in the Fulham Road, making head chef after just one month. A passion for food, eating out and exploring other cuisines have all combined to provide inspiration for Antony’s recipes. Following a six months ‘educational sabbatical’ in France in 1979, Antony returned to London bringing with him the new ideas and techniques that would form the basis of his future work. There followed an awe-inspiring array of successful restaurant creations in and around the capital and across the globe. Antony now has two superb restaurants to the west of London: the Kew Grill which serves his unique retro grill-style cuisine using only the best, locally sourced ingredients and The Greyhound pub-restaurant in Rotherfield Peppard, near Henley-on-Thames, which also serves a great selection of beers & ales. AWT is usually to be found in the kitchen of this picturesque country pub. A great believer in food that should both look and

taste good, Antony puts his success down to plain hard work and the determination to succeed. When asked what advice he would give to aspiring young chefs he was quite clear ‘you must be really keen and love what you are doing because the pay is poor and the hours long. To make your way you need to be determined, don’t take no for an answer and get yourself into a good restaurant. Even if it means taking a job washing up - get in there and show that you are willing to go the extra mile’. Antony believes that the key to making it in the first few years is to combine learning with doing. ‘College graduates who don’t have practical experience to offer will struggle in the real world when it comes to job-hunting’. In addition to his regular television appearances Antony is a prolific writer, creating cookery books that are easy to use and full of practical tips as well as his own delicious recipes. Several of his books are focussed on health issues such as diabetes. Antony explained that he likens food to medicine ‘What we eat can and does affect our bodies in the same way as medication does, so healthy eating is essential but it doesn’t need to be bland or boring’. Despite such an energetic professional lifestyle, Antony still manages to find time for art, antiques, tennis, gardening - and of course his wife Jay, their two children and two dogs, Flossie, a black Russian terrier and Rodney, a golden retriever. There are plans to start slowing things down a little, enjoying time with his family and writing more books…not just about cooking either…so watch this space. Finally I asked Antony if he would do things differently with hindsight. He told me ‘I love what I do. I greet every day as a new and positive opportunity and look forward to what it brings. I wouldn’t want to do anything that didn’t involve cooking but I would love to be able to split myself into three people – so then I could combine my cooking with my love of antiques and interior design and my passion for my garden’. ummer entertaining need not be a chore. Fire up the barbeque for a laid back alfresco lunch with friends. Eating outside should be relaxed and enjoyable. If you prepare everything in advance you can spend all your time sipping sparkles with your friends instead of running to and from the kitchen. Keep your menu simple, marinate your fish or meat the day before and the flavours will develop. Prepare your salads before your guests arrive and keep them chilled in the fridge. You can be really adventurous with your salads, creamy blue cheese goes well with spring onions, nuts and crunchy lettuce like Romaine. Griddled aubergines and courgettes, seasoned and mixed with a jar of roasted peppers create a Mediterranean feel. Diced butternut squash roasted then mixed with crumbled feta cheese drizzled with olive oil and crushed black pepper. The combinations are endless. Dessert can also be delicious but really simple. Peel and poach some pears in red wine and sugar and serve with your favourite liquor poured over them, Grand Marnier for instance. Crumble Amaretti biscuits and combine in a glass with summer fruits and your favourite indulgent ice cream. Eton Mess is another crowd pleaser and so easy, all you have to do is combine the three ingredients broken Meringue, thick cream and sliced strawberries.
What about a fruit fool?
STRAWBERRY FOOL • 450g Strawberries • 180g caster sugar • 300ml double cream Hull and chop your strawberries and put them in a bowl with half the sugar and leave for 30 minutes so they exude their juices, then pulse them in a blender. Then whip your cream until thick and combine with the rest of the sugar. Now stir the two together to get a marbled effect. Serve in a big bowl or 4 individual glasses. Cheers! ast month I was delighted to join the ladies of Sugar Group at The Hind’s Head in Bray for Blooming Marvellous – a celebration of all that is feminine in fashion and style. This brilliant event was a collaboration between chic work-wear designer The Fold, couture milliner Ilda di Vico and Michelin star pub-restaurant The Hind’s Head, owned by Heston Blumenthal. On arrival we were greeted by Hind’s Head staff with a welcome glass of champagne. As more and more glamorous ladies arrived, and the sound of happy chatter rose, it was clear that this was going to be quite an event. We waited in eager anticipation for the fashion show to start as we tucked in to an amazing three course lunch, created by Chef Kevin Love and his team to showcase some Hind’s Head signature dishes. Ilda di Vico and The Fold designers had put together three sets of contemporary fashions for ladies who demand to look fabulous at work. With Ilda’s wonderful hats to complement each look (see images) it was quite a challenge to decide which was more delicious – the food or the fashion. The entire event was in support of a unique charity called Floral Angels. The Angels recycle donated flowers from weddings, events, florists and retailers and deliver them to hospices, care homes and

women’s refuge with the aim of creating pleasure and well-being through the power of giving flowers. The finale to the event was a dress designed by internationally acclaimed couturier Freya von Bulow using copies of the Reading Post. As Ilda di Vico is to luxury headwear so Freya von Bulow is to paper couture. Freya specialises in using all kinds of paper textures to create elaborate and unique designs for her exclusive clientele. T
he award winning Bremont Watch Company launched its collection of highly developed aviation inspired timepieces in 2007. Founded by two British brothers, Nick and Giles English, Bremont originated from the brothers’ joint lifetime love and passion for engineering and aviation. The Bremont story started in 1995 following a tragic plane crash that Nick had with his father, Euan English. Whilst training for an air-show in the UK their WWII Harvard aircraft was involved in a horrendous accident. Their father Euan died and Nick broke over 30 bones. Just one year after the crash, Nick and Giles were back in the air and flying across France in a 60-year-old plane. Bad weather forced them to make an emergency landing in a pea field in the Champagne region. The field was owned by an old farmer, who not only reminded them of their father, but was also a former WWII pilot. His farmhouse housed a wonderful selection of restored wall clocks and he wore a particularly special wristwatch. His name, Antoine Bremont, was chosen to grace this range of British watches. The brothers were determined to make a watch that would last more than a lifetime. They set out to create a classic English-styled watch that could be worn in the boardroom but had the strength to
be used in the harshest of environments. Every Bremont model is not only designed to exacting specifications but is also sufficiently accurate and durable enough to be used for activities ranging from flying to polar and deep-sea exploration. The watches had to be made from the best available materials using the most tried and tested techniques. Indeed, this led to the company’s maxim: all Bremont timepieces would be tested above and beyond the demands placed upon conventional wristwatches “Tested Beyond Endurance”. The high standard of finish and attention to detail seen in everything from the hand-cut and engraved winding rotor to the meticulous machining of the three-part Trip-Tick® cases take considerable time and skill to apply. As a result, no more than 1,000 examples of each model are produced annually. An individual record of each watch is kept at the company headquarters for security and servicing purposes, and all Bremont watches are supplied in beautiful hand-crafted leather wallets. In January 2013, Bremont opened their new watch making facility in the Oxfordshire town of Henley-on-Thames. The beautiful oak framed building in the heart of the Chiltern Valley has been custom built to provide an ideal facility for the

In July 2012 Bremont opened their flagship boutique in London’s Mayfair joining a host of high end brands on the prestigious South Audley Street such as Marc Jacobs and Purdey. aturally in summer our gardens should work effectively as an extension of the home. Socialising moves outdoors so it’s important to create a pleasing, comfortable environment. We all know the pleasure of entertaining in a tastefully designed home, but have you lavished the same care and thought on your garden?

They also incorporate an infrared heating unit and evening LED down- lights all helping to enable a meal to be enjoyed in the garden without having to decamp inside when darkness descends or the first drops of a rain storm start. As the evening gets chilly, guests can also gather round the attractive Italian corten steel firepit. This doubles as a table when
A good garden designer can create a seamless link between interior and exterior; a visual theme from living room to lawn. This concept is well illustrated by this recently completed commission – a sunny family garden. Client – Vanessa - provided a clear brief: “We are looking for a cosier, more attractive space for entertaining and relaxation, screened from neighbouring properties”. Exciting opportunities were created by the remodelling of the house, which included bi- fold doors to the garden. Also proposed was the removal of a large, unattractive expanse of paving, to create a series of outdoor spaces – or linked garden ‘rooms’. Working within a budget and time frame, to have it ready for the summer, a design was produced incorporating an all weather loggia dining space, a relaxed seating area around a table/firepit, water feature, lawn and planting. The house, kitchen and lounge link seamlessly to the garden with a hardwood, smooth Ipe deck. The roof louvres of the contemporary loggia are remotely controlled and can be adjusted from
not in use and its sculptural form gives a year-round, pleasing focus from the house. The ‘living room’ area of the new garden includes seating areas, enclosed with rendered and painted planters - re-using the client’s existing black bamboo. In the shady areas Rheums, Ferns and Hostas add to the slightly tropical feel of the space. Added screening and enclosure is created by linear cedar fencing, while a raised lily tank and three fountain chutes provide the pleasant background noise of gently falling water. Plants are a key element of the new garden, defining and enclosing the ‘rooms’. The most important are the multi stemmed evergreen Photinia x fraseri ‘Red Robin’, which have been trained to give a cleared stemmed umbrella outline. These are underplanted with a mass of the Japanese sedge Hackonechloa macra, giving a soft grassy base to the planting. Around the water tank, in full sun, plants such as Salvia, Erigeron, Echinacea and the frothy Saxifraga, are anchored by clipped evergreen Buxus. This defining planting leads to the main lawn and a dramatic

‘full stop’ to the end of garden - a gloriously weeping willow. The lawn, bordered on either side by mixed herbaceous and shrub planting forms an open green space - a pleasing and practical contrast to the detail close to the house. As in the home, lighting is a major factor in creating the perfect ambience for entertaining: All areas of this garden are up- lit at night using subtle LED fittings.
For a touch of drama, underwater lights shoot up the curving water spouts of the water feature. Vanessa is delighted that the brief has been fulfilled. She feels she has a contemporary space, perfect for a party, family gathering or simply for relaxation. Her garden has become an integral part of the house.
